Living on the Specific Carbohydrate diet (scd). It is launching us into a total health transformation. We will triumph over Crohn's disease.

2015-03-18T07:45:00.000-07:00

I have told several people lately that I am thankful for my youngest daughters disease. She is 11 and has Crohn's disease. Why in the world should I be thankful for this? It has opened my eyes and brought me to the truth. It is so wonderful to know the truth and be aware. As I have said before, I have always been aware of food and what we should eat but I was kinda like on auto pilot..knowing the truth sorta and implementing it mostly. I always shopped at whole foods and only bought organics. BUT doing that is NOT ENOUGH... shopping in the middle aisles is not good. Cereals, chips, crackers, granola bars are not good. To have optimum health you have to start from scratch(with regards to what you think is healthy to eat) and research. and research. and educate. I found this particular diet because it is geared specifically for crohn's disease and intestinal health. The author has done 50 years of research and is very thorough. I am very thankful for Elaine Gottschall. The book "Breaking the vicious cycle" is excellent in explaining what foods you must eat or not eat. It basically goes back to the beginning of time and what God intended for us to eat. I know for a fact he did not intend for us to eat toxics, chemicals, hormones, etc. Health should be a priority. If you get into a jam and need something quick, stop at whole foods and go to the hot food bar.. They now have a paleo line full of really great choices. Pack your kids nuts & sliced fruit for the ballfields.

So here are some new choices Meg and I have discovered and I am truly in awe of her cooking skills..she has advanced to turning on a gas stove and putting things in the oven. (this may be late for some kids but I admit I am a bit overprotective when it comes to fire and such:)
We are still experimenting and scouring the net for new recipes which is fun and Meg still makes grocery lists for me.

We made homemade tortillas for tacos the other night and they were delicious. Here is the recipe

AUTHOR: Danielle Walker - AgainstAllGrain.com

SERVES: 4-6

INGREDIENTS:

Tortillas

6 egg whites or about ¾ cup
3½ tablespoons coconut flour
4 tablespoons almond milk
½ teaspoon sea salt
½ teaspoon ground cumin
½ teaspoon chili powder
¼ teaspoon garlic salt

Mix all ingredients and pour onto a skillet!! Yummy!

We now eat this pancake recipe most days because it is filling and delicious.

Fluffy coconut pancakes

3 large eggs

1 tsp of oil(ghee, coconut oil or olive oil)

1/2 tsp vanilla extract

1/4 tsp cinnamon

1 tsp baking soda

2 tablespoons coconut flour

Mix all wet ingredients and then add dry ingredients..Let the coconut flour absorb for 2 minutes. Pour about 1 tablespoon of batter for each pancake

Lately we have been getting obsessed with cauliflower...

http://theclothesmakethegirl.com/2014/03/25/roasted-cauliflower-rice/

http://www.firstyum.com/2014/04/the-best-cauliflower-crust-pizza.html

Both of the above recipes are delicious and we ate just about every bite!

Meg got a donut hole maker for her birthday so we love making these...These are done in about 2 min 30 sec! (sidenote..I couldn't find the recipe so I looked on meg's ipad and she had it on Notes...along with everything she has eaten in the last 30 days!! Love this girl.)

Donuts

*1 cup of almond flour

*4 eggs

*1/4 tsp salt

*1/4 tsp baking soda

*1 tsp vanilla extract

*2 tablespons of honey

Whisk together all ingredients well.

Pour into donut hole maker

done in about 2 min 30 sec

We are also loving Larabars. We can't eat all of them, because some have chocolate, but we love the lemon and the coconut cream pie.. They are sweetened with dates and they are really good.

Another delicious goody to have on hand...snickerdoodles...yummo!!

To pay

moving through life with no sugar.

2015-02-23T18:04:00.000-08:00

My Meg is 10 just about to turn 11 and she has endured a radical change in her diet. Why? Diagnosed with Crohn's. Before this happened she was a finicky eater, barely finishing her dinner and not a tryer of new foods. It was frustrating to say the least. My husband is a finicky eater and he told me many times that he survived on cereal growing up. So sometimes I would just serve her cereal for dinner.

