1 pound ground brisket (or ground beef)
1 large yellow onion, chopped (or less if you prefer)
1 clove garlic, finely chopped
1/2 teaspoon sweet paprika
1/2 teaspoon smoked paprika
1 tablespoon yellow mustard
1/4 teaspoon chipotle powder
1 cup ketchup
1 tablespoon balsamic vinegar
1 tablespoon Worcestershire sauce
1-1/2 tablespoons flour
3 tablespoons dark brown sugar
Dash cayenne pepper
Salt and pepper to taste
4 hamburger buns (fresh sesame or homemade put them over the moon)

Directions
In a large skillet over high heat, sauté the beef, onions, and garlic until the beef is cooked and browning, and all the liquid has boiled off (around 10 minutes). Turn the heat down to low; then add the spices and cook, stirring, for a few seconds. Stir in the remaining ingredients, then partially cover and simmer over low heat for 30 minutes, stirring frequently to prevent scorching. If mixture is still not thick enough to your liking, add a bit more flour until it is. Divide the mixture among the buns and serve.

Cheesy Chicken Enchiladas
8 servings

-4 bone-in chicken breast halves
-2 tablespoons olive oil
-1 (4 ounce) can diced green chile peppers, drained
-1 jalapeno pepper, chopped
-1 clove garlic, minced
-1 (8 ounce) package cream cheese
-2 cups shredded Monterey Jack cheese, divided
-1/2 cup water
-8 (10 inch) flour tortillas
-1 cup heavy cream

Directions

Place the chicken breast halves into a saucepan, and fill with enough water to cover. Bring to a boil, and cook until the chicken is cooked through, about 20 minutes. Remove from the water, and set aside to cool.

Preheat the oven to 375 degrees F (190 degrees C). Remove the chicken meat from the breasts, and discard the skin and bones. Set aside.
Heat the olive oil in a large skillet over medium heat. Add the green chilies, jalapeno and garlic. Cook and stir for a few minutes, until fragrant, then stir in the cream cheese and half of the Monterey Jack. As the cheese begins to melt, gradually stir in the water.

Chop the chicken meat, and stir into the skillet. Remove from the heat.
Spoon the chicken mixture into tortillas, and roll up. Place the rolls seam side down in a 9x13 inch baking dish. Sprinkle the remaining Monterey Jack cheese over the top, then pour cream over all.
Bake for 30 minutes in the preheated oven, or until the enchiladas are golden brown on the top.

Prosciutto Spaghetti

INGREDIENTS:
1 cup flour
pinch of salt
2 pinches of sugar
*6 slices egg bread or Challah bread
*1/4 cup melted butter
*3 cups strawberries, sliced and tossed with a little sugar
*2 cups whipped cream
*1/2 cup glazed pecans (readily available at most grocery stores and gourmet markets)
*1 tablespoon powdered sugar
Maple syrup, heated

Dip the egg bread in French Toast Batter. Gently squeeze the bread slices in several different spots (especially near the edge/crust) to help absorb the batter. Allow the batter to absorb into the bread while it rests for 10 minutes.
Drizzle melted butter onto a pancake grill or large sauté pan.

Place the soaked egg bread onto the oiled grill and cook until golden brown on both top and bottom (approx. 4 minutes per side).

When the French toast is done, place one slice on the plate. Using a large spoon, sprinkle a some of the sliced strawberries over the top of the French toast, making sure to spread it close to the edge, all the way around.

Place the second piece of French toast on top of the first and sprinkle more sliced strawberries over the bread, again, making sure to spread it close to the edge, all the way around. Place the last piece of French toast on top of the others. Sprinkle a little more sliced strawberries on top of the bread, but this time with a little more in the center and allowing some of the strawberries to fall randomly onto the plate around the

French toast. You can also drizzle a little juice around the edge of the French toast. Repeat this procedure with the second plate.
Garnish the French toast with some whipped cream and the glazed pecans. Sprinkle powdered sugar on top and all around the plate.

Serve warm maple syrup on the side. Bon appétit.

French Toast Batter:
*1 cup half and half (or milk)

*1 lb of frozen shrimp, defrosted, peeled, & deveined
*6 oz fat free Greek yogurt
*¼ cup chopped cilantro
*2 tbsp fresh lime juice
*1/4-1/2 tsp cayenne pepper
*½ a head of cabbage, thinly sliced (about 5 cups)
*8 corn tortillas
*4 tsp extra virgin olive oil
*Salt and pepper to taste

Directions

Heat tortillas over medium heat in a dry skillet until warm and starting to form small brown spots. Set aside on a plate covered with a clean kitchen towel.
Mix yogurt, cayenne, lime juice, cilantro, & salt in a small bowl, set aside.

Heat two teaspoons of olive oil in a medium non-stick skillet and add cabbage. Cook for about four minutes or until the cabbage is just barely wilted. Season with salt and pepper and set aside.

Cut shrimp into thirds, so you have little bite size pieces. Sauté in two teaspoons of olive oil and season with salt, pepper and a dash of cayenne pepper over medium heat just until done. They cook up in just a few minutes… so be sure to watch them!
Build your taco! Place a scoop of cabbage on the warmed tortillas taco, then top with shrimp, and cilantro sauce… enjoy!

yield: 2 loaves

Ingredients:

*1 cup Warm Water
*1 Tablespoon Honey
*1 envelope Active Dry Yeast (2 1/4 Teaspoons)
*1 teaspoon Salt
*3 cups Bread Flour
Olive Oil, For Greasing Surfaces
*⅓ pounds Sharp White Cheddar, Or Any Other Cheese You Prefer
*½ cups Garlic Butter

Directions:

In a large bowl, stir water, honey and yeast together. Let yeast proof 5 minutes. Once you know yeast is active, stir in salt and the flour in 1/4 cup increments. If you are using a stand mixer, be sure to not increase your speed higher than a 2 or ‘stir’.
Once dough starts pulling away from the sides and the bowl seems to be pretty clean, set a timer for 5 minutes and walk away. Let the machine knead the dough. After 5 minutes, dough should be smooth and tacky but when touched shouldn’t leave any dough on your fingers.
Grease the bowl and the dough. Cover with plastic wrap or a kitchen towel and let rise 1 hour or until doubled in size.
Punch down dough and cut into two equal portions. Form into two long baguettes the length of the cookie sheet. I like to twist mine because it looks cool, but it also keeps its length and doesn’t shrink. Cover with plastic wrap and rise 30 minutes.

