So today I will share my Mother&#39;s personal cheesecake recipe.  This is not your normal cheesecake that you cook till you end up with cake. This one is creamy and will make you famous in your own house.  P.S. Don&#39;t spare the nutmeg.&lt;br /&gt;&lt;br /&gt;Mother&#39;s Cheesecake &lt;br /&gt;&lt;br /&gt;2 1/2    Cup  Cinnamon  Honey Graham Crackers&lt;br /&gt;3 Tbl    Sugar&lt;br /&gt;6 Tbl    Butter&lt;br /&gt;&lt;br /&gt;4        Eggs&lt;br /&gt;1  C     Sugar&lt;br /&gt;3  8oz pkgs.  Cream Cheese, softened&lt;br /&gt;1 tsp    Vanilla&lt;br /&gt;&lt;br /&gt;Topping&lt;br /&gt;2 tsp   sugar&lt;br /&gt;1/2 pt dairy sour cream&lt;br /&gt;2 tsp   vanilla&lt;br /&gt;Nutmeg&lt;br /&gt;&lt;br /&gt;1. Crumble cracker; Combine cracker crumbs, sugar, butter and blend well.&lt;br /&gt;&lt;br /&gt;2.  Assemble spring-form pan using flat bottom; pour crumb mixture into pan; pressing crumbs into bottom and up the sides to within 1&quot; of top.&lt;br /&gt;&lt;br /&gt;3.  Beat eggs until light, fluffy; add sugar gradually, beating well after each addition.&lt;br /&gt;&lt;br /&gt;4.  Add softened cream cheese, vanilla, and lemon juice; beat thoroughly.&lt;br /&gt;&lt;br /&gt;5.  Pour into crumb shell; spread evenly.&lt;br /&gt;&lt;br /&gt;6.  Bake 30 to 35 min at 375°.  &lt;br /&gt;Note: Top will not be brown and center may appear slightly underdone at end of baking period.&lt;br /&gt;&lt;br /&gt;7.  Remove from oven; cool about 1 hour.&lt;br /&gt;&lt;br /&gt;8.  Combine sour cream, sugar, vanilla; spread evenly over cake.&lt;br /&gt;&lt;br /&gt;9.  Bake 15 minutes at 400°.  Note: Top will still not be brown.&lt;br /&gt;&lt;br /&gt;10. Sprinkle top with nutmeg; cool, chill.&lt;br /&gt;&lt;br /&gt;11. As I mentioned in a previous post, Chef M as well as being an Internet entrepreneur, is also into regular daily workouts. So you know he works up an appetite.   Usually after his workouts he comes online and we workout in a different manner but he always gives me these wonderful verbal descriptions of what he is having for lunch.  This is the result of one such virtual lunch I had with Chef M.&lt;br /&gt;&lt;br /&gt;  &lt;div style=&quot;text-align: center;&quot;&gt;&lt;span style=&quot;font-weight: bold;&quot;&gt;TUNA SALAD DISH&lt;br /&gt; &lt;br /&gt;  &lt;/span&gt;&lt;/div&gt;   &lt;span style=&quot;font-weight: bold;&quot;&gt;Ingredients&lt;/span&gt;&lt;br /&gt;· 100 grams of tuna&lt;br /&gt;· grated cheese&lt;br /&gt;· tomato ( in 1/8’s )&lt;br /&gt;· Pineapple&lt;br /&gt;· 3 hard boiled eggs&lt;br /&gt;· lettuce (your choice)&lt;br /&gt;· 1 1/2 tablespoons of  light mayonnaise&lt;br /&gt;· peas, corn, carrot, and spinach&lt;br /&gt;·  4 shallots&lt;br /&gt;·  2 sprigs parsley&lt;br /&gt;· pinch of basil&lt;br /&gt;&lt;br /&gt;&lt;span style=&quot;font-weight: bold;&quot;&gt;Method&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;Put your eggs and vegetables on the stove and cook until ready.&lt;br /&gt;&lt;br /&gt;Whilst your eggs and vegetables are cooking, In a large bowl mix your tuna and mayonnaise together&lt;br /&gt;&lt;br /&gt;Cut your tomatoes,  pineapple, shallots and parsley roughly and place into the bowl&lt;br /&gt;&lt;br /&gt;Slice your lettuce into strips place in your bowl and add your pinch of basil&lt;br /&gt;&lt;br /&gt;Mash your hard boiled eggs add them to the bowl and mix all the ingredients together. &lt;br /&gt;&lt;br /&gt;Drain and add your vegetables, mix your grated cheese through mix  thoroughly&lt;br /&gt;&lt;br /&gt;Garnish with a sprig of parsley, cover and place in fridge until ready to eat or serve.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Written by Michael Ferguson&lt;br /&gt;Copyrighted 2005&lt;br /&gt;&lt;br /&gt;Give this one a try. My business partner is a health nut and also loves to cook!  He has been kind enough to give us his favorite rice recipe.  It would be great if he lived closer so I could get the original but Australia and Texas USA are a long way apart instead I asked him for his recipe.