I hope everyone everyone is having a wonderful Fall and a happy Halloween. I can’t believe how neglected my blog has been this year. I definitely can’t let the season pass by without sharing a few of my favorite Fall treats. You can see the links to all of my Fall posts on the menu to the right. I will highlight a couple of my favorites in the upcoming days.

Butterfingers are one of my favorite candy bars. You can bet that I will sneak one or two out of my kids baskets tonight. If you like butterfingers, you should definitely give these Homemade Butterfingers a try! I made these ones last year and never got around to posting about it. This year you can find them all over Pinterest and the blogging world.

They are so easy to make and only require three ingredients: candy corn, peanut butter, and chocolate. The texture is different than the original candy bar, but they taste very similar. I have read comments on other blog posts that you can cook the candy corn longer to achieve a crispier texture.

I found the recipe at Plain Chicken. The original recipe is from the Taste of Homes Forum. Stock up on some candy corn tomorrow (after it goes on sale) and give these a try! Be sure to come back and let me know what you think if you make them!

If you don’t feel like making them into candy bars, you should try making this Homemade Butterfinger Bark from Cookies and Cups!

I will leave you with a few spooky cookies from last year. Have a fun and safe Halloween! What candy will you be sneaking from your kids trick-or-treating stash tonight?

A little personal update: I have been crazy busy the last couple of months. We decided to try selling our house at the end of May, just to see if it would sell…and it did…in 8 days! Then we went to visit family out of state 3 weekends in a row (crazy that all the family reunions were around the same time this year). We moved in between two of our trips to a rental house. And we just barely finished moving all the rest of our stuff out of the old house last weekend. YIKES! My kitchen is still buried in boxes, but we are loving our new home!

These delicious tart lemon cupcakes with raspberry filling were a hit with my family. Actually, I think most of them preferred these over the chocolate cupcakes with raspberry filling. Personally, I love them both.

I don’t have a real recipe for these, just a general idea:

Cupcakes: I used a white cake mix and substituted part of the water for fresh lemon juice (and possibly a little bit of lemon extract and lemon zest). You could also use a lemon cake mix.

Filling: Part of a can of Raspberry Pie Filling. Fill using a bismarck tip or by cutting out part of the cupcake. For directions on filling cupcakes check out this post.

Frosting: I made some cream cheese frosting and added a little bit of lemon juice (adding lemon zest would be great…I didn’t have any left).

These cupcakes were so easy to make and you can adapt them by using any flavor mix, filling, or frosting.

I feel bad that I haven’t been blogging lately. It might be a little hard to believe, but I haven’t had much time to bake the last couple of months. I decided to start running in February and I love it! I am planning on running a half marathon by the end of the summer. Between now and then we are moving. We recently sold our house, so before my husband realizes exactly how much baking stuff I have stashed in our cupboards I need to get it all boxed up.

I hope you all haven’t completely given up on my blog yet. I will be back to blogging and baking as soon as I am settled into my new little kitchen.

I made these fun elephant and onesie cookies for my lovely sister who recently had her first baby. They were a huge hit at the baby shower! I have some other fun treats and pictures to share with you of the shower in a few days.

I used the sugar cookie recipe from Our Best Bites. I love it! I added a little almond bakery emulsion along with vanilla extract….yum! The royal icing recipe is from The Decorated Cookie. While I absolutely love the taste and texture of the icing for eating, I just can’t get it to decorate the same as the more traditional royal icing recipes.

For the super white cookies, I added a little Bright White AmeriColor Soft Gel Paste to the original icing (see Bake at 350 for an explanation). The black cookies were actually more of a gray color. I didn’t want to add a ton of black coloring to the icing, so I just planned on having gray cookies.

And until I get around to doing a real sugar cookie decorating tutorial, check out The Sweet Adventures of Sugarbelle and Bake at 350 for some wonderful step-by-step tutorials.

A while ago I received a request for some bunny cookies. I was happy to have a reason to use a variety of my rabbit shaped cutters. I used the sugar cookie recipe from Our Best Bites (I almost always use this recipe). The icing recipe is from The Decorated Cookie. I love both of these recipes…the cookies taste as good as they look!

I really should have taken a few pictures a long the way to make a little tutorial….maybe next time. In the meantime, you should definitely visit The Sweet Adventures of Sugarbelle, Bake at 350, and Sweetopia. These ladies have fantastic cookie decorating tutorials.

Last year, I made a few similar bunnies. If you want to see the other goodies I made last Easter, check out the right side bar. I highly recommend making homemade marshmallow and peanut butter eggs.
Sweet cookies stuffed with creamy Nutella and a bit of sea salt…yum! The moment I saw these featured on Bake at 350, I knew I had to make them. Seriously, you can’t go wrong with Nutella (or Biscoff–I seriously love that stuff, especially straight from the jar).

The recipe is from Cookin’ Canuck and I followed her recipe exactly except I cut out a little of the sea salt. Head on over to Cookin’ Canuck for the recipe and Bake at 350 for more amazing pictures. My photos don’t do the cookies justice – the cookies in the photo were a little over-baked and drier than they should have been. Unfortunately, the chewy cookies disappeared faster than I could take photos of them.

Rich chocolate cupcakes with raspberry fruit filling and topped with smooth cream cheese frosting, these delicious cupcakes are absolutely amazing. Nobody would even suspect that they are super easy to make (I’m beginning to notice a little trend with my baking lately…maybe one of these days I’ll make something that takes a little extra time).

Raspberry Filled Chocolate Cupcakes with Cream Cheese Frosting

Ingredients:
1 chocolate cake mix, baked according to box directions (could use lemon or vanilla instead) – I used Duncan Hines Devil’s Food Cake Mix
1 can raspberry pie filling (I used a 21 oz can to fill two batches of cupcakes with a little leftover)
cream cheese icing (recipe follows)

Directions:

Bake your cake mix into cupcakes according to directions (regular or mini — your choice. We love mini cupcakes at my house). Cool cupcakes completely.

Fill the cupcakes: There are a couple of ways to fill the cupcakes. Here is a great tutorial on Annie’s Eats with 3 methods to filling cupcakes.

I use a pastry bag and a bismarck tip – Place the tip into a pastry bag (be sure to not cut the tip of the bag too big or the tip will fall through). Fill the pastry bag with some pie filling (do not fill the bag too full…it can get really messy). Insert the decorating tip into the center of the cooled cupcake and gently squeeze in a little filling. I filled both the mini cupcakes and regular cupcakes.

Frost: Once the cupcakes are filled, they are ready to top. I love using a 1M tip for icing my cupcakes. You can check out Glorious Treats for a tutorial on Frosting Cupcakes.

Cream Cheese Frosting
slightly adapted from Better Homes and Gardens New Cook Book

1 8 oz package cream cheese, softened
1/2 cup butter, softened
2 teaspoons vanilla
6-7 cups powdered sugar

In a large bowl, beat together cream cheese, butter and vanilla. Gradually add in powdered sugar until it reaches desired consistency. If you make it too thick, thin with a little milk.
