&lt;span class="Apple-tab-span"&gt; &lt;/span&gt;3.&lt;span class="Apple-tab-span"&gt; &lt;/span&gt;Add dry ingredients to a small bowl, stirring with a whisk to combine.&lt;/div&gt;

&lt;span class="Apple-tab-span"&gt; &lt;/span&gt;4.&lt;span class="Apple-tab-span"&gt; &lt;/span&gt;Add wet ingredients to a large bowl, using a hand mixer or blender.&lt;/div&gt;

&lt;span class="Apple-tab-span"&gt; &lt;/span&gt;5.&lt;span class="Apple-tab-span"&gt; &lt;/span&gt;Add dry ingredients to wet ingredients and continue mixing for 2 minutes. It may seem like a long time, but it results in an airier cake.&lt;/div&gt;

&lt;span class="Apple-tab-span"&gt; &lt;/span&gt;6.&lt;span class="Apple-tab-span"&gt; &lt;/span&gt;Evenly divide batter between the two prepared pans or one bunt cake pan.&lt;/div&gt;

&lt;span class="Apple-tab-span"&gt; &lt;/span&gt;7.&lt;span class="Apple-tab-span"&gt; &lt;/span&gt;Bake for 30-40 minutes for the two 9-inch pans. Bunt cake pan will require 45 minutes.&lt;/div&gt;

What an amazing few weeks I've had. 3 weeks of Bloom Natural Health treatments and here are my results so far.&lt;br /&gt;

Filled with low points, mental clarity, progress, opportunities, and super highs! I am finally feeling like I'm breaking through the walls. The more I learn about health and connect with others around me in the wellness industry, the more excited I become to continue down this road to a better me.&lt;br /&gt;

&lt;b&gt;The Low&lt;/b&gt;&lt;br /&gt;
If anyone has struggled with hypothyroidism, hormonal imbalances and a variety of health problems knows the mental breakdowns that go along with them. I have kept these to myself for the past year is not more, thinking that it was just some sad moments. I'm thrilled to have identified these sad thoughts to a depression state. Turns out hypothyroidism, hormones, B vitamin deficiencies and other health issues can trigger and cause depression. What do you do now after identifying the problem? You get a "Skinny Shot" of B-12, B-6 and MIC. Well hello happy Kikki! I was bouncing off the walls, happy thoughts and my energy levels were back up. I could not believe I felt so good!&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Mental Clarity&lt;/b&gt;&lt;br /&gt;
Once realizing what it felt like being energized and happy again, I didn't want to let go. I wanted to feel like this for the rest of my life. With my answers right there on paper, clearly pointing to why I had weight gain, lack of energy, depression and several physical symptoms, I knew my only choice was to GO BIG OR GO HOME. I was all on board and ready to pay anything to feel healthy again. The feeling of relief of knowing what's wrong with you and that it's all treatable, was the best thing I could have ever asked for. Now the challenge is keeping my mind happy and on track so that it continues to tell my body that everything is "OK". Hell acupuncture and energy work to aid in this area. ;)&lt;br /&gt;

Today marks my 3 weeks of Bloom treatment and I've come a long way. Not only are there less low points, but my mind is staying in a positive frame majority of the time. My hair is more vibrant, thicker, natural curl coming back, softer, skin is less dry and more vibrant, nails are thicker and growing rapidly, hands are less orange, sweating more when I workout and appetite is increasing. I am vibrating more positive energies, which is attracting positive people and occurrences. I am a firm believer that what you put out there, you will receive back. That being said, I most certainly have to continue to push out the positive vibes. I have many people to thank because without their support and constant love, I would still be struggling. My family (specifically my mom), my close friends (Joe, Amy, Haley, Kathy, Rochelle) &lt;br /&gt;

Work, social, relationships, etc. Need I say more. ;) They are knockin'. I'm getting lucky, winning things, making progress with hindering projects. This is causing a good mood overall. &lt;br /&gt;

