Ingredients&lt;br /&gt;
&lt;br /&gt;
8 large eggs&lt;br /&gt;
1/2 cup whole milk&lt;br /&gt;
1/2 teaspoon freshly ground black pepper&lt;br /&gt;
1/4 teaspoon salt&lt;br /&gt;
4 ounces thinly sliced ham, chopped (I used Chicken Ham slices)&lt;br /&gt;
1/3 cup freshly grated Parmesan (I used cheddar cheese mixed with&amp;nbsp;mozzarella&amp;nbsp;cheese)&lt;br /&gt;
2 tablespoons chopped fresh Italian parsley leaves&lt;br /&gt;
&lt;br /&gt;
Directions&lt;br /&gt;
Preheat the oven to 375 degrees F.&lt;br /&gt;
&lt;br /&gt;
Spray 2 mini muffin tins (each with 24 cups) with nonstick spray or use butter. Whisk the eggs, milk, pepper, and salt in a large bowl to blend well. Stir in the ham, cheese, and parsley. Fill prepared muffin cups almost to the top with the egg mixture. Bake until the egg mixture puffs and is just set in the center, about 8 to 10 minutes. Using a rubber spatula, loosen the frittatas from the muffin cups and slide the frittatas onto a platter. Serve immediately.&lt;br /&gt;

3. tumis hingga garing, masukkan gula merah dan 1 cawan air. biarkan merenih for about 30-45 minit. kalau terlalu kering, tambah lagi air.&lt;/div&gt;

Proses memecahkan telur sungguh meletihkan. I threw away all the whites sebab taknak buat pavlova atau apa2 yang boleh menambahkan lagi lemak aku yg sedang membiak dgn jayanya ni.&lt;br /&gt;

The cake is beautiful. It tasted better the next day. It is almost like a custard, with a tinge of sourness because of the strawberry jam. And it is definitely heavenly. Now I know why Rima or Zarin bake it many many times.&lt;br /&gt;

Spiku/Lapis Surabaya&lt;br /&gt;

&lt;br /&gt;
Ingredients:

Yellow Layers&lt;br /&gt;
(make 2 layers of yellow layers) :&lt;br /&gt;
&lt;br /&gt;
20 egg yolks&lt;br /&gt;
175 g fine granulated sugar&lt;br /&gt;
1 tsp ovalette&lt;br /&gt;
100 g all-purpose flour&lt;br /&gt;
250 g melted butter&lt;br /&gt;
&lt;br /&gt;
Chocolate Layer :&lt;br /&gt;
10 egg yolks&lt;br /&gt;
125 g fine granulated sugar&lt;br /&gt;
1tsp ovalette (If u dont want to use ovalette, u can omit it)&lt;br /&gt;
30 g plain flour&lt;br /&gt;
25 g cocoa powder&lt;br /&gt;
125 g melted butter&lt;br /&gt;
Strawberry jam or whatever jam to your liking. I used premium strawberry jam. &amp;nbsp; &lt;br /&gt;
&lt;br /&gt;
Method:&lt;br /&gt;
&lt;br /&gt;
Grease and line the bottom of 3 ,  8 inch baking pans.&lt;br /&gt;
&lt;br /&gt;
Pre heat oven to 350f (fan forced)

Prepare the yellow cake mix : 

Beat together sugar, egg yolks &amp;nbsp;and ovalette until pale and thick.&lt;br /&gt;
&lt;br /&gt;
The batter will expand to around three times the original volume. Put the melted butter in to the batter and  turn on the speed to low. Add flour and fold in thoroughly.

Pour the batter into the bottom lined cake pans and bake for about 10 – 15 minutes until springy to the touch.&lt;br /&gt;
&lt;br /&gt;
Remove cake from the oven.  If the cake is not level and has a dome, use a clean kitchen towel and put it on the hot surface of the cake and press lightly to remove some of the uneven air.

Place cake tin on a wire rack and leave to cool for 10 minutes.&lt;br /&gt;
&lt;br /&gt;
Carefully remove cake from tin and place on rack to cool completely.

