Menu Planning Monday: Week of January 26th

So, this week wasn't as good as last week, but was still better than the week before. A semi-normal week, I'd say.

Honestly, I've had some wine, and I don't remember what we did each day. I know that we ate out on Monday, Thursday, and Friday. Other than that, I couldn't tell ya.

This is what I've got planned for this week.

Monday: Ethan has baseball lessons from 7:30-8:30, so I've planned for leftovers or FFY (fend for yourself) night.

Tuesday: Jolean's Cheese Potato & Smoked Sausage Casserole via Food.com

Wednesday: Taco Pasta via Plain Chicken

Thursday: Indian Butter Chicken w/ rice via The Kitchen Paper

Friday: Chicken Lazone via Plain Chicken with pasta (Ethan has baseball practice from 6-7:30pm)

Saturday: Crockpot Ranch Chicken Tacos via Repeat Crafter Me

Sunday: Loaded Baked Potato & Chicken Casserole via Inspired Dreamer (More baseball practice, this time from 1-3pm)

2015 Reading Challenge

So, I was browsing Pinterest the other day, and saw that my mom had pinned this 2015 Reading Challenge from PopSugar. I took a look at it, and decided that it would be fun to do.

I'm going to try to do monthly check-in's to show which books that I've completed, but if I'm able to do everything, it'll have me reading around 52 books this year (50 checkmarks, but one of the requirements is a trilogy). However, there are some books that might count under different categories as well.

Menu Planning Monday: Week of January 19th

Well, this week was better than last one with regards to eating at home versus eating out. On Monday, Jerrod went out of town, so Ethan and I were on our own. I actually made the hash on Sunday night, and just reheated it and added cheese for Monday night's dinner. On Wednesday, when Jerrod got home, he took us out for dinner, so I didn't make the Meatball Sub Casserole. I did make Spaghetti & Meatballs on Thursday night, which Jerrod didn't eat, since he had a root canal that afternoon. On Friday, we grabbed Taco Bell on the way home from baseball practice, and on Saturday, Jerrod and I went the the movies. Ethan ate at my parent's house, and Jerrod and I shared a value meal at McDonalds. On Sunday, we ate Salmon with asparagus, green beans, and crescent rolls.

So, out of the seven day week, we ate out for three nights. We're still within our restaurant budget, and we have less than a dollar left in our grocery budget, which will last until payday, which is next Thursday/Friday.

Here is what we've got doing on this week.

Monday: Ethan has baseball lessons from 7:30-8:30, so I've planned to do Eggs & Waffles tonight.

Tuesday: Chicken Lazone via Plain Chicken with pasta

Wednesday: Taco Pasta via Plain Chicken

Thursday: Garlic Brown Sugar Chicken via Damn Delicious

Friday: Indian Butter Chicken w/ rice via The Kitchen Paper

Sunday: Skinny Orange Chicken via Gimme Some Oven w/ Chow Mein via Damn Delicious

Menu Planning Monday: Week of January 12th

So, last week was a bit of a train wreck. We didn't end up going to the grocery store, then Jerrod got sick, and we ate out or simple pretty much everyday of the week. This week is going to be extremely busy, due to Jerrod leaving town for a few days. It's pretty much going to be a repeat of last week, in a little different order to please a picky child while Jerrod's gone.

Monday: Ethan has baseball lessons from 7:30-8:30, so I've planned to do Breakfast Hash tonight.

Tuesday: It's a night without daddy (for the huge daddy's boy), so I'm planning the Pizza Waffles via Pillsbury.

Wednesday: Meatball Sub Casserole via Recipe Knead

Thursday: Jerrod is scheduled to have a root canal done today, so I want to make sure that we are doing something simple and easy for him to eat. We'll probably just do eggs and waffles, or maybe oatmeal or something for him.

Friday: Baseball practice from 6-7:30, so I'm planning on having dinner ready for the hungry boys when they get home. Chicken Lazone via Plain Chicken with pasta

Saturday: I'm planning on Skinny Orange Chicken via Gimme Some Oven with rice.

Sunday: Another baseball practice today, so we're going to have Taco Pasta via Plain Chicken

Here's hoping that this week is less stressful than last.