I have been addicted to my doctors podcast this past week. My brain just can't get enough. From her health tips, food insights and expanding your knowledge for a better life, you'll love her podcast.&lt;br /&gt;
&lt;br /&gt;
I just finished listening to "The Miracle Morning with Hal Elrod" and he talks about his life struggles and how he overcame them and made his life more amazing than ever before. I absolutely love connecting with people and his story touched me. He never gave up and just kept fighting and making his life better from his downfalls. Hal is a life/success coach and a book writer. At the age of 19, he was a successful salesman and was on top of the world. He was driving home one night and was hit by a drunk driver, broken bones, died for 6 minutes at the scene of the accident and survived, was walking out of the hospital after 4 weeks. He then fought through this and took up from where he left off in his sales career. He became a life coach, book writer and was a success with his words of motivation. Buying his first house and feeling great about life. His next rock bottom was in 2007 when the economy crashed. He lost 1/2 his clientele overnight and spiraled into a deep depression. He was so beside himself because how can a life coach be depressed. It was against his entire lifestyle. He ended up loosing his house to the bank but picked himself up with starting the miracle morning. He would get up in the morning and have his "me" time, think positive and do what he loved; run, read, anything. He decided to dedicate time every day for his personal development. He found time in his schedule in the morning, so he began his morning at 6am, then 5am, then 4am and he felt amazing. He found his inner motivation back and flipped his life upside down. He wrote the miracle morning book to help others find their personal development in the morning as they wake up. To start every day on a positive note. He stated "If you want your life to be different, you have to be willing to do something different first." &lt;br /&gt;
&lt;br /&gt;
So you ask me, how did it resonate?&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;My life struggles/successes have been a domino affect these past 3 years.&amp;nbsp;&lt;/b&gt;&lt;br /&gt;
1. My divorce back in 2010 was and still isn't easy for me. With financially supporting myself and my mortgage, the amount of time and money that has gone into my lawyers and the extremely slow court system still trying to resolve conflicts, after over two years....the end is still not in sight. However, the divorce was the best decision I could have ever made for myself.&lt;br /&gt;
&lt;br /&gt;
2. My career has been growing slowly and there have been many rocky roads, however the downfalls and stressful times have always resulted in a better outcome and promising future.&lt;br /&gt;
&lt;br /&gt;
3. Relationships have been non-existent for the most part and if present...they crash and burn. I think that's enough said.&lt;br /&gt;
&lt;br /&gt;
4. I started Skinny Weighs and found a new love for myself and an entertaining hobby. I have a new found passion for cooking, healthy lifestyle, eating for a reason and not just social habit.&lt;br /&gt;
&lt;br /&gt;
5. Connecting with my inner self and health.&lt;br /&gt;
&lt;br /&gt;
6. Gained 20lbs back and struggled with the reason of "why" for 8 months. Doctors and specialists ignored or missed the signs in my symptoms and blood work and I fell into a depression. I supported a healthy, nutritious lifestyle and mine was spiraling out of control with no answers. I could not stand behind my label and was embarrassed at my failure. I knew this had to be another test, another phase, another chapter to tell. There was a brighter side because I KNEW I HAD TO BE HAPPY AGAIN!&lt;br /&gt;
&lt;br /&gt;
7. Car accident. About 5 weeks ago I was rear ended while at a complete stop on the freeway in rush hour traffic. The other driver was going about 45mph and just wasn't paying any attention. I blacked out briefly, ended up having a concussion and after the headaches and pain wouldn't subside...I went to go see a doctor. After x-rays, the impact was so hard on my spine and head that my neck was bent the other direction. I struggled with headaches for 5 weeks and still going. The final diagnosis is still evolving and I am waiting to hear back to see if I have permanent damage, ligament laxity. It's been 5 weeks of sleepless nights, pain and numerous doctors appointments and chiropractic care. However, I walked away from the accident. :) I am blessed in many ways. &lt;br /&gt;
&lt;br /&gt;
8. Financial. I was blessed to have sold some personal things from my marriage and was able to make a few thousand this month helping relieve me of some financial stress with having the mortgage as a burden. I am what you call house broke. I go out...when it's free! Even with this positive financial relief, I was still up in arms with my health struggles. I said enough is enough. I don't care what the doctors say, my thyroid numbers look off and I will find a doctor who will do the entire panel of thyroid testing and get to the bottom of this. No one gains 20lbs in 6 months without a medical issue...unless they aren't keeping an active lifestyle or eating the right foods in their calorie range.&lt;br /&gt;
&lt;br /&gt;
9. Dr. Lo at Bloom Natural Health. I knew this wasn't going to be cheap but I needed someone to know what I'm going through and that would have answers. If you read my post before this, you already know, she instantly said I have thyroid problems and she asked for numerous blood panels and other nutritional tests. She knew exactly what I was going through! I cried on my way home form her office. It was a weight lifted off my shoulders. I go in for blood work tomorrow and I can't wait for my follow up appointment with her to start a treatment plan.&amp;nbsp; &lt;br /&gt;
&lt;br /&gt;
10. My sick weekend and the paleo diet with Dr. Lo Radio. After I came down with the flu this weekend, I decided to spend several quality hours to myself...listening and listening and some more listening to Dr. Lo Radio. Researching online and coming to many conclusions...I know the paleo diet was the best choice with my hormonal and thyroid problems. Even if I hadn't received my final diagnosis yet...I knew it was true. I had been telling my old doctors for 8 months now that it had to be my thyroid. Well, I am not going to dwell in the past any longer and I started today off with the sun shining, the grass greener on my side and paleo diet in my kitchen. I'm not a fan of meat...so bare with me. :) Everything happens for a reason. There was a reason why I've had all this happen to me within the past 2.5 years and I am still going strong.&lt;br /&gt;
&lt;br /&gt;
An enormous thank you to Dr. Lo, her podcast and her guest Hal. Today started a new day for me. &lt;br /&gt;

