My parents were just not fans. But I had many vegan friends; Oreos are their go-to sweet snack. I remember trying them at my friend Olivia's house the first time. It was just like the commercial. Yes, I know. Betty, why the cliché? Well, who didn't dunk their Oreos in a glass of milk - almond milk in my case - when you were a kid?

Skip a couple of decades, and I get diagnosed with celiac disease. That ended with many sweet snacks for me, including regular Oreos.

Are Oreos Gluten-free?

Traditional Oreos are not gluten-free and, therefore, not recommended for a gluten-free diet. Neither are double-stuffed, Halloween Oreos, Brookie-O's, mini Oreos, Pumpkin Spice, Oreo Cinnamon Bun, Chocolate cream, Dark Chocolate, Joy (X-mas), Golden Double Stuffed, Oreo ID, Mint, Mega Stuf, Fudge Covered, Thins, and any of the treats they make. But since January 2022, Oreo has sold Gluten-free Oreo Classics and Double Stuffed. Keep reading, and I will tell you what I think of these gluten-free Oreo cookies.

Why aren't Oreos Gluten-free?

Here is the list of ingredients straight from the Nabisco Website:

SUGAR, UNBLEACHED ENRICHED FLOUR (WHEAT FLOUR, NIACIN, REDUCED IRON, THIAMINE MONONITRATE {VITAMIN B1}, RIBOFLAVIN {VITAMIN B2}, FOLIC ACID), PALM AND/OR CANOLA OIL, REAL COCOA (PROCESSED WITH ALKALI), HIGH FRUCTOSE CORN SYRUP, LEAVENING (BAKING SODA AND/OR CALCIUM PHOSPHATE), SALT, SOY LECITHIN, CHOCOLATE, ARTIFICIAL FLAVOR.

IMPORTANT: On that same page, Nabisco clearly states the list of Allergens: Wheat and Soy. There are no animal products, making these chocolate wafer cookies a great sweet snack for vegans.

The ingredient list in the Oreo packaging clearly lists wheat flour, which means Oreos are not Gluten-free.

Gluten-free Oreo Cookies

Gluten-free Oreos are certified gluten-free by OFCO.org and made with a variety of gluten-free flour. They are available in two presentations: Gluten-free Original and Gluten-free Double Stuf Oreos.

Today, Nabisco offers a wide variety of gluten-free Oreos, including Original chocolate, Double-Stuffed Oreos, Golden Oreos, and Gluten-free Mint Oreos.

If you are one of the people with celiac disease like myself, you can get any of these great flavors from this Amazon link and get them delivered to your door.

You can also buy them personally at your favorite grocery store on your next shopping day. I have seen them at Target, Safeway, Walmart, Whole Foods, and others.

Gluten-free Oreo Ingredients

Here is the list of ingredients copied and pasted from the Nabisco Website:

SUGAR, WHITE RICE FLOUR, TAPIOCA STARCH, PALM OIL, CANOLA OIL, WHOLE OAT FLOUR, CORNSTARCH, COCOA (PROCESSED WITH ALKALI), INVERT SUGAR, SOY LECITHIN, BAKING SODA, SALT, XANTHAN GUM, CHOCOLATE, ARTIFICIAL FLAVOR.

IMPORTANT: It does contain one allergen: Soy.

Regular Gluten-free Oreos Nutritional Information

According to Nabisco, the serving size is three cookies. There are 160 calories per serving, 7 grams of fat, 2 grams of saturated fat, 0 grams of trans fat, 0 grams of cholesterol, 130 milligrams of sodium, 25 grams of carbs, 1 gram of dietary fiber, 14 grams of sugar (13 of which are added), 1 gram of protein.

You can read the Gluten-free nutritional table on the Nabisco site. The important thing is these cookies are made with a blend of gluten-free flour as seen below.

What is a gluten-free alternative to Oreos?

Besides the gluten-free Oreos Nabisco has offered since 2022, other brands also make their gluten-free versions of Oreos.

I'll be honest. I have not tried any of these gluten-free cookies, but I found them on Amazon and thought I'd share them with you. If you have tried or are adventurous and will make an order, contact me and let me know your review. I will update this post with your comments.

Glutino: They make both chocolate and vanilla wafer versions of the cookies.

Check Price On Amazon

Simple Mills: I will order this one one day. They also have a double stuffed version, choco mint, vanilla, and they also do season specials (Halloween pumpkin and Christmas, for example)

Check Price On Amazon

Kinnikinnick KinniTOOS: These guys also make a classic chocolate and vanilla cookie sandwich stuffed with cream.

Check Price On Amazon

365 by Whole Foods: This is the last one on the list. Again, it is a chocolate cookie stuffed with cream by a well-known brand.

Check Price On Amazon

Homemade Gluten-free Oreos

If you want to go on an adventure and create your own homemade Oreo cookies, here are a couple of recipes I have tried myself. They are not even close to the real thing, but they make great gluten-free desserts with a cake-like taste—maybe even better-tasting cookies (for us adults) than the commercial versions, but not entirely with the classic texture.

My favorite is from Gluten-free on a shoestring

The easiest recipe to follow is from Meaningful Eats

Crisp and sturdy cookies so the wafers can be thinner: Snixy Kitchen. She does a vanilla peppermint version in this recipe.

And last, a vegan and gluten-free homemade Oreo cookie version from the Banana Diaries.

Gluten-free Oreo FAQs

Are Gluten-free Oreos good?

It is tough to tell the difference between one and the other. To me and most of my gluten-free community, the Nabisco gluten-free Oreos taste very similar to classic Oreos. If you don't want to take my word for it, the team with The Thrillist did a superb job comparing the two.

Here is an extract of their test:

In short, I closed my eyes and tried to guess which cookie I was tasting. Even shorter, I failed.

To my surprise, it was very difficult to tell which cookie was which with my eyes closed. In the end, I placed one of each type of Oreo in the "Original" pile and one of each Oreo in the "Gluten-Free" pile. It was an impossible task.

My inability to discern between the two types of Oreos answered a crucial question. The gluten-free Oreos do, in fact, taste like the real thing.

Are Gluten-free Oreos Vegan?