Prepare the chocolate layer in the same way as the yellow layer except fold the sifted cocoa powder together with the flour.&lt;br /&gt;
&lt;br /&gt;
To assemble the cake place one yellow layer on a cake board and spread the top of the cake with thin layer of strawberry jam to stick the layers together. You can put as much or as little jam you like.

Help!! I cant stop myself from baking. Sometimes I baked once a day sometimes twice. Everyday mesti nak bake cake. Oh tidak!! Something is wrong with me. The good part about baking nowadays is that aku boleh bagi iman bawak the cake to school. Kawan2 iman memang sangat2 happy bila dapat makan kek. &lt;/div&gt;

Tadi aku pegi Tesco, I restocked my butter. Oh no! It's gonna be hard to stop this baking madness for the time being. &lt;br /&gt;
&lt;br /&gt;
This kek kurma recipe aku ambik from mok's recipe book. I love the texture and the taste. &lt;/div&gt;

Honey Date Moist Cake&lt;br /&gt;
Original recipe&lt;/div&gt;
&lt;div dir="ltr"&gt;
&lt;br /&gt;
400gram kurma - seeded and rendam satu malam dalam 1 cup air panas yang di campur 1 sudu teh soda bicarbonate. &lt;/div&gt;
&lt;div dir="ltr"&gt;
&lt;br /&gt;
200 gram butter &lt;br /&gt;
1/2 cup caster sugar&lt;br /&gt;
2 sudu besar madu&lt;br /&gt;
3 biji telur&lt;br /&gt;
1 1/2 cawan tepung naik sendiri&lt;/div&gt;
&lt;div dir="ltr"&gt;
&lt;br /&gt;
Cara2&lt;br /&gt;
1. Panaskan oven 170 degree celcius.&amp;nbsp; Grease dan lapik 2 loaf pan 4 inches.&lt;/div&gt;
&lt;div dir="ltr"&gt;
2. Blend kurma yang dah direndam semalaman. Put aside&lt;/div&gt;
&lt;div dir="ltr"&gt;
3. Whisk butter, honey and sugar hingga kembang. Add telur satu demi satu hingga sebati. &lt;/div&gt;
&lt;div dir="ltr"&gt;
4. Masukkan kurma dan pukul hingga sebati. Masukkan tepung sedikit demi.sedikit dan pukul for about 1 minute. &lt;/div&gt;

5. Tuang adunan ke dalam loaf pan dan bakar selama 45 mins - 1 hour.&amp;nbsp;&lt;/div&gt;

Ingredients
FOR THE CAKE:&lt;br /&gt;
&lt;br /&gt;
½ cups Buttermilk&lt;br /&gt;
1 teaspoon Baking Soda&lt;br /&gt;
2 cups Self-Rising Flour&lt;br /&gt;
2 cups Sugar (I used 1 cup brown sugar and 1/2 cup white sugar)&lt;br /&gt;
1 cup Water&lt;br /&gt;
½ cups Crisco - Solid Shortening&lt;br /&gt;
¼ cups Cocoa Powder&lt;br /&gt;
1 stick Butter&lt;br /&gt;
3  Eggs&lt;br /&gt;
1 teaspoon Vanilla&lt;br /&gt;
&lt;br /&gt;
&amp;nbsp;FOR THE FROSTING:&lt;br /&gt;
⅓ cups Buttermilk&lt;br /&gt;
⅓ cups Cocoa Powder&lt;br /&gt;
1 stick Butter&lt;br /&gt;
16 ounces, weight Powdered Sugar (I cut the sugar to just 1 cup)&lt;br /&gt;
1 teaspoon Vanilla&lt;br /&gt;
1 cup Chopped Walnuts&lt;br /&gt;
&lt;br /&gt;
&amp;nbsp;Preparation Instructions
Note: All ingredients need to be at room temperature.&lt;br /&gt;
&lt;br /&gt;
Preheat oven to 400 F. Spray a 9 x 13 pan with cooking spray.