We need to step out of that when we wake up in the morning. Who cares what happened yesterday...start the morning off new! &lt;b&gt;The result of who you were, not who you are...but where you go, depends entirely on who you choose to be.&lt;/b&gt;&lt;br /&gt;

The idea that 95% of our society are not living the life they really want. Many of you hopefully saw my post about &lt;a href="http://www.skinnyweighs.com/2012/12/the-truth-about-stevia.html" target="_blank"&gt;Maltodextrin&lt;/a&gt;. This was just the beginning of the struggles I have gone through the past 6-8 months. From over training, physical changes, hormone issues, possible thyroid complications and no help from my doctors...I've gone through one hell of a shit storm. Excuse my language but this is the nicest way I can express my feelings about this.&lt;br /&gt;
&lt;br /&gt;
This is very difficult for me to talk about but there are so many others out there going through the challenges I've hit and I want them to know that they are not alone. I'm embarrassed, frustrated, at wits end and down right saddened by what has happened. To admit this is disheartening and I've felt like a failure to myself and my lifestyle. Here goes...I've gained 20lbs in 8 months. I am no way over weight but I am not happy with myself. I feel lack of energy and sick in many ways. So many times I went to my doctor and said that there must be a medical explanation for this. I eat healthy, eat my calories, workout, etc. so how can I put on that many pounds in such a short amount of time and not changing a thing about my eating habits. I had so many gaps, so many pieces missing in the puzzle and way too many unanswered questions.&lt;br /&gt;
&lt;br /&gt;
Hours and hours of online researching, lab tests for 8 months, watching symptoms and my moods change. I'd follow up with my doctor asking more questions, needing direction, answers. You could imagine my frustration when they had nothing for me. Nothing but....you should go on birth control. That will "fix" your lack of hormones and it will reverse your osteopenia. Oh great!!!!! Just what I wanted...a pill that would solve all my issues and make me feel absolutely nuts and sick. Yes, please...put me on birth control. NOT! Such a bad idea and not a healthy choice. I rejected and pushed them to run more tests. Thinking...there is way too much going on...it must be a web of complications making my body wreck havoc. Now, I was even more beside myself when they refused to order more blood work. They only would do the bare minimal, which didn't show everything. Why only get 2 our of the 5 thyroid tests done? And when there were a few abnormalities, they just said...."it's "ok" to be slightly low or high." Sigh.&lt;br /&gt;
&lt;br /&gt;
My next step, as clothes became tighter, was to seek out a doctor that understood. So, I decided to go see a Homeopathic 
Naturopathic doctor. This is by far not cheap and definitely not covered
 by insurance. My steps lead me to &lt;a href="http://www.bloomnaturalhealth.com/" target="_blank"&gt;Bloom Natural Health&lt;/a&gt;, a clinic in Encinitas, CA that specialized in my many health issues. After a 1 hour appointment with Dr. Noel, I cried as I drove home with a feeling of relief and hope for my life and health back. She not only heard everything but understood it and saw so many obvious issues with me. From my symptoms (dry skin, orange skin color, joint pain, lack of energy, puffiness, etc.) to my basic blood work, she automatically saw that I was B-12 deficient, highly possible thyroid problems (hypothyroidism), several hormone imbalances and the link between all. She ordered four more tests and an extensive hormone and thyroid panel of blood work for me to get down to the nitty gritty. For 8 months I've been telling my doctors this and it took Dr. Noel 1 hour to identify it. Finally a doctor who listened and saw between the lines. I'm still emotional about this and I haven't even started treatment. I will be getting blood work next week and I have my follow up appointment March 7th for my treatment plan. I cannot tell you how excited I am about this. She even ordered labs on food sensitivities. &lt;br /&gt;
&lt;br /&gt;
