/><title>Mexican Lasagna</title><content type="html">My brother's wife is a very good cook.  She is also a very frugal cook.  At a recent family gathering, we were talking about cooking &amp;amp; budgets, and when she got home, she emailed me a few of her favorite recipes.&lt;div&gt;Tonight I tried one of them, Mexican Lasagna.  As usual, in addition to my family, there were two other teenagers here.  It was a big hit with everyone!  &lt;/div&gt;&lt;div&gt;So, I thought I'd share it with you.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="color: rgb(51, 51, 51); font-family: 'lucida grande', tahoma, verdana, arial, sans-serif; font-size: 11px; line-height: 14px; "&gt;Mexican Lasagna&lt;br /&gt;1-2 # ground beef&lt;br /&gt;1 pkg taco seasoning&lt;br /&gt;1 can cream of mushroom soup&lt;br /&gt;1 can black beans, drained &amp;amp; rinsed&lt;br /&gt;6 flour tortillas&lt;br /&gt;1 cup frozen corn&lt;br /&gt;1 small jar salsa&lt;br /&gt;Shredded cheddar or Monterey Jack/Colby blend cheese&lt;br /&gt;&lt;br /&gt;Brown ground beef, drain fat and add taco seasoning with a little water or beef broth. Stir in soup and black beans.&lt;br /&gt;&lt;br /&gt;In 9x13 casserole dish, place 2 flour tortillas in bottom to line pan. Pour meat mixture over this. Top with 2 more flour tortillas and some shredded cheese.&lt;br /&gt;&lt;br /&gt;Mix together corn and salsa. Pour over 2nd layer of flour tortillas. &lt;br /&gt;&lt;b&gt;&lt;span class="Apple-style-span"&gt;Interesting Substitution: &lt;/span&gt;&lt;/b&gt;&lt;div&gt;&lt;b&gt;&lt;span class="Apple-style-span"&gt;&lt;/span&gt;&lt;/b&gt;&lt;span class="Apple-style-span"&gt;&lt;b&gt;
&lt;br /&gt;&lt;/b&gt;&lt;/span&gt;My 15 year old daughter, Shelbie, found a box of brownie mix in the pantry and asked if she could make it.  I told her sorry, but we're out of oil.  And she said "I can use mayonnaise!"  &lt;div&gt;And I said, "WHAT!  EWW!  That's gross!"  &lt;/div&gt;&lt;div&gt;Although I know perfectly well that mayonnaise is just oil &amp;amp; eggs....it just sounds nasty.&lt;/div&gt;&lt;div&gt;But I told her to go ahead and try it.....and guess what?
&lt;br /&gt;The brownies tasted just like any other brownies that had been made with oil!&lt;/div&gt;&lt;div&gt;So if you're ever out of oil, feel free to substitute mayo.  I was also told sour cream works, and I know applesauce is also a good sub for oil.&lt;/div&gt;&lt;div&gt;
&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;b&gt;&lt;span class="Apple-style-span"&gt;Pears:&lt;/span&gt;&lt;/b&gt;
&lt;br /&gt;We have a pear tree in our back yard.  I'm not a fan of eating plain pears, but over the weekend I made two pair dishes.  First, I sliced some pears and put them in a baking dish.  I poured melted butter over them and then sprinkled them with cinnamon and brown sugar.  I cooked them for about an hour at 350, and they were absolutely delicious. &lt;/div&gt;&lt;div&gt;
&lt;br /&gt;&lt;/div&gt;&lt;div&gt;They were so good I was inspired to make a pear cobbler.  I've never had one before, I don't think I've ever even heard of a pear cobbler, but again - it was delicious!  I used &lt;a href="http://southernlovingfood.blogspot.com/2010/06/fresh-berry-cobbler.html"&gt;my traditional cobbler recipe&lt;/a&gt; that I use for blackberry, blueberry, &amp;amp; peach cobblers.  (I love cobblers!) &lt;/div&gt;&lt;div&gt;
&lt;br /&gt;&lt;/div&gt;&lt;div&gt;I have lots of pears still on the tree, so if you have any good pear recipes that you don't mind sharing with me, please do!  &lt;/div&gt;&lt;div&gt;