Fast forward to the now. She eats a solid 3 meals a day with 3 healthy snacks in between. It is unreal how much food she is eating. I am truly amazed at the amount of new things she has tried and surprised at some of the things she has eaten just because she knows its good for her. How do you break your sugar habit for your kids? We went cold turkey because I felt we had to, based on the research I did. I only want her to eat healing foods to make the inflammation go down in her stomach. This means no gluten, no dairy, no sugar, no grains. I will say this is very time consuming and I have had to put my art business on the back burner for a bit, but it is so worth it when you see your child thriving and putting on weight! I recommend if you are planning to kick the sugar habit to set aside an entire weekend to bake and cook. Our favorite place to find recipes are in the links…Book mark them and scour them for yummy recipes. I will post more good ones as we find and eat them. Also my very favorite place to find very useful information on why you should kick the gluten and the sugar is pinterest. Follow my healing foods board or smoothie board to see what I am talking about. I also think it is important to involve your kids on why you are eliminating things from their diet and have them get in the kitchen. Meg has loved baking and now says she is going to be a chef when she grows up!!

So what in the world do we eat? I am keeping a food journal so we can keep track. Here is an example:

breakfast-

4 coconut flour crepes with homemade blueberry sauce( I make this by simmering on the stove with some water and honey)

3 scrambled eggs

6 slices of Havarti cheese

2 cups of almond milk

snack-

cup of cashews, slice of homemade banana bread.

lunch-

homemade cheese pizza bread with side of guacamole to dip it in.

apple slices

1 cup of almond milk

snack-

bowl of yogurt with strawberries cut up

dinner-

pork chop with cup of applesauce

6 asparagus

salad

1 cup of orange juice

snack-

vanilla cupcake

handful of cashews

1 cup of almond milk

She is not complaining about this diet and if we get a sweet tooth( cause I am following the exact same diet) we will whip something up…Last night we made coconut pudding! We ate the entire pan.

Until next time…

My life was busy…and then my daughter got diagnosed with Crohn's disease. a new journey.

2015-02-16T09:41:00.000-08:00

Nothing will change your life faster than your child getting sick. Telltale signs may present themselves to you but you really don't think those signs are a disease…you have them in the back of your mind but aren't overly worried.

some signs to pay attention to… I'm no doctor (this is my personal experience) and pay more attention if all these signs present themselves at the same time.

-Diarrhea ( ask and tell your children diarrhea is not normal on a everyday basis) people don't necessarily talk about this, but it is VERY important to know this!

-energy levels- If your child is getting tired on a regular basis and it's out of character, take them to get their blood checked for iron levels and a poop sample to check for blood or parasites

-weight loss or overall skinny minnie- doctors can chart their weight and if they are off the charts their could be something wrong…key word "MIGHT"

My daughter is 10 almost 11 and she had a colonoscopy and was diagnosed with Crohn's disease and ulcerative Colitis. I can't tell you how many tears I shed, but that is over..It's time to whip this girl back into vibrant health and take a fast course in food.

This is a new journey. Let's back up just a bit..I have been buying organic food exclusively for at least 5 years, meaning no cheetos, goldfish, fast food, sodas, etc…I did however buy "organic" processed food and well I am learning those are no good either. Look at the sugar content!! It's unbelievable!

I've decided to follow the SCD diet…and let's say it is challenging and time consuming but as most mothers, I am up to the challenge for my child. And to be honest Meg is up to the challenge as well! She has taken to copying and pasting recipes, making grocery lists and helping make most of the food. Right now she is downstairs making her own pizza crust..AMAZING!!

I highly recommend you to take a look at this bookhttp://www.breakingtheviciouscycle.info

and this sitehttp://comfybelly.com

I will start regularly posting recipes we have made together and have liked or loved. This picky eater is becoming a great eater in less than a week… She missed desserts the most so we have baked several. I love the fact that the ingredients are super foods (think coconut, almonds and honey)

A delicious apple piehttp://comfybelly.com/2008/12/apple-pie/#.VOIp-97fvHg

Vanilla cupcakes http://comfybelly.com/2011/06/very-vanilla-cupcakes-using-coconut-flour/#.VOIqud7fvH- the vanilla frosting was way too sweet(too much honey) so we are experimenting with that.

More to come…but until then please post comments with great foods/desserts that use no sugar, dairy or wheat! Or let me know about your journey…

Soul Food online class

2014-07-22T14:35:00.000-07:00

So a few months ago I did an online teaching class for Soul Food. It was an amazing honor that they asked me to be a part of it…I had to do an online teaching class, which meant I needed to figure out how in the world to use iMovie and use my iPhone to video myself somewhat professionally!!! I am not going to lie, I felt I was a huge dork …my family never got to see it… But the class went live and I got good feedback, people were liking my class…adults!! Ha! Starting next week, I am going to be doing lots more videos and am confident that I will get further and further away from sounding like a dork. Anyways here is a sample of some of my student's work…They were truly amazing..enjoy!