Menu Planning Monday: Week of January 5th

So, today is my first day back at work since Christmas Eve. You'd think that I'd plan an easier menu, but why would I go and do something like that?! I've got a couple new dinners planned, and am trying to cook some new things, so we'll see how well it goes.

Full disclosure: things will probably get moved around from what I show here. I haven't gone to the grocery store yet, and won't have money in my budget to do so until the 7th. So, depending on the ingredients that we have in the house, I might have to modify things.

Monday: Ethan has a pitching lesson at 7:30, so I've planned to do chicken quesadillas tonight. Jerrod got a waffle maker for Christmas, and I've thought about making them in that to see if it's any quicker.

Tuesday: Indian Butter Chicken via The Kitchen Paper & rice

Wednesday: Meatball Sub Casserole via Recipe Knead

Thursday: Chicken Lazone via Plain Chicken with pasta

Friday: I think Ethan will have baseball practice tonight, but I don't know the times, so I'm not sure what'll happen. I'm planning on Pizza Waffles via Pillsbury.

Saturday: Taco Pasta via Plain Chicken

Dalmatian Hunting

On Christmas Eve, when we were running some last minute errands, Jerrod told Ethan that we would swing by the pet store. Ethan absolutely loves to go to there to play with the puppies, and while we have purchased there before, we typically don't.

Since we've been going there, we've played with a Golden Retriever, Wheaten Terrier, Husky, and most recently, a Dalmatian.

Now, if you don't know Jerrod, you wouldn't know that the dalmatian is his most favorite dog in the world. He used to have one when he was in high school, which has since passed on. As long as we've been married, he has wanted a dalmatian so bad. This is the first time we have ever seen a dalmatian at this pet store.

Oh my goodness, this dalmatian was so cute!! Jerrod and I were seriously debating buying him as a Christmas present for the family. However, finances won out that battle. We asked how much he was, and we were told, on sale, that he was over $2,000! Yep, that's right. Over two grand for a dog. Ummm, nope. Not a chance. Sorry adorable puppy, but nope.

I really have a feeling that if and when we get another dog, it'll be a dalmatian. It just won't be a $2,000 dalmatian.

New Year 2015

Can you believe that it's 2015 already?! It seems like it was just January 2014 and now it's gone. Each year seems to pass by faster and faster than the one prior. I want to take a little bit of time to talk about my goals, and dare I say, resolutions for 2015.

Personal:

Bring out my camera more. I slacked last year on taking photos. I want to take more pictures with my camera. I want to take more pictures with my cell phone. In order to do this, I'm going to do a #365DaysofHappy. I'm planning on posting a picture a day to Instagram with that hashtag. Then, I want to show those weekly on the blog.

Family:

Work on my patience. I snap too easily, whether it's direct towards my husband or my son. I want to be more present with them, and be able to explain things to my son.

Growth:

I want to work on being me. It seems that I try so hard to be who I think others want me to be, I forget that I can just be who I am. I've struggled with depression at times in 2014, and I think that is part of the root of the problem.

Health:

I need to get my weight under control. I am pushing (if not past), the highest weight that I've ever been at, including when I was pregnant. I'm planning on starting MFP again, but I want to do a restart with it. I don't want to have past data showing on it, because I don't want to get discouraged before I even begin.

Basic, I know. Same as years past. But, I feel that I need to get them out there. I need to say them, otherwise I'll just bury it down again.

Christmas 2014

So, I probably should post some pictures of Christmas before we hit the New Year, shouldn't I?

This year, Christmas has been a relaxing event. We celebrated with my parent's on Tuesday evening, before they left to go out of town Wednesday morning.

Here are the pictures from my parent's house & that celebration.

I worked Wednesday, until about 1pm, and then I've been off since then. I actually won't go back to work until Monday, January 5th. This year was the first year since I've been working there that I've been able to have time off after Christmas, and it's been a blast to spend this time with Ethan and Jerrod while Ethan has been out of school. I might have to make it an annual event!

After I got off work Wednesday, we did a little last minute shopping and came home. We made cookies for Santa and mean mommy & daddy made the boy go to bed at 9pm!! Terrible, terrible parents.