Yes, gluten-free Oreos are vegan. There are no eggs or dairy in the ingredients of the cookies.

Do they make gluten-free Gloden Oreos?

Yes, Nabisco does make gluten-free Golden Oreos. High protein waffles are easy to make, low-carb, and high in protein, making them a perfectly balanced breakfast.

Let me share some of my favorite gluten-free protein waffle recipes. These waffles taste no different from regular gluten-free waffles. They'll give you all the waffle deliciousness you crave without the gluten.

The base recipe for protein waffles has simple ingredients: gluten-free vanilla protein powder, Greek yogurt, eggs, baking powder, and gluten-free oats or gluten-free flour blend. They're super easy to make, absolutely delicious, and perfect for meal prep and special occasions.

What are gluten-free protein waffles?

Gluten-free protein waffles are waffles that only have gluten-free ingredients and are made with protein powder, making them high in protein.

One regular waffle has a protein content of 1 gram. In contrast, the same serving size of gluten-free protein waffles contains 10 grams of protein. That is 9 grams of extra protein.

I got the nutritional information from EatThisMuch.com - my preferred nutrition calculator.

Waffle topping ideas

Gluten-free waffle topping ideas

If you want to make your waffle breakfast healthier, you can add some of these topping ideas:

BerriesBanana slidesGluten-free peanut butterGluten-free almond butterDried nutsGrass-fed butter

If you want to add some sugary fun, go for some of these:

Gluten-free maple syrupHoneyGluten-free jelliesNutella - One of my favorites. I mix it with banana slices

How do gluten-free protein waffles taste?

The flavor of gluten-free protein waffles will change depending on your ingredients. If you stick to the conventional recipe, they will taste the same as regular gluten-free waffles.

For example, you'll see below a vegan recipe using bananas. Those waffles will taste more like a banana. There is another recipe with cinnamon, and it will taste more like cinnamon rolls.

How to store and reheat gluten-free protein waffles?

How to Freeze Waffles

Waffles are excellent for meal prep for the week or work up a double or triple batch to store in the freezer and have handy whenever the waffle cravings strike.

First, let your waffles cool entirely. Cooling allows the waffles to stop producing moisture (steam) and prevent freezer burn allowing your waffles to stay nice and fresh.

Next, get two servings of waffles together and tightly wrap them in a piece of plastic wrap or a Ziploc bag.

Now, remove as much air as possible, preventing freezer burn.

Last, place waffles in the freezer. They'll stay fresh for up to 3 months.

How do you reheat frozen waffles?

Option A: Thaw waffles in the fridge overnight. In the morning, microwave for 60 seconds.

My way: Cut frozen waffles in half, place them directly from the freezer into the toaster, and toast on medium. I find that this option results in crispier waffles.

How to make gluten-free protein waffles?

Preparing gluten-free protein waffles

I have tried many waffle recipes. The ones I list in this article are my favorite. I have made a few adjustments to ensure all are gluten-free and high in protein. The protein comes either from a protein powder and/or high protein gluten-free flour.

If you are interested in knowing what protein powders I've used and which is my favorite, make sure you read my Best Gluten-free Protein Powders article.

Making the waffle mix is super fast, but you might want to ensure you account for cooking time.

Prep time to get your batter done is about 5 minutes.

Account about 3 to 5 minutes of cooking time per waffle until golden brown.

If you plan to make a batch for your family, you'll need about 30 minutes before you sit down and enjoy a delicious family breakfast.

Essential Ingredients to Make Gluten-free Protein Waffles

Gluten-free Protein

You can't make gluten-free protein waffles without protein. I'll give you my favorite protein powders: organic and plant-based, whey protein, and Amazon's Choice. Read my gluten-free protein powder article if you are interested in knowing what other gluten-free proteins I have used and recommend.

Gluten-free Flour

There are many options of gluten-free flours we can use to make waffles. But because we are trying to achieve a high protein waffle.

There are many high protein flours available, according to Health Nutrition. From that long list, my favorite for waffles and pancakes are almond flour (21% by weight), oats or oat flour (14% by weight), and quinoa flour (14% by weight).

As a benchmark, rice flour has 6% by weight and regular wheat flour 10% by weight.

Eggs

Eggs in this recipe serve three purposes. The first is to bind the ingredients together. The second is to add more protein to our protein waffles. The third, eggs mixed with baking soda and powder and a bit of acid, will help our waffles be super fluffy.

Fat

Fats such as butter, cream cheese, and yogurt add flavor and prevent the waffles sticking onto your waffle maker.

Liquid

Liquid adds moisture to our waffles. I like to use almond milk, but you can use regular milk, other nut milk, orange juice, fruit juices, and even water.

Vanilla Extract

Vanilla enhances the taste of waffles. If you don't have any, you can do away with it, but it will up your waffle game when you do use it.

Sweetener

I know we all add sweeteners as toppings to our waffles, but I like to add a bit of sweetener to my recipe. It adds flavor, and I don't have to add too much sweetness to my toppings.

There are several options for this. I use maple syrup, not pancake syrup, corn syrup, glucose, and other sugars. You can also use honey, agave, or low glycemic sugars like erythritol and stevia.

Salt

Salt increases flavor in everything. You don't need much. A pinch goes a long way when baking sweets.

Leavening Agent

I use baking powder and baking soda for pancakes and waffles, but you can get away with only baking powder.

When using baking powder or baking soda, I like to use a bit of acid to increase the leavening power. My preferred acid for this is apple cider.

Added Flavors

These include ingredients that will elevate the flavor of the waffles or add some texture. Let me name a few: bananas, nuts, chocolate chips, berries, jelly, and others mixed in the batter.

Combining the ingredients

This part is the easiest part of making waffles. You need to add the wet and dry ingredients into a blender and blend at high speed until the mix is smooth.

If you don't have a blender, mix all the ingredients in a mixing bowl and whisk them until your batter is smooth.

Cooking the Waffles

Cooking gluten-free protein waffles

Make sure you preheat your waffle maker to medium-high heat.

Add some non-stick spray to the waffle maker and pour about a ½ cup of batter or less, depending on your waffle maker. Cook until golden brown or to your preference.

And that is the end of it. Just add your favorite toppings and enjoy!