&lt;br /&gt; &lt;br /&gt;So, if you want to enjoy some great, healthy and tasty rice for a change, Chef Michael had graced us with his special Fried Rice That&#39;s Nice!&lt;br /&gt; &lt;br /&gt;All I can say is Thanks Michael....&lt;br /&gt;&lt;br /&gt; &lt;br /&gt;  &lt;div style=&quot;text-align: center;&quot;&gt;&lt;span style=&quot;font-size:130%;&quot;&gt;&lt;span style=&quot;font-weight: bold;&quot;&gt;Fried Rice That’s Nice.&lt;/span&gt;&lt;/span&gt;&lt;br /&gt;  &lt;/div&gt;&lt;br /&gt; &lt;br /&gt;· 500 gms jasmine , long or short grain rice&lt;br /&gt;· 3-4 rashes of bacon (finely chopped)&lt;br /&gt;· 4-6 eggs (whisked till light)&lt;br /&gt;· 1/3 cup carrots(diced finely)&lt;br /&gt;· 1/3 cup peas&lt;br /&gt;· ¼ of a pineapple (finely chopped)&lt;br /&gt;· 1/3 cup corn&lt;br /&gt;· seasoning&lt;br /&gt;· 3 tablespoons of canola oil or extra virgin olive oil&lt;br /&gt;soy sauce (optional)&lt;br /&gt;&lt;br /&gt;Wash rice 3 times. Takes the starch of the rice and makes the rice taste better.&lt;br /&gt;When adding the water stick your index finger on top of the rice and fill the water to the first crease in the finger and place on stove.&lt;br /&gt;Turn your stove on max and cover the rice with the lid until it boils for 5 minutes.&lt;br /&gt;Slightly uncover the rice and turn the heat down to just under halfway.&lt;br /&gt;Stir the rice every couple of minutes so it doesn’t stick to the bottom.&lt;br /&gt;Once the water has completely gone your rice is ready. Cover your rice and place in the fridge for at least 1 ½ hours. This will further dry your rice out.&lt;br /&gt;&lt;br /&gt;Steam or boil your carrots, corn and peas until they are just cooked. Turn off and leave to one side.&lt;br /&gt;In your WOK cook off you bacon pieces in 1 table spoon of you oil and a splash of soy sauce if you want soy. Remove your bacon and place to one side.&lt;br /&gt;Without touching anything in your WOK put your eggs into the WOK on medium heat and continually chop through the eggs. They will scramble up quickly so don’t over do your eggs. Then put in bowl and leave to one side.&lt;br /&gt;Then put your pineapple pieces in the wok and cook off until most of the excess juice is gone and put in the same bowl as your vegetables.&lt;br /&gt;&lt;br /&gt;Take your rice out of the fridge put the remaining oil into the wok and place the wok on high heat.&lt;br /&gt;Put the rice into the wok and break it apart as much as possible. Continually stir for 2 minutes then add your bacon. Always stir your rice so it doesn’t burn after a minute add your vegetables, and seasoning.&lt;br /&gt;A minute after that place your eggs in and stir for a further minute.&lt;br /&gt;&lt;br /&gt;Your rice is done. Enjoy. One of the nice things about this recipe is that it makes enough to serve a lot of people and IF any is leftover can easily be saved for another meal or snack. Humm!&lt;br /&gt;&lt;br /&gt; &lt;div style=&quot;text-align: center;&quot;&gt;&lt;span style=&quot;font-weight: bold;&quot;&gt;Picnic Potato Salad&lt;br /&gt;&lt;br /&gt; &lt;/span&gt;&lt;/div&gt; 10 pounds Potatoes&lt;br /&gt;1 cup Celery -- finely chopped&lt;br /&gt;8 each Eggs -- hard-boiled&lt;br /&gt;1 cup Fresh parsley -- finely chopped&lt;br /&gt;2 cups Dill relish&lt;br /&gt;1 1/2 pints Mayonnaise&lt;br /&gt;1 cup Sweet relish&lt;br /&gt;1/2 cup Yellow mustard&lt;br /&gt;2 cups Salad olives -- chopped&lt;br /&gt;Salt -- to taste&lt;br /&gt;2 cups Onions -- finely chopped&lt;br /&gt;Louisiana hot sauce&lt;br /&gt;&lt;br /&gt;Boil potatoes in their jackets. Let cool, then peel and chop into&lt;br /&gt;large chunks.&lt;br /&gt;&lt;br /&gt;Mix mayonnaise, yellow mustard, Louisiana hot sauce, and&lt;br /&gt;salt together.&lt;br /&gt;&lt;br /&gt;Add potatoes, along with the rest of the ingredients,&lt;br /&gt;and mix well.&lt;br /&gt;&lt;br /&gt;You can make this the day before and refrigerate it overnight.
