Since I was little I loved chocolate and cookies and sweets. My mom often tells a story about me that when I was a little girl, visiting a relatives house, I used to hide underneath the dining table and eat sugar! How crazy is that! Now I have alternatives like stevia that I use, but my sweet tooth is still alive and well. There are two things that I cannot substitute; Oreo's and Danish Cookies! I let myself indulge in these cookies about once a year around my birthday. Danish cookies are just awesome in all their butteryness and Oreo's just melt in your mouth. I prefer to dunk my Oreo's, but hate it when my finger gets wet from the milk, or worse, my cookie falls into the cup! Anyway, I digress. I think I was a pastry chef in a past life. I get so excited when I bake it's scientific! With much trial and error, I've developed skills to identify what went wrong or what went totally right. I've developed some recipes and am thinking of opening up a bake shop. i am hesitant because I haven't figured out how to single out my chocolate chip cookies from anyone else amazing chocolate chip cookies. It's a battle, but It will happen. In the past I have sent some sampling to my family and they loved it, so I will continue sampling! Football Season

Well it is that time again, Football season! I've been to a handful of games, trust me i'm no expert. I can barely keep track of the ball! When I go to games, I sit on the stands and squint the whole time, follow the herds of players and hope to shout exclamations at the right time, and for the right team! One thing I have learned recently are how intense tailgating is. In my college years I didn't pay any attention to football and tailgating because I was being studious, so now that I have outgrown those years I take the time here and there to go to a game. The last tailgate I was at was for James Madison University - No disrespect to my Knights. It was a sea of purple and gold and a buffet of food! I'm talking about things like boiled shrimp, corn on the cob, 7 layer dips, muffins, cupcakes, pies, chips and dip, shrimp cocktail, sausage... the list goes on and on. See, I thought that tailgating was more of a burgers and hot dogs kind of thing with lots of beer. I now see that it is much more sophisticated!
If you couldn't tell already, I know very little about football. But when football season comes around the topic of football inevitable comes around in conversations. Since I have perfected my "smile & nod" people make the assumption that I know what they are talking about. It is amusing sometimes because when there is a break in the conversation where I should be commenting about football, I just say, "I'm sorry I have no idea what you are talking about". I have learned to laugh at myself for not understanding the concepts and or learning the full background history of players. I would be the person to be in an elevator with let's say Adrian Peterson from the Minnesota vikings who is well known the world and not even know it!

Quick How To on Couponing at Publix

Publix is by far the best place to shop for your groceries with coupons. They are very welcoming to people who use coupons and most of the time know their policy and are able to quickly resolve any issues that may occur. Before you walk in to a +Publix to coupon here are a few things that you should know.

You may use up to two coupons per item. one store coupon and one manufacturer coupon
You may use two coupons each on items that are BOGO! - best savings method
You have to buy two items to get the BOGO sale. If you just buy one the item will not be half price.
If an item rings up incorrectly at the register. It will be free and all others will be manually corrected
If you forgot to use a coupon, just go the customer service with your receipt and they will adjust it.
There are two fliers that have valuable coupons that you can match up with your manufacturer coupons
Competitor coupons are accepted (look for a huge sign by the door that lists your Publix competitors)
Get a rain check for any items that are sold out
BOGO sales are already cheaper than buying the items at Walmart

Example:

So let's say for example that chips were on sale at Publix. There were BOBO for $4

That means that when you buy one at $4 you get one free. So each costs $2!

Let's say you found a coupon online or in the newspaper for $.50 off chips and you also found a coupon in the Publix flyer for $.25 off the same chips.

You would buy 2 bags of chips

Use (2) $.50 off chips manufacturer coupon AND
Use (2) $.25 off chip store coupon

Remember that you can use up to two coupons per item. (1 Store and 1 manufacturer)

So, your chips went form costing you $4 to $2.50 or $1.25 each!!!

Running Out of Chocolate!

I read on a random feed somewhere that we are doomed! We are running out of chocolate and there is no way around it, other than planting cocoa beans on an entirely new planet. Is't that insane? I don't think I would do well without chocolate, I really like chocolate milk, chocolate ice cream, chocolate cake oh and chocolate dipped croissants OMG that is like the best of both world for me. I love bread and chocolate and combining them together is amazing!! I also like Oreo's...I don't know if that is actually chocolate, but I still like it. Do you ever get your cookie to break off when you are trying to dunk it in some milk? I hate that. I like my cookie to be perfectly moist but not all falling apart like and me having to scoop it out of my milk.I also don't like how my fingers get all milky when i'm dunking. So, I tried this... I got myself a fork and stuck it in the Oreo then dunked it. It worked! My cookie was moist, and my fingers were dry!! Try it out! The one thing that I will mention is that double stuffed cookies work better for thicker forks. If the fork is too big, the cookie will just spread apart.

I was looking through some pictures of mine today and came across pictures of my time working at the Be Our Guest Restaurant in Disney. It was such a magical place to work in. I left the company a few months ago and have since been on the road to achieving my goals. What I have learned from working at Disney has change the person I was for the better.