Enough generic cooking talk. Let's dig into a few of my favorite waffle recipes:

Gluten-free Protein Waffle Recipe

I hope you are ready to try the crispiest, fluffiest protein waffles. I have ensured the recipe is naturally gluten-free, quick, easy, and filling. You and your family will surely enjoy it!

Making waffles from a box is barely more straightforward than this! Preheat your waffle iron to medium-high heat and spray with cooking spray (I use this coconut oil spray - Amazon affiliate link). Add all ingredients to a high-powered blender and blend until smooth.

Pour about 1/2 cup of the mixture onto the waffle iron, close, and cook for about 3-4 minutes or until golden brown. Remove from the waffle iron and enjoy!

Cooking Steps

Preheat the waffle iron to medium-high heat and spray with cooking spray.Add all ingredients to a high-powered blender and blend until smooth, or add to a mixing bowl and whisk until smooth.Pour a scant ½ cup of the mixture into preheated waffle iron, close, and cook for about 3-5 minutes, until golden brown.Remove from the waffle iron and serve with your favorite toppings.

Ingredients

3/4 cups of gluten-free oats or almond flour1/2 cup of full fat gluten-free yogurt2 large eggs1 scoop (25 grams) of your favorite vanilla gluten-free protein powderPinch of Salt1/2 teaspoon baking powder1/2 teaspoon of baking soda1 Tablespoon of apple cider1 teaspoon of vanilla extract2 Tablespoons of almond milk1/2 Tablespoon of maple syrup

Gluten-free Protein Waffle Mix

If you are in a hurry or don't like to cook, you can also find options. There are many Gluten-free Protein Waffle Mixes out there. Feel free to review my article, where I review my favorite gluten-free protein waffle mixes and mention others that I have not tried but are options for you to choose from.

Frozen Gluten-free Protein Waffle

If you don't want to use your waffle iron and don't want to dirty dishes, there is also an excellent option. The good news is that the only option is delicious. The bad news is that it is the only option that I know exists.

Kodiak Cakes makes frozen protein waffles, but they are hard to find. Unfortunately, you can only get them in stores like Target, Stop & Shop, Walmarts, HEB, and Randalls. I have not seen any online options. You can find a store near you using the Kodiac Cake store locator. They only have 10 grams of protein, but that is still plenty more than regular waffles.

Other Tastefull Recipes for Gluten-free Protein Waffles

Below you'll find a table of ingredients of other great gluten-free protein waffles that will accommodate your different diets or taste. But did you know that there is a gluten-free variety?

If you're looking for a hearty, gluten-free side dish to serve up at your next dinner party, couscous is a quick, easy and tasteful option!

This Mediterranean classic is simple to prepare and can be made with a variety of different seasonings to suit your taste. Plus, couscous is packed full of fiber and protein, making it the perfect mealtime solution for those on a gluten-free diet.

Almost all couscous is prepared the same way. In a pot add some kind of fat, usually olive oil or butter, stir fry some onion, garlic, and spices, add the dried couscous, salt, and liquid. What changes from recipe to recipe is the liquid and the amount you use, the spices you add, the order in which you do things, and the quantity of the ingredients.

I will give you all the details you need to know. I will share how to cook the different types of gluten-free couscous out there depending on what they are made of or the size of the pearls.

So get ready to put some flavor into your menu with this delicious and healthy couscous cooking guide!

Instructions to cook Pearl or Israeli Gluten-free Couscous

Gluten-free pearl couscous with herbs and meat

In a medium-sized pot, add 1 teaspoon each of oil and salt to about 4 cups (1 liter) of boiling waterGradually add 1 cup of pearl couscous, to avoid the water from stopping boiling. (Use chicken or vegetable broth for extra taste)Cook uncovered over medium heat for about 10-15 minutes. The time will change depending on the brand of couscous that you use. VERY IMPORTANT: Rinse under cold water until the water runs clear and the couscous doesn’t feel too slimy. This will give you the perfect texture and avoid the extra gewyness that is typical of most gluten-free pasta.Place the pot back over medium heat. Add oil or butter, friy some onion, garlic, salt, spices, or your favorite sauceMix in the couscousServe and enjoy!

Pro Tips:

Gluten-free pearl couscous is way better after chilling for a while. It helps with the stickiness and chewiness that's typical of gluten-free pasta.

Cold fine with me anyway as I often use couscous in cold room temp dishes like salads. If you like it hot, microwave it or heat it in a pan. Just make sure you add a bit of water to avoid drying too much.

Instructions to cook Gluten-Free Morrocan or Mediterranean Style Couscous

Couscous cooked with butter

In a medium-sized pot, add 3 tablespoons of olive oil or butterAdd spices, onion and garlic and stir fry for about a minute or twoAdd 1 cup of couscous to the pot and fry the mixture for about 3 minutesAdd a cup of water (Use chicken or vegetable broth for extra taste)Stir and bring to a boilBring heat down to low and occacionally stir for 5 to 10 minutes - after 5 minutes try the couscous and remove once you like the texture. The longer you cook your couscous, the stickier and mushier it will get. The couscous will continue to cook after you turn it off. Take this into account for pefect texture.Turn of the stove, serve and enjoy!

Instructions to cook Fonio Gluten-Free Couscous

Butter and Herbs Fonio Couscous with Lemon

In a medium-sized pot, combine 2/3 cups of water with 1 tablespoon of olive oil or butter (Use chicken or vegetable broth for extra taste)Bring water to a boilSlowly add 1/3 cup of gluten-free fonio couscous and stirTurn off the heat and cover for 5-7 minutes. Time will depend on your preferred texture. On a sparate pot set to medium heat, add 2 tablespoons of oil or butterAdd chopped onions, garlic and spices of your choiceStir fry for 2-3 minutesAdd the fonio couscous and gently mix adding salt to tasteServe and enjoy!

Gluten-Free Homemade Cornmeal Couscous Recipe

Brazilian cornmeal couscous

This recipe comes from South America, where wheat semolina was scarce. South American immigrants instead opted for cornmeal to recreate traditional couscous. I specifically tried it on my last trip to Costa Rica.

The great part about this recipe is that it allows those on a gluten-free diet to enjoy a couscous-like dish that is absolutely delicious!

