And I vouch for that as well. Its made in a very different way without any masala powders and all spices are ground fresh which makes this biriyani have a natural color to it with a wonderful flavor. If you like your biriyani spicy, be generous with the green chilies, because that's the only ingredient that adds to the spice level of this biriyani. Here you go! The recipe for you!!
cooked.

9. Now add the soaked rice to the chicken mixture

:- Water should stand 1/2 inch above that rice.

11. Throw in roughly chopped cilantro, mint leaves
and uncut green chilies.

close the pan with a tight lid and let the rice absorb all of the water,
stirring every now and then.

13. Switch off the flame once the water is all
absorbed.

:- Rice will now be semi-cooked.

14. Dhum process: Rub ghee on a baking tray and Transfer the
semi-cooked biriyani to the tray. Now mix the
milk, rose water and saffron and sprinkle all over the rice. (This generates
enough steam to slow cook the rice). Spread the raisins and cashews all over
the rice. Sprinkle about 2 tbsp ghee over the rice. Completely cover the tray
with foil sheets. Bake in a preheated oven for 20 mins at 350 degrees.

I have reduced the quantity of red chilies in half than what the original recipe calls for, and its still real spicy, but Fantastic. Just have this with some piping hot white rice with a dollop of ghee/clarified butter and you will be in heaven (though your mouth will be still on fire). This recipe is a speciality of Tamil Nadu and is a big no no for people who cant handle spicy food. But for those of us who LOVE spicy food, this is THE chicken recipe that you would ever want to make, once you try it. Here is my version of it. Enjoy!! (with a tall glass of water on the side ;) )

Ingredients:

Boneless chicken (cut into bite sized pieces) - ½ kg

(Wash and cut the chicken. Rub the pieces with a tsp of turmeric powder and juice of 1 fresh lime and set aside. This will remove the raw smell of chicken)

Dry red chilies (long variety) - 150-200 gms or as per taste (break the chilies in half and de-seed them)

Large Red onions - 2 (finely chopped)

Garlic cloves - 6-7 (crushed and minced)

Chicken Chinthamani

Ginger - 1 inch piece (finely grated)

Curry leaves - 2 sprigs (optional)

Coriander leaves - a handful (roughly chopped)

Fresh/frozen Grated coconut - ½ cup (optional)

Oil - ½ cup

Cinnamon stick - 2 inch piece (broken)

Cloves - 4 (crush the head of the cloves so they don't burst in hot oil)

Poppy seeds - 1 tbsp (optional)

Salt to taste

Method of preparation:

1. Heat oil in a wok in medium high. Add cloves and cinnamon sticks followed by the poppy seeds. Reduce heat to low.
2. Once the poppy seeds pop add the de-seeded red chilies.

:- make sure the heat is at low, if not the chilies will burn down in no time.

3. Sauté the chilies for a few seconds till they turn bright red.

4. Now add the onion, curry leaves, ginger and garlic. Sauté till onions turn golden.

5. Add the chicken and give the mixture a nice stir.
:- do not add any water since some water will be released from the chicken.

6. Cook covered on medium heat till the chicken is well done.

7. Once the chicken is done, add grated coconut, stir well and continue cooking uncovered till the water evaporates.

8. Remove from heat, sprinkle coriander leaves and give Chicken Chinthamani one last stir.

Serve hot with rice and pappad!

Note:
:- This is a dry dish and you just need to mix the chicken and chilies with rice and eat.
:- This is an extra-extra-spicy dish. An awesome treat for spice lovers.
:- One can increase or reduce the amount of chilies as per taste.

Happy Cooking :)

Though I have become an addict of the IHOP pancakes I figured it would work out cheaper to make them myself at home and that’s when I started trying out different varieties of pancakes. I love buttermilk pancake and also the multigrain pancakes, and what better than a multigrain-buttermilk pancake?

