<li><font size="3" face="Arial">1 can black beans-do not drain</font></li>
<li><font size="3" face="Arial">16 oz vegetable stock</font></li>
<li><font size="3" face="Arial">1 large can or carton (26oz) chopped tomatoes-do not drain</font></li>
<li><font size="3" face="Arial">1 packet of taco seasoning</font></li>
<li><font size="3" face="Arial">2 tablespoons chopped garlic</font></li>
<li><font size="3" face="Arial">1/2 lb carrots, chopped</font></li>
<li><font size="3" face="Arial">1 large onion, diced</font></li>
<li><font size="3" face="Arial">3 bell peppers, chopped</font></li>
<li><font size="3" face="Arial">1 1/2 cup corn kernels (sadly, I forgot to buy)</font></li>
<li><font size="3" face="Arial">2 tablespoons olive oil</font></li>
<li><font size="3" face="Arial">salt and pepper to taste</font></li>
<li><font size="3" face="Arial">tabasco to taste</font></li>
<li><font size="3" face="Arial">1/2 cup chopped cilantro-optional</font></li>

<p><font size="3" face="Arial">Although throwing it in the pan is super simple, you can also use a crock pot (YESS!).&#160; Just combine and stir all ingredients and set it to medium for 6 hours.</font></p>

<p><font size="3" face="Arial">This cheese bread was so delicious; I swear I could have eaten the whole basket.&#160; Maybe it’s the fact that I’ve been trying to </font><a href="http://swankydietitian.com/2012/01/18/plant-based-is-the-way-to-go/" target="_blank"><font size="3" face="Arial">cut back on cheese</font></a><font size="3" face="Arial"> that sent me in overdrive. <img style="border-bottom-style: none; border-right-style: none; border-top-style: none; border-left-style: none" class="wlEmoticon wlEmoticon-winkingsmile" alt="Winking smile" src="http://swankydietitian.com/wp-content/uploads/2012/01/wlEmoticon-winkingsmile7.png" /></font></p>
<p><font size="3" face="Arial">As I perused the menu, my eye kept going back to the <b>vegetarian pizza </b>so I happily went with that as my entrée.</font></p>
<p><font face="Arial"><font size="3"><i>Grilled vegetables including eggplant, onions, </i><i>zucchini, bell peppers, red onions with fontina, </i><i>roasted garlic sauce, tomatoes.</i></font></font></p>

<p><font size="3" face="Arial">I have to confess, that I didn’t read the book.&#160;&#160; I know what you’re thinking&#8230;why do I attend book club if I didn’t read the book?&#160; <i>Well</i>, mainly to chat with my friends. I’m not going to lie. <img style="border-bottom-style: none; border-right-style: none; border-top-style: none; border-left-style: none" class="wlEmoticon wlEmoticon-smile" alt="Smile" src="http://swankydietitian.com/wp-content/uploads/2012/01/wlEmoticon-smile10.png" />&#160;</font><font size="3" face="Arial">It gives us all an opportunity to see each other every month and I look forward to it.</font></p>
