On The Menu: Brown Butter Cookies

I know here we are in January which means that everyone is trying to eat healthier and I am right there with you but during the winter I love spending time in the kitchen. Which means whenever I have free time I am trying new recipes and returning to long time favorites. I almost never bake these cookies but they are my mom's favorite and she made numerous requests for a batch of these over the holidays. They are rich, decadent, and so delicious.

A lot of people get intimidated by the process of browning butter. I do not know how much people have requested this recipe from me after trying the cookies only to later to tell me they failed because they burned the butter. Browning butter takes a little time. I always keep the heat on medium-low and constantly stir the butter until it has a light nutty brown color. After the butter is melted the browning process takes about 10 minutes. I promise this brown butter cookies recipe is very easy to make once you master the butter browning process.

Ingredients:
2 cups butter
2 cups brown sugar
2 eggs
2 teaspoons vanilla extract
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
3 cups all-purpose flour
2/3 cup chopped pecans
2 teaspoons vanilla extract
5-6 cups confectioners' sugar
1/2 cup hot water

Directions:
1. Preheat oven to 350 degrees F.
2. Heat butter over medium heat for about 10 minutes, until it turns nut brown in color. The foaming and bubbling is part of the browning process, but watch it carefully so that you don't burn the butter. Remove from heat, and cool slightly. Reserve 1/2 cup of the butter for the frosting.
3. Pour remaining browned butter into a large mixing bowl. Beat browned butter with brown sugar until the butter is no longer hot. Mix in eggs, 2 teaspoons vanilla, baking soda, baking powder, and salt. Beat thoroughly. Mix in flour and chopped pecans.
4. Drop tablespoons of dough onto ungreased baking sheets.
5. Bake for 10 minutes in the preheated oven, or until light brown around the edges. Allow cookies to cool on wire racks. 6. In a medium bowl, mix the reserved 1/2 cup browned butter with 2 teaspoons vanilla, confectioners' sugar, and hot water. Beat until smooth, and use to frost cooled cookies.

I am someone who expects a white Christmas or at least a Christmas that calls for roaring fireplaces, hot chocolate, and bundling up. I couldn't have been more disappointed over the holiday season when the temperatures where nearing 70 degrees every single day. The only thing that would have made this Christmas better would have been snow. I always dream of a white Christmas. A chill in the air and fluffy, white snow covering the land just make it look more like Christmas. I find snow to be beautiful and graceful. I love a good snowy day so that I can feel content all snuggled up in a blanket, sipping hot chocolate, and having a movie marathon with friends and siblings. This Winter the only bad weather we have been having is rain.
It hasn't even been cold! Honestly there have been many days when you can comfortably venture out and about in a short sleeved tee. It has constantly been raining here though, which means everyone is pulling a raincoat from their closet. Raincoats are getting a lot of use here right now. I love all of the raincoats above. They would definitely be perfect for the weather we are having right now. My favorite would have to be this one. I love the details and the color. It is sophisticated and chic. What about you? Chit Chat: A New Job
I have news that I am so excited about to share. I have a new job!

Since graduating law school I have been unhappy with my job situation. I cannot even begin to count the number of hours and days that I have spent worrying and crying because I was just plain unhappy. I tried numerous times to approach my former employer about my position and in hopes of creating some plan that would make me feel better about my job. After many discussions, my boss made it clear that she was very happy with how things were and that she had no intentions of anything ever changing.

Knowing that there was no way for me to grow in my job, for me to be happier, or for my position to improve I knew I needed to make a change. I kick started a job search a very long time ago and let me tell you it was hard. For months and months I felt like a complete failure that no one wanted. I sent out dozens of resumes, tried to look at it from every angle possible, approached everyone I knew and many people I didn't and absolutely nothing came from it.

I had largely given up. I felt hopeless and had really began to believe that I was completely stuck where I was. Then less than a month ago the secretary for an attorney that I had tried to get to meet with me for months called on a Friday afternoon. She said her boss asked her to call me to find out if I knew any attorneys looking for a job. I immediately replied, "Me!" After asking if I was serious she asked a few other questions and said she would pass the information on to her boss. The next Monday she called and asked me to come to their office that day. When I arrived at their office they began immediately telling me what I would be responsible for at their office, the office schedule, and we discussed pay. It was also decided that on December 18th I would give my two weeks notice.

Today marks my seventh day at my new job. Maybe it is the newest of it but I am happy and excited. I have been told that there are many possibilities for growth here and that is what I want. I want the opportunity to grow, to be successful, and to always improve. This new job serves as a reminder that if you work hard and are kind great things will happen.

