Choosing Fillings and Icings not Appropriate for Outdoor Events Outdoor receptions are beautiful, but many times they get very hot. Make sure that you choose fillings/icings that will not melt or spoil in the heat. Fondant covered cakes are the best choice for outdoor weddings since insects won’t stick to fondant and it won’t melt as quickly. However even with fondant, if you choose an icing/filling that melts easily, the fondant will begin to sag as the icing underneath liquefies. The entire cake structure is then in jeopardy. Also the heat could spoil the food and therefore sicken the guests. Lastly, make sure the cake is out of direct sun and placed outdoors at the last possible moment. Keeping it in the refrigerator prior to placing it outside also lengthens the time it can be outside. 2). Not Paying Attention to the Cake Board/Stand and Table Having a stunning cake on a foil cake board and an undecorated table really detracts from the overall beauty of the cake. The cake should be placed on an attractive board (covered in matching fondant or royal icing) or a complimentary cake stand. The cake table is the center of the reception, so should match the room décor and really showcase the cake. 3). Declining Delivery to Save Money Wedding cakes have an internal infrastructure to ensure safe delivery, but delivering a multi-tiered cake can be stressful for someone new to it. Also the cakes are heavy and difficult to maneuver. Driving extremely carefully while the cake is in transit is vital or the cake could get damaged or topple over. Once the cake is picked-up, the responsibility of its care is in the hands of the recipient. The last thing you want at your wedding is to drop the cake or to have it damaged during transit. The whole process is just more stressful than you want to tackle or you want to delegate to a family member or friend. So have the experts deliver your cake. Its money well spent. 4). Ordering Too Small of a Display Cake to Save Money A great way to save money is to order a smaller “display cake” than needed to serve the number of guests at the reception and have “kitchen cakes’” to make up the difference. Cake designers typically charge by the serving and level of complexity of the design. “Kitchen cakes” should be the same flavors and fillings and number of layers so they are indistinguishable by the guest from the “display cake”. But they are typically one to three dollars cheaper per serving due to the fact that they are not decorated on the outside. This can add up to hundreds of dollars of savings on the overall cake costs. However, an important caveat is that you should not order a “display cake” that is obviously too small to serve the number of guests at the wedding. For instance, a display cake serving 30 when there are 200 guests at the reception. This is a sure giveaway that there are “kitchen cakes”. And some guests may wonder if the “kitchen cake” is inferior to those slices being served from the “display cake”. A good rule of thumb is to order kitchen cakes that represent no more than 25% of the total servings required. 5). Thinking That All Cake Designer Are Equal Wedding cake prices range considerably from $4 to $16 in the New York metropolitan area. Many times you get what you pay for. A bakery will likely be on the lower end of the price range, but you typically won’t find the same level of artistry in the cake designs. The celebrity cake designers will be at the high-end of the price scale and you will be mostly paying for their notoriety. In the middle-range you will find a wide variety of skill levels. Once you know which price-range fits your budget, to find the cake designer for you, first look at their past work on their website to determine if their “style” matches yours. Then call or email them for a consultation/tasting. At this meeting, you will determine if their personality fits with yours and how the cake tastes. You want a cake designer that you trust and like. The cake is a fun element of the wedding and tasty too, so the process should be that way also. A beautiful cake becomes the centerpiece decoration at the first birthday party. There are so many  great themes for a first birthday cake. Our Demarest, New Jersey client wanted to match her little blue plane birthday party invitations  (see the invitation below). So the first birthday cake we created had a baby plane on top flying amongst the clouds and clouds were scattered throughout the cake tiers. At the base of each tier was a white and red fondant ribbon.

I think it’s obvious that this is a custom cake for an engagement party in New Jersey.  The ring box is completley made of cake with the exception of the lid.  The engagement ring is also completely edible with the diamond made from poured sugar.  This custom cake NJ serves 40 guests.  The engagement party took place in Rochelle Park NJ.

The premier New York City cake artist Colette Peters was the guest of honor last night as cake designers from New York City and New Jersey gathered at Chef Vanessa Greeley’s house to celebrate Colette’s birthday.  As no one dared decorate a cake for someone so talented, we all had a hand in “quickly” (I cannot stress that word enough) decorate a cake for her. See below how beautiful it turned out — lol!! It’s been almost a year since we moved into our cake studio in Haworth, NJ. Our colleague, Becky Vanderbeck of Simply Chic Wedding and Event Design in Glen Rock New Jersey NJ, asked us to design a garden-inspired custom wedding cake with a vintage feel to be included in the Bergen County, New Jersey’s (201) Bride Magazine ”Color Inspired” wedding photo shoot.  The entire shoot included wedding dress fashions, florals, invitation design, table settings and linens. We loved the elegant, but casual feel of the entire event design.

Our three tier custom wedding cake is covered in soft white fondant with lovely peony designs painted on the sides and intricate hand-made sugar peonies sitting atop each tier ledge.  This elegant custom wedding cake is perched on a statuesque cake pedestal for added height.
