Ho pulito i &lt;b&gt;porcini&lt;/b&gt; e ho tagliato a cubetti sia i gambi che le teste. Ho cotto i &lt;b&gt;funghi &lt;/b&gt;con l&#39;olio, sale e un pizzico di peperoncino.&lt;br /&gt;
Ho frullato circa la metà dei &lt;b&gt;funghi&lt;/b&gt; avendo cura di lasciare da parte la maggior parte dei cubetti delle teste interi. Ho messo l&#39;olio in una casseruola e vi ho fatto tostare il riso, poi ho sfumato con del vino. Ho portato il &lt;b&gt;risotto&lt;/b&gt; a cottura allungandolo via via con il brodo. Quasi a cottura ultimata ho unito la crema di &lt;b&gt;funghi&lt;/b&gt; e i cubetti restanti. A cottura ultimata ho mantecato con del burro e del parmigiano grattugiato. Ho terminato la cottura, ho aggiustato di sale e ho distribuito la &lt;b&gt;zuppa&lt;/b&gt; in scodelline. Per prima cosa ho preparato gli &lt;b&gt;gnocchi&lt;/b&gt;: ho lessato le &lt;b&gt;patate&lt;/b&gt; con la buccia, le ho scolate, sbucciate e passate ancora calde. Ho lasciato intiepidire le &lt;b&gt;patate&lt;/b&gt;, poi le ho impastate&amp;nbsp;con la farina fino ad ottenere un panetto consistente. Ho preso la pasta un pò per volta, ne ho fatto dei cilindretti e li ho tagliati a &quot;pezzetti&quot; poi li ho fatti scorrere sui denti infarinati di una forchetta per dare la classica forma agli&lt;b&gt; gnocchi.&lt;/b&gt;&lt;br /&gt;
Ho cotto gli &lt;b&gt;gnocchi&lt;/b&gt; in abbondante acqua salata, li ho scolati e li ho messi in una terrina con una noce di burro. Ho unito &lt;b&gt;mozzarella&lt;/b&gt; e &lt;b&gt;fontina&lt;/b&gt; sminuzzate e la metà del &lt;b&gt;parmigiano&lt;/b&gt; grattugiato. Ho mescolato bene e ho rovesciato il tutto in una pirofila imburrata. poco meno di mezza bustina di lievito&lt;br /&gt;

Pesate le uova con il guscio; saranno le quantità anche di burro, zucchero e farina. Ad esempio se il peso delle 2 uova è di 50 gr, vi occorreranno 50 gr di burro, 50 gr di farina e 50 gr di zucchero. Impastate bene tutti gli ingredienti amalgamandovi anche la buccia delle&lt;b&gt; arance&lt;/b&gt; grattugiate. Rovesciate il composto in una teglia imburrata e fate cuocere. Sfornate e fate raffreddare. Spremete le &lt;b&gt;arance&lt;/b&gt; e inzuppate il dolce con il loro succo, poi cospargetelo di zucchero vanigliato. Ho fatto rosolare per pochissimi minuti, ho unito il brodo vegetale (precedentemente preparato con il dado e l&#39;acqua) e ho fatto cuocere. Quando le patate sono risultate ammorbidite ho unito il &lt;b&gt;cavolo cappuccio&lt;/b&gt; tagliato a listarelle. Ho ultimato la cottura aggiungendo via via il brodo se necessario. Ho frullato tutto fino ad ottenere una crema liscia e morbida. Ho sciacquato i &lt;b&gt;pomi&lt;/b&gt;, li ho tagliati a pezzi per togliere i semi e li ho messi in una pentola con i bordi alti. Ho