Recipe Monday- Bruschetta Chicken

This Recipe has become a favorite of mine. It isn't very difficult to prepare but looks like you spent all day in the kitchen! It will be a great addition to your weekly menu with fresh tomatoes from the garden.

Bruschetta Chicken
1/2 cup all-purpose flour
1 egg
4 boneless skinless chicken breast
1/4 cup grated Parmesan cheese
1/4 cup dry bread crumbs
1 tablespoon butter, melted
2 large tomatoes, seeded and chopped
3 tablespoons minced fresh basil
2 garlic cloves, minced
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon pepper
1. Place flour and eggs in separate shallow bowls. Dip chicken in flour; then in eggs and place in a 9-in x 13-in baking dish. Combine the bread crumbs with Parmesan cheese and melted butter. Sprinkle over the chicken.
2. Cover the baking dish loosely with foil. Bake at 375 degrees for 20 minutes. Uncover, then bake 5-10 minutes longer (or until chicken is at 170 degrees)
3. Combine the remaining ingredients in a small bowl. Spoon over the chicken. Return the chicken to the oven for 3-5 minutes longer, or until the tomato mixture is heated through.

Copy Cat Chipotle Rice

This Copy Cat Chipotle Rice is a great compliment to McCormick Recipe Inspirations Garlic Lime Chicken Fajitas. The spices are premeasured and there is a recipe card that makes meal time super easy.

Copy Cat Chipotle Rice

4 cups cooked Basmati Rice (you can also use Whole Grain or White rice)

1/2 cup chopped fresh Cilantro

1/2 cup Lime Juice (Add the Lime Juice a little at a time until it tastes perfect for you.)

1 tablespoons butter

Salt (Sea Salt is great) to taste (start with 1 teaspoon add more if needed)

Mix all 5 ingredients & serve in a warm tortilla with McCormick's Garlic Lime Chicken Tortilla recipe. This is so yummy you might want to double the rice recipe.

Recipe Monday- Pierogi Casserole

With the lenten season upon us, I find myself looking for some yummy meatless dishes to serve. Growing up, I remember eating pierogi every Friday prepared lovingly by our church volunteers. I don't think I am brave enough to attempt a homemade version. However, here is an easy, fast, and above all delicious spin on my childhood favorite.

Pierogi Casserole

4 cups mashed potatoes
2 cups shredded cheddar cheese
3/4 cup butter (may want to use a little more depending on your taste)
2 medium onions, diced
9-12 lasagna noodles
dash salt & pepper

Cook lasagna noodles as directed on package to al dente. Saute the onions in the butter. Spray or butter a 9x13 pan (very important or you will have a mess to clean). Mix sauteed onions and butter with mashed potatoes. ( I add a dash of salt and pepper to this mixture for taste) Layer noodles, 2 cups potatoes, then 1 cup cheddar cheese. Repeat the process ending with the cheese. Cover with foil and bake in a 350 degree oven for 25-30 minutes or until cheese is melted.

* I usually add a dollop of sour cream on top to serve. Try different variations to the recipe if you would like. Adding things like bacon,chives, or even broccoli might be yummy!

Recipe Monday- Easy Chicken Tortilla Soup

Well, with the holidays over we all have a little more time on our hands. However, that time doesn't need to be spent making dinner. Here is a quick and delicious meal to start your week.

Easy Chicken Tortilla Soup

1 2-to 2 1/2 pound rotisserie chicken
2 cans chicken broth
1 can chopped tomatoes, undrained ( I use the chopped tomatoes with garlic)
1 can whole kernel corn,drained
1 small can chopped chile peppers
1 tsp ground cumin
2 T. snipped fresh cilantro
1 T. lime juice
Tortilla chips with lime or regular tortilla chips, broken

1. Remove skin from chicken and discard. Remove meat from the bones. Shred enough chicken meat for 2 cups; set aside. Keep any remaining chicken for another use.

2. In a large saucepan, combine broth, undrained tomatoes, corn, chiles, and cumin. Bring to a boil; reduce heat. Simmer, covered, for 10-15 minutes. Stir in shredded chicken, cilantro, and lime juice. Heat through. Top each serving with the broken tortilla chips.

(This recipes is very flexible. You can leave out the chile peppers to make it a little more kid-friendly. Or you could add chopped garlic and jalapeno peppers for a little more zing! I love to experiment!)
