You can find them in soups, stews, fried or baked. The possibilities are endless, but every time I'm shopping for them, people ask me how I cook them. They are virtually unknown to the Northern hemisphere. A rarity to be eaten in "tostones" at Cuban restaurants.

Here are some of my favorite forms to eat plantains, ripe and green alike:

Plantain soup is a hearty and satisfying way to eat this fruit during cold weather.

Patacones (fried or baked green plantains) are great as a side dish or as a base that can be topped with almost anything, from scrambled eggs to shrimp ceviche. You can also use them instead of bread to make sandwiches.

Maduros

"Maduros" or ripe plantain slices, are a favorite among children of all ages in South America. They are usually served as a side dish. instead of potatoes. They're best when the skin is turning black in the outside, but still firm.

Caramelized plantains are a great dessert. My mom used to make them with "panela" (sugarcane juice), cloves, cinnamon and lime peel. Oh, the memories that brings. How mouth watering!

Caramelized plantains

Here's another classic of Latin American cuisine:

"Platanos asados con queso" (Baked ripe plantains with fresh cheese). These are easy, and oh so good. Just let the plantains ripen until the skins are totally black. Preheat the oven to 350ºF, put the unpeeled plantains on a baking sheet to bake for 30 minutes. Take them out, let them cool for a few minutes, remove the skins and discard them. Cut a slit lengthwise and insert a ¼ inch mozzarella sticks inside. Return to the hot oven for five more minutes, or until cheese melts and browns. These are sure to go well with poultry or meat dishes.

I do, specially with a cup of tea while I blog. But some times that sweet treat will turn into a brick in my tummy, making me feel sluggish the rest of the day.

So I found some quinoa flour at the store, decided to give it a try and came up with a sinfully delicious loaf out of my oven. Mmmm! My husband and my kids love it too. The best thing is that it leavens wonderfully, has a mild quinoa flavor, which is high in protein with all the essential amino acids, and it doesn't spike sugar levels in the blood like other baking mixes do. Besides this recipe has no additives whatsoever, just pure goodness. Try it in the link above, and let me know what do you think.
Have a great day and keep living free.

Si no
Y no estoy

<georss:box>39.917697600000004 -105.4284741 40.1122736 -105.11261710000001</georss:box>

What are Xantan Gum and Guar Gum?

In my previous post I mentioned that I've found two ingredients new to my repertoire and that I didn't feel comfortable eating them. More about them in a moment.

My philosophy on food is to try to eat unprocessed and recognizable ingredients, like those that my great and even my grandmother would recognize. If it wasn't in their shopping list, it shouldn't be in mine. Right? So, I double check the ingredients in every single article I find at the grocery store. I'm amazed at the length of the ingredient list for most articles that line up the isles. And I'm talking not just about the conventional foods. The so called heath foods are also full of additives. Let's take a look to some organic "toaster pastries" (my kids beg me to buy them). Ingredients: Wheat flour, evaporated cane juice, palm oil, evaporated cane juice invert, apples, whole wheat flour, raspberries, strawberries, vital wheat gluten, blueberries, corn starch, sea salt, honey, molasses, colored with betalains, paprika extract (from plants), rice bran extract, citric acid, açai powder, algin, sodium citrate, mono calcium phosphate, whey protein concentrate (milk)

All the above ingredients in bold italic letters, are things that my grandmother would have never thought she could buy or even ingest. some are innocuous like evaporated cane juice invert, is just a
sweeter form of sugar or syrup obtained by heating 2 parts of sucrose
and 1 part water. This makes the sucrose split into its two components,
glucose and fructose. Something that our grandmothers did to make
fondants and other treats. Betalains (is food coloring extracted from beets), algin (is a gum extracted from brown seaweed). Rice bran extract, also known as rice bran oil, is rich in vitamin E. Whey protein concentrate (milk) is the protein contained in whey, the watery portion of milk that separates from the curds when making cheese.

Whey protein is used for improving athletic performance, as a food supplement, as an alternative to milk for people with lactose intolerance, for replacing or supplementing milk-based infant formulas, and for reversing weight loss and increasing glutathione (GSH) in people with HIV disease. Sodium citrate and mono calcium phosphate are preservatives, that help food stay "fresh" longer on the shelf. They are not ingredients that I'll use in a regular kitchen.

Paprika extract is another issue, it's an oil soluble extract from the fruits of Capsicum Annum Linn or Capsicum Frutescens (Indian red chillies). Extraction is performed by percolation with a variety of solvents, primarily hexane.

