Summer is just around the corner and that means so is grill season, the time when you relax outdoors with friends and family, all gathered around to watch—and sample—your magnificent grill feats. But are your grill chops up to snuff? With a foodie sweep taking the nation, BBQ starring in several TV shows and even high-end chefs getting into the BBQ craze, expectations are running pretty high. Not to worry, we’ll show you how to BBQ like a Pitmaster Pro.

Know Your Grill

Every master needs to know his or her instrument, whether that be a surgeon and a scalpel, a mechanic with a torque wrench, or a master Flamenco guitarist. For Pitmasters that means knowing your grill: knowing the hot spots, the cold spots, how much temperature is lost through to grill cover or hood—which can make a dramatic impact on foods that require a long time to cook, like pork tenderloins, turkeys or the smoking of briskets and ribs. So many grilling instructions for meats and other recipes use time as a standard of measurement; time is certainly important, but as temperature is really what cooks the food, and everyone’s temperatures vary from grill to grill you have to know how to calibrate your grill timing. Know your grill. If it helps, give your grill a name; BB King named his Gibson Lucille and just look what happened!

Know Your Meat (and other Ingredients)

The meat and fruits or vegetables that you cook on the grill are other part of the instrument: if the grill is the guitar, the food is learning how to play the instrument. Of course, like any other instrument, grilling takes practice; and for maybe a couple extra charred burgers and a tough brisket in the beginning, most people will be more amenable to you practice the grill than the trombone. Knowing your food means learning to gauge doneness, knowing when to flip or rotate, learning how and when to trim fat, reading the marbling on a piece of meat, etc. Thickness plays a large in part in grilling duration and every time someone cuts into a steak to check if it’s ready instead of just learning to tell from touch a Pitmaster loses his chicken wings. Experiment

Part of learning your grill and meat is all about experimenting with flavors, recipes, cuts and combinations. Becoming a great Pitmaster is all about being comfortable and creative with your grilling decisions. Experimenting with a bunch of different meals you might not normally have prepared gives you more confidence and therein comfort. Try grilling pizzas, fruit, desserts, or trickier meats like spatch-cocked chickens or caveman steaks cooked directly on the coals!

Divide and Conquer

Not everything in your grill needs to cook at the same temperature, and if you’re trying to keep some foods warm while others are done, continued 400-degree blasting won’t work. Divvy up the space in your grill, keeping some areas for your primary grilling and others as a warming station, the way many professional kitchens do (and it sure beats a heat lamp). This can either mean having one flame or coil going while the other side is shut off or on low; many grills even have upper shelving designed to keep foods warm (which is tremendously helpful when cooking vegetables like tomatoes or asparagus). You can also use this divided system to cook foods that need lower temperatures as well, like toasting buns for burgers or hotdogs.

Grill Marks

Good grill marks—either lateral hatching or, as many Pitmasters prefer, crosshatching—are the signs of a true Pitmaster. You’ve likely seen cross hatched steaks and chickens in ads for your favorite steakhouses. Aside from an aesthetic element, crosshatching is an effective rotation method that will allow you to keep you meat evenly cooked, with controlled searing and fewer flips. Every time you flip a piece of meat, it loses juice; the job of a good grillmaster is to sear in those juices and keep the meat as moist and tender as possible. Crosshatching, done by turning the meat in a 90-degree rotation against the grill, is designed to do just that; give the meat a quarter turn about halfway through each side and you should be left with a beautiful and tasty checkered piece of meat.

The road to becoming a BBQ Pitmaster is a long but tasty one. Remember, the trick isn’t in secret sauces or fancy appliances but in knowing your instrument and practicing, practicing, practicing—which is something your friends and family will likely support.

In the old days, we would simply walk through minimal security without having to take off our shoes or put our laptops in a separate bin - not to mention all the other personal effects that we carry with us through the gates. On average, the time it takes us to get through airport security has risen by almost 30 minutes in only a decade. Due to TSA's restrictions, it has made travelling a challenge, but we can't put all the blame all on TSA, because they are doing the best to protect us. Yet, there are a number of ways we can help to make the process a lot easier. Here are 5 tips for getting through airport security faster.

1. One of the biggest ways to make it easier for you, and everyone else waiting in line, is to not wear too many accessories, especially metal ones, if you know you will be getting on a plane. Make sure to take off rings, earrings, necklaces and bracelets before you even get to the airport. This can save an enormous amount of time for you and your fellow travelers. You might not realize it, but you could be spending more time relaxing at the gate, if you didn't have to take off all that jewelry, one by one.