sbucciato le mele, le ho tagliate a cubetti e le ho aggiunte ai &lt;b&gt;pomi&lt;/b&gt;. Ho inciso il baccello di vaniglia e l&#39;ho raschiato con la punta del coltello per prelevare i semi e aggiungerli ai &lt;b&gt;pomi&lt;/b&gt;. Ho fatto cuocere a fuoco basso mescolando spesso per circa 1/2 ora, poi ho frullato il tutto con il mixer ad immersione. Ho lavato la patata e le ho tagliata a cubetti, poi l&#39;ho messe in pentola a cuocere con un filo d&#39;olio. Ho fatto rosolare per pochissimi minuti, ho unito il brodo vegetale (precedentemente preparato con il dado e l&#39;acqua) e ho fatto cuocere. Dopo pochi minuti ho unito i &lt;b&gt;piselli&lt;/b&gt;. Ho ultimato la cottura aggiungendo via via il brodo se necessario. Ho frullato tutto fino ad ottenere una crema liscia e morbida. Ho aggiunto un cucchiaio di panna e ho mescolato per amalgamare il tutto. 50 ml di &lt;b&gt;latte di cocco&lt;/b&gt;&lt;br /&gt;
25 gr di zucchero&lt;br /&gt;
uno schizzo di succo di limone&lt;br /&gt;
1 cucchiaio di olio di semi di girasole&lt;br /&gt;
1/2 bustina di lievito&lt;br /&gt;
&lt;br /&gt;
Ho mescolato &amp;nbsp;zucchero, farina, lievito e &lt;b&gt;farina di cocco&lt;/b&gt;, poi ho unito olio, &lt;b&gt;latte di cocco&lt;/b&gt; e succo di limone. Ho messo la farina e il sale in una terrina e piano piano, mescolando con una forchetta, ho aggiunto l&#39;&lt;b&gt;acqua&lt;/b&gt;. Ho impastato con le mani per circa 15 minuti fino ad ottenere una &quot;palla&quot; liscia. 300 ml di&lt;b&gt; latte di cocco&lt;/b&gt;&lt;br /&gt;
25 gr di &lt;b&gt;farina di cocco&lt;/b&gt;&lt;br /&gt;
35 gr di amido di mais&lt;br /&gt;
40 gr di zucchero&lt;br /&gt;

Per prima cosa ho preparato la &lt;b&gt;ganache di cioccolato&lt;/b&gt;: ho messo sul fuoco la panna e vi ho aggiunto via via il &lt;b&gt;cioccolato &lt;/b&gt;a pezzetti fino ad ottenere una crema liscia e lucida.&lt;br /&gt;
Ho preparato la &lt;b&gt;crema di cocco&lt;/b&gt;: in un pentolino ho messo farina di &lt;b&gt;cocco&lt;/b&gt;, amido di mais e zucchero e ho mescolato bene. Ho aggiunto a filo il &lt;b&gt;latte di cocco&lt;/b&gt; a temperatura ambiente continuando a mescolare. Ho messo il tutto su fuoco basso mescolando per evitare i grumi fino ad ottenere la consistenza desiderata.&lt;br /&gt;
Ho preparato la &lt;b&gt;bagna al rum&lt;/b&gt; mescolando in un piatto &lt;b&gt;rum&lt;/b&gt; e acqua (in proporzioni a seconda dei gusti).&lt;br /&gt;