Dr. Noel also gave my her podcast Dr Lo Radio. I have never listened to a podcast and I am addicted. I will go walking for an hour and just listen to her show. I am learning amazing new things about health and food. I am always ready to learn more about nutrition and how food can be your medicine. I have gone through several phases of breaking down my food the past 3 years and getting rid of all refined, processed and unhealthy foods from my house....now I am going through it again when it comes to the little stuff on the labels. It's about getting to the root cause and eliminating more and more of the toxins in our lives. That being said...here's just a sneak peak of what I have learned.&lt;br /&gt;
&lt;br /&gt;
I limit &lt;b&gt;Stevia&lt;/b&gt; and all &lt;b&gt;natural&lt;/b&gt; &lt;b&gt;sweeteners&lt;/b&gt;&lt;br /&gt;
I buy &lt;b&gt;organic&lt;/b&gt; foods almost 95% of the time&lt;br /&gt;
&lt;b&gt;Natural&lt;/b&gt; doesn't mean it's good for you&lt;br /&gt;
All non &lt;b&gt;GMO&lt;/b&gt; products&lt;br /&gt;
&lt;b&gt;Soy&lt;/b&gt; products aren't that healthy for you. I don't want to be smacked but let's be honest...soy does more harm than good. &lt;br /&gt;
When looking at &lt;b&gt;supplements&lt;/b&gt;, if they say "&lt;b&gt;copper&lt;/b&gt; &lt;b&gt;oxide&lt;/b&gt;", "&lt;b&gt;magnesium&lt;/b&gt; &lt;b&gt;oxide&lt;/b&gt;", "&lt;b&gt;zinc&lt;/b&gt; &lt;b&gt;oxide&lt;/b&gt;"...that means your body doesn't absorb it. Anything with the "oxide". You just pee it out so you're really not getting a supplement that is doing anything for you. You'll only get a % of it. Now, when your body already has enough of that vitamin, you will pee out the extra. However...the oxide "vitamin" can't even be absorbed by the body. So in essence...the supplement is a waste of money.&lt;br /&gt;
&lt;b&gt;Carrageenan&lt;/b&gt; is in most almond, soy, rice milks and you have to be careful when buying products with this in it. You can find this in several products, so beware. I just found it in my calcium supplment.&lt;br /&gt;
&lt;b&gt;Gums&lt;/b&gt;, &lt;b&gt;Xanthan&lt;/b&gt; &lt;b&gt;Gum&lt;/b&gt; and &lt;b&gt;Guar&lt;/b&gt; &lt;b&gt;Gum&lt;/b&gt; acts like a fiber in your system and will gum up the food and not in a good way. Your body needs to be able to get the nutrients from that food before it gets "eaten" up by a "gum" in your gut. &lt;br /&gt;

Lightly oil foil on a baking pan, lay out cubed butternut squash and spray with extra virgin olive oil or coconut oil. Sprinkle with salt and pepper and roast in over for 30-40min at 400F. If your cubes are larger, they will require a longer roasting time. Once done, puree in mixer with broth and applesauce. You can add to sauce pan to reheat but the temperature should be perfect with the cooling of the broth. &lt;br /&gt;

So curious...anyone ever feel like there was one guy/girl who got away? That there was a miscommunication somewhere and it just slipped right past your fingertips before you knew it? My mom and I always talk about this one guy that was the "one" that got away. I talk to this guy perhaps two-three times a year via text message but only as friends. We are very cool with one another and in the back of my head I always think...what is he thinking? Then I smack myself and say...it will never be Kikki because he doesn't make a move. If he wanted you...he would have already made his move when he knew you were single. The sad thing is that this "miscommunication" we had was all because my GF stole my cell phone and texted him a question trying to protect me. Agh. I should have just told him the truth at that point but I didn't want him knowing that my GF was that informed of our relationship. He in turn said that he didn't feel I was reading for a serious relationship. Water under the bridge but I do think sometimes he got away. It might or might not have ever come to anything more but I wanted a fair chance to see for myself and take the journey. Reason why I reminiscing on this now is because I had a dream the other night about him and we bumped into one another and sparks started to fly again and we began a new relationship once more. Ahhhhh dreams. For now I will just dream of Mr. Right and continue on living life to the fullest. &lt;br /&gt;