Pour 1/2 cup buttermilk into a 1 cup measuring cup, add baking soda and stir. Set aside.
In a large mixing bowl sift together flour and sugar and set aside.
In a medium sauce pan over medium heat combine the following: water, Crisco, 1/4 cup cocoa and 1 stick butter. Stir until combined and butter and crisco are melted. Cook until this mixture comes to a slight boil.&lt;br /&gt;
&lt;br /&gt;
&amp;nbsp;Remove from heat and pour into the dry ingredients and mix until combined. Add buttermilk/soda mixture and scrape to get all of the mixture into the bowl. Mix at medium speed using an electric mixer and continue until well combined. Add eggs, one at a time and mix well after each addition. Add 1 teaspoon vanilla and mix well.&lt;br /&gt;
&lt;br /&gt;
Pour into prepared pan and bake at 400 F for 20-22 minutes.

With about 5 minutes left on the baking time make the frosting: In a medium saucepan combine 1/3 cup buttermilk, 1/3 cup cocoa and 1 stick of butter over medium low heat and stir as butter melts. Once melted and combined stir constantly while cooking for about 3 minutes longer. Remove pan from heat and add powdered sugar. Mix well using an electric mixer. Once combined add 1 teaspoon vanilla and chopped nuts, mix well. Pour over the hot cake.
This can also be baked in a jelly roll pan, just reduce baking time to 15 minutes. Do not substitute margarine for butter. This is one of the best bundt cake ever. Aku suka softness of the cake, it's not dry at all, very moist and not sweet. Rasa manis tu just enough. Aku tak payah reduced the sugar. And the best part is the nutty caramalised banana. Peh!! it does make a LOT of difference :)&lt;br /&gt;

Banana Foster Bundt Cake&lt;br /&gt;

&lt;br /&gt;
Ingredients&lt;br /&gt;
2 Cups all purpose flour&lt;br /&gt;
1 Teaspoon baking powder&lt;br /&gt;
1 Teaspoon baking soda&lt;br /&gt;
1/2 Teaspoon salt&lt;br /&gt;
1 Stick unsalted butter, at room temperature (I used 150gram)&lt;br /&gt;
1/2 Stick unsalted butter, melted&lt;br /&gt;
1 1/2 Cups light brown sugar, divided&lt;br /&gt;
2 Teaspoons vanilla
2 Eggs&lt;br /&gt;
1 Cup buttermilk&lt;br /&gt;
2 Banana, peeled and sliced&lt;br /&gt;
3 Bananas, mashed&lt;br /&gt;
1/4 Cup walnuts, chopped (I substituted with chopped almond)&lt;br /&gt;
&lt;br /&gt;
Butter and flour a 12 cup bundt pan.&amp;nbsp; Pour the melted butter into the bottom, sprinkle on 1/2 cup of the sugar, layer on the sliced banana and top with the chopped nuts.&lt;br /&gt;
&lt;br /&gt;
In a bowl, combine the flour, baking powder, baking soda and salt.&lt;br /&gt;
&lt;br /&gt;
In a mixing bowl, beat together the remaining sugar and room temperature butter. Add eggs and beat until well incorporated. Mix in the mashed bananas and vanilla. Beat in the flour mixture, alternately with buttermilk in 2 addition. Mix for another 2 minutes until everything is fully incorporated.&lt;br /&gt;
&lt;br /&gt;
Pour the batter over the walnuts in the bundt pan and bake in pre-heated 350 degree oven for 45 minutes or until a toothpick comes out clean. 1 pack (5) pieces of frozen roti canai or capati&lt;br /&gt;
I pack of salami or chicken slices&lt;br /&gt;
Shredded mozarella cheese&lt;br /&gt;
&lt;br /&gt;
Direction&lt;br /&gt;
1. spread the roti canai dough, letak 1 keping salami and tabur shredded mozarella. Gulung.&lt;br /&gt;
&lt;br /&gt;
2. Bakar for 20 minutes or until garing dalam oven 200 degree celcius.&lt;br /&gt;

