Its been a while, folks. I had all but given up on my ability to cook there for awhile. But the last week or so has seen a little revival in mama’s cooking spirits. And tonight, there was EVEN a little spark of creativity! This is a new favorite with the kids too!

Ingredients:

1lb ground beef

2 Tbsp Club House All-in-One Thai Seasoning

1/2 tsp curry (you can vary this according to your family’s preference)

dash ground pepper

1/2 tsp salt

1.5 cups water

1.5 cups milk (or cream, if you have it)

2.5 cups shredded cheddar cheese

frozen GF (of course!) french fries

Instructions:

Cook the fries according to pkg directions.

Scramble fry the beef, with all the seasonings

Once cooked, add the water and bring to simmer.

Slowly pour 1 cup of hot seasoned beef to milk. Stir. Add milk mixture to pan. Heat to simmer.

Mix together 2 Tbsp cornstarch and 2tsp water. Add to the saucepan. Heat to thicken.

Remove from heat, stir in cheese until melted.

Serve the fries on a plate with sauce on top.

Extra sour cream and/or shredded cheese for garnish (if you are garnish-inclined.)

Voila! An international experience (I’m not sure which nation, but whatever…)

Only on Mom-doesn’t-feel-like-cooking days did we ever have a roast stuffed in the oven, or plain old roasted chicken. B-O-R-I-N-G. (or perhaps she hid the budget-conscious menu with delicious cooking?)

Anyhow, I’m totally off topic, the point is, that I like my food non-boring. I am completely UNmotivated to cook things that have no savory sauce, or sweet relish. And I’m picky with my recipes. Most recipes that I’ve tried = boring. So I am in LOVE with recipe zaar website. I can select main dishes and sauces from 1,000’s of recipes!

What did we DO before the internet? huh?

We went for baked apples – in the microwave.

Per apple:

1. Cut in half, and scoop out the core.(mommy’s job)

2. Lay 2 halves flesh side up on microwavable dish.

3. Sprinkle each half with 1 tsp brown sugar, sprinkle of cinnamon, and 1 tbsp raisins

4. Microwave 2 minutes, checking every 30 seconds until soft & apple-sauce-like.

Yummy!! It seemed like the perfect fall recipe to post today!