A little news...I have someone very special in my life. Meet Kris, my &amp;lt;3 I must admit that he is the sole reason why I have been slightly absent of my blog. What's so amazing is that he loves my food and will eat anything I feed him. Only thing he asks is that I don't tell him what's in it. So, when I make him an omelet, I won't tell him I added flaxseed or when I make his oatmeal's, I won't tell him those are chia seeds or even when I make him smoothies or waffles, the "green stuff" isn't macro greens and I neglect to tell him there is psyllium husk in that delicious smoothie and he will be all cleaned out in no time. ;) &lt;br /&gt;

I've wanted to make protein brownies for some time now. YAY! I finally got around to it. I made three batches. The first one was too dry, the second one was delicious and the third was Pumpkin Pie Protein Brownies. :) I love when I make a recipe and dance around while eating them...then dance some more when others enjoy it. It totally makes my day! Now, I need to share these. I love the lightness and the fact that they are only 30 calories a square and the rich dark chocolate taste. I'm a sucker for 100% dark chocolate. Makes my tummy very happy!&lt;br /&gt;

Happy Friday and November all you Skinny's!!!! Now, the reason for my recipe...My dear friend Rochelle is finally back home in SD for a few months until she moves again back to Arizona. :( I've never been able to share my Skinny Weighs with her and was finally given the chance to the other night. We went to a Halloween party and she crashed at my place afterwards because it was a late night. I offered her tea and she said "yes please. Anything apple would be awesome". So I made her my "&lt;a href="http://www.skinnyweighs.com/2012/04/hot-mother-apple-cider.html" target="_blank"&gt;Hot Mama&lt;/a&gt;" knowing she would appreciate the heath benefits of it because she is in the health profession. She loved it and asked for the &lt;a href="http://www.skinnyweighs.com/2012/04/hot-mother-apple-cider.html" target="_blank"&gt;recipe&lt;/a&gt;. :) She then was excited to try my famous green machines come the next morning, which I made my delicious "&lt;a href="http://www.skinnyweighs.com/2012/10/classic-green-machine-protein-waffles.html" target="_blank"&gt;Classic Green Machine Protein Waffles&lt;/a&gt;". After her green machine protein waffles...she asked fer the recipe and where to buy the macro greens! She couldn't wait to share with her sisters, who eat healthy and stay away from gluten. She said..."I could eat these every morning" and I replied...I pretty much do! LOL&lt;br /&gt;

Of course, the fun didn't stop there. The girls tried my &lt;a href="http://www.skinnyweighs.com/2012/09/cranberry-orange-oat-bars-vgf.html" target="_blank"&gt;Cranberry Orange Oat Bars (V/GF)&lt;/a&gt; and each gobbled a few up. One of my favorite, healthy, sweet and low calorie treats! I'll have to bring some to the next party! :)&lt;br /&gt;

Propped my computer on my aero bars and went to town yesterday while I was working from home. My boss actually gave me the idea and it worked! This technique resulted in 50 miles of riding. WOW! Insane and I was exhausted by the end of the day...but felt amazing nonetheless. I must do this again. &lt;br /&gt;

After burning tons of calories, I figured I branch out a bit from my green machine protein waffles and make some vanilla protein waffles. LOL Ok, not much of a branch but I'm so glad I made these because they were absolutely to die for. A nice change form my chocolate and green machine....light and perfect with raspberry sauce on top. These were delicious. Now if only I could sneak in my macro greens without changing the taste and making them green (I wish). &lt;br /&gt;

To top it off, I dressed up at my office and will be celebrating in the Halloween spirit tonight for the little kids. Such a nice change! &lt;br /&gt;

Slightly grind spelt flakes in coffee grinder so they are nice and chunky little pieces. This will help them soak in the moisture better while cooking. You can substitute rolled oats as well. Grind red lentils in coffee grinder to make flour. Soak goji berries in a small dish with water to soften before adding to mixture. Do not add the water that you soak the berries in to the final mixture. ;) Toss
 everything into a bowl and mix well. Lightly coat oven safe dish with 
coconut oil and poor in mixture. Bake