Ingredients

1 cup of cornmeal (boiled cornmeal)2-3 tablespoons of oilSalt1.5 cups of water

Directions

Coat 1 cup of polenta (which is boiled cornmeal) with 2-3 tablespoons of oil and stirAdd a few pinches of salt along with 1.5 cups of water to your mixture.Cook on the stovetop (or microwave) until the grains have absorbed all of the liquid and are dry to the touchLet everything rest for 15-30 minutes to ensure the starches are set.Aerate the cooked grain mass using either an electric food processor or a special couscous sieve (which can be purchased online).

PRO TIP: be sure not to skip the first step (coating the polenta with oil). This is crucial in order to get the fluffy texture couscous is known for.

Gluten-free Couscous Recipes

You can browse my other gluten-free couscous recipes here:

Cauliflower Gluten-free Couscous Recipe
How to Cook Gluten-Free Couscous
@type":"Person
{"@type":"ImageObject
https://www.theceliacdiva.com/wp-content/uploads/2022/03/how-to-cook-gluten-free-couscous-889x500.jpg
{"@context":"http://schema.org/","@type":"Organization
Celiac Diva
@type":"ImageObject

link to Cauliflower Gluten-free Couscous Recipe

Cauliflower Gluten-free Couscous Recipe

One of the best things about being gluten-free is finding new and delicious recipes to make. This cauliflower couscous recipe is one that you'll definitely want to add to your repertoire!

It's hard to believe that something as bland as cauliflower could be turned into a delicious couscous-like dish, but this recipe proves that it can be done. It's a great way to get in some extra veggies.

The key is to not overcook the cauliflower you get the grain-like texture similar to couscous. Add in some seasonings of your choice, and you've got a side dish worthy of any table. Give it a try!

Cauliflower is one of the many gluten-free couscous alternatives - this link takes you to a post I wrote with all my favorite gluten-free options and how to cook them.

For those who are on a gluten-free diet and are on the Keto diet, this is practically your gluten-free couscous option. The key to making it taste more like couscous is adding roasted almonds. Don't forget this tip.

Lemony Almond Cauliflower Couscous Recipe

Lemon cauliflower gluten-free couscous

This lemony Israeli cauliflower couscous recipe is not only gluten-free but is also extremely tasty and serves as a side dish for 7-8 people.

Not only is it versatile, as it can be served with a range of main courses, including roasted or grilled salmon or chicken, but it looks and tastes fantastic.

The cauliflower in this recipe is dressed in garlic, parsley, and lemon.

Ingredients

3 tablespoons of olive oilSalt2 tablespoons of finely chopped garlic1 medium size onion1 large cauliflower1 cup of slized roasted almonds1/4 cup of homemade chicken broth (you can also use a store-bought no-salt-added variety)Freshly ground black pepper4-6 teaspoons of finely grated lemon zest6 tablespoons of freshly squeezed lemon juice1/2 teaspoon of sugar3 tablespoons of finely chopped parsley

Preparing the cauliflower

Cauliflower couscous in blender

Cut the cauliflower in florets. Don't use the thick part of the stem, make sure you cut the florets around it. Dispose of the stem, usually, it is a bit harder.Get your food processor ready. You'll want to add the florets a few at a time, don't fill more than 1/2 of your processor with them at a time. Grind the cauliflower using the pulse button. You'll want to do it a couple of seconds at a time. After 4 or five pulses, make sure you open the processor and stir with a spatula. You want to get an even grind.Repeat this process until you've ground all your cauliflower.

Cooking the Couscous

Heat your olive oil in a deep skillet or a 10-inch nonstick statue pan over medium-low heatAdd the onion and a pinch of salt, sautey for 5-8 minutes, or right before the onion starts getting brown.Add 2 tablespoons of finely chopped garlicStir often and make adjustments to the heat if necessary to keep the garlic from browningAdd the spicesAdd your cauliflower florets and stir to combineTurn up the heat to medium-high before adding in your brothAdd the broth and don't stop stiring, you want to avoid browning as it will change the flavor or your cauliflowerCook everything for 7-9 minutes, or until the cauliflower feels aldente and the broth evaporatedBe sure to not overcook. You want to avoid a mushy cauliflower.Combine the lemon juice and zest, parsley, and sugar. Season with pepper and salt, and turn off the heat. Continue to stir to let the lemon evaporate and be absorbed by the cauliflower couscous.Once the couscous is ready, it should be transplanted to a large bowl. If you keep it in the pan, it will continue to cook and the cauliflower will be soft and mushy.Add the almonds and stir. Do this last before serving, so that they stay nice and crispy when you eat them.

So, there you have it; my easy and delicious cauliflower gluten-free couscous recipe. I hope you give this recipe a try and have your family or friends be enchanted by your cooking.

If you are interested in more recipes like this one or want to learn how to cook other types of gluten-free couscous, visit this blog post.
Cauliflower Gluten-free Couscous Recipe
@type":"Person
{"@type":"ImageObject
https://www.theceliacdiva.com/wp-content/uploads/2022/03/cauliflower-gluten-free-couscous-889x500.jpg
{"@context":"http://schema.org/","@type":"Organization
Celiac Diva
@type":"ImageObject

link to Gluten-Free Couscous Alternatives

Gluten-Free Couscous Alternatives

Given its visual similarity to rice, many assume couscous is gluten-free. However, these pasta spheres, while tasty, are NOT, in fact, gluten-free.

Some couscous substitutes are somewhat similar in appearance, texture, and just as delicious, including brown rice and quinoa.

In this article, I'll help you understand what couscous is, how I like to prepare it and provide you with alternatives you can use to make anything from salads and soups to full-course meals.

Is Couscous Gluten-Free?

Couscous is not gluten-free; therefore, those with gluten intolerances, like celiac disease, should look for gluten-free alternatives or substitutes to couscous.

Although couscous is similar in texture and appearance to rice and other gluten-free grains, traditional couscous is not gluten-free. It originates from semolina, a granule of durum wheat.

Couscous made from durum wheat semolina.

This can cause much confusion at restaurants, especially since some restaurants' menus list couscous as gluten-free.

If you have gluten sensitivity or are celiac, be mindful of this and question restaurants that claim their couscous is gluten-free.