As you can see, my lesson was on Owls! They each took my lesson and made their owl their own.

Meg's Birthday party

2013-03-05T09:29:00.000-08:00

My baby turns 9! This year she wanted an art birthday party and I couldn't have been happier...I told her it would be great to have it in my studio so they could have full access to all of my supplies! Which really meant, it had to be small cause I can't fit a ton of girls in my studio. She settled on 6 of her closest friends and it was such a fun time!

For the decorations, I seriously made them all of a pack of napkins and paper plates:)

Supplies needed for simple decorations!
*napkins-I got these at Walmart for a dollar
*small plates- Walmart for a dollar or 2
dowels- Michaels for maybe $2
Mason jars- I already had these
tissue paper- $1 at any store
Napkins and plate do double duty cause you need them to serve cake:)
Decorations don't have to be expensive to be cute!!

Banner made from napkins and paper plates, some bakers twine and a few clothespins:)

getting ready to paint! One girl was a bit late so she had to scoot in:)

making progress on their backgrounds

great background!!

Didn't they turn out cute?

Birthdays...

2013-02-19T17:24:00.000-08:00

I love planning a birthday party for my girls... My youngest(Meg), who will be turning 9, has decided to have an art birthday party...I did give her a choice!!! But she hasn't had one yet and is quite excited. Time got away from me and I realized the other day that her birthday was in 2 weeks and I hadn't gotten her invites together...At first I was going to download a printable invite from Etsy and Meg and I looked for just the right one, but just before I hit the "add to cart" button... I realized that that was the easy way out. So I brainstormed a few minutes and this is what I came up with.

I cut these palette shapes out of one of my work aprons! The paint was already on it, wahoo!!

Well I did have to add some "extra" paint:)

The invite was printed from my computer using a fun font. I then punched holes in both and added some bakers twine(one of my favorite things)& put them in a clear cellophane sleeve with a resealable flap.

What do you think? Didn't cost a dime...

Valentine Open House

2013-02-06T07:25:00.001-08:00

Spreading love...

http://www.etsy.com/shop/nursejeanneg
I thought this would be perfect to welcome my guests, this is such a cute shop, check her out.

Preparing for an open house can be a bit nerve wracking...especially when having it in your own home. The house needs to be cleaned, presentation spot on, food made, drinks out, music on and your dog taken care of( Vegas's groomer was closed on Tuesday so he was causing a bit of trouble, but not too much) Last minute, I started to get nervous that I wouldn't have enough stuff to sell so I sent out a few emails to other entrepreneurs to see if they would like to be apart of my open house..luckily they all said yes and it was a big hit! I had a ton of fun socializing with these girls and they each brought amazing products! Please check out each one of their Facebook pages and ETSY sites.

Word of 2013- BALANCE

2013-01-13T10:20:00.000-08:00

I'm participating in a blog hop that is all about the one word that will carry us through the year of 2013!
Wow! How in the world do you pick that word? I just go by my intuition and let it just come to me. This word was loud and clear and no other word will do! Its BALANCE.

Last year got a bit out of control due to my imbalance. Everything kind of fell apart because all I focused on was my art business. This year I am off to a great start and plan to be conscious
of how I spend my time. Weekends will not be consumed with art but rather family, friends and other hobbies. I'm taking in more movies with my girls, shopping on a whim and having dates with the husband. AND I am only 13 days into the new year:)

Balance-
balance |ˈbaləns| noun1 an even distribution of weight enabling someone or something to remain upright and steady:2 a condition in which different elements are equal or in the correct proportions:3 an apparatus for weighing, esp. one with a central pivot, beam, and a pair of scales.4 a counteracting weight or force.5 a predominating weight or amount; the majority:6 a figure representing the difference between credits and debits in an account; the amount of money held in an account:verb1 keep or put (something) in a steady position so that it does not fall:2 offset or compare the value of (one thing) with another:3 compare debits and credits in (an account), typically to ensure that they are equal:balancer noun

Penguin art class!

2013-01-04T16:32:00.000-08:00

Penguins, Penguins, Penguins...