Christmas morning, we woke up about 7:30 or so, and surprise, surprise - Santa came by! He brought Ethan his stocking and a couple of wrapped gifts. Santa even brought Bailey some new doggy toys to ~~destroy~~ chew on. Ethan started in on the stocking and made his way through the rest of the presents.

Later that afternoon, we went to Jerrod's big family Christmas. It was so nice seeing some family that we haven't seen in a year.

On the 27th, we still had one more Christmas celebration to go. It was time to celebrate with Jerrod's parents. So, we went over to their house and cooked them dinner, then opened presents. It was pretty low-key, but it was nice to sit and relax.

I hope everyone else had a very relaxing, enjoyable Christmas with your loved ones. 2014 is over, and now it's time to kick off a great 2015!

Menu Plan Monday: 12/29/2014 - 01/04/2015

So, for the first time since I started at my current job (4 1/2 years ago), I have time off around Christmas. I actually do not go back to work until next Monday, January 5th, and Ethan doesn't go back to school until next Tuesday, the 6th. I am very ready for this much needed break and love the fact that I get to spend time with my family going into the New Year.

So, here are our plans for the week, and the menu around them. I am trying to do this menu with just the groceries that we have in the house. We have spend a ridiculous amount of money at the grocery store this past month, and only have about $90 left in our grocery budget. I might have to pick up some perishables, but I'm hoping that this will get us through until payday, when we can replenish the budget.

Monday (12/29) - Ethan & Jerrod are going to a Catcher's Camp in the morning, and then Ethan has a pitching lesson in the evening. I'm planning on shredding some chicken and making chicken quesadillas before his lesson.
Tuesday (12/30) - Day two of the Catcher's Camp, but no evening plans that I'm aware of. Jerrod got a waffle maker for Christmas, and we have some bacon that we need to use up, so I'm thinking about Breakfast for Dinner.
Wednesday (12/31) - I'm not planning on anything for tonight. I'm not sure what plans, if any, we have for New Years. Typically, in years past, we've gone over to a friends house. If we don't do that, I'm thinking we'll use a gift card or order a pizza for dinner.
Thursday (01/01) - I'm thinking that this Chicken Parmesan Casserole sounds delicious and easy!
Friday (0102) - Cheeseburgers sound good for Friday. It's Jerrod's specialty, so it means that I won't have to cook!
Saturday (01/03) - Garlic Brown Sugar Chicken, but I will use chicken breasts because I don't have any thighs in the freezer.
Sunday (01/04) - Ethan and Jerrod will have baseball practice (yes, already!) from 1-3 in the afternoon. I'm not planning anything special for dinner. We can have leftovers or just fend for ourselves for dinner.

That's what I've got planned for dinner. What are you planning for the end of 2014/beginning of 2015? Any special New Years Eve plans?

Boston Vacation - Day Four

On our fourth day in Boston (our last full vacation day), Jerrod wasn't feeling well. He decided to stay in the hotel room and rest, versus spending the day out in the sun like we had planned. So, Ethan and I went off exploring by ourselves. We decided to do the Boston Harbor Island Tour, and it was absolutely amazing!

We rode the T down to the Aquarium area, where we boarded a ferry bound for the first island, St. George's Island. It was a gorgeous day to be out on the water, and was so fun to see Boston from another angle.

We explored the fort on the island for a bit, and then waited for the ferry to take us to Spectacle Island. I found it interesting that Spectacle Island used to be the dump for Boston, until they decided to clean it up, by bringing in a ton of dirt and native plants. It worked, the island is now gorgeous!

After leaving the islands, I decided to surprise Ethan and take him back to the Granary Burying Grounds. When we did the Freedom Trail tour the day before, the grounds were closed. He was so disappointed that he didn't get to see the gravesite for Paul Revere. So, we decided to go walk around the grounds. I was really surprised to see some of the different gravestones that are there, including one for Mother Goose! We also saw the stones for John Hancock, Samuel Adams, and the five victims of the Boston Massacre. The tombstone that says Franklin, is not Benjamin Franklin, but is actually his parents that are buried there.

Ethan had a blast reading the map and directing me around to different tombstones. Finally, we left and went back to the hotel.

After we got back to the hotel, Jerrod was finally starting to feel better. We wanted to go out for a nice dinner on our last night, so we went to.....