According to a report by the Cornucopia Institute,
hexane is used to extract oil from grains and seeds, as well as protein from soy,
to such an extent that in 2007, grain processors were responsible for
more than two-thirds of hexane emissions in the United States.
The report also pointed out that the hexane can persist in the final
food product created; in a sample of processed soy, the oil contained 10
ppm, the meal 21 ppm and the grits 14 ppm hexane. The adverse health effects seem specific to n-hexane;
they are much reduced or absent for other isomers. Therefore, the food
oil extraction industry, which relied heavily on hexane, has been
considering switching to other solvents, including isohexane.

As for Xanthan Gum and Guar Gum, found in most Gluten-Free bread-like articles in the store or ready-to-make mixes, this is what I've found: Xanthan gum is a polysaccharide, derived from the bacterial coat of Xanthomonas campestris (the bacteria that causes black spots on broccoli, cauliflower, and some other leafy greens), is used as a food additive and rheology modifier,[2] commonly used as a food thickening agent (in salad dressings, for example) and a stabilizer (in cosmetic products, for example, to prevent ingredients from separating). It is produced by the fermentation of glucose, sucrose, or lactose by the Xanthomonas campestris bacterium. After a fermentation period, the polysaccharides are precipitated from a growth medium with isopropyl alcohol, dried, and ground into a fine powder. Later, it is added to a liquid medium to form the gum.

Guar gum, also called guaran, is a galactomannan. It is primarily the ground endosperm of guar beans. The guar seeds are husked, milled and screened to obtain the guar gum.[1] It is typically produced as a free-flowing, pale, off-white-colored, coarse to fine ground powder. Guar beans are originally from India and Pakistan. According to a Reuters report, India accounts for about 80 percent of the global trade in guar products. It is primarily used as a thickener by the food industry and time-release
agent by the drug industry. Guar gum may be used in beverages, soups,
gravies and creamy desserts -- particularly pudding and ice cream, as it
prevents ice crystals from forming. As a type soluble fiber, guar gum
affects the rate glucose is absorbed by the body and may have some
unpleasant gastrointestinal side effects.

As
you can see, all these gums and additives that weren't on our
grandmother's and great-grandmother's shopping lists might improve the
nutritional value and shelf life of this "healthier" prepackaged foods on paper, but in reality our organism is not ready to digest all this new food paraphernalia, hence we suffer the consequences with bloating, constipation, diarrhea, excessive feeling of fullness, and other side effects.

So what is a parent to do when his or her kids ask for this kind of products at the store and they are at the verge of throwing a fit in the spot?
Just remain calm and explain that this kind of foods aren't good for us
because all the additives, and prompt them to make a better choice,
like fresh fruit or granola with yogurt (make sure is not full of fillers, colorants
and extra sugar). They might not agree right there, but little by little
they will learn what's best.

Have a great day and keep living free!
Hoy

granos? ¿Estamos

Afortunadamente,

Today was grocery shopping day and I've been working on the week's menu. I decided to make one of my favorite traditional dishes from my native Colombia: Ajiaco. At home we call it, "The Soup Of Love," I made it for my husband the first time I cooked for him and he loved it. It's a hearty potato, chicken, and sweet corn soup; garnished with sour cream, fresh cheese, avocado and capers. I make the stock from scratch, with a chicken, onion, carrots, celery, cilantro, bay leafs, salt and pepper. It gives it a more homey flavor that reminds me of my mom and her wonderful cooking. I'll publish the recipe separately.

I want to talk about the challenge of cooking food that is gluten-free (GF), but real. There's a lot of buzz about Celiac Disease and gluten intolerance. Every day I see more articles in newspapers, magazines, the web, books and TV. Restaurants are offering GF menus. It's everywhere. For the last few years, I've noticed the increase in GF products. From pretzels to pasta; a myriad of breads and cookies; even foods that are traditionally GF now carry the Gluten-Free label, like corn tortillas, corn chips and rice cakes.

But what does it mean to consume GF foods that aim to replace wheat, rye and barley, without losing the quality and texture of those grains? Are we falling for the same pitfalls as the Low-Carb Diet? When, sugars were replaced with synthetic sweeteners that later turned out to be worse than the real thing. Or the Low-Fat diet, where saturated fats were replaced by hydrogenated vegetable oils. Now we know how bad trans-fats are for human health. What are these? and where they come from? Xanthan gum is a polysaccharide, it is produced by the fermentation of corn, wheat, or milk whey by the Xanthomonas campestris bacterium.
No

He

Debemos volver a nuestras raíces. Cocinar

My name is Maria, simply Maria, and I'm from Bogota, Colombia. I've lived in Mexico City for more than 1 1/2 years, then moved to the US 10 1/2 years ago. Now I live in Boulder, CO with my husband and 2 kids.