Start to preheat oven to 400 degrees F and place dough close to the oven where it’s nice and warm.
Once oven is preheated, remove plastic wrap, from the dough reduce oven to 350F, put the bread into the oven and bake 20 minutes.
In the meantime, slice the cheese into thin slices and melt the butter.
Pull loaves of bread out of the oven after 20 minutes and brush with the melted garlic butter.

Bake another 5-7 minutes or until bread begins to turn a golden brown. Remove from oven and cool 15 minutes.
Cut 1-inch slices 3/4′s of the the way through the loaves. Brush garlic butter in between each slice and fill with a slice of cheese. Bake another 3-5 minutes or until cheese is completely melted.
Serve immediately.

Ingredients

*4 boneless, skinless chicken breast halves (about 6 ounces each)
*1/2 teaspoon coarse salt
*Freshly ground pepper
*2 garlic cloves, minced
*1 tablespoon extra-virgin olive oil

For The Stuffing
*12 fresh basil leaves, plus more for garnish
*2 beefsteak tomatoes, cut into 1/4-inch-thick slices

Directions

Butterfly chicken breasts: Put halves on a cutting board, smooth sides down, with the pointed ends facing you. Starting on one long side, cut breasts almost in half horizontally (stop about 1/2 inch before reaching the opposite side).

Open cut breasts like a book. Sprinkle each piece all over with 1/8 teaspoon salt; season with pepper. Transfer to a plate, and coat both sides with garlic and oil. Let stand 30 minutes.

Heat a grill or grill pan until medium-hot. Place 3 basil leaves on the bottom half of each opened chicken breast; top each with 2 slices tomato. Fold over other half of chicken breast, and secure with two toothpicks or short skewers.

Grill chicken breasts, turning once, until golden brown on both sides and no longer pink in the center, about 15 minutes. Place on a clean serving platter; garnish with basil. If desired, remove toothpicks or skewers before serving.

French Toast

Somen Noodles with Scallops and Vegetables:

What it took for 2 dinner bowls:

* 3 Tbs. extra-virgin olive oil, divided
* 1 cup baby scallops (if frozen, thaw them first and pat dry)
* 1 cup diced zucchini
* 1 cup frozen edamame
* 2 cups arugula
* 2 Tbs. soy sauce
* 1 tsp sambal oelek
* 1 tsp brown sugar
* juice of one lime
* 2 bundles somen noodles
* 1 scallion, finely sliced
* coarse salt and freshly ground pepper

In a small bowl, whisk together 2 Tbs. oil, soy sauce, sambal oelek, brown sugar and lime juice. Set aside.
Cook the edamame in a small pot of boiling water for 5 minutes. Using a large slotted spoon, fish out the edamame, set aside and leave the water boiling. Add the somen noodles and cook until al dente, about 5 minutes, if that. Drain and rinse under cool water.

In the meantime, heat the remaining Tbs. oil in a medium skillet over medium-high. Add the scallops and sear on both sides, about 5 minutes total.

Season with a small pinch of salt and pepper. The scallops will release a lot of water, so if you need to, tip the skillet over the sink to drain the water, and return to finish searing. Remove scallops from pan and set aside. *You can always sub gorgeous diver scallops for these baby ones. Or leave them out all together for a straight vegetarian meal.*

To the pan, add the diced zucchini and pinch of salt and sauté until they start to brown on both sides, 4 minutes.

Add the somen noodles to the bowl with the soy dressing and toss to combine. Add the edamame, zucchini, arugula and scallops; toss to combine.

Divide the noodle dish among two dinner bowls and garnish with sliced scallions. Serve with more fresh lime juice because ohhhh the things that will happen to you.
Preheat oven to 380 degrees. Combine all ingredients and mix well. (If peanut butter was in the fridge, you might want to heat it up a little so it’s easier to stir.) Pour into a greased 1-cup ramekin, or two 1/2-cup ramekins, or a mini-loaf pan. Cook for 20 minutes or more, until it gets firm. Finally, set your oven to “high broil” for 3 more minutes, or until it reaches desired crispy-ness (or simply just bake longer, but broiling gives it a nice crust). Optional: top with the frosting recipe linked under the second photo of this post.

plit each chicken breast through the middle to
make 2 pieces. Place plastic wrap over them and pound each one flat
using a meat tenderizer/mallet until they are about a quarter inch
thick. Season a good amount of salt and pepper on both sides of each
piece. Place some flour on a plate and and dredge each piece of chicken
in it.

Heat the oil over medium-high heat and when the
oil is hot fry each piece of chicken for 3-4 minutes on each side until
they are golden brown (this may require you to do this in 2 batches).
Remove chicken and place them on your serving platter covering them with
foil. carefully soak up any remaining oil with paper towels and
discard.

Reduce the heat to medium and add butter and
mushrooms. Saute mushrooms for 4-5 minutes making sure to season them
with salt and pepper lightly. Add marsala wine, sherry, cream, and
chicken stock allowing the liquid to reduce slightly – approx. 3
minutes. Pour mushrooms and sauce over chicken and serve. Enjoy!