P.S. This is a little freaky but when I visited a psychic over the summer she told me I would get a new job opportunity in December!

New Years Resolutions

New Year Resolutions
Last January I shared my New Year's resolution to do more here. In 2015 my resolution was to do more. I wanted to get out there and live a little more by trying new things and saying yes to new opportunities. I think I did a lot to fulfill this resolution last year. Some of the new things that I accomplished last year, I still plan to do. For starters Tracy and I started a book club with some of our best friends and I can see this continuing for many years. We also attended our first board gaming convention with our cousin, who has been to many, this past year. We had a blast and have already ordered tickets for a board gaming convention in April. We had our first visit to a psychic and had tarot card readings. It was definitely very interesting. I swam with a dolphin on our summer vacation to Florida. I also went back to school last year to earn my next degree. These are just a few of the things that I did last year to really live my life.

So a lot happened last year and I want to keep that up this year. I want to keep exploring and trying new things. This year is going to get crazy hectic for me though. Between work, being back in school, and starting work on my National Board Certification I am going to be a busy busy bee. If you aren't in education you probably don't know about National Board Certified Teachers, but it is a crazy amount of work, but it is a great thing to have. It shows others in education that you know what you are doing. It is a prestigious title to have and it comes with a pay raise. All of this is going to keep me on my toes for the next 5 months. We are back to work after break, I have college classes starting in a couple of weeks, and I will be working on my first component for my National Boards. All of this seems like it could cause this upcoming year to be very stressful at times. Because of this my New Years resolution is have fun this year.

I am not going to let the stress get to me. Whenever it does, I am going to remember my resolution and take a break and have some fun. You need to be serious and a hard worker, but you can't be that way all the time. What do you suggest I do for fun this year?

Pardon The Interruption
Starting today Jessica and I will begin slowly getting back into routine. Last night I was so sad to see the last minute of my Christmas holiday creeping up but today I am excited and ready to really get this new year off on the right foot. We took a little more of an extended break from blogging than we originally intended but breaks are a good thing. Relaxing over the last two weeks while trying numerous hot chocolate recipes, reading three books, having so many movie nights that I lost count, and just generally being lazy while trying to stick as close to home as possible was exactly what I needed. I cannot wait to get caught up with my favorite blogs and we have some great posts coming up in the next few weeks. We hope you are ready to have a great year too.

10 Christmas Traditions To Start This Year
Whether it is maintaining long held family traditions or creating new ones, traditions are very important to me. I have always viewed them as a way to connect with the past and maintain bonds with family and friends. Traditions are a huge part of who we are. I talked briefly about how important traditions are to me almost two years ago.

Below are ten of my favorite Christmas traditions that make the holidays special. You should be a few to start this year.

ONE // Host a Cookie decorating party. This is my favorite Christmas tradition. My family has engaged in this tradition my entire life. My mom makes the most amazing fudge but has never been what I would call a baker but my dad has always told our family that she always said she wanted children to bake Christmas cookies with. Our Christmas cookies have became much better looking throughout the years but we still laugh about how ugly they used to be when we were children.

TWO // Watch a production of The Nutcracker, A Christmas Carol, or other holiday-themed show. This is a recent tradition me and my sisters started. For the last several years we always attend a production of The Nutcracker. It is a fun day to get dressed up, have a nice meal together, and get in the holiday spirit.

THREE // Christmas pajamas. This isn't a tradition that I have ever taken part in but I would love to start it. Receiving pajamas each Christmas Eve to wear on Christmas morning sounds like an adorable idea to make sure you have something cute to wear in all of those photos taken Christmas morning. Here are some beautiful picks.

FOUR // Find a way to give back. Giving back is always important and especially so during the holidays. Small actions can help make sure that no one feels left out, alone, or forgotten during this time of the year.

FIVE // Have a Christmas movie night. Pop some popcorn, put on your coziest pajamas, and watch your favorite Christmas movies. There are few easier ways to get into the holiday spirit and this is a great way to have a relaxing evening when getting bogged down by holiday stress. My favorite Christmas movie is Miracle on 34th Street. What is yours?

SIX // Buy a special Christmas tree ornament each year. This is a great way to mark milestones and it is fun to take the ornaments out each year and recall all of the memories attached.

SEVEN // View the Christmas lights in your neighborhood. This is a tradition my family took part in when I was little and it is something I really miss. It was always fun bundling up, piling into the car, and driving around our neighborhood looking at the Christmas lights while listening to holiday music.

EIGHT // Have a game night with a hot chocolate bar. This is a fun way to have friends over for a casual night and homemade hot chocolate is a decadent treat.