It can be even more confusing because some companies will market alternatives to couscous, with similar taste and texture, as couscous itself.

The same goes for items that by themselves are gluten-free such as rice or buckwheat, but when altered in their form, such as a noodle, may no longer be gluten-free because of how it's been processed or what other ingredients may be added.

As always, my advice is to read the ingredients list and make sure wheat or any derivative of this grain is not present in the list. If you are celiac, you also have to ensure no cross-contamination.

For example, buckwheat noodles still may not be gluten-free because the company may have to add wheat flour to make it into a noodle.

Always be cautious when ordering items that are labeled as gluten-free. Check with the label or restaurant to ensure their processes didn't turn something that's gluten-free in its natural form into something that no longer is.

Products don't get exposed to cross-contamination in their factory, but this process can also happen while the restaurant prepares your food. Unless the owner of a restaurant or packaging can confirm that what you're eating is certified gluten-free, it'd be safest not to eat it.

If you have severe gluten sensitivities such as celiac disease, ensuring that gluten is not hiding in your rice pilaf is critical. Instead, look for gluten-free alternatives.

What is the couscous gluten content?

Commercially produced couscous, or almost any commercial pasta, is made almost exclusively from durum semolina. Semolina is a high-gluten flour made from hard durum wheat.

Durum contains a whopping 27% extractable wet gluten, which is more or less 3% higher than your everyday wheat.

Its high gluten content makes durum wheat is not suitable for people with gluten-related disorders such as celiac disease, non-celiac gluten sensitivity, and wheat allergy.

Is Moroccan couscous gluten-free?

Moroccan couscous, like other traditional couscous varieties, is not gluten-free. If you have gluten intolerance, then you should avoid this dish.

Traditional Moroccan couscous is eaten by hand instead of utensils. At diners, people will put the couscous in between their fingertips and roll it into balls before eating.

Is Israeli couscous gluten-free?

Just like with Moroccan couscous, Israeli couscous is not a gluten-free dish.

Many people (especially those who have never had Israeli couscous before) wonder what the difference is in comparison to regular couscous.

While both are made with water and semolina flour, regular couscous is irregular-shaped and much smaller than Israeli couscous. Additionally, the Israeli variety has a softer, chewy texture.

Because of its size, Israeli couscous is also known as pearl couscous.

Pearl couscous dish

Is Couscous Safe for Your Gluten-Free Diet?

Conventional wheat couscous is not safe for your gluten-free diet because it comes from the grains of durum wheat.

While most people think it falls in the same category as rice, it's actually wheat pasta, making it unsafe for your gluten-free diet.

Due to the growing popularity of gluten-free products, companies are offering gluten-free alternatives to typical gluten products.

If you don't want to use gluten-free couscous but still crave that texture and taste, people with gluten sensitivities still have other grain alternatives such as brown rice and quinoa to enjoy a gluten-free meal.

Buying Gluten-Free Couscous

As mentioned above, there is a range of gluten-free couscous products and substitutes for couscous available at your grocery store and online.

Gluten-free Couscous at Wholefoods

Wholefoods don't have any gluten-free couscous. If you are going there and need to buy the ingredients for some wholesome couscous dish, I would suggest buying a substitute like quinoa or short whole grain rice.

Gluten-free Couscous at Walmart

Walmart does not have gluten-free couscous but they do have substitutes like quinoa available in their stores. They have a few gluten-free quinoa brands like Ancient Harvest and Better Body Foods.

Gluten-free Couscous at Ralphs

Ralphs is part of the Kroger family of supermarkets and stores and has almost 200 stores in the US. They offer a few varieties of gluten-free couscous and other alternatives. Some of the brands they offer I included in my reviews below.

Gluten-free Couscous at Publix

Publix stores do have gluten-free couscous in their stores. They sell Streit's gluten-free couscous. Since it is the only brand they sell. I would always have a plan B in case they don't have it in stock.

Gluten-free Couscous at Costco

Not only does Costco not sell gluten-free couscous, but they don't sell any kind of couscous. If Costco is your only option to shop, you can always substitute couscous for quinoa.

The two quinoa brands you'll find there, Kirkland and Seeds of Change, are not certified gluten-free. I know that quinoa doesn't contain gluten, but I am not sure these two brands worry about cross-contamination.

Gluten-free Couscous at ASDA

ASDA is a store for those who live in the UK. They have a couple of gluten-free couscous options for you. Feel free to check them out. I have never tried those as I am far from the UK. If you do try them, send me your comments and I will update this post with your review.

Gluten-free Couscous at Woolworths

For those in Australia, Woolworths does not offer a gluten-free couscous brand. They do however offer couscous alternatives like quinoa.

If you don't want to go out and search for couscous in your local store, and you are like me, let's explore your online options below:

Gluten-free Couscous Brands

Thanks to people like you and me, there is an increased need for gluten-free products. Many brands are offering alternatives to traditional gluten products, and couscous is not the exception.

Brands substitute gluten ingredients with corn or millet to create a safe alternative for people with gluten sensitivities.

Some of the most popular Gluten-free couscous brands include:

Streit'sGefenAnthony's GoodsEarth's GoodnessShipetaukinYoleleNayamaClearspringBawbabFree FromGoldbaum

Let's review some of my favorite and not so favorite gluten-free couscouses.

Grain-free Couscous

There are two brands that make grain-free couscous: Streit's and Gefen. Their couscous is made from potatoes, tapioca starch, and egg whites.

You'll find both options listed further down in this article.

Gluten-free couscous San Remo

Unfortunately, my favorite brand of couscous is no longer in production. San Remo, which is one of my favorite gluten-free pasta makes, no longer makes their famous gluten-free couscous. This leaves us with the other couscous alternatives below.

This is not an easy-to-find brand as it is produced for New Zealand, Australia, and Malaysia. But if you do get the chance to purchase any of their gluten-free alternatives, make sure you give it a try. It's delicious, and it cooks perfectly.

Glute-Free Alternatives to Pearl Couscous, also know as Israel Couscous or Giant Couscous

Pearl couscous is a bit bigger than your traditional Mediterranean Moroccan couscous. The little balls are more like the size of small pearls, hence the name. They are traditionally from Israel and usually kosher.

