<p>We&#8217;re doing tasting plates of;</p>

	<li>Beef &amp; Shiraz pies with salad served with a glass of Silent Range Estate Shiraz,</li>
	<li>Pork Terrine with Warby Range produce served with a glass of Silent Range Estate Merlot,</li>
	<li>Vegetable tarts with a garden salad, served with a Silent Range Estate Sauvignon Blanc.</li>

<p>Back it all up on Sunday for some Glenrowan Grazing! Indulge in the Gourmet winemaker&#8217;s breakfast and then head on down to the participating wineries for tasting plates with Australian themed culinary delights.</p>
<p>Dinner: $135 including all food and wine with complimentary transport  from Wangaratta or Glenrowan for the dinner held at Baileys of  Glenrowan. Your ticket also includes the Sunday gourmet breakfast at  Auldstones Cellars.</p>

<div class="ERSummary"><span class="summary">A hearty winter dish that has become synonomous with Silent Range Estate&#8217;s Trails, Tastings and Tales Weekend, the Queen&#8217;s Birthday Weekend in July, it&#8217;s the perfect meal for a cold winter&#8217;s day. A long list of ingredients, but simple to prepare and just wait for that delicious smell to fill the house.</span></div>

<li class="ingredient">4 lamb shanks</li>
	<li class="ingredient">plain flour</li>
	<li class="ingredient">2 bay leaves</li>
	<li class="ingredient">4 generous sprigs thyme</li>
	<li class="ingredient">6 stalks parsley &amp; extra to serve</li>
	<li class="ingredient">4 pieces of dried or fresh orange rind</li>
	<li class="ingredient">4 large onions</li>
	<li class="ingredient">2 teaspoons paprika</li>
	<li class="ingredient">1 stick cinnamon</li>
	<li class="ingredient">generous pinch of saffron threads</li>
	<li class="ingredient">stock</li>
	<li class="ingredient">2 sticks celery, chopped</li>
	<li class="ingredient">4 carrots, peeled</li>
	<li class="ingredient">4 chunks pumpkin, peeled</li>
	<li class="ingredient">4 zucchini, cut into chunks</li>
	<li class="ingredient">preserved lemons</li>
	<li class="ingredient">Select winter vegetables, cous cous or mash potato to serve with your shanks.</li>

<li class="instruction">Roll meat in flour.</li>
	<li class="instruction">Tie herbs and zest with string to make bouquet garni.</li>
	<li class="instruction">Dice 2 of the onions and place meat, bouquet garni &amp; onions in a deep casserole.</li>
	<li class="instruction">Add paprika, cinnamon and saffron.</li>
	<li class="instruction">Generously cover with stock. Bring to simmering point, uncovered, then skim and continue to simmer for 1 hour.</li>
	<li class="instruction">Start adding vegetable according to the time they will take to cook. (Onions &amp; carrots will take 30 mins, pumpkin &amp; celery 15 minutes, zucchini 5 mins)</li>
	<li class="instruction">Test shanks are tender and taste broth for salt.</li>
	<li class="instruction">Scatter stew with parsley and finely chopped preserved lemons.</li>
	<li class="instruction">Serve with any winter vegetables, mash potato, or couscous.</li>

<p>It was said to imitate the screams of the Bunyip, which loitered around billabongs and fed on women!<br />Found in the Warby Range, the nocturnal animal is now on the threatened list in Victoria, which is why it is so important to maintain our national parks to retain the owl and other threatened species habitats.</p>