NINE // Make choosing a Christmas tree an event. Involve your entire family, visit a Christmas tree farm, sip apple cider, and choose the perfect tree.

TEN // Send out Christmas cards. Jessica and I host a Christmas card exchange each year. It is a simple act that lets others know you are thinking about them.

Chit Chat: Time to Relax
YAY! Tomorrow is my last day of work until after the new year! I have been so busy lately with teaching, taking college classes, teaching after school tutoring, and all of the Christmas related tasks that I have needed to complete. It has started taking its toll on me. Last week on Thursday I was so sick that I almost left work early, but I toughed it out and then only missed Friday. This week has been way busy too. I had meetings all day Tuesday, then another meeting after school on Wednesday, and then I also have after school tutoring today. Tomorrow is the last day for the year!

I have so many plans for break. Plans that include a lot of relaxing, watching old Christmas movies, baking up a storm of sweet treats in the kitchen, and visiting with friends and family. I have a little work that I want to do for school and a few things that I still need to finish before Christmas. Are you finished with all of your Christmas shopping and ready to give out gifts? I just have a few small things to get for stockings and I need to get my cat's presents. Mr. Cat has a stocking and he expects lots of toy mice to beat up and cat treats to munch on when he has defeated the mice invasion.

I'm excited for break. It fills like I have been a busy busy bee lately trying to meet all my deadlines for assignments and to do everything school administrators expect of me. I am ready to sleep in and to take my time to enjoy Christmas. Earlier this week I shared with you 10 Ways Beat Holiday Stress and I plan to do all of these things over break! I love the holidays. Spending time with family and friends, picking out the perfect gifts for them, and making homemade treats for everyone is just a delight. There seems to be an extra amount of happiness and cheer in the air. Sometimes your to-do list can grow long and your stress can mount. At these times you need to destress to get yourself back into the holiday spirit of things. Here are ten of my favorite ways to destress during the holidays.

ONE // Make a holiday playlist. Listening and singing along to the holiday music will help your tasks go by faster and get you in a more festive mood.

TWO // Pick your favorite holiday tradition and make it happen. One tradition that we have always done as long as I can remember is decorate sugar cookies for Christmas. None of us like sugar cookies, but it is tradition. Even now we all gather around mom's kitchen table to decorate these cookies.

THREE // Wrap some gifts. Find a quiet spot to relax in and wrap some gifts. I find that wrapping and then coordinating the ribbons and bow are very relaxing and then you have something beautiful to look at.

FOUR // Get some sunshine with a quick walk outside. Even during the winter your body needs sunshine. Go for a quick walk or even throw open the curtains and let the light stream in.

A week or so ago Tracy shared her Christmas wishlist with you, so today I thought I would share mine. All of these are items I would love to have in the future. Holiday Baking Essentials
My family loves to bake sweet treats and make delicious candy. One of our family traditions at Christmastime is to come together and makes lots of treats that we can send to friends and family to enjoy. You know one of the best things about baking is the compliments you receive when you share. Of course Mom is the fudge queen is our house. She whips up pan after pan of peanut butter, chocolate, or dreamsicle fudge to give relatives. The rest of us our more bakers than candy makers. We were just saying to each other that we need to plan our Christmas baking menu and make sure we have all of the ingredients so that we can start making treats for people next weekend. While we may not have the ingredients always on hand, we do always have our baking essentials in the kitchen.

ONE // Mixing Bowls- You can never have enough of these. Some recipes call for multiple mixing bowls because you keep the wet and dry ingredients separated at first. It's better to have more than you need so that when you are doing a ton of baking you don't have to keep stopping to wash dishes before you bake your next treat.

TWO // Rolling Pin- When making Christmas cookies a rolling pin is absolutely necessary. You need to be able to roll out your cookie dough evenly so that you can use your cookie cutters to make beautiful shapes!

THREE // Sifter- You really need a good sifter in your kitchen. Most cakes will benefit from having the flour sifted. It helps the cake to be lighter and fluffier and it helps the flour to mix better with the other dry ingredients. It also prevents lumps from being in your batter. Powdered sugar is another ingredient that I always sift.

FOUR // Baking Utensils- Silicone Spatulas like these are a must when you are mixing ingredients. They allow you to scrap everything back down into the bowl so that you can ensure everything is thoroughly mixed together. Then when it's time to pour your batter into the baking pan you can easily scrap out everything.

FIVE // Measuring Spoons and Measuring Cups- I am not my grandma. She can whip up fantastic homemade biscuits and cakes without having to measure a single ingredient. She just pours things into a mixing bowl until "it looks right" and then bakes it. She can't tell you how to make anything because to her it's all "a little of that" or "pour it in until it looks right." Since I am not like that I definitely need my measuring utensils.