Gluten-free pearl couscous can be sticky and mushy if not cooked properly. Many of the reviews you read on Amazon blame the product, but it is actually an issue in the cooking that makes this happen - most of the time.

To get great results and avoid smushy couscous, you need to follow my couscous cooking steps in this article.

Streit's Gluten-Free Israeli Couscous: Streit's makes a variety of gluten-free products, one of my favorites is their kosher pearl couscous. It is tender, lightly chewy, and flavorful.

If you are looking for a grain-free couscous, Streit's gluten-free Israeli couscous is a great option for you.

Ingredients: Potato/Tapioca Starch, Potato Flakes, Pasteurized Egg White, Emulsifier (Mono Glyceride of Palm Oil), Stabilizer - Xanthan Gum, Spices.

Check Price On Amazon

Gefen Gluten Free Pearl Couscous: I'll be honest. I have not tried this brand yet, but it is an option. Gefen claims this product is kosher and certified gluten-free.

If you are looking for a grain-free couscous, Gefen's gluten-free Israeli couscous is another great option for you.

Ingredients: Tapioca starch, potato starch, egg whites, mono and diglycerides of fatty acids (emulsifier), xantham gum (stabilizer), paprika.

Check Price On Amazon

Clearspring Organic Gluten-Free Instant Couscous: This brand is also a corn-based couscous. The texture is similar to that of durum wheat couscous, but with a corn tortilla taste. The good news it is made from organic, non-GMO corn.

It is a good couscous substitute because of its texture. You'll love it if you don't mind the corn taste. I love them, maybe because I like to spice my couscous and hence give more points to texture.

Ingredients: Organic Italian corn.

Check Price On Amazon

BAWBAB Gluten-Free Millet Couscous: I haven't really tried Bowbab's couscous yet. I wasn't able to find many reviews for this one so I asked around in my network of celiac friends if anyone had tried it. There was one friend who recommended and mentioned that if cooked properly it had a good texture and a great taste.

If you do try it, make sure you send me an email and let me know what you think. I will update this review as I receive more comments.

Ingredients: 90% millet, 10% corn.

Check Price On Amazon

Anthony's Organic Gluten-Free Millet Couscous: Anthony's is a popular brand in my reviews. They make great-tasting products, but I can't say they are cheap - most of the time their quality is worth the price.

This product isn't actually advertised as couscous, but it is hulled millet, which is very similar in taste and texture to couscous.

If you overcook it or add too much water, you'll get porridge. So you'll need to learn how to cook it to your liking. You can follow my cooking tips. It took me a couple of tries before getting the right texture.

I do recommend washing before cooking. This will remove the powder it comes with. This is a starchy powder that will increase the chances of a mushy couscous.

Check Price On Amazon

Gluten-Free Alternatives to Moroccan Couscous also know as Mediterranean Style Couscous

Mediterranean or Moroccan couscous is your traditional small-sized couscous.

Gluten-free Moroccan or Mediterranean couscous can be sticky and mushy if not cooked properly. Trust me. It is the small kind - Morrocan or also called Mediterranean couscous. This Gefen couscous is made out of potato starch, making it a bit challenging to get a good texture. I had to cook a few batches before getting that perfect texture we love from couscous.

Ingredients: Potato starch, eggs, palm oil, salt.

Check Price On Amazon

Nayama Attieke Gluten Free Cassava Couscous: This is actually Attieke, which is a typical African dish made from cassava (yuca). But since the texture and taste can be similar to couscous, many of us who can't eat gluten use it as a couscous alternative. It tastes a bit nutty, with a tone of vanilla.

Attieke is a bit more starchy and sticky than couscous. Not my favorite alternative, but it works if you don't overcook it. If you let it cook too long it will be like grits.

Ingredients: Cassava semolina.

Check Price On Amazon

Fonio, also known as African Couscous, is a Delicious and Healthier Gluten-Free Alternavite to Couscous

Fonio is a West African ancient super grain, a family of the Millet grain. People have depended on it for thousands of years because it is very nutritious and can grow in poor soil conditions. Even though it is an important part of West African cuisine and culture, it is not well known outside of Africa.

Whole grains, like fonio, are important for your health. They contain fiber, B vitamins, are rich in minerals, and more. All of these help you feel fuller longer. Fonio also has a low glycemic index, making it diabetic-friendly.

Fonio is one of the best gluten-free alternatives to traditional wheat in tabbouleh and couscous.

One negative thing about Fonio is that it is more expensive than the other gluten-free couscous alternatives.

Gluten-free Fonio couscous can be sticky and mushy if not cooked properly. Many of the reviews you read on Amazon blame the product, but it is actually an issue in the cooking that makes this happen - most of the time.

To get great results and avoid smushy couscous, you need to follow my couscous cooking article.

Shipetaukin Fonio Gluten-free Couscous: I love fonio couscous. It has a great nutty flavor, it is filling, and it is easy to cook. Fonio is the closest I've tried to the original texture of couscous.

It is a bit hard for fonio to absorb the flavors you add - broth and spices. It has a strong nutty, grainy taste. I had to up my spice game the second time I cooked with fonio.

This specific brand makes the small grain, the size of, or smaller than, the Moroccan or Mediterranean couscous.

Ingredients: Precooked Fonio.

Check Price On Amazon

Earth's Goodness Gluten-Free Fonio Couscous: This non-GMO Fonio has a different treatment from some others as it is de-saponized to enhance its flavor. This process is mechanically done and then triple washed to remove Fonio's bitter exterior. Earth's Goodness fonio is is dehusk and in its raw form (not pre-cooked).

This specific brand tastes a bit different because of the de-saponized process. I personally like it, but it is a bit different than the couscous flavor I am used to. It tastes more like grits.

Ingredients: Fonio

Check Price On Amazon

Yolele Gluten-Free Fonio Couscous: This is a non-GMO pre-cooked whole-grain fonio. Watch out, the Amazon page says it is Keto and it really isn't. Fonio has a higher protein content than most grains, but it still has a lot more carbs than keto allows.

Having said that, this is my favorite fonio brand from all the gluten-free couscouses I have mentioned here. It is more expensive, but it is worth the extra dollars. You are also getting a 3 pack though.