Part of that was just the growing up process, and part of it was learning that there are other ways to prepare them besides battered &amp;amp; fried.  &lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;But one vegetable that I have never learned to like, and never will, is broccoli.  I just can't stand the trees.  My kids like it, my husband likes it, but not me.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;The only way I've ever been able to eat broccoli is in my &lt;a href="http://southernlovingfood.blogspot.com/search/label/tuna%20pie"&gt;Tuna Pie&lt;/a&gt;.  I guess the other ingredients were just so yummy that it disguised the ick of broccoli.  But I always wondered if it would taste good with spinach, which I LOVE.  So tonight, I finally tried that for the first time.  &lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;And it was FANTASTIC!!  &lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Here's the recipe again in case you want to try it.  It's good stuff and perfect for Meatless Monday!  &lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;span class="Apple-style-span" style="color: rgb(153, 0, 0); font-family: Georgia, Utopia, 'Palatino Linotype', Palatino, serif; line-height: 22px; "&gt;&lt;span style="font-size: 21px; "&gt;&lt;span style="font-weight: bold; "&gt;Tuna Pie&lt;/span&gt;&lt;/span&gt;&lt;br /&gt;2 cans tuna in water, drained&lt;br /&gt;1 cup shredded cheese&lt;br /&gt;1 small onion, chopped&lt;br /&gt;3 eggs&lt;br /&gt;1 cup mayo&lt;br /&gt;½ cup sour cream&lt;br /&gt;1 box chopped broccoli&lt;b&gt; *OR Spinach!!*&lt;/b&gt;, cooked per directions&lt;br /&gt;2 pie shells, cooked per directions&lt;br /&gt;&lt;br /&gt;Mix all ingredient except pie shells.&lt;br /&gt;Pour half of the mixture into each pie shell. It was full of little stories about the author's life, as well as lots of recipes.  I had checked it out from the library, but I then bought a copy from Amazon so that I'd have all the recipes.  I keep it with my cookbooks!  Tonight I made two recipes from this book and wanted to share them with you all.  &lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;b&gt;Porcupine Balls&lt;/b&gt;  (I don't know what the kids like better; eating this dish or saying the name!)&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;1 pound ground beef&lt;/div&gt;&lt;div&gt;1/2 cup uncooked rice&lt;/div&gt;&lt;div&gt;1/2 cup water&lt;/div&gt;&lt;div&gt;1/3 cup chopped onion&lt;/div&gt;&lt;div&gt;1 tsp salt&lt;/div&gt;&lt;div&gt;1/2 tsp celery salt&lt;/div&gt;&lt;div&gt;1/8 tsp garlic powder &lt;/div&gt;&lt;div&gt;1/8 tsp pepper&lt;/div&gt;&lt;div&gt;1 (15 oz) can tomato sauce&lt;/div&gt;&lt;div&gt;1 cup water&lt;/div&gt;&lt;div&gt;2 tsp Worcestershire Sauce&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Preheat oven to 350 degrees.  Mix meat, rice, 1/2 cup water, onion, salts, garlic powder, &amp;amp; pepper.  Shape mixture into meatballs.  Place meatballs in ungreased baking pan.  Stir remaining ingredients together and pour over meatballs.  Cover and bake for 45 minutes.  Uncover and bake 15 minutes longer.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;{I doubled this recipe and used 1 lb. of ground beef &amp;amp; 1 lb. of ground turkey.  It made 42 meatballs.  They were off the chain!  I served them with roasted asparagus and garlic toast.}&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;And for dessert....