SIX // Glass Containers- When you are busy in the kitchen, it is so much easier if everything is organized. Keep dry ingredients in clearly marked containers. Have your spices neat and organized. This will only make your life easier.

SEVEN // Baking Pans- You need pans for everything you plan on baking so a Bakeware Set like this one is a good idea. If it doesn't have everything you need you can always pick up an extra Bundt Pan, Muffin Pan, or whatever other kind of pan you need.

EIGHT // KitcheAid Stand Mixer- I am so jealous of Tracy's KitchenAid Stand Mixer. It is so easy to use, works fantastic, and looks beautiful. A stand mixer is great so that you aren't stuck in one spot using a hand mixer, it frees you up to get your next step ready.

NINE // Display Dishes- After all your hard work baking delicious treats you need adequate dishes to display these sweets on. I love this Maratha Stewart Cake Stand and this Serving Plate.

Baby It's Cold Outside
With Winter approaching and the cold weather settling in I have been thinking more about warmth. This occurs to me especially in the mornings when I am leaving home for work. The mornings have been dark, frosty, and cold. I have to leave the warmth of my home to go out and scrap the frost off my car so that I can go to work. This made me recently purchase a new coat, but I also need some cold weather accessories. I do not like to be hot, but I also do not like being cold. I have also been sick and having chills because of this, which makes me think about being warm even more.

I want it all- scarves, gloves, and hats. This scarf would be perfect because it would be warm and it's a cheery color. When it comes to gloves, I am more for neutrals. I don't wear gloves as often as I do scarves and hats, so I want my gloves to be more versatile and to match more of my other clothing items. So all three pairs above would be perfect for me. What are your thoughts?

I know so many people who have a Christmas tradition of the entire family receiving pajamas on Christmas Eve so they will have them to wear on Christmas morning. Does your family do this? So I'm curious... Do you buy yourself a Christmas gift?

I do. I really cannot remember when this little yearly ritual started for me, but I am pretty certain that it was at some point while I was in college. I always buy clothes and shoes when I need them (okay also sometimes when I want them) but otherwise I do not make a lot of purchases. However, every year at Christmas time I treat myself to one or two items that I want not need. It is never anything extravagant but I pick out something pretty and fun that I would not typically otherwise purchase. Sometimes it is something that I have wanted for a long time.

For years my coworkers have teased me about my tradition but the other day I heard that 67% of people purchase themselves at least one gift during the holiday season. It seems I fall in the majority and now I am beginning to wonder if a few of my coworkers are just unwilling to admit they get themselves a gift at Christmas.

I attended my first Christmas party of the season last Saturday and had an incredible time. One of my favorite things this time of the year is all of the gatherings, festivities, and events where we come together with those we love and those that are important to us. When I was growing up my parents worked hard which did not leave them with a lot of time to cook every meal homemade. Canned soup was a staple. It along with a sandwich was a often served as a quick meal at the end of a long, busy day.

Now that I grown up and have learned my way around the kitchen I love to cook. Canned soup almost never pops up in my kitchen. Plus, I've been vegetarian for years which means that most canned soups would no longer fit within my lifestyle. I do, however, at times miss my favorite soup from childhood which was bean and bacon.

The other day I finally felt like we were having our first tastes of winter weather and it could not have made me happier. It just does not feel like the holidays if it is not cold enough for sweaters. The cold weather inspired me to create a vegetarian version of bean and bacon soup. There is nothing better than soup on a chilly day. This soup is no fuss, easy to make, delicious, and I promise you will not miss the bacon.

Ingredients:
2 tablespoons butter
2 tablespoons extra virgin olive oil
2.5 cups carrots,diced
medium onion, diced
1/2 teaspoon smoked paprika
1 teaspoon fresh rosemary, chopped
3 cloves garlic, minced
4 cups vegetable broth
3 (15 oz.) cans great northern beans
1 (8 oz.) can tomato sauce
kosher salt and black pepper to taste

Directions:
1. Add olive oil and butter into a Dutch oven over medium heat. Once butter is melted add the carrots and and onion. Cook until vegetables they begin to become tender, about 7 minutes. Add garlic, rosemary, and smoked paprika. Stir and cook for 1 minute.
2. Add vegetable broth and great northern beans. Season to taste with salt and pepper. Bring to a boil and then reduce to a simmer. Allow to simmer for 45 minutes.
3. Remove 1/2 of the soup and place into a blender. Process until smooth and then return the puree to the soup. Stir.
4. Add tomato sauce. Stir and allow to simmer until heated through.
5. Serve with grated Parmesan cheese and a drizzle of olive oil if desired.