This is my go-to gluten-free couscous substitute. I also use it for other recipes like grits, rice, as a sweet dessert with fruits and honey. You'll need to grind it a bit and break it into smaller pieces to get a similar texture to couscous.

The other alternative is to go with a short grain brown rice, you'll have a better shot at achieving that couscous substitute without the need of processing the rice.

Once again I recommend Lundberg's as your gluten-free rice alternative. As a side note, Lunberg's has a nice assortment of different types of rice. They are all super tasty and certified gluten-free.

Cornmeal

You'll be surprised about this option. I once visited Costa Rica and tasted a dish that was made with coarse-grind cornmeal and pork. It was almost like a version of wet rice, but more aldente and with a corn taste. It reminded me a lot of couscouses texture, but with a hit of corn taste.

When I got back home, I ordered some mid and coarse-grind cornmeal and tried it myself. Though it is my least favorite substitute, my couscous turned out OK. It does take longer to cook and it is a bit mushy.

The two brands I can recommend are Yummy, and Bob's Red Mill.

FAQs

Can a celiac eat couscous?

No. People with Celiac Disease should steer clear of conventional couscous as it does contain gluten. Traditional couscous is made from semolina, a granule of durum wheat.

Can I substitute quinoa for couscous?

Yes. Quinoa and couscous are regularly used as substitutes for one another. They differ slightly in texture and flavor but are very similar nonetheless.

The best part about quinoa is that it is gluten-free, unlike couscous. This makes it safe for people with celiac disease or gluten allergies.

Is quinoa healthier than couscous?

Yes, when comparing it with couscous, quinoa is better for your overall health.

This is because quinoa contains fiber, complete proteins, it is gluten-free, and a plethora of micronutrients.

Couscous and quinoa do have similar calories, but couscous is faster to cook.

If you have a condition -- such as celiac disease -- that prevents you from eating gluten, then quinoa is safe to eat. You always have to make sure there is no cross-contamination.

What does couscous taste like?

Couscous has a nutty, sweet flavor, and earthy aroma.

In my opinion, this flavor profile is why quinoa makes a great substitute for couscous.

Let's wrap it up

So, if you had any questions about which couscous to buy, or where to get it, I hope I answered them. There are many gluten-free couscous alternatives in the market today, you can mix them up a bit and try new recipes. Who said gluten-free had to be boring.

Once you have made your choice of what gluten-free couscous alternative you are buying, you'll need instructions on how to cook your couscous and even some recipes to enjoy. I have written an article explaining how to cook gluten-free couscous, and added some recipes at the end.
Gluten-Free Couscous Alternatives
@type":"Person
{"@type":"ImageObject
{"@context":"http://schema.org/","@type":"Organization
Celiac Diva
@type":"ImageObject

link to How Gluten-Free Flour is Made

How Gluten-Free Flour is Made

Gluten-free flour is a staple in the kitchen. It's used in baking, cooking, and even making pasta. However, there's a lot more to gluten-free flour than meets the eye.

There are different types of gluten-free flours out there, each with its unique properties. Some are better suited for specific recipes, while others are better for other uses.

In this article, I'll explain the differences between gluten-free flours and how they're made.

What is gluten-free flour?

Gluten-free flours are a great alternative to wheat flour and other grains. They can be used in place of regular flour for baking, but they have many uses outside the kitchen. Here's what you need to know about them:

It is important to note that gluten-free grains used in the production of gluten-free flour should be grown, transported, stored, processed, and packaged in gluten-free environments.

There are two types of gluten-free flours that we will discuss here: all-purpose and specialty.

All-Purpose Gluten-Free Flour: This type of flour can make bread, pastries, cakes, cookies, etc. It has a neutral taste, so it does not have any specific flavor or a texture like wheat-based flour. The main ingredient in this kind of flour is rice flour, tapioca, and potato or corn starch.

Specialty Gluten-Free Flours: These types of flours will help you achieve a particular result in your baking. For example, some flours will help you thicken a sauce, achieve a crunchy pie crust, or a softer cookie that crumbles in your mouth. The main ingredient in these types of flour will depend on the result you are trying to achieve.

Fresh Ingredients are Key to flavor and outstanding results in Gluten-Free Flour

As with most things in our kitchen, the fresher your ingredients, the healthier, better flavor, and results you will get.

One way to ensure you get fresh ingredients in your gluten-free flour is to make the flour yourself. For this, you'll need one of two things. You'll need a source that you know will sell you freshly fine-grained grains and seeds, or you can use a grain grinder mill to mill the grains yourself.

I have geeked out with my choice of the mill. A couple of years ago, I bought the KoMo Classic Mill. I love it. It follows the exact mechanism as the old grain mills, but instead of rocks, they use ceramic plates.

KoMo Classic Grain Mill

Check Price On Amazon

Other cheaper mills also have great results. If you are really into baking, I strongly suggest you get one.

How to Make your own Gluten Free flour mix

Gluten-free flour mixes should not be tricky. It's not as easy as just adding xanthan gum and tapioca starch, but it doesn't have to be that complicated either. Let me show you how to make your own homemade gluten-free baking mixes using rice flour (white and brown), potato starch, cornstarch, tapioca starch, and xanthan gum. These are the most common ingredients used in making gluten-free baking mixes.

The links for each product will take you to my preferred brand of flour in Amazon. Another great alternative where I get my gluten-free products is the Gluten Free Mall.

1 1/2 cups brown rice flour1/2 cup potato starch1/4 cup white rice flour1/4 cup tapioca flour1 tsp xanthan gum

Note: I use xanthan gum to add elasticity to the flour. If you don't need this, you can skip the ingredient. If you don't have xanthan gum, you can replace it with Psyllium husk, ground flaxseed, unflavored gelatin, or guar gum.

All you have to do is mix the ingredients well and store them in a dry place for when you need to use them.

If you haven't done much gluten-free baking, you need to know that all flours react differently in your baking. I always start replacing the 1:1 ratio of wheat flour with this gluten-free flour mix. You can adjust as you learn how your mixture behaves in your recipes.

