FRONT ROOM LAUNCHES NEW TASTING MENU

An innovative culinary journey through the flavors of Thailand, artfully crafted for dinner

LTR: Front Room’s Chef de Cuisine Akkawin Pitrachart; Poetic Flavors – main courses that master the balance of flavors; the Muay Thai-inspired dessert.

Bangkok – July 30, 2024 – Front Room, the modern Thai restaurant at Waldorf Astoria Bangkok, is thrilled to launch its new tasting menu which offers a culinary journey through Thailand with four chapters blending traditional and innovative flavors. It is available daily for dinner starting August 1, 2024 and is priced at THB 2,900++ per person.

Created by Chef de Cuisine Akkawin Pitrachart and Sous Chef Athiti Moungthong, the tasting menu reflects Front Room’s philosophy of combining authentic Thai flavors with Western cooking techniques. The four chapters are:

• Chapter 1: The Geography – Four bite-sized appetizers representing Thailand’s diverse regions: Miang Pla Haeng Phon La Mai (Central), Goong Thod Bai Leb Krut (South), Ong Pu (North), and Larb (Northeastern).
• Chapter 2: The Innovation – Showcasing Thailand’s fusion of East and West: Pla Bou Tom Khing (Poached Goby, Ginger Broth, and Fermented Plum) and Sai Krog I-San Ped (Fermented Duck Sausage with Duck Skin, Roasted Peanut, and Ginger).
• Chapter 3: Poetic Flavors – Balancing flavors with multiple dishes: Goong Mae Nam Yang (Grilled River Prawn, Coconut Flakes), Gaeng Ped Tai Pu (Yellow Curry with Crab and Baegu Leaf), and Nuea Gham Wua Yang Naam Phrik Ta Dang (Wagyu Beef Cheek, Red Chili Paste, and Fermented Egg Yolk).

All fourth-year CSII students must form teams and complete a Capstone Project which is a commitment spanning over both semesters of their final year. The Capstone Project is their final project before graduation and represents a culmination of their skills, knowledge, and experience from the past 4 years in CSII, and so there are high expectations of quality not only of the outcome but also throughout the process.

Industry Capstone Projects are one of three types of projects students can choose from, and allows companies to initiate a project scope or prompt that encourages CSII students to synthesize skills and knowledge learned at the undergraduate level to a real-world project, whilst also providing benefit to the host company. Please see the attached profile for more details about Industry Capstone Projects.

Initiation of an Industry Capstone Project does not require any fee.
