Fox News Latino Margarita Recipe with Junior Merino and Bryan Llenas

<iframe width="660" height="415" src="http://www.youtube.com/embed/VWOu4PefVNM" frameborder="0" allowfullscreen></iframe>

<a href="http://www.eltiempo.com/carrusel/IMAGEN/IMAGEN-11076982-2.png" imageanchor="1" style="clear:right; float:right; margin-left:1em; margin-bottom:1em"><img border="0" height="245" width="490" src="http://www.eltiempo.com/carrusel/IMAGEN/IMAGEN-11076982-2.png" /></a></div>

Harvard’s Science + Cooking lectures: Now playing on iTunes U

Apple just released its iTunes U app for iPad and iPhone, which makes it much easier to browse for free classes and lectures from top universities around the country.

One category is Food & Nutrition, where you’ll find 32 courses available, including Tips for Sustainable Gardening from Oregon State University, Food and Sustainable Agriculture from the Yale School of Forestry, Food Processing from UC Davis and Health and Nutrition from Cornell University.

But the real find here is Science + Cooking: From Haute Cuisine to Soft Matter from the Harvard School of Engineering and Science, 52 one-and-a-half- to two-hour videos from a lecture series that “discusses concepts from the physical sciences that underpin both everyday cooking and haute cuisine.” You have Ferran Adria of the late El Bulli presenting spherification, Jose Andres of The Bazaar (and minibar in Washington, D.C.) discussing basic components of food and gelation, and Wylie Dufresne (wd-50 in New York) on inventions with transglutaminase.

Just listen to the titles of some of the lectures: “Mixing the Unmixable,” “Sous-vide Cooking: a State of Matter,” “Meat Glue Mania,” “Olive Oil and Viscosity.” Heady stuff, and it’s free, free, free -- even the app.

A new way to suck up large amounts of time and bandwidth for the aspiring or experienced cook. But also a new way to learn from the best in the business. An incredible resource. Note that, because the lectures are videos, once downloaded, they will show up in the video app, not the iTunes U library.

Also, the iTunes U app syncs, so you can start watching a lecture on an iPad and finish it on an iPhone. Pretty seductive.

However, maybe millions are trying to watch the same lecture at the same time. I keep getting messages that the lecture cannot be downloaded at this time (it could just be my sluggish connection), but with a little patience it eventually restarts.

And I admit, I'm naive when it comes to the whole study of molecular gastronomy, but that doesn't stop me from researching it a bit.

Molecular gastronomy, in particular, is something that caught my eye right away. Between Wylie Defresne, José Andrés, Ferran Adria, Heston Blumenthal, Pierre Gagnaire and more, chefs have been studying it for a long time. Only in the last few years has it become "trendy" thanks to television. "Despite having a huge impact on other aspects of our lives, scientific advances have done little to change our cooking habits," says French physical chemist Hervé This (who, along with Nicholas Kurti coined the term "molecular gastronomy"). So these new methods of cooking aren't really affecting the culinary world or the way we eat?

This also says that it's very different from just cooking (which is often the assumption) -- it's "the chemistry and physics behind the preparation of any dish" and that there's a "difference between the science of ingredients and the science of culinary processes." Many people confuse molecular gastronomy as a type of cooking, when in fact, it's the study of how and why things happen while you're cooking. "Consequently, molecular gastronomy not only uses science to explore the technical aspect of cooking but also the ‘art’ and ‘love’ components, both of which are important for the main aim of cooking: to delight guests," he adds.

While promoting his Syfy show Marcel's Quantum Kitchen last year, I caught up with famed molecular gastronomist (and former Top Chef contestant) Marcel Vigneron about his love for the science. After watching him get mocked several times for trying out new techniques and using "too much foam," I was curious to find out how and why he chose to go beyond his normal culinary education. Here's what he had to say:

About getting into molecular gastronomy:
"When I was in culinary school, I was just researching all different types of cuisine, looking at chefs all around the world and what they were doing. At the same time, I was in school and getting a basic understanding of a the foundation of cooking, studying new cuisine and researching all these guys. I heard about this restaurant in Spain called ElBulli that was revolutionizing cooking and doing all these crazy things. So I got one of their cookbooks and I basically was in infatuated with what they were doing out there. I started to actually do a lot of research and development, and a lot of experimentation on my own in my apartment when I was in New York. I actually called up the restaurant and they sent me out sample kits of various tools. I was like, "Man, I gotta figure this out." So, it was like an infatuation. And the first time I ever laid eyes on an El Bulli cookbook, that kind of changed my gastronomic past ever since."

About how it can somtimes be trial-and-error creating dishes with new methods:
When you're doing these things for the first time, yeah. I mean, cause I haven't gone there and worked for Ferran [Adriá] and I haven't gone and worked with some of these chefs who helped pan these new techniques. And we're actually panning some of the techniques on our own. You hear of a technique somewhere or kind of brainstorm off an idea, and all of a sudden your creating new techniques and new dishes. So it's like you don't really know if they're going to work until you actually try it out. And then if it doesn't work, you have to think about it scientifically and what's going on. And if you understand what it is that you're doing, logically you should be able to fix it in case there's a mistake. Or at least try to figure out why it's not working. So that's what we like to do. You learn about science and apply that knowledge to cooking, that way it makes us a little bit better at it and understand why we're messing up so much.

