Cardamom chocolate ice cream with dates and nuts balls

cardamom chocolate ice cream :--

instant chocolate mix powder :- 1 pot.
cardamom powder :--1 teaspoon
milk :- •500 ml
for dates and nuts balls :--
small pieces of dates :-- 1table spoon
raisins :-- 1/2 table spoon
cashew nuts :-- 1/2 table spoon
ghee for sauteing
corn flakes powder :-- 2 table spoon
method :--
mix the ice cream powder in milk. Add cardamom powder. mix well with spoon or whisk. boil it. let cold as shown in video. make the date and nuts mixture by sauteing both and raisins in ghee. make small balls.
coat with corn flakes powder (regular cornflakes powdered in blender.
fry the balls. make sure your ice cream mix to keep in freezer for at least 30 minutes or till it becomes hard.
serve cardamom flavored chocolate ice cream with dates n nuts balls.

stuffed steamed calamari with mustard cream sauce

ingredients --
whole squid (cleaned)-- 3 nos.
for stuffing--
shrimp-- 60 gms(finely chopped)
fish-- 80 gms (finely chopped)
for sauce--
mustard pasted-10 gms
cooking cream --30 ml.
broccoli few sprigs blanched one--for side of dish
radish for garnish
chop parsley.
chop onion--1/2 teaspoon
chop garlic--1/4 teaspoon

method
saute the onion in olive oil add garlic saute till the onion becomes brown. add this to chop seafood and mix well.make three equal portions of seafood and one part mix with turmeric pwd., one art with chop parsley and one part with red chilli pwd.

stuffed this mixture into squid one by one. secure the end with tooth pick, and steam cook ins team .
for sauce mix mustard paste with cooking cream and simmer it.
plut the sauce on a plate spread it. place calamari by cutting equal portions of squid. put some brocoli and radish to look good.

grilled Mackerel in mango leaves (ayela mangayila pollichathu)

as in photos showing step by step method....very easy to make and that wow taste.

for this all you need --- 3 mackerel (or any small fish with minimum bone) few tender mango leaves .
for the marination---
shallots-- peeled and paste
tamarind pulp
turmeric powder
peppercorn seed
salt to taste
few curry leaves.

how to do it
clean the fish, make mark criss cross, apply marination and leave for 30 minutes, cover with mango leaves.
grill it in non stick pan or on griddle. serve hot with rice or as snacks along with drinks.