Raising Flour Mix

If you need a raising flour mix, all you have to do is add the following ingredients to our previous all-purpose gluten-free flour recipe:

2 1/2 teaspoons baking powder1 teaspoon of baking soda1 teaspoon fine sea salt

Directions:

Mix all the flours, starches, baking powder, and salt in a large bowl.Shake the container before using it in case any flours have settled.Store this and any other gluten-free self-rising flour blends in an airtight container or a glass jar.

Important: You need to make sure your baking powder and baking soda are fresh, or you won't get the desired results. Freshness should be a rule of thumb with all your baking ingredients, but especially with these 2.

Here is a great video showing you how to make Almond meal, Oat, and Chickpea flour at home. She uses a blender—an excellent option for when you don't have a mill around.

https://www.youtube.com/watch?v=eRQQoOVcn3s

How Commercially Available Gluten-Free Flour Is Made

The first commercially available gluten-free flours were rice and corn-based. These are still the most common types of GF flour used today, but there have been many other developments in this area over time.

Today commercial GF flours may also contain teff flour, tapioca flour, sorghum flour, potato starch, garbanzo flour, buckwheat flour, and some may even have nut flour like almonds.

Commercial flours also start by milling the grain into a fine powder. As you can imagine, their mills are just a bit larger than the ones I use.

GF flour is missing the elasticity that gluten provides naturally to gluten-containing flours. Therefore often, these all-purpose flours have xanthan gum, guar gum, or Psyllium husk added as a binder instead.

Self-rising gluten-free flours will include baking powder, baking soda, or similar self-rising ingredients to help flour rise when mixed with other ingredients such as water, vinegar or lemon, and eggs.

Gluten-free flour blend

There are many grains and seeds you can use to create your blend. The different flours will yield different results. Some flours will add a different flavor profile. Others will add a gritty texture, a chewy texture. Others will add elasticity, others color.

I encourage you to play around mixing. It is essential to understand that each flour will be different from brand to brand.

If you are grinding your grains, the region where the grains come from and the type of grain you use will yield different results from people using the same grain family in another part of the world. There are over 40,000 varieties of rice in the world!

What you are baking will determine what your perfect blend will be.

Here is a comprehensive list of the most popular grains used in gluten-free flour mixes:

White Rice FlourBrown Rice FlourAlmond Meal/FlourAmaranth FlourBean FlourBuckwheat FlourCoconut FlourCorn FlourCron StarchMillet FlourOat FlourQuinoa FlourSorghum FlourTeff FlourTapioca FlourCassava FlourPotato Starch FlourGarbanzo FlourChickpea FlourFava Bean FlourHemp Flour

FAQs

Is gluten-free flour made from wheat?

No, it's not. Wheat has a protein called gliadin which causes celiac disease. All gluten-containing grains cause celiac disease because they share proteins with wheat. Usually, gluten-free flour is made from white and brown rice, tapioca flour, potatoes starch, and a binder like a xanthan gum.

Is gluten-free flour processed?

Gluten-free flour is processed like regular wheat flour, but it has been made with gluten-free grains and nuts and specially treated to remove all traces of gluten.

What is the difference between flour and gluten-free flour?

Flour is made from ground wheat, while gluten-free flour is made from other grains such as rice, corn, oats, millet, quinoa, buckwheat, amaranth, sorghum, teff, tapioca, potato starch, and arrowroot.

Can you substitute out brown rice flour for white rice flour in your gluten-free flour blend?

Yes, you can use brown rice flour instead of white rice flour in your homemade gluten-free flour blends.

Where can you find the ingredients for homemade gluten-free flour?

You can find the ingredients for homemade flour at any grocery store or online at Amazon.com or my favorite gluten-free market, the Gluten-Free Mall.

How to make gluten-free oat flour?

To make gluten-free oatmeal flour, add 1 cup of oats to a food processor and pulse until it becomes a fine powder. Alternatively, you can also use a grain mill for finely ground, more even powder results.

Is it easy to blend gluten-free flour at home?

Yes, it is easy to blend gluten-free flour at home. You can use any gluten-free flour you want. Feel free to experiment with the list of grains listed in this article. Most grains you will be able to powder using your food processor. Others you will want to use a grain mill. Remember to store your flour in an airtight container.

Why make your gluten-free flour mix?

Making your gluten-free mix is easy and inexpensive. You can use it for baking, making pancakes, waffles, muffins, bread, cookies, cakes, and more! If you make it at home, you can guarantee the freshness of the ingredients you use.

Where to source gluten-free flour?

Gluten-free flour can be found at most grocery stores, health food stores, and specialty shops. You can also buy from Amazon.com or my favorite gluten-free market, the Gluten-Free Mall.

What is a gluten-free flour mix?

Gluten-free flour mixes are used for baking gluten-free bread, cakes, cookies, and other baked goods. They are a blend of gluten-free grains but usually contain rice flour, tapioca starch, potato starch, cornstarch, and xanthan gum.

Do you need a binder in gluten-free flour?

If you want to bake gluten-free bread, anything that requires to rise, or elasticity like tortillas and flatbread, you will want to add a binder to your gluten-free flour mix. If you don't need leavening, like in the case of cookies, then you can do without the binder.

How do you make gluten-free flour rise?

Gluten-free flour rises best when it has been enriched with xanthan gum or other similar binders. Baking powder, bicarbonate of soda, and cream of tartar are some of the chemical-raising agents that can be used to lighten bread.

I use 1 1/2 teaspoons of baking powder and 1/4 teaspoon of salt for every cup of flour. For some bread, I use 1 teaspoon of yeast per cup of flour.

Alternatively, you can buy gluten-free bread flour. You can purchase online on Amazon.com or at the Gluten-Free Mall, which is where I buy my flours.

Is yeast gluten-free?

Some yeasts do contain gluten. I suggest you always check your labels before buying. I use Fleshman's Rapid Rise Yeast as it is labeled gluten-free.

What is the shelf life of gluten-free flour?

Most gluten-free flours store-bought or homemade have a shelf life of 1-2 months in your pantry, 4-6 months in your refrigerator, and up to one year in your freezer. If you are storing nut flours such as almond and coconut, you should always refrigerate or freeze.

Conclusion

In conclusion, the production of gluten-free flour is not that different from wheat flour.
