A new Copenhagen pearl from this trip is this little coffee bar called Rist (roast).
It’s located next to a interior shop too, where I bought way to many lamps.

Copenhagen’s meat-packing district is indeed still a meat-packing district, both day and night. It was a bit strange to watch someone pack ribs and chops when you walk by on your way to a bar. It’s definitely an interesting place well worth a visit if you enjoy meat, or beer and cocktails (since there’s plenty of bars in the area).
They are still packing meat here, it felt a bit weird to walk by.
The “hipster famous” Mikkeller bar is quite close to Kødbyen with plenty of beer and lots of visitors. But it was more Swedes than Danes, that’s for sure…
Hello Easter – Life on the country side
I ended up in a bus accident on my way to our summer-house yesterday. I’m okay and everyone else on the bus seemed to be too. But it was quite dramatic and I’m happy to be safe and I really look forward spending the weekend with my family.
Today I was doing check-ups at the hospital, they x-rayed my backbone, but everything seems to be okay and hopefully I can cure the pain with yoga, sleep and walking. Good food and wine might help too.
Tonight we went for a long walk down to the lake. Just look at the amazing trees coloured by the burning sky. It was all quiet except for the birds. We laughed a lot. My family is great.
Now I’m sitting here with a cup of tea listening to the crackling fire-place. There’s candles. Someone’s showering. Vacation at its best.

Repair your jeans, it’s worth it
Jeans. Most of us love and wear them until we have a true relationship knowing each other inside and out. I’m the same. I fall in love with them.
Mines are always most worn between my thighs, classic female problem I guess… and I’ve thrown away many pairs of favourites just because they’re worn out. If they break between your thighs you can’t even make shorts of them.But lately I’ve learned how to save them! Repairing denim isn’t hard at all. You just need a classic sewing machine and thread in the same colour as your jeans. Here’s a great instruction video.
Repairing something that’s broken is such a great feeling. When you can keep on loving, or alter something. We should all learn to appreciate what we have and not throw things away just because they’re not new any longer.

The worlds best vegan and gluten-free pancakes
The worlds best pancakes
Dairy free, gluten-free, egg free, soy free, sugar-free, nut free.
- Buckwheat flour – 2,3 dl
- Brown rice flour – 1,2 dl
- Quinoa flour – 1,2 dl
- Salt – 0,25 tbsp
- Rice milk – 1,6 dl
- Water – 4,7 dl
- Coconut oil, for frying
Put all ingredients in a blender or food processor and blend until the mixture is completely smooth.
Melt a teaspoon of coconut oil in a frying-pan (preferably an iron skillet). Scoop about 0,5 dl of the mixture in the pan and swirl around quickly until it makes a thin pancake.
When the panckae starts to look golden and almost dry on the top, release it from the bottom of the pan with a spatula and flip carefully to cook the other side. Add some new coconut oil before every new pancake.
Serve with banana, passion fruit and cacao nibs, apple sauce, nut butter or some other delicious pancake topping of your choice!