Airport security will make sure that you dump it all out or wrap it up to send to yourself, which could mean increasing the amount of time at the checkpoint for way longer than you have to be. Most of us are familiar with Route 66 at least in name, it being one of the US's most famous historic highways. Personally, I think it is the ultimate road trip destination - after all, is there any road that's more iconic? As well as simply being an amazing slice of US history, Route 66 is peppered with fantastic places to eat, with the food they serve being almost as famous as the road itself. So, this post aims to show you some of the best things to eat while driving Route 66 - enjoy!

1) A 72 oz steak

Let's start with one of the most famous things, shall we? The 72 oz steak that's served at the Big Texan Steak Ranch is an eating challenge known across the country and even beyond, thanks to appearances on TV programmes like Man vs Food. Provided you can eat this absolute whopper of a meal, your steak will be served to you absolutely free of charge!

Regardless of whether you actually believe you can eat the steak or not, I think this challenge is one that's definitely worth trying - after all, it'll be a great story to tell when you get home. If, however, you'd rather not push your stomach to its limits, never fear, as the Texan-themed menu is packed with more manageable - and no less delicious - meals.

2) A cozy dog

If you've spent any time in the US before, chances are you'll have come across a cozy dog. If not, let me bring you up to speed. A cozy dog is a popular snack, consisting of a corn dog deep-fried in delicious batter, and served on a stick. While you can find them across the country, one Route 66 restaurant claims to be the inventor of this high-calorie
treat.

You'll find the Cozy Dog Drive-In at 2935 South Sixth Street in Springfield, Illinois. Apparently, the cozy dog was invented during the second world war by restaurant owner Ed Waldmire - and to this day the eatery claims to cook the dogs in its own special-recipe batter. So, eating these should be a really unique experience.

What makes coming here more fun, though, is the fact that it's decorated in swathes of Route 66 memorabilia. Yes, it might be a bit cheesy for some, but personally I think the old signs and mementoes are all part of the brilliant atmosphere here.

3) Puffy sopapillas

Last on my list is puffy sopapillas - which is another name for fried bread. If you want to eat this classic, make sure you pay a visit to Joe & Aggie's Cafe in Holbrook, Arizona. Spotting the eatery is easy, since it has a pink front that dates back to 1946.

Of course, chances are you'll want to eat a little more than fried bread during your stop. Fortunately, the menu at Joe & Aggie's is absolutely packed with gorgeous food, combining traditional American and Mexican favourites. As well as puffy sopapillas, you can try tacos, burritos, burgers and enchiladas, to name but a few.

I'd also recommend sampling the homemade red and green chilli, which is one of the cafe's specialties and made using an old family recipe. Another must-try - provided you have room, of course! - are their apple burritos. These are tortillas stuffed with apple pie filling, before being deep-fried and topped with ice cream - delicious!

I don't know about you, but one of my absolute favourite things about going on any holiday, whether it's a quick weekend break or a long, luxurious getaway, is sampling the local food. You might think that this is only exciting if you're heading abroad, but actually, trying local dishes is a real highlight of traveling around the UK. If you're planning a trip to Dorset any time soon, you're in for a particular treat!

A quick introduction to Dorset classics

Dorset is a county famous for its gorgeous scenery - but it's also got a fantastic reputation for its food. Its position on the coast means it's a brilliant place to sample the freshest local fish, while its acre upon acre of pastureland means it is also known for its dairy products.

Personally, I particularly love the luxury ice cream, but you might be more enticed by the prospect of Dorset Blue (also known as Blue Vinny) cheese. I also recommend the local cider and ales, while indulging in some Dorset apple cake and cream is an absolute must.

Farmers' markets

For me, farmers' markets present a brilliant opportunity to try local food at its most authentic. In fact, I often decide to hire a cottage in Dorset rather than stay in hotel, simply because it gives me so much more freedom to shop my
heart out at the markets and then cook up a storm later in the day.

Among the top places to visit is the Dorchester Country Market, which is held at the Covered Market/Market Hall in Dorchester every Friday from 8:30 to 11:00. Here, you can snap up all kinds of great products, including fruit, veg, cakes and pastries. Plus, there are pretty plants and handmade crafts too!

Tearooms

Thanks to classic treats like Dorset apple cake - which really is something of a local institution - visiting one or two local tearooms is a must. Fortunately, there are a plethora to choose from, including the New Forest Perfumery and Tea Rooms in Christchurch.

Housed in a 14th-century courthouse, this tearoom has an enticing selection of cakes, snacks and light lunches. What's more, it's also home to a lovely little perfumery, which sells more than 30 scents bottled on the premises, as well as well-known brands.

Pubs

In my opinion, no trip to Dorset is complete without spending some time in the pub. There are loads of fantastic traditional pubs in the county, promising real ale, locally sourced food and crisp ciders.

