Spoon on to chicken.

Sprinkle with Parmesan and mozzarella cheese.

Cover with foil and bake for 20 minutes.

Remove foil and let bake for 10 more minutes or until cheese is slightly brown and chicken is thoroughly cooked.

We served it with some steamed broccoli. This is a great low carb alternative to the breaded chicken parmesan. It is really easy and satisfies the craving for Italian that often get neglected when going low carb.

Now if only I could get my baby to eat this!!! Like cutting 'W's into the dough. They should be long and fairly skinny. I got 9 out of my batch.

Brush melted butter on the triangles.

Starting with the fat side of the triangle roll up into a crescent roll.

Place on greased stone or cookie sheet and let rise for 30-40 minutes.

Bake for 8-10 minutes at 375!

I like to brush a little extra butter on after they bake! Whole wheat of course! Yes, making sour dough starter takes time, but you will not be sorry!!! It is worth it!

With the starter you can make yummy bread and yummy sour dough pancakes!!!

Starter:

2 1/2 ts yeast
2 c warm water
2 c whole white wheat flour

Mix all ingredients. Place in glass bowl or plastic bowl. Loosely cover with plastic wrap and let sit at room temperature for 24 hrs. Then stir using a non-metal utensil, like a wooden spoon. Stir daily. Let sit at room temp for approximately 3-4 days. Then use!!!

Whole Wheat Sour Dough Bread

1 1/4 cup starter
3/4 cup warm water
1 3/4 ts salt
3 1/2 cup whole white wheat flour
3 tbsp sugar
1 3/4 ts yeast
4 tbsp vital wheat gluten

Mix all ingredients until it forms a dough.

Cover and let rise for 2 hours.

Punch down and rise for 1 1/2 hours.

Punch down and form into a round loaf let rise for 1 hour.

Preheat over to 460 degrees with a bread pan full of water on the bottom rack to create steam. I use a pizza stone to bake round breads. Place stone in to over to get hot.

Move loaf to hot stone that is sprinkled with corn meal.

Let rise 30 minutes.

Bake at 460 for 20-25 minutes.

- Sheena

Road to Artisan Perfection

I got a neat artisan bread recipe from my brother-in-law. It calls for making a "Poolish" which is simply an early form of sour dough. I turned the recipe to whole wheat.

It turned out really good with a the perfect chewy crust. It only calls for 3 ingredients! Flour, water and yeast. However, I would like to play some more and do it again adding a little salt and some honey.

Perfected recipe will be up soon!

In the meantime, I made Melba toast out of this loaf! Melba toast for my diet.... Time to pay the price for my holiday over eating. But it was worth it!!!

To make Melba toast:

Slice bread into thin slices.

Place on cookie sheet and bake at 300 for 45minutes to 1 hour. Flipping slices half way.

Should come out like crispy cracker bread for dips or to eat with salad (which is what I am doing).

Here's the Poolish. It is flour, water and yeast. Mixed up in the evening, then you cover it and let it sit out for 12-16 hours to 'brew'!

Stay tuned for the recipe!!

Cooking up A Quilt!

We have been crazy busy as have you all!

Here's what I have been cooking up:

This quilt top I made in 3 days. It was a Christmas present for my sister in law and nephew. It is made from my brother in laws shirts. He passed away last year from an illness called primary pulmonary hypertension. He left behind my sis in law and their son, who just turned 3. This quilt is very special because it is made from Derek's clothing and will be something tangible for his son to snuggle in.

I am looking for someone to quilt it for me. IDEAS??? Then I will put the binding on... Yellow!

Derek, I miss you. We all miss you.
Perfecto!

This recipe comes from the MOPS cookbook from Central Christian MOPS in Wichita, KS.

Tiajuana Trash

2 sticks of butter

1 cup brown sugar

1 cup light corn syrup

1 ts cinnamon

1 ts cayenne pepper

4 cups Crispix cereal

2 bags microwave popcorn, popped

1 bag bite sized tortilla chips

1 large can mixed nuts.

Bring first 5 ingredients to a boil in a sauce pan.

In the meantime, mix together remaining dry ingredients in extra large bowl. I had to use 2 bowls as it is a LOT of stuff.

Pour wet mix over the dry mix and stir to coat well.

Spread out on 2 greased cookie sheets and bake at 250 for 1 hour.

Store in ziplocks or air tight containers!

NOTE TO SELF: don't just dump the bags of popcorn in. Do it by hand so you don't get all the unpopped kernels in your trash! Or you may break a tooth as you are pigging out on your trash. Oops!
