Angela's Awesome Enchiladas Recipe

Since I have become obsessed with enchiladas over the past few months, (I have no clue why!) I have been trying a variety of new recipes trying to find the perfect one. I usually just do simple easy recipes that I have all the ingredients for but spotted this Angela's Awesome Enchiladas last week and thought I'd give it a try. After a trip to the grocery store to pick up some cream of chicken soup and green onions I started on what is now my favorite Enchilada recipe.

Angela's Awesome Enchiladas:

Prep Time: 45 Min
Cook Time: 1 Hr
Ready In: 1 Hr 45 Min

Ingredients:

2 pounds skinless, boneless chicken breast - cut into chunks
1 (10.75 ounce) can condensed cream of chicken soup
1 1/4 cups sour cream
1/4 teaspoon chili powder
1 tablespoon butter
1 small onion, chopped
1 (4 ounce) can chopped green chilies, drained
1 (1.25 ounce) package mild taco seasoning mix
1 bunch green onions, chopped
1 cup water
1 teaspoon lime juice
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
5 (12 inch) flour tortillas
3 cups Cheddar cheese, shredded, divided
1 (10 ounce) can enchilada sauce
1 (6 ounce) can sliced black olives (optional)

Directions:

1. Place the chicken in a large pot and add water to cover. Bring to a boil over high heat, then reduce the heat to medium-low, cover, and simmer until the chicken pieces are no longer pink, about 10 minutes. Shred chicken by placing two forks back to back and pulling meat apart (or use a food processor like I did). Set the shredded chicken aside.

2. In a saucepan combine the cream of chicken soup, sour cream, and chili powder, bring to a simmer over low heat, stirring occasionally, then turn off the heat and cover to keep warm.

3. Heat the butter in a skillet over medium heat. Stir in the onion; cook and stir until the onion has softened, about 5 minutes. Add the shredded chicken, chopped green chilies, taco seasoning, half of the bunch of chopped green onion, and water. Allow to simmer for 10 minutes. Preheat oven to 350 degrees F (175 degrees C). Stir in the lime juice, onion powder, and garlic powder; simmer for an additional 10 minutes.

4. Stir 1 cup of the soup mixture into the skillet with the chicken mixture. Spread the remaining soup mixture on the bottom of a 9x13 inch baking dish.

5 Fill each tortilla with chicken mixture. Sprinkle Cheddar cheese over the chicken filling before folding the tortillas, save half of the shredded cheese for topping the enchiladas. Fold tortillas over the filling and place seam-side down in the prepared pan.

6. Pour enchilada sauce evenly over the enchiladas. Cover with the remaining 1 1/2 cups of Cheddar cheese. Sprinkle the reserved chopped green onions and the sliced olives on top of the cheese. Bake in the preheated oven until filling is heated through and the cheese is melted, about 25 minutes.

I did 1/2 the enchiladas with the enchilada sauce and the other 1/2 with mole sauce.

The enchiladas were a huge hit and although this recipe can be a little time consuming it is absolutely delicious and the best enchiladas that I have ever made. No more easy 90 minute enchiladas for this Mommy, the hour it took to make "Angela's Awesome Enchiladas" is definitely worth it.

Yesterday turned out beautiful, the sun was shining and for once rain was not expected so we decided to spend the day outdoors enjoying the nice warm weather. Since my husband loves his new found fishing spot in Natick (about 30 minutes away) and I had been wanting to go to the Britax event we all decided to hop in the car and spend the day down there. I dropped my husband and Jacob off at their favorite fishing spot while Tyler and I decided to stop by Destination Maternity for the Britax Expect Greatness Tour. I never expected so many amazing prizes to be given away! If the tour is stopping near you I highly recommend going, I can't believe how much they gave away! No one went home empty handed, a B-READY Stroller, BOB Stroller, B-AGILE + car seats, & accessories galore!

Every hour or so they ran a contest with 4 contestants so the chances of winning were very high. It started at 11 and I got there about 2. Once I got there I was asked how I felt about taking place in a diaper changing contest to win a car seat, hmmm babies, diapers, car seat, SURE! Within minutes someone would be winning an Advocate Car Seat in the pattern of their choice. There was four of us competing and we had to put a diaper on a baby, put pants on the baby, then put the Britax Child Carrier on and place the baby in it, the first person to do it won the Advocate, 2nd place won a Child Carrier + Accessories, and the two other contestants won accessories. I came in second missing first by .7 seconds. Later on four more people competed to win a B-READY & 2nd place was a Chaperone Car Seat, it was hilarious watching the men put on a baby carrier and pushing around the B-AGILE one handed. Then at 3:30 was the big raffle that everyone could enter, the top prizes were a BOB Stroller, B-AGILE, and B-SAFE, and everyone else - at least 20-25 people won some type of accessory, a baby carrier or free movie tickets to see What To Expect When You're Expecting.