2 cups all purpose flour&amp;nbsp;&lt;/div&gt;

1 cup whole wheat flour&amp;nbsp;&lt;/div&gt;

2 tsp. baking soda&amp;nbsp;&lt;/div&gt;

1/2 teaspoon salt (I omitted salt coz I used salted butter)&lt;/div&gt;

6 oz. butter (3/4 cup or 1 1/2 sticks)&amp;nbsp;&lt;/div&gt;

2 large eggs, room temperature&amp;nbsp;&lt;/div&gt;

2 cups banana puree&amp;nbsp;&lt;/div&gt;

Preheat oven to 350F. Grease and flour your bundt pan (regular 12 cup bundt pan). I personally prefer to use baking spray for bundt pans.&amp;nbsp;&lt;/div&gt;

In large bowl, whisk together the flour, baking soda, and salt. Set aside.&amp;lt;

Let’s brown some butter: In medium-low heat, melt the butter. Rise the heat to medium and cook until the butter gently boils. Cook until the butter starts to brown and it develops a dark color. Carefully pour the browned butter into a bowl to cool for ten minutes.&amp;nbsp;&lt;/div&gt;

In the bowl of your stand mixer, cream butter and sugar until pale and fluffy using the paddle attachment (you could also beat it with a hand mixer). Beat in the eggs one by one, waiting until each has been incorporated to add the next. Beat in vanilla extract and mashed bananas. Add half of the flour mixture to the butter mix and beat on low speed. Scrape down the sides of the bowl to incorporate. Add in the buttermilk and beat until incorporated followed by the remaining flour mixture; scrape the sides of the bowl to incorporate.&amp;nbsp;&lt;/div&gt;

3 tablespoons runny honey&lt;br /&gt;
100g light muscovado sugar&lt;br /&gt;
1 teaspoon vanilla extract&lt;br /&gt;
150g plain yoghurt&lt;br /&gt;
sea salt&lt;br /&gt;
2 large eggs, preferably free-range or organic&lt;br /&gt;
2 large, ripe bananas&lt;br /&gt;
1 orange&lt;br /&gt;
30g sultanas&lt;/div&gt;

&lt;br /&gt;&lt;/div&gt;

&lt;span style="font-family: inherit;"&gt;&lt;span style="color: #002d50; line-height: 15px;"&gt;Preheat the oven to 200°C/400°F/gas 6&amp;nbsp;&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;
&lt;span style="font-family: inherit;"&gt;&lt;span style="color: #002d50; line-height: 15px;"&gt;• Put 12 paper muffin cases in a 12-hole muffin tin&amp;nbsp;&lt;/span&gt;&lt;span style="color: #002d50; line-height: 15px;"&gt;• Melt the butter&lt;/span&gt;&lt;br /&gt;&lt;span style="color: #002d50; line-height: 15px;"&gt;• Finely grate in the zest of the orange and add the sultanas. Fold the mixture until just combine. Do not overmix&lt;/span&gt;&lt;/span&gt;&lt;br /&gt;

I am in love with this pavlova. I cut the sugar and it tasted just right, not too sweet. &lt;/div&gt;

&lt;b&gt;Pavlova&amp;nbsp; &lt;br /&gt;Adapted from Donna Hay&lt;/b&gt;&lt;/div&gt;