Yes, when you think of Disney, the first thing that comes to mind is probably Mickey... or maybe it's money, but what I think about is the relationships that I have built, the working environment and opportunity to make someone smile every single day. I love smiling, and laughing and just having a good time, so working in an environment where that is constantly happening is just amazing. Now that I live in Virginia Disney is just a little far to just decide to go, so I relive the moments in pictures! But seriously, If anyone want's to send me some of those cupcakes, by all means, go right ahead! Oh and, have you found the Hidden Mickey's there? Even the west wing one?

Trick to having green onions (scallions) forever!

Here are my green onions. They have been growing steadily for a month now. they grow, I harvest them, then more grows back. It's awesome!! I love green onions in my food, and growing them myself makes it free of pesticides and...well... FREE. All you have to do Is buy yourself a bunch of green onions from the grocery store look for the organic and ones that have roots. Cut and use all but about two inches of the onion (the white bulb part).
Now you have two options, you can place it in a cup of water and change the water every so often, or you can place it in dirt. I went with the dirt option because I don't want to have to remember to change the water. After about two days you will see these little boogers growing... and growing... and growing. So when they are tall or bent over because they are too heavy go ahead and clip them down to the white part. . Tada! that's it. Enjoy!!

I Chopped My Hair OFF!!..... Now What??

About a year ago I found myself living in an area that some affectionately call "the middle of nowhere,"

About a week after the cut

Texas. Just so we're on the same page, let me start off my telling you a bit of history. Since I was about ten I had been getting my hair relaxed. For those who don't know a relaxer is a chemical applied to the hair that will loosen the curls that you have thus making it straight. A perm, is applied to straight hair to make it curly. ... Anyway, so since I was three feet tall (I haven't grown much either apparently).. I have had these chemicals applied to my hair about twice a year. It was a ritual, and most importantly, once I moved out of my parent's house, I had to either learn how to apply it myself, to find someone who knew how too. I never applied it myself, let's just get that out there lol I would never trust myself, and would probably end up wasting the product by rinsing it out too early or missing hair sections, or worse burning my hair off! So, basically every time that I moved to a new location, I had to hunt down a hair dresser that could manage my hair. I have tried several along the way, but I have found that no one does a better job with my hair than Dominicans. I can honestly say that I have learned a lot of my Spanish from sitting in these establishments overhearing ...well, not really... they all just talk loud for everyone to hear lol. And i'm sure they thought I couldn't understand, but I took Spanish in high school, AND I grew up in Miami. ....

With Leave in Conditioner (still wet)

So I had a salon back home by my mom's house, I had two in Orlando (which both relocated somewhere I have yet to find my last year there) and in Texas... I HAD NONE!! Zip, ZERO!!!!! Sorry, No Dominican's here!!! So, I did what anyone would do! YOUTUBE!!! I looked up how to style my hair and take care of it naturally but realized that my hair was anything but natural, it literally was all chemically treated. So got a hair cut. At first it was awkward, because I didn't know what to do with it. Then I just decided to gel it - That was cute.

Straightened! a year of growth

Then I decided gel is bad, let my try a leave in conditioner. That was cute, until my hair dried and a was a fro! Then, I decided that my hair needed some good TLC, so I changed my diet, added some supplements, avoided any products that weren't water based and...slowly....My hair grew back!!!! I am proud to say that one year later, my hair is longer than it was before I cut it! Woot Woot!! So now what? Cut it? Grow it longer? How long? Add a bang? Dye it?

I've found myself to be getting more creative throughout the years. Here's a look at some of the diaper cakes I have created with items that I have couponed for. Whenever I had little people around, I had them help out with the diapers and holding the towers so they don't topple over. of course they had to wash their hands every time they touched something that wasn't going on the cake. you wouldn't believe how many times that was. lol I also did these cupcakes once long ago of children in their carriages or just sleeping under a blanket. With little to no kitchen gadgets, I think I pulled it off nicely!! Oh, I should mention that the cupcakes are decorated only with cream cheese frosting and some were vanilla and some were chocolate. YUM!

Chicken Cacciatore with Rotini

Here's chicken dish I made the other day Chicken Cacciatore. It tastes better than it looks, trust me. I have a ways to go with my plating methods. I'm not really sure how to elegantly plate a dish that is so saucy. Any-who here it is! I decided to serve mine over pasta, but I'm sure you could easily serve it with rice, quinoa or any other grain for that matter.It was really a quick dinner since the pasta takes like 5 minutes I just had to focus on the chicken. Have you ever tried those Pasta Portions by Ronzoni? I have become quite fond of them, 1 pouch is enough to feed both Sasha and I... so I guess we are eating a half a portion......It's really quite a bit of pasta per portion - Can you eat a whole pouch?

Who loves Pineapple?

We love pineapple and when it's out of season it really is a bummer, who want's to pay $4.00 for a pineapple? Not me. So I did a little research and found that I could successfully grow one indoors! So this was perfect since I live in Virginia and It'll get really cold here in the next couple of months. The only downside is that the fruit will not be as big as it would be outdoors. The pros definitely outweigh the cons though, I'll have pineapple, I don't have to worry about pesky bugs, the temperature is constant, and I have decoration!

