This recipe has quickly become a family favorite. It's super easy to throw together in the crockpot, and after few simple steps you have a wonderful home-cooked dinner. Also, according to my children, the leftovers are awesome (they actually fight over who gets it). One of the few times that they will actually eat leftovers.

With just a handful of ingredients this recipe is an easy and delicious meal. It's great for the summer since you throw it into a crockpot and forget about it until dinner. Then just a couple simple steps to finish it up and serve.

Chicken Bacon Ranch Sandwiches

2 pounds of boneless skinless chicken breasts

8oz package of cream cheese

8oz package of chive and onion cream cheese

3 or 4 tablespoons of dry ranch mix (or you can use 2 packets)

3 or 6 ounce package of real bacon bits or pieces, depending on how much you want in it (or you can cook 10 ounces of bacon, then break it into pieces)

1 or 2 cups of shredded colby jack cheese

6 bakery rolls or buns

Spray the inside of your slow cooker with non-stick cooking spray. Place chicken in the bottom of the slow cooker.

Using a medium sized bowl, combine the cream cheeses. Depending on how soft they are, you may have to heat them up in the microwave to make it easier to mix. Add the dry ranch and bacon bits and mix well. Spread the mixture over the top of the chicken in the slow cooker.

Cook on low for 6 to 8 hours, or on high for about 4 hours. Keep an eye on it that it doesn't over cook.

Shred the chicken with some forks them mix everything well. I try to do this at least a half an hour before serving so that the shredded chicken can absorb the flavors.

Serve the chicken on rolls and top with the shredded cheese. If you want to help the cheese melt, as well as warm up the rolls, place in the oven under the broiler for 30 seconds to a minute. Watch it closely so it doesn't burn.

Enjoy. :)

This has been such a wonderful recipe, I hope you enjoy it as much as my family has. :)

Personally I've been stocking up on blackberries, blueberries and raspberries. My family and I enjoy using them in smoothies. Luckily I have a blackberry bush in my backyard that has been producing a ton of fruit. Only took a few years for it to become productive. Lol.

After I have cleaned the berries, I arrange them on cookie sheets, sometimes I line it with wax paper. I try to get them as close together without them touching. Then I place the cookie sheet lined with berries in the freezer. I leave it in freezer for an hour or two, until they are frozen solid.

Once they are frozen, I take the berries off the cookie sheet and place them in freezer bags. I make sure I label the bags with what's inside and the date. By doing it this way I don't have to worry about the berries freezing in large clumps. Makes it so much easier getting the amount I need out of the bag to use for smoothies or other recipes.

Thanks for stopping by. If you have any favorite recipes using berries please share them... I have a feeling I'm going to have ton of them to get used up. :)

My Little Fairy Garden

So a couple months ago, my daughter and I decided to put together our own little fairy garden. I had been collecting items for it for quite awhile. The little skeleton guys, and Halloween decorations I bought last year at some craft stores. When it finally warmed up enough outside I went to a local nursery to get the plants.

The metal tub I used for it I found in my storage room. It was from a Christmas gift basket we had received many years ago. I was excited to repurpose it in this project. Before we put the dirt in the tub, I drilled about 6 small holes in the bottom of it for drainage.
After we had it filled with dirt we started planning out where we wanted the plants and big decorations (like the skull house, and little pond).
Some of the plants we used were....

Scotch moss

Mini blue lavender

'Vampire' Maiden Pink

Yellow archangel

Succulents

We used some black rocks and sand for the little trail/walkway. For the pond we used turquoise colored clear stones that have a little glitter on them.

It was a really fun project to do, and I look forward to doing it again.