6 egg whites &lt;br /&gt;
1 1/2 cups caster (superfine) sugar&amp;nbsp; &lt;br /&gt;
2 tablespoons cornflour (cornstarch), sifted&amp;nbsp; &lt;br /&gt;
2 teaspoons white vinegar&amp;nbsp; &lt;/div&gt;
&lt;div dir="ltr"&gt;
1 cup (250ml) single (pouring) cream&amp;nbsp;½ cup passionfruit pulp (approximately 4 passionfruit) &amp;nbsp;250g strawberries, hulled and halved&amp;nbsp;&amp;nbsp; &lt;/div&gt;
&lt;div dir="ltr"&gt;
&lt;br /&gt;&lt;/div&gt;
&lt;div dir="ltr"&gt;
&lt;br /&gt;&lt;/div&gt;
&lt;div dir="ltr"&gt;
1. Preheat oven to 150°C (300°F). Place the eggwhite in the bowl of an electric mixer and whisk until stiff peaks form. Gradually add the sugar, whisking well, until the mixture is stiff and glossy.&amp;nbsp;&amp;nbsp; &lt;/div&gt;
&lt;div dir="ltr"&gt;
2. Add the cornflour and vinegar and whisk until just combined, about 1 minute. &lt;/div&gt;
&lt;div dir="ltr"&gt;
3. Shape the mixture into few small circular shaped pavlova on a baking tray lined with non-stick baking paper. Reduce oven to 130°C and bake for 1 hour. Turn the oven off and allow the pavlova to cool completely in the oven. Whisk the cream until soft peaks form. Spread over the pavlova, top with passionfruit and strawberries and serve immediately. Serves 8–10.&amp;nbsp;&amp;nbsp; &lt;/div&gt;

* You’ll know when the meringue is stiff and glossy because the mixture will have tripled in volume and stands up when the beaters are lifted.&amp;nbsp;&amp;nbsp;* The low heat puffs up the meringue while the long cooking time dries it out to give you a lovely crisp shell.&amp;nbsp;&amp;nbsp;* Store your pavlova, undressed, in an airtight container at room temperature for up to 5 days.&lt;/div&gt;

I used non dairy cream brand Rich which you have to campur 1 cup of cold water to the base that you use. You will need to use 2 cups of base for that. It taste superb!!&lt;/div&gt;

225g unsalted butter, at room temperature, plus extra for greasing&amp;#8226; 225g self-raising flour, sifted, plus extra for dusting&lt;br&gt;
225g caster sugar&lt;br&gt;
4 large eggs, preferably free-range or organic&lt;br&gt;
1 lemon&lt;/p&gt;
&lt;p dir=ltr&gt;for the filling&amp;#8226;&lt;br&gt;
250g fresh strawberries&lt;br&gt;
1 vanilla pod&lt;br&gt;
150g good-quality strawberry jam&amp;#8226; 150ml double cream&lt;br&gt;
1 tablespoon caster sugar&lt;br&gt;
icing sugar, for dusting&lt;/p&gt;
&lt;p dir=ltr&gt;Directions&lt;/p&gt;
&lt;p dir=ltr&gt;1. Preheat the oven to 180&amp;#186;C. &lt;br&gt;
2. Beat the butter and sugar together with a wooden spoon, until very light and fluffy&amp;#160;(i use mixer). Add the eggs one at a time, beating each one in well before you add the next.&lt;br&gt;
3. Sift in the flour. Finely grate over the lemon zest then fold it into the mixture (halve the lemon and save it for later)&lt;br&gt;
4. Divide the cake mix into the prepared tins and spread it out using a spatula. Bake in the hot oven for around 20 minutes, or until lightly golden brown and risen.&lt;/p&gt;
&lt;p dir=ltr&gt;For the filing&lt;br&gt;
1. Slice your strawberries&amp;#160;. Carefully score the vanilla pod lengthways and scrape out all of the seeds.Gently warm the jam in a pan over a low heat&lt;/p&gt;
&lt;p dir=ltr&gt;2. Remove from the heat and stir in your sliced strawberries. Add the cream to a bowl with the sugar and vanilla seeds, and squeeze in the juice from your zested lemon. Whip until you have nice soft peak.&lt;/p&gt;
&lt;p dir=ltr&gt;3. Smear over the jam and strawberries on the first cake, then spread the sweetened cream over the top. Place the second cake, with the pretty side facing up, on top and dust it with icing sugar&lt;/p&gt;
&lt;p dir=ltr&gt;( instead of using jamie's recipe for filing, i whipped 100gm butter, 50gm icing sugar and spread it on top of strawberry jam that i have spread on the first cake)&lt;br&gt;