A questo punto ho zuppato i &lt;b&gt;pavesini &lt;/b&gt;nella &lt;b&gt;bagna al rum&lt;/b&gt; e li ho distribuiti facendo uno strato sul fondo di una pirofila con bordi alti accostandoli uno all&#39;altro. Vi ho distribuito sopra metà della &lt;b&gt;ganache al cioccolato &lt;/b&gt;e ho ricoperto con un altro strato di&lt;b&gt; pavesini&lt;/b&gt;. Ho distribuito la &lt;b&gt;crema al cocco&lt;/b&gt; e ho fatto un altro strato di &lt;b&gt;pavesini&lt;/b&gt;. Ho terminato il &lt;b&gt;tiramisù&lt;/b&gt; con la restante &lt;b&gt;ganache al cioccolato.&lt;/b&gt; Ho messo il&lt;b&gt; tiramisù&lt;/b&gt; in frigo per circa mezz&#39;ora. Ho terminato il &lt;b&gt;dolce&lt;/b&gt; con una spolverata di farina di &lt;b&gt;cocco&lt;/b&gt;.&lt;br /&gt;

Ho sbucciato le&lt;b&gt; patate&lt;/b&gt; e le ho passate, poi vi ho aggiunto&amp;nbsp;&lt;b&gt;carote&lt;/b&gt;,sale, pepe e ho mamalgamato. Ho sciolto il lievito secco nell&#39;acqua tiepida. Ho messo in una terrina farina, sale, latte e il lievito sciolto nell&#39;acqua, poi ho impastato bene fino ad ottenere una &lt;i&gt;palla&lt;/i&gt; liscia ed omogenea. Ho lasciato lievitare per circa mezz&#39;ora. Ho diviso l&#39;impasto in due ed ho steso per formare due &lt;i&gt;cerchi&lt;/i&gt;. Sul primo &lt;i&gt;cerchio&lt;/i&gt; di pasta ho steso la &lt;b&gt;salsa di pomodoro&lt;/b&gt;, poi vi ho adagiato a strati le&lt;b&gt; melanzane grigliate&lt;/b&gt;, la &lt;b&gt;mozzarella&lt;/b&gt;&amp;nbsp;a fettine ed il &lt;b&gt;parmigiano grattugiato&lt;/b&gt;. Ho chiuso attorcigliando i due lati e ho messo il &lt;b&gt;salame di cioccolato &lt;/b&gt;in freezer per circa un paio d&#39;ore. Ho lavato la &lt;b&gt;melanzana&lt;/b&gt;, l&#39;ho tagliata a cubetti e l&#39;ho messa a cuocere in padella con l&#39;olio e.v.o. e un pezzetto di peperoncino. Dopo qualche minuto ho aggiunto la passata di &lt;b&gt;pomodoro&lt;/b&gt;, ho salato e finito la cottura. Ho cotto gli &lt;b&gt;gnocchi di ricotta&lt;/b&gt; in acqua bollente salata, li ho scolati e li ho versati nella padella con la &lt;b&gt;salsa di melanzane.&lt;/b&gt; Ho impiattato e ho completato ogni piatto con una bella spolverata di &lt;b&gt;ricotta affumicata&lt;/b&gt;.&lt;/div&gt;

Ingredienti:&lt;br /&gt;
1 &lt;b&gt;melanzana&lt;/b&gt;&lt;br /&gt;
2 &lt;b&gt;zucchine&lt;/b&gt;&lt;br /&gt;
5/6 &lt;b&gt;funghi campignon&lt;/b&gt;&lt;br /&gt;
misto per soffritto&lt;br /&gt;
olio, sale e pepe&lt;br /&gt;
&lt;b&gt;passata di pomodoro&lt;/b&gt;&lt;br /&gt;
1/2 dado vegetale&lt;br /&gt;
&lt;br /&gt;
Ho lavato e tagliatola&amp;nbsp;&lt;b&gt;melanzana&lt;/b&gt;&amp;nbsp;a cubetti più piccoli possibile. Ho messo in una pentola olio e.v.o. e misto per soffritto e ho fatto scaldare, poi ho aggiunto le &lt;b&gt;melanzane&lt;/b&gt;. Ho lavate e tagliato a cubetti piccolissimi anche gli &lt;b&gt;zucchini&lt;/b&gt; e li ho uniti alle &lt;b&gt;melanzane&lt;/b&gt;. Infine ho pulito e tagliato a pezzetti anche i &lt;b&gt;funghi&lt;/b&gt; e li ho uniti alle altre &lt;b&gt;verdure&lt;/b&gt;. Ho fatto cuocere il tutto aggiungendo via via del brodo vegetale precedentemente preparato.