What a fun project! My first class was with 3rd-7th grade and I decided upon a collaged penguin and fun background. The class was 3 hours long which needed to be a 1/2 hour longer to finish up the details... But I truly was amazed at how good these penguins turned out, especially this being their first attempt at collage art! Take a look...

cutting out magazines for collage

working on backgrounds

getting outlines done for penguin

starting the collage!

so talented!!!

Don't you just love them all??

Kindergarten-2nd grade

These penguins are so cute! I had them use paper elements to add fun scarves and ear muffs. I didn't get a chance to take as many pictures as the first group, because at this age they need a lot more of my help:)

I told them to have fun with the penguins...that they could make them purple penguins or whatever color they desired BUT they all chose black and white:)

such creativity!

love the ear muffs!

these 2 are sisters..love the hats they made for their penguins.

All you need is love! New work...

2012-12-29T13:26:00.003-08:00

I haven't painted an original piece of artwork it seems in months! I know I painted tons of little 3 x 3 canvases for the ornaments I sold BUT they are so small and you can only fit so much on them. I started back with an 8 x 10 and had a lot of fun just listening to music and painting. I'm gearing up for Valentine's day with sweet paintings to give to a daughter, friend, mom, etc... I am also bringing back my original paintings on blocks of wood...Hope your enjoying your day, it's spurting snow here in Tennessee. Click here http://www.etsy.com/shop/sunshinegirldesignse to purchase this sweet painting.

Let's make a snowman outta yarn!!

2012-12-28T07:39:00.000-08:00

Look what fun these are! My extended family came into town and I wanted to start a new tradition! These were more fun than I thought they would be, or rather let me rephrase..I KNEW it would be fun but didn't know if the kids would really get into it...Well let's just say we spent at least 4 hours on these snowman if not longer! A great cold winters day project!

Which one do you think is mine?

you can paint the block of wood in chalkboard paint and then you can change the words!!

Joe Jumper from the Clay Pot hosts a project snowman every year, check out his page

http://www.facebook.com/pages/The-Clay-Pot/

Supplies you will need!

styrofoam balls are kinda expensive if you need a lot SO instead I used aluminum foil! Just shape it into a ball shape, the yarn will hide the imperfections
yarn in any color
bag of pom poms
bag of buttons
bag of pipe cleaners
blocks of wood or anything you can come up with as a platform
hot glue gun and plenty of glue-sticks
ribbon
glitter, paper, and jingle bells add whimsy but not necessary!
twigs from the yard
cotton balls for the snow effect:)

Holiday workshop 2012- It's a wrap!

2012-12-23T08:37:00.000-08:00

First workshop for 4 & 5 year olds...whew, they are busy! Not so much busy with art but busy socializing...these girls just wanna talk, laugh and have fun! But I tried to keep them focused:)

cuteness!!

Kindergarten thru 2nd grade...more focused!!

I thought they did a wonderful job on these ornaments!

3rd grade thru 7th...these girls were amazingly focused and I think they had some wonderful art!!

Starting my holiday decorating.....

2012-12-06T18:29:00.000-08:00

Getting a late start to the holiday decorating...it's hard to fit it in when you have your own business, but I had to find the time because my youngest daughter Meg wants it decorated to the hilt! And really it does look pretty so I am oh so happy to oblige...I started with the mantel...this took me awhile to figure out! After several tries, this is what I came up with...

cut garland to form the letters of Joy

added different sizes of votives and filled them with ornaments

Our Sweet little Christmas tree is wrapped in bulap in a galvanized tub, because we are planting it in the front yard when Christmas is over:) Smaller than normal but we love it so much cause it's gonna live! Added some fun blue lights so as to not take decorating so seriously...

Kitchen...

a table in our living room...went outside and picked up sticks, threw them in a red metal pail, added lights and some sweet birds...simple but pretty.

I'm not even close to done! I will show a holiday post part deux...until then, Happy Decorating!!!

Getting creative....Fun day in the studio.

2012-11-13T19:33:00.003-08:00

My mind will not rest.

I think of new ideas literally all day and when I sleep, I'm sure I dream of new ideas.
When is enough, enough? My husband would say about 20 ideas ago.
Here's my latest idea. Recyclable tags! Yes, they are made out of cardboard... I loooved coming up with the packaging...so many possibilities. Birthdays, easter, Valentines Day....

December..what's going on...
