Homemade Pizza- Cheap and Easy

You all know I like to save money and homemade pizza can be a delicious money savings alternative to ordering out, but only if have the right ingredients on hand. We had this pizza for dinner last night and it was extraordinary!

What I used for 1 large pizza (made on a Pampered Chef round stone)… 2 packages Jiffy pizza crust $1.20 total, leftover spaghetti sauce, Mozzarella cheese scored for 50 cents, canned mushrooms for about 60 cents, and leftover pepperoni. I’m not including the cost of the leftover items, because I was just using them up so they wouldn’t be wasted. So… this huge pizza was made for about $2.30 and fed the whole family. I made half of the pizza with just cheese and pepperoni for the kids.

Even better… I added a sliced tomato, which I just love on pizza.

Do you have a grocery store that sells marked down veggies? We have a local grocery store that I can always count on for marked down produce. Last week I scored big: a huge bag of tomatoes, peppers, and jalapeños that were perfectly useable for just 88 cents! I didn’t weigh the bag, but it was easily 4-5 pounds. I also picked up a 4 pack of organic tomatoes for 88 cents, a bag of broccoli and green onions, also 88 cents, and a 3 pound bag of apples for 99 cents. I plan to go there weekly just for the reduced produce selection. At the store I shop at, the best time shop for reduced is in the morning.

What is your favorite food to cook on the cheap? Remember, savings is savings, and you can find really good deals with and without coupons.

No Bake Chocolate Oatmeal Cookies

These cookies are amazingly easy and inexpensive to make. I couldn't believe how simple and delicious they were, and I didn't even have to turn on the oven!

Ingredients:
1/2 cup butter
1 cup sugar
1/2 cup milk
2 teaspoons vanilla
1/2 cup peanut butter
1/2 cup chocolate chips
3 cups oatmeal (I used quick oats)

Directions:

Mix first 6 ingredients on stove top over low heat until melted together. Mix in 3 cups of oatmeal and stir until mixed. You can add a little more oatmeal if you want. 3 cups worked perfectly for me. In spoonfuls, drop cookies on wax paper to cool and firm up.

Adapted from Food.com. The original recipe called for twice as much sugar (of course it didn't use chocolate chips either) and at one cup my version was plenty sweet. Next time I might reduce it to only 3/4 cup of sugar.

Savings Tip:
Instead of running to the store for one or two ingredients, see if there is something you can substitute it for. You will not only be saving on the 1-2 items you needed for the recipe, but the countless other things that might seem appealing at the store. Case in point with this recipe... I didn't have cocoa powder or quite enough quick oats. I used chocolate chips and ended up throwing in 1/2 cup of non-quick oats to get the job done. The recipe turned out GREAT and we will be make it (or another version depending on what we have on hand) again soon.

Crockpot Chicken, Rice and Beans- $3.00 Dinner

I was so excited to try this recipe for Crockpot Chicken from 100 Days of Real Food. Have a crockpot, a stocked spice cabinet and a whole chicken? You’re ready to rock this chicken! I’m talking, falling off the bone tender chicken. You have to get a little funky with the chicken and the spice rub, but it’s worth it!

Depending on your family size, you’ll likely get enough chicken for more than one meal. With our leftovers, we’ll be having Chicken Enchiladas tonight… and we have fresh Homemade Chicken Stock again. Love, love, love it!

My costs… less than $1.00/pound for the whole Chicken, $.25 frozen green beans, $1.00 brown rice. Total: $3.00 for dinner last night AND my lunch today.

Check out our dessert… birthday cake with French Vanilla filling. YUM! This was also a frugal recipe. Yellow cake mix and the pudding mix used for the filling were both purchased with coupons. This fantastic cake was probably about $4.00 to make and enjoyed so much more than a store bought cake would have been. Plus my birthday girl daughter helped decorate it… which makes a wonderfully fun memory in addition to the tasty treat.

Cottage Pie- One Pot of Savings

I love a good savings as much as the next person, and I enjoy finding recipes that fit my grocery budget. Cooking from coupons or sales ads doesn't have to be difficult at all. The key is to use what you have, and buy whats on sale.

A couple weeks ago my family was visiting from out of state and I needed a few recipes that I knew would provide a hearty meal to our family. Cottage Pie to the rescue! Can you believe that I fed 6 people for roughly $6.00? That's just $1.00/serving! Here is the breakdown: slightly less than 2 pounds hamburger purchased $2.33 per pound, 2.5 pounds of potatoes purchased for $.50, and a bag of frozen vegetables at around $.25. Another key to savings is stocking up on staples when they are on sale. I also used milk, butter, seasonings, flour, and homemade chicken stock in this recipe.

If you have oven-safe cookware, use that to prepare this meal. You will have a one-pot sensation and less clean up.

Ingredients:
2 pounds ground beef
1/4 cup flour
2 cups chicken stock
1 bag frozen vegetables (we used corn)
Salt and pepper
Mashed Potatoes

Directions: Brown ground beef and drain. Stir in flour and then add chicken stock and frozen vegetables. Add Salt and Pepper to taste. Prepare Mashed Potatoes and top the ground beef mixture with the potatoes. In your oven-safe cookware, broil Cottage Pie until mashed potatoes are lightly browned. Enjoy!

Cooking good meals does not have to equate to breaking your budget on groceries. Believe it or not, good meals can be had for less.

I like to experiment with cooking and love to save money, so I decided to try my luck with Extreme Couponing. No, I'm not a contender for the TLC show Extreme Couponers, nor do I ever plan to be. I don't stockpile myself out of my home, nor do I hoard groceries... I simply combine coupons with sales to ensure I have a pantry and freezer full of items I use.

Do a simple search on Google and you will find many sources to find printable coupons online. There are three primary sources: Coupons.com, Red Plum, and Coupon Network. You can choose to go directly to the source, or you can access all three of through an affiliate. Blogs like The Coupon Cook provide great resources in their affiliate relationship with the big three coupon sources, but also serve as an informational source to their readers- whether in the form of recipes and savings tips, additional savings offers, or advise on how to coupon.

One of the biggest misconceptions about using coupons is that there are not coupons available to buy the things you cook with. While this might be true for some people, it is not so for the majority. If you think that coupons are only available for highly processed foods, think again. In fact, there are high dollar food coupons available for many things you use every day. Coupons are available for things as simple as dairy products and meat, frozen vegetables and baking supplies, in addition to the numerous coupons for cereals, soups and boxed dinners.

In order to save the most money while using coupons, you need to know the process to save money with coupons. There is a lot of money to be saved, and once you learn how to save money with coupons, you won't need to do random searches on Google to try to figure it out.
