Create a new bookmark in your bookmark bar
Right click the bookmark and click edit address

The first bookmark will let you increase the text size in Mobile Safari, and the second bookmark will shrink it again.
Now, make sure you're syncing your bookmarks across your devices, and voila, a bookmarklet that lets you change textsizes in Mobile Safari.
