I Am Back!!

Well it has been a long summer and now that I have finally have one child back in school and one working (she's taking a semester off of college) I can finally relax and get back to some me time! It has been a crazy summer! We spent almost everyday at the beach and I worked on my mad shopping skills! I have had so much fun this summer and I am bummed it is almost over. Here are a few of the things we did over the summer.

Great Target Trip

I went to Target with a plan and totally did not stick to it. I was slowly walking through the isles when my

2 yr old son saw the Fruit Roll-ups. "Mommy I need those!" Well of course I caved and after we got home my son told my husband he needed to eat one. "Do you like those?" my husband said. My son looked at him and replied "Yes daddy, I like them and mommy had a coupon for them so it's OK".

I am so proud of him!!

Publix Shopping Trip

After a well deserved vacation, I was rested and ready to shop when we got home. I did a quick trip to Publix on Tuesday to stock up on some little things that where on sale. I was so glad to see that Publix had a lot of their fruit and veggies on sale, so I had to jump on them. I am going to try something new this week with the fruit. I have decided to make my own jam! I am a little scared about it, but I am trying to get in touch with my domestic side!

Frozen Food Frenzy At Publix...LINK UP!!

I had a light trip to Publix this week! My wonderful husband surprised me with a new freezer and told me to fill it!! I have never bought so many frozen things in my life!! I really took advantage of the Edwards frozen desserts and the deal they had on the Skinny Cow ice cream!! My daughter told me "I am a teenager and teenager's feel secure when they can go into the kitchen and have a ton of food to choose from"! Who would've thought that the way to a teenager's happiness is a lot of food to choose from!!

Nuts For Doughnuts!

Every Saturday morning my son and I take our weekly trip to the Krispy Kreme for some mommy and son quality time together. This is his favorite place to go each week and I really enjoy the one on one time we get to spend with each other! I have found a new way to spend quality time with him, teach him cooking skills, and save money. We are going to make our own doughnuts! If you think about it, making your own will not only keep the cost down but you will be able to control what your kids eat. So this Saturday we are going attempt to make this delish treat and learn something new!! These are fried so if you have little kids (like I do) keep them away from the frying process!! Wish us luck!!

Here is the doughnut we are going to try Sat.

Buttermilk Doughnuts

4 1/2 cups flour
1 tbsp baking powder
1/2 tsp baking soda
3/4 tsp salt
Pinch of nutmeg
1/4 tsp cinnamon
2 eggs
1 egg yolk
3/4 c. sugar
1 tsp vanilla
1 c. buttermilk
3 tbsp butter, melted
Fresh Fruit Glaze (recipe follows)

In a large bowl, sift together the flour, baking powder, baking soda, salt, nutmeg and cinnamon.
In the bowl of a stand mixer, or in a large bowl using a hand mixer, beat together the eggs and egg yolk with the sugar and vanilla until light and fluffy, 2-3 min
In a large measuring cup, stir together the buttermilk and butter.
Alternately beat the dry ingredients and buttermilk mixture into the egg mixture, one-third at a time, until all of the ingredients are combined and a dough is formed. It will be soft and sticky
With floured hands, remove the dough to a floured board and gently roll out until the dough is one-half inch thick. Using 2 biscuit cutters (a large one measuring 3 to 3 1/2 inches in diameter, and a smaller one measuring about 1 inch in diameter), cut the dough into doughnuts, spacing the doughnuts as close as possible. Collect the scraps and roll out to form another batch of doughnuts.
meanwhile, fill a deep fryer with oil, or a large pot to a depth of at least 3 inches, with oil, and heat to a temperature of 350 degrees.
Gently place the doughnuts in the oil, being careful not to crowd. Fry the doughnuts on each side until puffed and golden, about 11/2 to 2 minutes on each side.
Drain the donuts on a rack and cool slightly, then frost and decorate as desired.

Fresh Fruit Glaze

Whisk chopped or pureed berries or stone fruit with powdered sugar and a little vanilla
Place donuts on a rack and drizzle

I did ok at Publix. I had a little change in pace this week, I had some family come in from out of town, so I had to buy alot of things with no coupons! Of course this gives me the opportunity to show off my mad cooking skills.... hehehehe!! This week I made Saucy 'Shroom Onion Cheeseburgers and Gourmet Beans. Publix has some of the best recipes and they all kick butt!! Try them and tell me what you think and if you have something good to grill, let me kow. I would love to try it!!