.....a CASTLE!! We ate at Smith & Wollensky, which was just absolutely amazing! I think Ethan ordered a bigger steak than Jerrod and I did, and ate over half of the thing! It was a great way to finish off a fantastic week in Boston.

Weekly Meal Plan Wrap-Up

I think I've fallen off the 'meal-planning' bandwagon. It's so hard for me to get home and cook, every single day. I don't enjoy it, and I'm now starting to dread it. Plus, soccer and baseball practices and games have started, so some nights, we aren't getting home until 7pm or later. With Ethan still needing to do homework, eat dinner, and get cleaned before bed at 8:30-9pm, it can be a struggle.

Last Week:
Monday, September 15th - Cheesy Turkey Baked Pasta (sub beef) - we had pork chops and green beans. Jerrod marinated them Sunday night, and set them out before he took Ethan to baseball practice. I threw them in the oven and dumped a can of green beans on the stove. Not a gourmet meal buy any means, but we didn't eat out.
Tuesday, September 16th - Chicken Quesadillas - Ethan had a soccer game at 6pm, so we didn't get home until about 7:30. Jerrod took hold of the cooking reins tonight, and cooked some chopped chicken and threw it together with pasta and some seasonings. It was really good, just a touch spicy, but Ethan didn't complain about it (like he normally does)
Wednesday, September 17th - Bacon Cheeseburger Bombs - Ethan had soccer practice tonight, and then Jerrod and I had to go shopping for shoes (we had a coupon and it was the last night of BOGO 1/2 off). We were still at the shoe store checking out at 7:30pm, so I swung by Taco Bell and grabbed dinner. Ethan was in the shower when I got home, then he ate and did homework.
Thursday, September 18th - Dijon Chicken Club Sandwiches - Jerrod stayed home with Ethan today, who wasn't feeling well. He made a quick egg & bacon omelet.
Friday, September 19th - Easy Beef Enchiladas - We ended up going to a local football game, and didn't get home until late, so we just grabbed snacky foods at the football field.
Saturday, September 20th - Crockpot Ranch Chicken Tacos - I didn't feel well, so I took a late nap (from 5-7pm or so), and left Jerrod and Ethan to fend for themselves. They went and grabbed burgers from a local place by our house.
Sunday, September 21st - Loaded Chicken Tater Tot Casserole - Jerrod and I made the breakfast hash that I had planned for next week. Oh well.

I hate that when I planned my menu for the month, I didn't know that the beginning of our week would be the busiest time. I knew that he would have baseball and soccer practices, I just didn't know what nights they would be on. I had no idea that he would have soccer games on Tuesday nights, because I was told that games were all on Saturdays. So, that was a surprise, and it has really thrown me off. We only have a little over one week left in September, so I'm not planning on completely revamping my menu (but I probably should have done that after the schedules came out), but I will be aware of it in October, for sure.

Next Week (through the 30th):
Monday, September 22nd - Chili Mac (baseball practice @ 6pm)
Tuesday, September 23rd - Breakfast Hash (soccer game @ 6pm)
Wednesday, September 24th - Chicken & Cheese Lasagna Rollups (soccer practice @ 5:30pm)
Thursday, September 25th - Ground Beef Stroganoff
Friday, September 26th - Bubble Up Pizza (high school football game @ 7pm)
Saturday, September 27th - Crock Pot Maple Dijon Pork Chops (soccer game @ 10:30am)
Sunday, September 28th - Crockpot Chicken & Noodles (baseball games @ 9am & 3pm)
Monday, September 29th - Pizza Quesadillas (baseball practice @ 6pm)
Tuesday, September 30th - Beef & Noodle Casserole (soccer game @ 7pm)

As you can see, we have one free night in nine days (possibly two, because we aren't required to go to the high school football games. Ethan's cousin plays, so we go to watch him). Because of this, I have to think about what I can do to make cooking as easy as I can, so that I can try to make it fool-proof.

