[HowTo] - Cook Your Pasta to 'Al Dente'

Hi pasta lovers!
Do you think your pasta cooked to actual standard? Well, why must there be a standard in the first place? It is all up to you after all. The way you like it to be cooked; undercooked, al dente or overcooked (or you don't even like pasta!)
There are numerous pasta testing events in Italy before a standard is set. Al dente is thoroughly defined as follows:

In cooking, the Italian expression al dente (ælˈdɛnteɪ/; Italian: [al ˈdɛnte]) describes pasta and (less commonly) rice or beans that have been cooked so as to be firm but not hard. "Al dente" also describes vegetables that are cooked to the "tender crisp" phase - still offering resistance to the bite, but cooked through. Keeping the pasta firm is especially important in baked or "al forno" pasta dishes, where the pasta is cooked twice. The term "al dente" comes from Italian and means "to the tooth" or "to the bite", referring to the need to chew the pasta due to its firmness.

How do we get al dente? These steps may help you:
1. Get a right water and pasta ratio before boiling.
2. Occasionally stir your pasta while boiling so the pasta wont stick to each other.
Tips: For long pasta, make sure it totally submerged. Creativity is crucial here.
3. When it begin to soften, test it. Make sure it gets to what defined above.
4. Drain your pasta. Toss it with vegetable/olive oil to avoid sticking as it drying.
5. There you go your pasta ready with sauce of your choice! Enjoy your al dente pasta.

[Review] - Nice 'Ordinary' Egg Tart

I have had it for quite number of times and it is the best ordinary egg tart thus far. Ordinary? Yes. It looks just as other egg tarts.
The first bite will tell you how crispy the tart crust is then all the egg filling fall in to your mouth with ease. There you go your first tart done. In detail, the filling is soft, creamy and sweet so handle your tart wisely. It is very vulnerable in the middle that I think the centre crust should structurally harder.
Yet, I am seeking for other egg tarts that can impress me better.

[Review] - Muzdalfa Fried Chicken (MFC), Enough to Impress

Many have came up with reviews of this new label. Personally, I think it's more than just food.
Muzdalfa Fried Chicken (MFC) has taken a huge step (or maybe a risk) in entering a business of competitors known worldwide. They are selling fried chickens the Malaysian way ( but they do still offer original and spicy).
Fried chickens are the killers, but they're also offering Nasi Arab (Arabian course) and pizza which is known as Pizza Heaven (I haven't tried those, maybe later) as additional marks to its originality.

[Review] - Chocolate-Mango Cheesecake, A Sophistication

I would like to thank the person who had first thought and executed the recipe. Listen, to those mango lovers, you will definitely be addicted to this.

Cheese, which is known a food not to be consumed in a large volume, has been in other way round. The idea of adding mango into the cheese was amazing!! The cheesy texture remains but with upgraded taste.

However, it was not just all about cheese and mango. The cake has chocolate cream topping that will add sweetness and classical value to the cake.

You don't even need to put in an effort as the cake will melt in your mouth by itself!

The elimination round was all about Soo Wincci and Siti Sarah as they battled a 50-50 chance. They were tested to prepare puree as well as freedom to add flavours of their own.The battle looked tight as both of them managed to complete their puree within the specified time. The chefs have given their comments and it was a comprehensive win for Soo as her puree has a unique concept of 1Malaysia. Siti Sarah who humbly admitted the lost should walked out with pride as she has never give up and has once, been a great group leader.

[Authentic] - Nasi Tumpang

I found this in Kelantan. The cone-shaped banana leaf left me nothing but mystery till I finally gave it a go.

Hurm, the nasi tumpang is served warm most of the time ( as I never had it hot, hehe). In fact, I've heard several version of nasi tumpang which you can find them by google-ing around, but mine came only with packed rice (nasi himpit), shrimp curry and kerisik (find it here - http://en.wikipedia.org/wiki/Kerisik) . Three items? Are you kidding me?

But the taste was awesome, I repeat.. it was AWESOME!! It was way too good that my first impression of it totally wrong!

On the other side, the process of making it never too easy (hence it is disappearing in modern era).

[HomeMade] - Sausage-Meat Lasagna, Simply Irresistable

It was middle of the night and I felt damn hungry!

and, I've made this:

Yes, it is my home made lasagna that has taken only 20 mins to complete and I'd love to share the fillings:

1. Pasta sauce ( It could be any that suit your style, mine was with basil and garlic - it affects the juicy level of your lasagna!)
2. Shiitake mushrooms ( because I love the strong taste)
3. Minced meat
4. Cheese (you may add two or more kind of cheese, more the better)
5. Black Pepper
6. Onions
7. Capsicum
8. Flavourings - Oregano and parsley (Note that oregano have a very strong spicy taste so use wisely)
9. Sausage ( since I was running out of meat)

P/S: Yeah! My nice supper. Evening full of satisfaction and promises a better tomorrow :))

Hi!!

Back in Kelantan, I was waiting for a bus till something has really caught my eyes. It was a hamburger stall which only sell hamburgers (hurm). Some may call it OBLONG.

Take a look at the packaging, this is really a serious business. All resources are said to be supplied by the company hence the taste, look and price are and will always be standardized.

Taste - I have experienced better hamburgers, so I am OK with it. It has a balance of spicy, sweet and sour. I am going for 7/10.

Location - In front of Pantai Timur supermarket, Pasir Mas (Kelantan).

Potential - Hamburgers are sold from RM3.00. Potential definitely huge, thumb up!

[Authentic] - Kelantan Dishes

Hi Guys!

I've just came back from Kelantan. By the way, but the 2-days vacation was way too short for me (sigh).

Kelantan is famous for its authentic dishes (some may say they are too sweet) that I simply can't resist! Since I have grabbed some, so enjoy!!

1. Laksam (Kelantanese use to know it as Lak-Sey)

Made of simple ingredients but the sauce that really matters ( I am not going to share the recipe here though).Yummy! The one I got was from the Pasir Mas main market (Pasar Mundok).

2. K'oleh (this is how it's originally called)

This dessert can simply be recognized from its colour. Yes, it is blue. It's so soft that you'll be able to tell the sweetness, tenderness (and maybe a bit of taste of spice) right after the first bite.

I may now conclude this dish as 'unexpectedly delicious'.
