Of course, depending on who you’re picnicking with, you’ll need a different kind of spread, so here are three suggestions for picnics to please...

Romantic picnics

It’s just the two of you and you’ve decided to leave the city and head off to the country. This is a wonderful way to spend a romantic afternoon together and beats getting the BBQ out.

Pick up your favourite meats and cheeses, and don’t forget a crusty loaf of bread to go with it all. You don’t need butter with a cheese such as Brie and it will melt too quickly anyway.

A proper picnic in the countryside is a luxury, but if you're citybound and time-poor, a walk to the river, with a cosy picnic blanket, a punnet of strawberries and a bottle (or two) of champers in tow is just as lovely.

The champagne doesn't have to be expensive either - we've heard great things about Sainsbury's Blanc de Noirs. Easy peasy and no 'I don't have time' excuses.

A big picnic with friends

These are the ones that have been arranged weeks in advance, hoping for good weather, or are those impromptu events when you’re all miraculously available on the same afternoon.

Champagne and tea picnic with girlfriends

This is a wonderful way to catch up with those girlfriends that you haven’t seen in months. It’s also the most luxurious way to picnic. Each person brings a pudding (no calorie counting allowed!) and a tipple - tea dresses and Hunters optional.

Plant your Thyme in amongst the Rosemary to add bulk and depth to your herb garden but not so close that the Rosemary will eventually block out any sunlight that the Thyme may receive.

If you’re creating the whole of your herb garden in pots you’ll begin to learn whereabouts the herbs do best and you may even shift them about from time to time (or thyme to thyme, if you insist!).

After you've planted these herbs it’s your job to keep an eye on them, granted, but they're pretty independent chaps, and will fill your home, garden and recipes with fragrance, flavour and delight!

- Find an abandoned cushion pad that you have lying about the place or purchase a plain one online (this one from Marks and Spencer is the perfect blank canvas) in the shape and size you’d like to work with.

- Cut out two pieces of matching or contrasting fabric, making sure that they're approximately 2 inches larger than the cushion pad on all sides.

- Choose the piece of fabric that you want to act as the front of the cushion and decide how you will decorate it.

The options are endless – simply appliqué contrasting patches of fabric onto the cover (we’ve stitched on three fabric hearts, all placed at angles, as pictured) or go crazy with beads (these will add sparkle) and trimmings.

Top tip: Embroider any wording on to your hearts first and then pin in place ready to stitch and bead onto the cushion directly.

- Sew together the left, top and right hand sides of your cushion covers together and then place the cushion pad in the newly formed cover using the opening at the bottom.

- Sew the opening up and plump gently.

You are now staring at a beautiful, handmade cushion cover that will make Mummy gasp with delight and proceed to heap praise upon you. Eg. ‘Where’s this from? You made it?! You didn’t! Who would’ve guessed?’

And that, dear readers, is it!

Grease your previously heated frying pan using a small amount of the butter for each pancake and add a ladle of the batter for each pancake. Keep an eye on the underside to prevent one side from burning and then flip or, if you’re brave, toss the pancake to turn it. A warning - cast iron Le Creuset pans are far too heavy for those types of shenanigans and you don’t want to break your wrist or toe whilst flipping!

As pictured, you can add frozen summer fruits to the pancakes, but you may also want to try:

- Ice cream and dusted cinnamon sugar
- Streaky bacon and scrambled eggs for breakfast
- Wilted Garlic Spinach & warmed Ricotta cheese

Finally use all those cheese biscuits that weren’t touched as the basis for meatballs, chocolate biscuits as the crumb for non-bake cheesecake and the crumbly bits of biscotti as the bottom layer of an Italian trifle.

And, for a non food related way to not waste and a great time filler for little people, gather up all those Christmas cards , which can be used to make tags for next year. So, in honour of all the wonderful Americans who live are away from home and for my fellow countrymen who enjoy any excuse to entertain, here’s a little crafty idea to encourage us all to think about the act of giving thanks. Thankful Walnuts are made in four stages and begin thus...1.Carefully split open a walnut, keeping both halves intact and whole.2. Empty the nut from the shell and re-fill it with angelina (a heat-bondable fibre product available from most craft stores) and the question that you wish the recipient to answer, on a tiny rolled up piece of paper. Remember - the question has to enable the recipient to give thanks. So write questions such as ‘What person are you most thankful for?’ or ‘In what situation do you find yourself most thankful?’ ...you get the idea. 3. Pop the end of a ‘hanging loop’ (made out of ribbon) inside and glue the two halves of the shell back together. 4. So, in honour of all the wonderful Americans who live are away from home and for my fellow countrymen who enjoy any excuse to entertain, here’s a little crafty idea to encourage us all to think about the act of giving thanks.

Thankful Walnuts are made in four stages and begin thus...

1.Carefully split open a walnut, keeping both halves intact and whole.

2. Empty the nut from the shell and re-fill it with angelina (a heat-bondable fibre product available from most craft stores) and the question that you wish the recipient to answer, on a tiny rolled up piece of paper.

Remember - the question has to enable the recipient to give thanks. So write questions such as ‘What person are you most thankful for?’ or ‘In what situation do you find yourself most thankful?’ ...you get the idea.

3. Pop the end of a ‘hanging loop’ (made out of ribbon) inside and glue the two halves of the shell back together.

4. Pile up your walnuts in a pretty bowl or hang them on the back of each guest’s chair if you’re throwing a Thanksgiving Supper. Crack them open using traditional nutcrackers and enjoy going around the table and hearing everybody’s answers.

If you have as many blankets as I do then there comes a point when, in the summer season, the top of every wardrobe simply won’t fit another...

Which is why I have my eye on my mother’s beautiful vintage velvet ottoman. A piece of furniture so romantic that it’s begging me to steal it, scurry it away back to my house and fill it with my blanket collection.

And be sure to leave a box of matches (a blown out match disguises a multitude of odours!) and a discreet room freshener in clear view to save any blushes.

Finally, if you're entertaining guests overnight, provide them with fresh bath towels and bath mats (Cologne & Cotton are hard to beat) and remember that like guest rooms, the best bathrooms have good reading fodder.

And if you're entertaining little ones then add a finishing touch to pudding or even tea time picnics (the latter are far more fun for them too) with some of my Flying Fancies – food decoration with an undeniably summery feel.

Finally stock up on plenty of Pimms or, if fancy something a little more sophisticated (I’m really rather partial to bubbles) then St Germain, an elderflower liqueur is the cocktail ingredient du jour. Add a splash to a glass of fizz or to a jug of white wine, soda and ice and you’ll wonder how ever survived without it.

Prop the door open, wrap up in your cashmere and picnic to your heart’s content safe in the knowledge that there will be NO rain breaks.

Write all thank you notes (I’ve just had a divine delivery of correspondence cards from Billet Doux)and pay all bills, in short, action all correspondence that’s requires it so you don’t have it hanging over you the minute you’re back.

Kitchen worktops, kitchen table, all beds and your desk (ie sacred surfaces) must, must, must be cleared prior to your return.