Here's what I did, I bought a pineapple and cut it as usual. I saved the top took off some of the leaves and placed it in a glass of water. Within a week or so I had some roots!

I waited a few more weeks until my roots looked stronger and then transferred the pineapple to a 10 inch pot... or in my case, it's not a pot, but a tin... I decided so save money on buying pots, and up-cycling tins. (remember to poke holes in them so the water can drain properly)

Now It's just in its tin growing and will stay there for about a year until I need to transfer it again. I water it once a week and make sure that it get at least 6 hours of sunlight daily. Here's a pic of my two pineapples, Meet Aladin and Balou

When I transferred them I went ahead and clipped the dry ends off. I'll keep updating on any changes. So far, so good!

The salmon comes out nice and flaky and just melts in your mouth. you could use different kinds of honey to get the flavor that you like best. The salsa is hearty with beans, corn, tomatoes and spinach! You'll definitely get those muscles like Popeye after this meal. Pair this with a glass of Pinot Noir and call it a night enjoy!

Simply Updates

Hello there! So, it has been quite some time since I have updated, it seems that life has a way of getting in the way. Since we spoke I have moved to another state, yet again. Been hired by a massive global company, then left to join another well known company. I have completed that dreadful summer session of my Master's Program, and I have settled, (well mostly), in to my new environment. Before I begin talking about all the new, let me reflect back on the past. I have had the opportunity to meet a lot of fabulous people in my time back in Florida. I was working for the mouse himself specifically in the enchanted castle. Honestly, if you know me and my longing to work for Disney, well, you can understand how excited I was to hear that they had hired me, AND that I would be in my favorite Disney Princess' home. There are some great people working there, kind, always willing to help out the new girl, but mostly hard working. What was the icing on the cake for me was that I was placed in a location where I could practice my French!

So, I left Mickey. I was looking for other opportunities, something that was in my field of learning, and I found one! I am now working with Rosetta Stone! I really enjoy the position that I am in. My degree is in Global eLearning, so I wanted to find something related to that. In the position I am in currently, I have the opportunity to teach students from all over the world, literally. So far I have taught people from Korea, Japan, Brazil, Mexico, the US, and HAITI!! I was most excited to have a student from my own native background. I hope to grow with the company and learn as many languages as I can. Wouldn't that make it much easier when traveling? I think so! :-)

I am currently learning Spanish. I picked this language first because I feel that it is the most used language besides English in my most recent living location .... actually....pretty much all of Florida. So, I picked Spanish. So now when I show at Latin food markets, or go to Latin restaurants I can speak Spanish. It's really exciting to me because usually when I go to these locations, I am always profiled as Latina (although flattering), I am not Latina. Sorry..."No Hablo Espanol" I would say, and then the dirty looks, like, what do you mean you don't speak Spanish? Aren't you Hispanic? ..... No, I am not, BUT, I will speak to you in Spanish once I learn it.... if I think I need to or want to. 'til then English it is!... Or, would you prefer French?

All in all I am thankful that everything happens for a reason. If I had no faith, I certainly would not be where I am today. In the next weeks I plan on writing blog post about my usual randoms. I have started growing herbs, I've seen mountains, I still cook, so there definitely will be foodie blogs, and just snapshots of the things that make me keep my dimples.

Disney Day

We finally got a chance to head over to Disney and check out New Fantasy Land. Although it is still under construction, it is still worth it to check out. While visiting the park Sasha and I took our chances and decided to wait in line to eat at Be Our Guest, the Beauty and the Beast themed restaurant. One the restaurant opened, the line went pretty quickly. We waited in line a whole 30 minutes to enter the castle. Inside was amazing! We had the Croque Monsieur with green bean jardine, Grilled Steak sandwich with pomme frites and of course desert. I had the triple chocolate cupcake, and Sasha had the Strawberry Creme Cheese cupcake. The food was definitely not your typical Disney quick service food, it was hearty, a generous portioned and served on real plates!! the deserts were fancy too, moist cake with creamy frosting.
After Eating we went on to enjoy the rest of the park enjoying our leftovers mid day and then stopping at Gaston's Tavern for LeFou's Brew and a cinnamon roll :-)

Cute Lunch Box Idea

I found the perfect lunchbox! If you are looking for something that is recyclable, microwave safe, leak proof and stylish this lunch box is for you. I am one of those people who wanted to bring lunch to work, but didn't want to just toss my food into reusable plastic bags. I have found that some coworkers will think it is trash and just throw it out... So! with this new lunch container of mine, i'm sure that will not happen.

My new lunch box is called a Bento Box made by laptop lunches. It is cute, slim and has inner containers that can help portion out the appropriate amount of fruits, veggies, meat and grains for a fool proof wholesome lunch. you can purchase them online on their site, or visit your local wholefoods supermarket. You might have to ask an employee for it, because some do not display the item on their shelves. I spoke to an associate, and she told me that she has had her Bento Box for ten years now and loves it :-) So far, no complaints from me, I love it too!!