I originally went to check out the new B-AGILE Double, and the new 2012 B-READY, I never expected to go home with a bag filled with over $200 in prizes. Thanks, Britax!!!

Spring is finally here and the boys are loving this warm weather and outside play. On sunny days we spend most of the day outside riding bikes, playing ball and of course chasing after bubbles. The boys love to play with bubbles and chase them around the yard, last year Tyler was too young to be able to blow bubbles himself, but now at 2 years old he can't stop.

Kohls: Scored 2 Pairs of Boys Levi's Jeans for Only $2 Each!!

The other night a friend of mine mentioned on Facebook how she went to Kohls to get her son 2 pairs of jeans. They had a buy 1 get 1 50% off sale so she found the cheapest pairs $24.99 each, but when she got to the register they rang up at only $2.49 each!

Of course I had to stop by our local Kohls today and see if there was any left, Jacob is growing out of his 3's and is needing 4's but I couldn't see paying all that money when summer is right around the corner and he has plenty of shorts. On the bottom row of the boys 4-6 Levi's rack I spotted $24.99 & $28.99 size 4 jeans and of course I ran to price check them, $2.49 & $2.89 each, SCORE!!!

Plus I had a little left on my Kohls Cash and ended up spending only $1.83! I absolutely love Kohls!

Most of the boys 4-6 Levi jeans are originally marked $36 or $40, it seems like the ones marked $24.99 and $28.99 are ringing up at only $2, so be sure to check your local Kohls!

There are a few things this Mommy just can't resist, one being Chocolate so when I came across Superior Nut Company my mouth started watering looking at their selection of nuts and chocolate. I began instantly craving some of their chocolate covered pretzels, and knew that those would be on the top of my list to try. In addition to their chocolates their nut trays looked amazing, filled with cashews, almonds, and pistachios.

Being from Massachusetts, it was great to see such a great company located just downtown. The boys always see my husband playing his PS3 and always want in on the fun, but the games my husband likes to play are not kid friendly. While browsing through the family friendly PS3 Disney games I came across Disney Universe. In Disney Universe, players can select from more than 45 classic and contemporary Disney character costumes, including Mickey, Minnie, characters from the Lion King, Mike from Monsters, Inc., and Stitch from Lilo & Stitch.

There are six different worlds inspired by legendary Disney and Disney Pixar films and in each world players experience different objectives and missions that follow Disney and Disney Pixar movie storylines. Players can select different character-based costume, with each costume offering a specific tool that changes and grows in power as players adventure through the game.

When you first start playing Disney Universe the only world that is available is Pirates of the Caribbean, to open up different worlds you need to have a specific number of coins that you receive in each level. After we completed Pirates of the Caribbean a few times we had enough coins (2000) to open up a new level, we chose The Lion, and soon after we had enough coins to open a new world. We now have all of the worlds open and most of the characters. You can unlock new characters by completing the worlds, Jacob's favorite part is releasing the characters. Once you release the characters you go to the Character Shop where you will need additional coins (usually 300-500) to completely unlock them. Once you have unlocked the character and worlds they will always be unlocked an available to use.

Jacob loves to play Disney Universe, and loves to pretend he is his favorite characters trying to accomplish missions. Although we limit his time playing games when is allowed to play Disney Universe he is one happy boy, and gets excited talking about which character he wants to be. He has perfected the use of the controller and does a great job destroying the enemies. He does need some assistance completing the levels as he cannot read the screen to tell him what his next mission is.

Disney Universe have also recently added “Phineas and Ferb” characters and levels that are available at the Playstation Shop. Players can now suit up in familiar character costumes, including Phineas, Ferb, Dr. Doofenshmirtz, Agent P and Candace, and embark on new adventures in Danville.

Multiplayer: Disney Universe can be played with up to four player and will appeal to players of all ages, even mommy and daddy.

Recommended Age: Disney Universe is rated for everyone 10+. Jacob is 4 and can play but needs assistance.

With two little boys we have gone through our fair share of sippy cups, our cabinet if filled with a variety of cups but the boys always go back to their favorite character cups. The boys have their personal favorite characters, while Tyler prefers Mickey Mouse, Jacob prefers his Disney's Cars cup from The First Years. We have been using The First Years sippy cups for a few years now, as I am a big fan of their one piece cover and easy clean valve system.