Cooking has been a big part of my life since my grandma, aunt, mom and dad are all great cooks. When I was 13 my mom (she's a single mom) had a small cooking class that she taught from our dining room at home. Later she was catering dinner parties, soon after that she had a cafeteria, then a restaurant. I didn't want to go into the restaurant business, so I went to architectural school. I still couldn't escape the grip of food. I was always helping her and learning how to cook and bake all sorts of foods. When I moved to Mexico (my father lives there) guess what? He also runs a little cooking school at his home! I had the opportunity to savor Mexican cuisine. Yum! Off course I gained a few pounds while there. Upon arriving to the US the adventure continued with the discovery of other ethnic cuisines from around the world like Asian, Ethiopian, Indian and Middle Eastern. Off course I'm aware these are American versions. I still dream of going around the world trying the real thing in each country.

At this point in time, I'm just starting this journey on the web. I want to share my experience about blogging and cooking sinfully delicious and nutritious gluten-free meals with three key concepts in mind.

1. Budget friendly
2. Quick & Easy
3. Natural

I'm sure this will be a challenge, as most of the gluten free products that I find in the stores are pricey, but I want to focus on other alternatives to wheat, rye and barley. In many traditional diets these grains aren't part of them, yet people live well. There isn't a perfect diet, but humans have adapted to a wide range of food sources, and that's what I'm attempting to explore and share with you.

My efforts won't be limited to gluten-free recipes, but rather include a whole new concept about food, or should I say old concept, since in the time of our grandparents food was seen as food, and not as nutrients, like we do nowadays. Michael Pollan gives an excellent report about this in his book "In Defense Of Food: An Eater's Manifesto".

The reason I'm doing this is because I've had some health issues in the past few years and it seemed they are mostly related to what I ate. In the beginning I was clueless as of what was causing me to feel sick. Little by little I realized that it was my diet, especially foods containing gluten. Every time I ate pasta, pizza, sandwiches or burgers, or anything else with gluten, I'd end up bloated, nauseated, in pain and without energy. A few times I ended up in the ER, and the doctors couldn't find out anything wrong with me. Now the question is; If my diet was making me sick, what should I eat? Wheat flour is in everything and everywhere, right? For me eating gluten is a sin and I pay dearly for it, as it makes me feel like I'm in Hell.

I've known for a long time that sugars, saturated fats and processed carbohydrates are bad, and I remember as a child my grandma and mom stressing the importance of eating fresh vegetables and fruits. We'd also have fresh fruit juices with our meals and a little dessert at the end.

Now as a mother of two, sometimes I feel confused as what is the right diet for my children? Should I feed them whole milk or low fat; juice or water; fresh fruit or fruity snacks they find at the store? How can I prevent them from falling into the pitfalls of the public schools lunch? How can I teach them to make the right choices in a world that is full of contradictions and way too many choices? These are just a few of the questions I face everyday. While talking with some of my friends, I can tell they face them too. We are all in this dilemma together. So how come that we still struggle so much to find an answer?

Who is in charge of our nutrition? The government with it's food label regulations? The World Health Organization with their nutrition guidelines? The experts and doctors of nutrition? Or us, with what we put in our mouths? I think the power should shift back to us and our common sense. We should go back to our roots, whatever those roots might be. Cooking from scratch gets rid of unnecessary preservatives and ingredients that we can't even pronounce, but is also a challenge for busy people that need to work and attend all kinds of different activities during the day. Where do we turn to, so we can keep up, and stay healthy? Fortunately in our present world there's a Renaissance of the natural (meaning non-processed or engineered) food, and more and more restaurants offering made from scratch, organic, local, fresh and natural foods are popping everywhere. Still learning how to make some healthy meals can't hurt, and that's why I want to contribute my two cents to the community by sharing my experience in this blog.

The answer to the question, what should I eat, might not come overnight, if ever, but I'd love to hear any input, and would love to learn about your own experience.

You can also find some of my recipes in www.allrecipes.com

Talk to you soon, and have a great day!

Fondly, Maria