All I Want For Christmas
How is your Christmas shopping going? I finished up almost everything by Cyber Monday (even managed to pick up a couple things for myself). I have 1 more present left to purchase. I hope to pick it up soon so I can get all of my gifts wrapped, under the tree, and then forget all about the crazy busy stores until after the holidays.

Meanwhile, I have rounded a Christmas wish list of items I would not mind spotting under my tree come Christmas morning.

Frends BaubleBar Headphones // Because any girl who loves sparkle and music as much as me should own bejeweled headphones.

Chit Chat: Holiday Calendar
I don't know about you, but my holiday is looking very busy this year. Very busy and lots of fun. My weekends have been booked since November started with get-togethers and holiday fun. I guess really it has been busy since the end of October with our Halloween party. I love having so many plans with family and friends but it has meant that I work extra hard during the week so that I have things taken care of before the weekend starts. I have really had to be on top of things that work and school and does not suffer.

November began with book club which is always a blast and really a weekend affair. We enjoy good food, book discussions, and board games all weekend long. Then the whole family went on a weekend getaway to the Smokey Mountains. This was followed by a weekend shopping extravaganza with a group of the girls (friends and family). We shopped hard and accomplished a lot of Christmas shopping and we all bought a present or two for ourselves. We deserved a treat!

Then Thanksgiving weekend was upon us. Tracy and I spent a lot of time in the kitchen getting things ready. We are basically on dessert and side dishes duty and mom always takes care of the turkey and ham. We started Thanksgiving off with a lunch at my grandmas house, then followed it with dinner at our mom's house. Then most people dispersed to go shopping. Tracy and I hung out and did some online shopping this year instead of going out to fight the crowds. I am now finished with all of my Christmas shopping. I have marked all my family, relatives, co-workers, and friends off my list.

My busy schedule is not over yet though. Next weekend our family will head to Northern Kentucky for a Christmas party thrown by my aunt's family. They came to our Halloween party and decided to throw a Christmas party this year so that we could all get together and party again! It is sure to be loads of fun and with lots of food, and this time I don't have to do any of the preparations! It couldn't get any better. Then the following weekend we will be attending the Nutcracker ballet performance. Tracy and I began this several years ago and after the first performance we declared it was going to be a Christmas tradition for us from now on. This year our other sister Tiffany is going to go with us. I'm sure she will love it! Then the last weekend in December, before Christmas, will be spent baking various treats and making candy and fudge. This is another tradition for our family. We always make a ton of sweet treats and then distribute them to relatives and friends to enjoy before Christmas.

My calendar is definitely full. What are your upcoming plans?

Wow, the first few days back at work after a holiday are rough. Now I am officially in the mindset where I want to be doing nothing but relaxing and celebrating the holidays not stuck behind a desk for hours and hours. Not to mention that I am not a fan of 5 am wake ups.

This upcoming Saturday Jessica and I are traveling out of town to attend our first Christmas party of the season. Over the last month I have been collecting a sizable amount of holiday party appropriate attire, including a skirt similar to this gold pleated midi skirt. It looks so pretty on and the gold is so festive. I have been swooning over this clutch for months. It also comes in several other colors.

My social calendar is booked until mid-January. It is going to be busy but this next month is going to be fun. Plus, only 3 more weeks of work and then I have a full 2 weeks off to relax and enjoy the holidays. Will you be attending any Christmas parties this year?

When the colder seasons hit, I find myself putting up the floral prints and the polka dots and reaching more for my stripes and my plaids. I have now found myself in the position where I have only one plaid item in my whole entire wardrobe! I know, how could I let it come to this? The plaid top that own is a new favorite of mine. It is a button up top and I wear it with my favorite jeans constantly when I don't have to work. Do you love plaid? Do you have a favorite piece? My favorites would have to be this bomber jacket that would be perfect on casual days and these loafers that would be perfect for work.

Since I have gotten myself down to just one plaid item, I have spent some time looking for replacement pieces. I love everything above and it is just so too hard to pick only one favorite. I would love to splurge and buy everything up there, but right now I am on a necessities only budget. I have spent a lot of money over this past month to buy Christmas presents for everyone and now I need to save some money so that I can pay my credit card off. Then I can revisit this post and decide what plaid item I would like. Which one is your favorite? What would you buy?

Are you ready for Thanksgiving and all the madness that is Black Friday? I am looking forward to spending the next few days with family, baking and eating delicious food, playing board games, snuggling up with my cat and a good book, and finishing my Christmas shopping.
