&amp;nbsp; I&#39;m a mother of 4. I love my littles immensely, but life with 4 kids is no joke. My husband works a good deal and so much of the responsibilities of the house fall to me. As he put it recently, I spread myself very thin. There&#39;s the kids, the house, cooking and cleaning. Some people go to the gym, or lace up running shoes every day, some people zone out with their headphones or get lost in books for hours at a time. I&#39;m lethally allergic to exercise (seriously. it KILLS fat cells!), my knees can&#39;t handle running, I can&#39;t listen to a full length song with headphones without someone asking me a question, and the same goes for books, though I do adore reading, I just can&#39;t seem to find the quiet time or headspace to really dig into a meaty read lately.&amp;nbsp;&lt;/div&gt;

&amp;nbsp;I do craft. Those all have their creative places in my life, but there&#39;s just something about putting pen to paper (fingers to keys?) that has always been a relief for me. I can read, reread, edit, and finally sit back and look at a cohesive thought, process, story, or the like that actually makes SENSE! And not much in life makes sense, if you ask me. We&#39;ve had some big changes in our home and even more are in the works. My husband changed jobs after 10 years and the new job is moving us to a new area. I&#39;m&amp;nbsp;very excited about the move, and ready for a change of scenery. The area we&#39;re migrating to has more natural shopping options and is a city hub. It&#39;s going to be a big change from the rural setting we&#39;ve been living in, but we&#39;ve thrived in the city before and we will do it again!&lt;br /&gt;
&lt;br /&gt;
&amp;nbsp;In the meantime I&#39;ve been trying tons and tons of &lt;span style=&quot;color: #38761d;&quot;&gt;SNEAKY&lt;/span&gt; experiments! I&#39;ve made another batch of laundry detergent, worked on perfecting my dishwashing powder, made, used (and not stunk!), and enjoyed homemade deodorant, concocted the most scrumptious chewy granola bars, attempted calcium powder using farm fresh eggs, and subsequent homemade toothpaste (FAIL!) using said powder. All in all it&#39;s been a productive couple of months, and I am looking forward to sharing my experiences with you. &lt;br /&gt;

Add to that the seasonal sicknesses that infiltrate a home of 6, regular housework, cooking, keeping up with 6 pets (we&#39;ve aquired a random dog who eats Bella&#39;s food and sleeps on her mat),Hubby transitioning to his new job and well... I&#39;ve had so much going on in live that I&#39;ve had little time for personal ventures. Today is actually the first time I&#39;ve sat down on the &quot;big&quot; computer since... ummm... well, I honestly can&#39;t remember.&lt;br /&gt;

Tomorrow will be my big boy&#39;s first day back to school after Christmas vacation. We&#39;ve had a fun time and I am honestly going to miss him being home. Since today is our last day together I wanted to do some fun things and celebrate his return to structured education, rather than sending him grudgingly. So we had a back to school bash breakfast!&lt;/div&gt;

Anytime I have a question, she&#39;s always there for me with an answer. I might have to fact check her every now and then, but usually she&#39;s spot on. She is a bit of a gossip, but I can look past that as her sheer awesomeness outweighs her gossipy nature.&amp;nbsp;&lt;/div&gt;

She obviously doesn&#39;t realize it&#39;s January, and in the 40s. No go. Then she recommended a toaster oven. HA! What part of &quot;without an oven&quot; didn&#39;t she understand?! Then... a ha... success! She recommended I try my waffle iron. I was totally up for the challenge!&amp;nbsp;&lt;/div&gt;

It was as simple as making waffles, took a little less time actually, and the result was beautiful! A very thing crispy outer coating, just like browned cinnamon rolls, fully, soft insides, and the waffles indentations on top were the quintessential icing pockets. I don&#39;t think I&#39;ll ever make cinnamon rolls in the oven again. These were done in under 5 minutes, even though I had to do 2 batches!&amp;nbsp;&lt;/div&gt;

We already have chosen to go microwave free, so adding no oven to that mix felt disastrous at first! If I had leftovers to reheat I would pop them in the oven. Need to crisp something up? Oven. Baked ziti, lasagna, casserole, cornbread, muffins, french toast sticks. Oven, oven, oven. Needless to say I&#39;ve had to improvise quite a bit. I actually reheated a slice of pizza on the stove. So now, I&#39;m sharing my lightbulb moment with you.&lt;br /&gt;
&lt;br /&gt;
SWAP QUINOA FOR RICE!&lt;br /&gt;
&lt;br /&gt;
It&#39;s really that simple. While it does take longer than instant rice, 10-15min, it&#39;s a higher quality grain. It&#39;s also an easy way to add some variety to your family&#39;s diet. &lt;br /&gt;
&lt;br /&gt;
Here&#39;s what I&#39;m making.&lt;br /&gt;
&lt;br /&gt;
Hamburger Broccoli Casserole&lt;br /&gt;
&lt;br /&gt;
14oz portion Cream of Something soup &lt;br /&gt;
1lb grass fed ground beef&lt;br /&gt;
1 onion, chopped&lt;br /&gt;
6 cups frozen broccoli, prepared&lt;br /&gt;
1 cup uncooked quinoa&lt;br /&gt;
2.5 cups bone broth&lt;br /&gt;
1tsp Italian seasoning&lt;br /&gt;
1Tbs liquid aminos (or soy sauce)&lt;br /&gt;
1/2 tsp onion powder&lt;br /&gt;
1tsp salt&lt;br /&gt;
1/2 tsp black pepper&lt;br /&gt;
&lt;br /&gt;
Combine 2 cups of the bone broth with the quinoa. Bring to boil, reduce heat, cover, and simmer for 10-15min. Mean while brown ground beef and onion in a medium skillet. When the onions and beef are cooked through drain, and then add the COS soup, spices, liquid aminos, and quinoa. Layer broccoli in bottom of a large casserole dish and top with beef/soup mixture. Sprinkle grated Parmesan on top and bake at 425 for 15-20 minutes, until hot and bubbly. Enjoy!!&lt;br /&gt;

Today is my Luke&#39;s 5th birthday. Five years ago today I became a mother of 2. A mama of boy(s), plural. A mother to one blue-eyed blondie, and a brown-eyed brown-haired daddy-look-alike. Last week I was in the ER. Last night my baby girl decided to wake up as I was going to bed and not fall back to sleep until 4:30 this morning. So on two hours of sleep I dressed my big boy, sent him off to school, rinsed dishes, washed laundry, made a run to the store for toilet paper and a new broom, picked the big boy up from school, read 2 books with the kids, dressed the big one for football, sat through 2 hours of football practice with the other 3 kiddos, endured non-stop screaming from baby-girl on the way home, and finally I have spent the last 2 hours with her waking up and screaming, falling asleep, waking up and screaming, and finally falling back asleep.&lt;/div&gt;

I feel a bit silly writing about this as I wound up in the ER on Monday afternoon because I was sick. I was under the weather for a few days, but Monday I grew progressively worse throughout the day. I had a horrible coughing fit that led my throat to swell and I was having difficulties breathing. After running the kids to the neighbors house {thank God for good neighbors!} the hubby took me to the ER.