&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;b&gt;Oatmeal Chocolate Chip Cookies&lt;/b&gt;&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;1 1/2 cups all purpose flour&lt;/div&gt;&lt;div&gt;1 tsp baking soda&lt;/div&gt;&lt;div&gt;1 tsp salt&lt;/div&gt;&lt;div&gt;1 cup butter (2 sticks), softened&lt;/div&gt;&lt;div&gt;1 cup granulated sugar&lt;/div&gt;&lt;div&gt;1 cup light brown sugar&lt;/div&gt;&lt;div&gt;2 eggs&lt;/div&gt;&lt;div&gt;1 tsp pure vanilla extract&lt;/div&gt;&lt;div&gt;3 cups oatmeal&lt;/div&gt;&lt;div&gt;1-2 cups chocolate chips&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Preheat oven to 375 degrees.  Mix the flour, baking soda, and salt together.  Mix remaining ingredients with the flour mixture, then add chocolate chips.  Roll into balls &amp;amp; place on cookie sheet.  Bake for 10-12 minutes, until cookies are light brown. My daughter Shelbie made her specialty, &lt;a href="http://southernlovingfood.blogspot.com/2010/01/southern-loving-love-on-plate.html"&gt;Chocolate Peanut Butter Bars.&lt;/a&gt;&lt;/div&gt;&lt;/div&gt;&lt;div&gt;We also had macaroni &amp;amp; cheese and green beans.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;My mom made a dessert that involves angel food cake, cool whip, and pineapple chunks.  It's really light and good.  She also bought some cupcakes.&lt;/div&gt;&lt;div&gt;Oh, and of course, we had devilled eggs!&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;It was all delicious.  Tonight for dinner, I'm heating up the leftover ham. I went out today and bought all the fixings I needed, and tonight, we are having salmon patties for dinner! Dump the entire can into a mixing bowl and remove the scales (that's just what I prefer). &lt;/span&gt;&lt;br /&gt;&lt;span class="Apple-style-span" style="color: rgb(65, 8, 37); font-size: 14px; line-height: 22px; "&gt;3. Add one egg to the salmon and mix well.&lt;/span&gt;&lt;br /&gt;&lt;span class="Apple-style-span" style="color: rgb(65, 8, 37); font-size: 14px; line-height: 22px; "&gt;4. To that mixture, add about 10-15 crushed saltine crackers; mix well. Add salt and pepper to taste.&lt;/span&gt;&lt;br /&gt;&lt;span class="Apple-style-span" style="color: rgb(65, 8, 37); font-size: 14px; line-height: 22px; "&gt;5. Form the mixture into about 6 hamburger size patties. Some people add vegetables in, but I serve mine on the side. &lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Here's my version!&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;b&gt;TTC&lt;/b&gt; (as we call it)&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;one large bag of frozen tater tots&lt;/div&gt;&lt;div&gt;1 to 2 lbs. of ground beef&lt;/div&gt;&lt;div&gt;one small onion, chopped&lt;/div&gt;&lt;div&gt;one can cheddar cheese soup&lt;/div&gt;&lt;div&gt;one can french onion soup OR one packet of Lipton onion soup mix&lt;/div&gt;&lt;div&gt;one can of evaporated milk&lt;/div&gt;&lt;div&gt;2 cups of shredded cheese (I use mild cheddar)&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Prepare your tater tots according to directions while you're doing the rest.  Brown ground beef &amp;amp; onions.  (that's one of my favorite smells in the world!  Mmmm.)  Drain grease.  Add soups &amp;amp; evaporated milk, mix well.  Add 1 cup of shredded cheese. &lt;br /&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Put cooked tater tots in a 9x13 casserole dish.  Pour meat mixture over them.  Cook @ 350 for about 15 minutes.  Pour remaining 1 cup of shredded cheese over top.  Stick it in the oven just until it melts. &lt;br /&gt;&lt;br /&gt;Serve &amp;amp; enjoy!