Will the common, barely-can-cook folks like me ever really understand or appreciate molecular gastronomy? Probably not. But it seems to be an often-underappreciated field of study that continues to push boundaries. And hey, maybe one day it will definely change the way we eat.<div class="separator" style="clear: both; text-align: center;">

Who but a dweeb would have come up with such a term?

In fact, it was a physicist and a chemist, back in 1992, who formalized the term in an application for research funding on the science of cooking.

The term came to refer to experimental cooking techniques developed in kitchen labs of some of the world’s most revered, avant garde chefs, including Ferran Adria of El Bulli and Heston Blumenthal of Fat Duck.

Blumenthal even engaged sound, equipping diners with an iPod to eat his Sound of the Sea dish with “sand,” seaweeds and seafoods; his snail porridge became a foodie sensation.

And then, the movement began to embarrass its early practitioners as ambitious young chefs began emulating them badly, like kids with new chemistry sets.

Chefs played with liquid nitrogen (to flash freeze), maltodextrin (to turn high-fat ingredients into powder), lecithin (to stabilize foam), hydrocolloid substances (to jell and thicken and make lovely little “caviar” beads), water baths (for cooking sous vide), “deconstructing” familiar dishes, using anti-griddles (for cooking and freezing with the same appliance) and edible printed paper as food. They made sweet what was savoury and made savoury what was sweet.

They were breaking the No. 1 rule of traditional chefdom, which was to follow rules the French “king of chefs,” Auguste Escoffier, codified in the early part of the last century.

In 2006, Blumenthal, Adria and Thomas Keller (of The French Laundry) wrote an open letter in The Times (London) divorcing themselves from the cult of molecular gastronomy — a “we do not pursue novelty for its own sake” declaration.

However, when the world’s top-rung restaurants (anointed annually as the “50 best” in the world by Restaurant Magazine) are known for their avant garde techniques, these procedures aren’t going to be banished any time soon. Adding more fuel to the fire is Nathan Myhrvold’s The Modernist Cuisine, published last year, the mother of all bibles for kitchen science and ultra-modern cookery.

In an effort to normalize their methods, Blumenthal, Adria and Keller simply called it “our cooking” and “a new approach to cooking.”

Hamid Salimian, Diva at the Met’s executive chef, incorporates some of these modern techniques as a matter of course, and sometimes, for the “wow!” effect.

“Ten years ago, this was new and exciting,” Salimian says. “Chefs were turning peas into liquid ravioli, foie gras into powder. Then time passed and it’s become another element of cooking. It’s changed the way chefs think. It’s just modern cuisine.”

At Northwest Culinary Academy in Vancouver, one of the owners, Tony Minichiello, says students are definitely intrigued and interested in modernist cooking, especially the young guys.

“I have two camps now. I have the young male modernists and slightly more mature females who want to do what grandmas used to do, to get their hands dirty in the garden, to use the mortar and pestle, to do artisan cooking.” He’s not in favour of using plastics (in sous vide) or chemicals used to transform ingredients.

“Of course, if you look at Restaurant Magazine awards, the young chefs know if they don’t do any of this [modern] stuff, they’re not going to get awards. When The Modernist Cuisine was published, the guys went crazy for it. The women, in general, did not.”

Minichiello is not a huge fan of modernist cuisine but acknowledges it’s here to stay. “I see that cooks always need something to get excited about because it’s such a hard industry.”

At Northwest, he says, they’ve upped “molecular” classes from one to two days and incorporate ideas throughout the term. “I had a student who made balsamic vinegar pearls last term but he was bright and advanced in how to apply these techniques. Modernist cuisine has produced a lot of failed cooking and Ferran [Adria] will be the first to admit that. At the same time, it can be mind-blowing.”

Minichiello had a meal last year at Arzak in San Sebastian, Spain, a three-Michelin-starred restaurant known for its innovative techniques, and loved it. “The chef is the greatest I’ll ever meet. The food never said it was all about her. It was humble but incredible. There was something from the past and something contemporary on every dish.”

Looking back to this era of experimenting and inventing, the new techniques (some of them have been around for a long time in the food processing industry) will be but a continuum in the world of cooking. When you think of it, leavening with baking powder, aerating egg whites and making frozen ice cream were revolutionary at one time, as was the concept of blenders and food processors.

The most magical cooking I witnessed was at an open-air restaurant in Vietnam in a small town along the Mekong delta. A cook at one of the stations placed rice balls into hot oil in a wok and, with just a wire mesh strainer for a tool, twirled them until they inflated into perfect crisp, golden balloons, both small and large. I wonder if Blumenthal could do that?<div class="separator" style="clear: both; text-align: center;">

But the main stage when transformation begins is with the idea and way of thinking. This is exactly what we need to do while taking place in this generation of new icons.