For instance, the New Inn in Bridport is a great place to sup some cask ale and bask in a warm welcome. The beer garden is perfect for relaxing in during the summer (provided the sun actually deigns to come out, that is!), while the menu offers a tempting collection of home-cooked classics.

Over at the Stable on the Quay in Weymouth, meanwhile, you'll be greeted with a brilliant selection of unique ciders, as well as delicious homemade pizzas and pies. A relatively new establishment, it opened in early 2013 - and has proved a hit with fans of West Country cuisine ever since.

It's also worth heading to the Saxon Arms in Stratton, which is great for real ale and outstanding food. What's particularly nice about coming here is that the specials menu is always changing - and what's on there never disappoints. Creedy Farm Duck Breast, hand-dived Portland scallops and sea bream are just some of the dishes you might be lucky enough to try.

Keeping snacks with you, consisting of fruits and nuts, will keep you from stopping at various places to pick up bites to eat to hold you over that are usually jam packed with calories.

2.   Another great way to stick to your diet is to walk everywhere. Being able to burn off all those calories from sneaking a few bites of chocolate cake at the local bakery will offset all those "just this once" incidents while you are on vacation. A lot of people who go out of town can spend all day by the pool or in buses and cabs, just getting
around town, but getting a little physical exercise will keep you healthy, fit and active.

3.   In a lot of the world, people won't typically eat at the same time you do. When you are on vacation it is best if you don't allow yourself to eat too late at night. If you have to, eat a few light snacks a couple hours before so that your appetite isn't as voracious. You don't want to go to bed right after you've just had a big feast.

4.   You should also avoid fast food at all costs. Always find a local restaurant and eat light. Or you can make yourself some protein shakes for weight loss to hold you over. The last thing you want to do is allow yourself to be tempted. While you are on vacation, fast food might seem like a convenient option, because you might always be on the go, but fast food is not the best option. If you only explore the area you are in a little further, the chances are high that you will find a much healthier option.

5.   Also, you want to do as much research as possible about your destination. In most cases, when you are on a diet, you are already planning your meals and caloric intake. So when you are mapping out your trip this summer, you should also find all the restaurants in that area that serve healthy, light or local fair so that you can keep up with your diet plan when you are out of town. The Red Sea

Named after the reddish coloured algae found in its waters, The Red Sea, thanks to its combination of year-round warm water and low tide action, is considered one of the best diving sites in the world. There are plenty of resorts on the Red Sea, the most popular being Sharm el Sheikh in Egypt, which, along with diving, also boasts a wide range of water sports, nightlife and entertainment.

The waters and reefs are home to a massive variety of marine life and species, some of which is endemic to these waters, and there a loads of spectacular dive sites including a number of ship wrecks.

Hawaii

Famous for its tropical climate and beautiful beaches, Hawaii boasts some incredible places to dive where 25% of all marine life is endemic to the islands. Thanks to its popular tourist and resort status there are plenty of places to learn the basics, complete official PADI courses and explore on your own.

There are 132 Hawaiian islands in total, with the 8 main islands offering regular dive spots and organised dives, however if you want to explore any of the smaller islands on your own then boat charters are available.

Belize

Belize is one of the best spots in the Caribbean to dive and is home to the second longest barrier reef in the world,
running the entire length of the country’s coast. With three main open ocean coral atolls – including the famous Blue Hole dive site (a reef shaped in a circular outline) - hundreds of species of fish and crystal clear warm waters, Belize is a particularly popular diving location.

There are many tour operators who run regular trips out to the most popular sites, however if you want to avoid the masses then staying on a live-aboard dive boat could be your best option.

Thailand

A country famous for its beautiful beaches and glittering waters, Thailand offers both the Andaman Sea and the Gulf of Thailand as some beautiful diving locations.Whether you’re learning the ropes, a seasoned pro, backpacker or millionaire, there’s something to suit everyone in Thailand.

There are hundreds of reefs, corals and species to marvel at, as well as a number of ship wreck dives. All are accessible either from resorts, live-aboard boats or on excursions with tour guides. If you’re not going on a pre-booked diving holiday then day trips can be booked locally.

Great Barrier Reef, Australia

This is the most famous, popular and spectacular ecosystem in the world and therefore, without a doubt, the number one place to dive. With thousands of endemic species, corals and marine life coupled with beautiful weather and idyllic paradise islands, there’s plenty of opportunity to see and explore the reef. You can follow the crowd with organised trips to the most iconic sites of the reef or alternatively explore yourself by boat, snorkeling walking, swimming and various water sports.

The reef is accessible from the mainland, however many opt to stay at one of the many island resorts which boast the ultimate great barrier reef accommodation, living and private reef dive sites.

Wherever you decide to go, be sure to treat the reefs and marine life with care. Do not take anything from dive sites or the reefs as they are protected and doing so will result in a hefty fine or criminal charges.
