Adapted from Stacey, this was the perfect thing I needed to serve as comfort food on one Sunday afternoon. Not a proper lunch, but definitely filling, not heavy, but just the right amount of comfort.

Now I want to go back a few hours and eat this all over again. Sigh.

Ingredients:

1 cup cornmeal

3 cups water

1 medium onion

1 teaspoon honey

1 tablespoon butter

2 tablespoons olive oil

A bunch of walnuts

First whip up some polenta as instructed on your cornmeal package. Instant polenta would probably work too. When you reach the desired consistency, cut two 1/3 tablespoon squares of butter and put them on the polenta, and set it aside.

Now cut up the onion into half circle arcs.

Throw them into a pan (I felt like using a pot - don't judge) and fry them on medium heat with all of the oil for about 10 minutes. While that's going on...

Take a bunch of beautiful walnuts...

And chop them into cute little pieces. You could leave them whole too. I just happen to like chopped walnuts. Now, throw them into the <s>pot</s> pan with the onions.

Add the last little piece of butter, and honey. NOW look here, don't be prejudiced. Honey is sweet. Honey heals you and makes you happy. It will become something awesome. Just try it. <s>actually i just didn't have brown sugar and the honey happened to be lying around</s>

After about another 10 minutes, your onion walnut mix should become something delicious of this sort.

Now scoop up some polenta into a bowl, top with the onions, and dig in!

Again.