Our Tuesday night soccer games will stop after September 30th, so we'll gain that night back in October. Ethan will still have baseball and soccer practice on Monday and Wednesdays, until October 13th & 15th, respectively. His last soccer and baseball games are on October 18th & 19th. I'm not sure what he is wanting to play after that (I'm guessing basketball), and in November or December, we will get him started back with his pitching lessons once a week, and then baseball practice will start back up again the second week in January.

Weekly Menu Wrap-Up

So, this week was better than last week, but still not a great week as far as cooking and not eating out.

Last Week:
Monday, September 8th - Cheesy Chicken & Rice Bake - We didn't have this. I made the Garlic Cheddar Chicken that we didn't make from last week.
Tuesday, September 9th - Potato Shell Taco Pie - We had the Frito Chili Pie that we didn't have last week
Wednesday, September 10th - Spanglish Sandwiches - Jerrod was out of town, so Ethan had leftovers and I had cereal
Thursday, September 11th - Spicy Honey Chicken - Jerrod got home late, and I had the realtor over looking at the house, so Jerrod picked up BBQ and brought it home.
Friday, September 12th - Taco Pizza - I made cheeseburger and pepperoni pizza instead
Saturday, September 13th - Slow Cooker Hot Beef Sandwiches - We got invited over to some friends house, so we snacked before we left and snacked there as well.
Sunday, September 14th - Meatloaf - We had cereal and sandwiches instead

I never could get in a rhythm this week about cooking. On Monday, Ethan and Jerrod had baseball practice. Tuesday, I got off early since the realtor was supposed to come then, but postponed to Thursday since he got sick. Wednesday, Ethan had soccer practice. Thursday, the realtor did come over. Friday was a lazy night at home, and Saturday was hanging out with friends.

This week is going to be another busy one.

Monday: baseball practice

Tuesday: soccer game

Wednesday: soccer practice

Thursday: nothing

Friday: football game (high school)

Saturday: soccer game

Sunday: baseball game

House Blues & Weekend Plans

Jerrod and I were married in October 2004. We lived in an apartment, until April of 2005, when we bought our first house. It is a three bedroom, one bath house, that is only about 1,000 square feet. It was great for a family of two.

Then, Ethan was born in April 2005. Suddenly, the house isn't so great. But, we were planning on being in the house for longer than a year, and since we had an FHA loan, we couldn't really do anything about it.

Fast forward nine years. Our house is bulging at the seams. It is entirely too small, and because of that, we never have anyone over. Ethan doesn't get to have too many sleepovers, since we have so much clutter and nowhere to put it.

So, Jerrod and I have been doing projects around the house, and on Thursday, we had a realtor come out to the house and take a look. We wanted him to look at the house, and let us know if we should devote more time and money to projects, and what we can get out of it if we do. We also wanted to know what we can get if we sell it as-is.

Here are the things that he decided we need to do before we list:

Paint throughout the house
Finish painting the trim throughout the house white (our baseboards are white, but the window/door trim is oak colored)
Orange wall pictured above is painted over paneling. We need to either rip it down, or repaint and tack up better.
Paint the exposed wood on the North side of the house (and clean the siding).
Finish the back patio (we have the polymeric sand for the cracks, we are just waiting for a nice weekend day to do it).
New carpets in all the bedrooms
Paint the laundry room walls and ceiling

He also said that if we can, to declutter by at least 40%, so it doesn't look like we've outgrown our house. We had talked about putting a shed in the backyard, and he doesn't think that will add any value money-wise (due to being at the top of our market in our neighborhood), he thinks that it will have more marketability. He recommended to move our work benches from the garage to the shed if we did add a shed.

So, my weekend to do list:

If the weather is nice, poly sand the back patio
Work on painting the window and door trim in the kitchen and dining room
Measure the bedrooms, price out carpeting for those
Decide what to do with the paneled wall (I'd love to take it down, but afraid that there isn't any drywall behind it)
Find and decide on paint colors for the house (I'm thinking about doing the same shade throughout, so we can just buy a 5-gallon bucket or something)

Two years ago, Jerrod and I took Ethan to his first Notre Dame football game. We surprised him by picking him up from school on Thursday, and driving to the Kansas City Airport. Then we flew to Chicago. Friday, we spent roaming around Chicago, and showing him the sights. Then, Saturday morning, we went and rented a car, then drove to South Bend, Indiana, to the beautiful Notre Dame campus.