Ingredients:

Whole wheat flour – ¼ cup
All-purpose flour – ¼ cup
Corn meal – ¼ cup
Coarsely ground quick oats – ¼ cup
Sugar – 2 tsp
Salt – ½ tsp
Baking Soda – ½ tsp
Baking Powder 1 tsp
Cinnamon powder – ½ tsp
Vanilla extract – ¼ tsp
Buttermilk – 1 cup
Egg – 1
Milk – ½ cup
Melted butter – ¼ cup
Water – 2 tbsp

Method of preparation:

1. Leave the buttermilk, egg and milk outside the refrigerator for an hour.
2. In a large bowl, combine the flours, sugar, baking powder, baking soda, cinnamon and salt. In a separate bowl, beat together buttermilk, milk first. Beat in the eggs, vanilla extract and finally add the melted cooled butter.
3. Add the wet ingredients with the dry ingredients and blend using a wooden spoon. Do not stir too much. Its ok to have some lumps.
4. Heat a lightly oiled griddle or frying pan over medium high heat. You can flick water across the surface and if it beads up and sizzles, it's ready!
5. Pour the wet mixture into the dry mixture, using a wooden spoon or fork to blend. Stir until it's just blended together. Do not over stir! Pour or scoop the batter onto the griddle, using approximately 1/2 cup for each pancake. Brown on both sides and serve hot.

It’s a must during Janmaashtami festival and is offered to Lord Krishna. Its crispy, spicy flavor makes it one of the best accompaniments with evening tea or coffee. These thattais are sold right from the big fancy chain of stores to the road side vendors in India. Though there are many versions of Thattai, as I call it, I am sharing with you my version of it after trying and testing several recipes. Hope you enjoy it as much as I do.

Ingredients:

Rice flour – 2 cups
Fried gram flour (Pottukadalai podi) – ¾ cup
Channa dhal – ½ cup (soaked for a couple of hours)
Dried Red chilies – 7-10 (according to your spice level)
Garlic cloves – 10 (out of which 5 with skin)
Aesafetida – 1 tbsp
Cumin – 1 tbsp (optional)
Curry leaves – 1 sprig, chopped roughly (optional)
Unsalted butter – 5 tbsp
Salt – to taste
Water – enough to make a stiff dough
Cooking Oil – enough for deep frying

Method of preparation:

1. In a deep heavy-bottomed pan, heat enough oil for deep frying.
2. Dry grind the red chilies in the small jar of the mixer grinder. Add the garlic cloves and grind to a coarse paste.
3. In a mixing bowl, mix the dry ingredients together.
4. Add the ground paste, soaked channa dhal, curry leaves, and cumin seeds crushed between the palms. Mix well.
5. Melt the butter and add to the mixture.
6. Now sprinkle water a little at a time and mix well to make a stiff dough.
7. Cut out 3 corners of a zip lock bag to make a rectangle.
8. Take a little bit of the dough and make it into a small lime sized ball.
9. Keep it on the middle of one half of the ziplock. Fold over the other half on top of the dough. Flatten out the dough with your fingers to make a think roundel. Flip it onto your palm and slide it carefully into the hot oil.
10. Deep fry till it turns slightly golden flipping it once.
11. Remove on to a plate lined with absorbent paper.
12. Let it cool and store in an airtight container or a ziplock bag to preserve the crispiness.
13. Serve as an accompaniment for tea or coffee, or as a snack by itself.

Method of Preparation:

1) Heat oil in a vessel.
2) Add asafoetida followed by shallots, green chilies and half the curry leaves. Sauté until the onions become a little transparent and glossy.
3) Add the vegetables of your choice and turmeric powder.
4) Cook covered until the vegetables are cooked.
:- If not adding any veggies, then add more onions.
5) Add the tamarind pulp and cook covered for 5 mins.
6) Add the coconut paste, jaggery and salt to taste. Add more water if necessary.
7) Once the mixture comes to a boil add the cooked dhal and mix well. Check for salt.
:- The sambar should not be too thick nor too watery.
8) When the sambar just begins to boil, switch off the stove.
:- Make sure you don’t boil the sambar after adding the thur dhal coz the dhal will lose its soft texture.
9) Heat a tsp of oil in a small wok.
10) Add the mustard seeds and once they pop, add the remaining curry leaves and the dry red chilies.
