The result is an intense dry beer with very little malt sweetness, but with plenty of malt flavor to provide a background to the enormous...or shall I say &quot;ginormous&quot; hop character. Hopping, as might be expected, was over the top. First, the brew was mash-hopped with Ahtanum, one of our favorite hop varieties, after which we kettle-hopped with a very small dose of Super Galena hop extract for bittering. Then, using a technique known in homebrew circles as &amp;ldquo;hop bursting,&amp;rdquo; we loaded up very heavily on the flavor hops at the end of the boil and in the whirlpool. Simcoe, Delta, Target and Amarillo were used in the late kettle hop. Simcoe, Amarillo, Calypso and Cascade were used for the whirlpool hop. It's getting to be a popular style out there, but, like we said, it's new to us. &lt;p&gt;The hops are alpha/aroma hybrids of their respective traditional varieties, providing extra aroma and flavor. Since the Unchained Series allows Summit brewers to select ingredients from anywhere in the world without restraint, Siats decided to import the base malts, Pils and Munich, from a small maltster in the Czech Republic. The Cara Munich malt was imported from Weyermann in Bamberg, Germany.&lt;/p&gt;
&lt;p&gt;This is the first lager brewed in the Unchained Series. All four brews of&lt;em&gt;Fest Bier&lt;/em&gt;&amp;nbsp;were fermented and lagered in one of the new large-capacity fermentation tanks in the brewery&amp;rsquo;s cellar addition. The lagering time was doubled to eight weeks as compared to Summit&amp;rsquo;s other year-round and seasonal lagers, which get four weeks.&lt;/p&gt;

&lt;p&gt;&lt;span&gt;Launching a state the size of Texas would not have been possible prior to the brewery&amp;rsquo;s recently completed expansion. This will be the first new market for Odell Brewing in over two years. The new brewhouse and additional fermentation vessels will provide the brewery much needed capacity to accommodate the Texas demand. Odell Brewing plans to bring its IPA, 90 Shilling, Seasonal Offerings including St. Lupulin, Four Pack offerings such as Myrcenary, as well as its limited release Cellar Series offerings.&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;&lt;span&gt;The brewery has a full week of launch events planned all over the state, including a special tapping at Pinthouse Pizza in Austin, which was started by friend and former Odell Brewing brewer Joe Mohrfeld. Joe teamed up with Odell&amp;rsquo;s head of production, Brendan McGivney, to brew a collaboration beer that they once brewed together at Odell Brewing. &quot;T.A.P. TX&amp;rdquo; honors that original recipe, but brings it into the culturally relevant Session Ale realm with just as many hops but a slightly lower ABV. &quot;T.A.P. TX&quot; is a very hoppy Session Ale brewed with a blend of hops selected by the pair as well as Colorado grown barley that is hand malted by Branden Aide at his new Austin, TX based micro-maltster, Blacklands Malt.&lt;/span&gt;&lt;/p&gt;