When we got there, we had to show our tickets to get in and park. After we parked, we asked Ethan what he thought we were doing. He said with so much enthusiasm "We're going to a Notre Dame FOOTBALL PARTY!" Well, kinda close kid. How about going to the football game instead?!?

Here are some pictures from that weekend two years ago. (These say two years ago Monday, because Jerrod doesn't like me to post pictures to Facebook while we are actually out of town. So, these pictures weren't posted until we got back into town the Monday afterwards.)

Fall Baseball

Ethan's sport of choice has always been baseball. He started playing with the micro t-ball league at the YMCA when he was 3 years old. Then, he moved up and did t-ball at age 4 and 5, then started competitive baseball at 6 years old. He played machine pitch baseball at 6 and 7, then started kid pitch baseball at 8. He is now 8 1/2 years old, and is playing in the 9-10 year old division competitively. He has played baseball every season (summer and fall), every year, since he was three years old.

Now, don't get me wrong. He still plays other sports. He has done swimming lessons, soccer, flag football, wrestling, tackle football, and basketball, all in addition to baseball. I ask him what sport he wants to do before we sign him up for anything. If there comes a time that he doesn't want to play baseball, I will be devastated, because he does excel at it, but I would step back and let him make that decision. I have always told him that if we start a season, we finish it, but after that, it's completely his choice.

Anyways, he is playing fall baseball this year, in addition to rec league soccer. While his baseball team is competitive, fall baseball is not nearly as competitive as summer baseball. He has one practice a week, and games one day a week (single or double-headers). This year, his baseball team did not want to play fall baseball, but instead, wanted a break. Totally fine, and totally understandable. Ethan wanted to continue to play/practice, so we elected to do fall baseball with a different team, that is put together with 'cast-off' kids from summer ball each year.

Ethan plays three main positions: pitcher, catcher, and 3rd baseman. The rules for our league change a lot when the kids jump from 8-year-old to 9 & 10-year-old, which also contributes to us (and him) wanting to play in the fall. For example, when the boys are 8, the runners have to wait for the ball to reach home plate before they can 'steal'. They cannot lead off from any base. There are no dropped third strikes, or infield fly balls. Since it is their first year of pitching, there are definitely no balks. This all changes in the 9-10 year old division. The boys can lead off and steal at any time. There are dropped third strikes and infield fly balls. The balks are still instructional, but will be called after the first one per pitcher.

While I know Ethan playing fall ball, and getting used to pitching with runners leading off and stealing is very important, I have a love/hate relationship with this team, and with fall ball in general.

Fall Ball Love:

It's so much cheaper than summer baseball (about one-third of the price)
Ethan can get another coaches perspective (since it's a different team than normal, and dad is not coaching)
He gets to experience the rules that will change from going up an age group (see above)

Fall Ball Hate:

Drop-dead time limits (the umpire will call the game at 1 hour, 45 minutes of play, no matter what)
One umpire for the whole field (in summer we'll have two)
The lack of cohesiveness that would be there if he was playing on his 'real' team

Ethan had his first fall ball game on Sunday, with his 'new' team. It's hard for me, as a parent, when I don't know any of the other parents/kids on the ball team. It's hard for me to not take baseball seriously. I know that fall ball is about them learning, but it's hard when no one on the team cares about keeping score.

All in all, I know that fall ball is good for Ethan. It's good for him to get a chance to recharge with baseball, and still learn things while it not being taken as seriously as summer ball. But man, it's hard for me, as a mom that knows what my son can do when he is pushed, to sit and suffer through a fall ball baseball game. I do, because I love my son, and because I love the game. I'm just glad that Ethan loves the game as much and Jerrod and I do.

Boston Vacation - Day Three

So, on our third day of touring Boston, Jerrod and I decided to do a tour of Freedom Trail.

We were guided around by Betsy Hager, who was born in Boston in 1755. She took us to many historical sites, and explained the significance of them, as well as how it shaped Boston, and who we are today.