The First Years have recently introduced sippy cups with their new BPA-Free Magical Color Change technology. Your favorite Disney characters Mickey Mouse Clubhouse, Disney Princess, Disney Fairies, Toy Story 3, and Cars are all available with the new color changing technology. The insulated sippy cups change color when cold liquid is added, and the color fades as the liquid warms to room temperature. Like our older cups, the new line also offers the easy clean valve system.

The Easy Clean Valve System is a one-piece lid with a built in spill-proof valve. I prefer the one piece lid as there is no need for extra cleaning, and no worrying about missing extra parts. We have had a number of sippy cups that I have had to discard due to loosing a specific piece whether it is part of the straw, or part of the valve system.

The boys were overjoyed with their new sippy cups, and loved the color changing technology. Simple things like watching their sippy cups change colors just makes their day.

With summer just around the corner and the days starting to warm up, outside toys and pools are starting to appear. I can remember playing in our backyard for hours in the pool with dolls pretending to make them swim. Lalaloopsy has recently come out with a new doll that would be great for outside fun and pool time.

MAM Smile Baby, Smile Party #childsplayparty

With the boys semi annual dentist trip in the very near future I was excited to host a MAM Smile Baby, Smile Party thanks to Child's Play Party. I got to try and test out a variety of MAM oral hygiene products and then I got to share those products with other mommies and their little ones. MAM products included MAM Baby Massaging Brush, MAM Baby Training Brush, MAM Baby Oral Care Rabbit, MAM Baby Learn to Brush Set, MAM Baby First Brush, and MAM Baby Bite and Brush.

I am very lucky to have two boys who love to brush their teeth, especially Baby Boy who would live in the bathroom brushing his teeth all day if I let him. The boys were very excited to receive new toothbrushes and were even more excited that their favorite colors were available, blue for Little Man, and green for Baby Boy.

My friend has been having trouble brushing her 2 year old daughter's teeth so this party could not have come at a more better time. She has tried a number of toothbrushes but her daughter had no interest in brushing her teeth and would scream the whole time. The party put an emphasis on how important it was to brush your teeth and her daughter got to see all of the other kids excited about their new toothbrushes. Her daughter felt left out seeing all of the other kids happy with their toothbrushes and it made her want to get involved and start brushing her teeth herself, yay for success!

During the party we played a variety of games including Baby Smile Scrambler where I got to hold up cards and the guests had to unscramble the letters to form an oral care word. We also got to do an oral trivia game, and I got to learn a few facts. Did you know that a full set of baby teeth includes 20 teeth and a full set of adult teeth includes 34? I was also excited to learn about the MAM massaging brush, I never had one of these when the boys were young, and I never thought about massaging the boys gums before they had teeth. Massaging the baby's gum helps to remove germs and bacteria.

At the end of the party each of the guests got to take home a goodie bag filled with MAM products, a Baby Massaging Brush, Baby Oral Care Rabbit, and Baby Learn to Brush Set, along with pamphlets about oral care and coupons. Although all the mommies were very happy about their new products, I think the 2 and 3 year olds were the happiest with their new blue, green, and pink MAM toothbrushes.

When Jacob was a baby he would take to any bottle no matter what design or brand it was, but Tyler was a completely different story and had a lot of trouble with bottles and gas issues. I wish the Evenflo Bebek collection was around when he was born, it could have made those first few months a lot easier.

The Evenflo Bebek Collection includes a line of bottles, nipples and pacifiers. The bottles come in three different sizes, 2 oz, 5 oz, and 8 oz and feature a one piece vented nipped that rapidly vents air bubbles into the bottle instead of going into baby's belly. We have tried many other bottles that were supposed to reduce gas but they required a number of pieces plus a straw which is harder to clean. The Bebek collection on the other hand is only one piece, the one piece design makes them easier to clean without having to worry about loosing or cleaning extra parts. Drool Baby Expo | Boston May 15th!

While browsing the Britax Facebook page today I noticed a link to the Drool Baby Expo which will be taking place on May 15, 2012 in Boston. The Drool Baby Expo is presented by Magic Beans, in collaboration with Plum Productions and Big City Moms. I am so excited I noticed the link, the expo looks amazing and will be great for new or expectant moms! I just purchased my ticket and cannot wait to attend. There will be some amazing exhibitors including Britax, MacClaren, boon, Diono, Chicco & Ella's Kitchen.

I can't wait to go and share all of the great baby products with you all!
