Zet het vuur matig en  bak de scampi één minuut aan iedere kant. Door ze zeer kort aan te  bakken zijn de scampi nog rauw vanbinnen en kun je de roomsaus maken in  dezelfde pan vooraleer de scampi taai worden.&lt;/li&gt;&lt;li&gt;Blus de pan met de witte wijn en het water en roer het aanbaksel goed los.&lt;/li&gt;&lt;li&gt;Voeg de kreeftenbouillon en de tomatenpuree toe.&lt;/li&gt;&lt;li&gt;Laat de saus tot de helft inkoken en voeg dan de room toe en laat de roomsaus tot kookpunt komen.&lt;br /&gt;&lt;/li&gt;&lt;li&gt;Bak de zeekraal zeer kort op hoog vuur in een aparte pan en meng dan onder de saus.&lt;/li&gt;&lt;li&gt;Kook ondertussen de farfalle gaar en serveer.&lt;br /&gt;&lt;/li&gt;&lt;/ul&gt;&lt;div class="blogger-post-footer"&gt;&lt;img width='1' height='1' src='https://blogger.googleusercontent.com/tracker/4540257898023810477-7337871552464861499?l=123snellerecepten.blogspot.com' alt='' /&gt;&lt;/div&gt;

Zet het vuur op tijd zachter zodat de boter niet verbrandt.&lt;/li&gt;&lt;li&gt;Zodra het vlees een goudbruin korstje heeft, leg je het in een ovenschotel. Laat het vlees 5 minuten verder garen in de oven.&lt;/li&gt;&lt;li&gt;Fruit de sjalotten in de pan waarin je het vlees hebt aangebakken. Laat ze lichtbruin kleuren.&lt;/li&gt;&lt;li&gt;Schenk wat cognac in de pan en flambeer (dampkap uit!).&lt;/li&gt;&lt;li&gt;Giet de rode wijn in de pan en de rundsfond.&lt;/li&gt;&lt;li&gt;Kruid met peper en zout en laat enkele sudderen.&lt;/li&gt;&lt;li&gt;Haal het vlees uit de oven en laat het even rusten onder zilverpapier, zodat de braadsappen zich mooi kunnen verdelen.&lt;/li&gt;&lt;li&gt;Serveer met de waterkers en eventueel frietjes.&lt;br /&gt;&lt;/li&gt;&lt;/ul&gt;&lt;div class="blogger-post-footer"&gt;&lt;img width='1' height='1' src='https://blogger.googleusercontent.com/tracker/4540257898023810477-7345131268210685174?l=123snellerecepten.blogspot.com' alt='' /&gt;&lt;/div&gt;

Snijd in kleine stukjes.&lt;br /&gt;&lt;/li&gt;&lt;li&gt;Maak het sausje voor op de komkommers: klop wat room op tot hij mooi dik maar nog lopend is. Roer alles goed om tot een tapenade. &lt;/li&gt;&lt;li&gt;Maak de taart als volgt. Neem een grote ronde schotel van ongeveer 25cm doorsnede en bedek de bodem met een maag pesto. &lt;/li&gt;&lt;li&gt;Verwijder de steeltjes van de tomaten en snijd in fijne plakjes. &lt;/li&gt;&lt;li&gt;Leg een laag tomaten op de pesto. &lt;/li&gt;&lt;li&gt;Bedek met een laag tapenade en leg er opnieuw enkele plakjes tomaat bovenop. &lt;/li&gt;&lt;li&gt;Herhaal dit nog één keer. &lt;/li&gt;&lt;li&gt;Werk de taart af met de fijngesneden selderij en uiringen en garneer met geraspte pastinaak (lijkt op geraspte parmezaan) en bieslook. &lt;/li&gt;&lt;li&gt;Breng op smaak met peper van de molen en enkele druppels olijfolie. &lt;/li&gt;&lt;li&gt;Zet de schotel op tafel zodat iedereen zich kan bedienen.&lt;/li&gt;&lt;/ul&gt;&lt;div class="blogger-post-footer"&gt;&lt;img width='1' height='1' src='https://blogger.googleusercontent.com/tracker/4540257898023810477-1960077543789169106?l=123snellerecepten.blogspot.com' alt='' /&gt;&lt;/div&gt;

Meng met boter, 1dl room. Kruid met peper, zout en nootmuskaat.&lt;/li&gt;&lt;li&gt;Kook de broccoliroosjes gaar in ongeveer een 5 minuten. Schrik onder koud water en meng door de aardappelepuree. Kruid naar believen. &lt;/li&gt;&lt;li&gt;Maak ondertussen een saffraanroomsaus: laat de witte wijn inkoken, voeg 1,5 dl room toe, een beetje visbouillon, peper en zout en een paar saffraandraadjes. Spoel onder koud water en laat uitlekken.&lt;/li&gt;&lt;li&gt;Warm de wok op en laat de arachideolie warm worden.