Some of the sites that we saw were the:

Boston Common
Massachusetts State House
Park Street Church
Granary Burying Ground
Benjamin Franklin Statue/Boston Latin School Site
Old Corner Book Store
Old South Meeting House
Old State House
Site of the Boston Massacre
Faneuil Hall (Quincy Market)

Betsy dropped us off at Faneuil Hall, and Ethan wanted to continue on the trail to go visit the Paul Revere House. He really became enthralled with Paul Revere on this trip, and wanted to learn as much as he could about him.

After we went to Paul Revere's House, we went back to the Boston North End, and had some amazing Italian food. Seriously, it is wonderful!

Then, we did something else that Ethan was absolutely dying to do... We rode in a PEDICAB!

We had decided to go to the "Old Ironsides" Museum, and the pedicab driver was able to take us most of the way there (the museum was on the other side of the bridge, and the pedicab drivers are not allowed to ride across the bridge, so we had to walk from there). We toured Old Ironsides, and then rode the ferry back to the other side of Boston, then went back to the hotel.

Later that evening, Ethan wanted to go check out the Prudential Building, which has a Skywalk Observatory. We went there, just before dusk, and was able to see so much of Boston's amazing skyline. We were also able to see the game going on at Fenway Park from way above!

Jerrod started to feel like a cold was coming on, so he wanted to call it quits, so we went back to the hotel room and ordered room service for dinner. It was nice to have a low-key night, since we had been doing so much in and around Boston for three days.

Weekly Meal Plan Wrap-up

This week wasn't the greatest when it came to meal planning. We started off really well, but then life got in the way, and everything collapsed. I'm sure it won't be the last time. All I can do is try to keep the balls in the air, and if I can't, then I just have to pick them up and start over.

Last Week:
Monday, September 1st - Easy Peasy Skillet Lasagna - Jerrod and I decided to go buy steaks, and invited some friends over to my parents house, and we all grilled out together. Jerrod grilled the steaks, and mom made the side dishes.
Tuesday, September 2nd - Garlic Cheddar Chicken - I made the Skillet Lasagna from Monday.
Wednesday, September 3rd - Cheesy Chicken Empanadas - I made the Garlic Cheddar Chicken from Tuesday. I cut our chicken into strips, but otherwise followed the recipe, and Jerrod thought it was delicious!
Thursday, September 4th - Oven Baked Frito Pie - We ended up needing to go to my grandparents house and move some stuff, so we grabbed BBQ while we were out.
Friday, September 5th - Brown Sugar Salmon - Ethan ended up having his first soccer practice (which I found out about the day before), and after that ended we went down and watched Ethan's cousin play football. Ethan ended up getting a hot dog at the football field, and Jerrod and I made sandwiches after we got home.
Saturday, September 6th - Roasted Chicken & Potatoes - We went over and helped my brother move into his new apartment, so I went and brought BBQ home.
Sunday, September 7th - Ranch House Crock Pot Porkchops - Neither of us felt like cooking, and I didn't start the crock pot, and we had a coupon for pizza, so we ordered that and called it good.

All in all, not a great week. We are out more than we ate at home, and we spent a bunch of money that we weren't expecting too (with the steaks for Labor Day), but it was a good week altogether.

Meal Plan Wrap-up & September Monthly Menu

It's time for another meal plan wrap-up, but today is also September 1st, so it's also time for my monthly September menu!

I've found that it works better for me to plan actual meals (with links to recipes), versus just saying pasta or meatloaf. I don't enjoy cooking, so if I have done ALL of the prep work involved in finding a recipe, it makes cooking it so much easier. So, you'll see quite a few links in my calendar for September.

But first, a recap of last week's menu:

Monday, August 25th - Cheeseburgers w/ chips - Since we had just had cheeseburgers a couple of days before, we ended up eating leftovers.
Tuesday, August 26th - Cheese Potato & Smoked Sausage Casserole - I ran out of cheese (completely!), and it was a bad night, and I didn't feel like getting more. So, I used some of the smoked sausage that I bought and made (Kraft) Mac-N-Cheese, and mixed the cut-up sausage in it. It was an easy dinner night.
Wednesday, August 27th - Taco Salad - I stopped by the grocery store and got cheese, so I went ahead and made the Cheesy Potato Casserole with the rest of the smoked sausage.
Thursday, August 28th - Loaded Baked Potato Chicken Casserole - When I was planning my menu, I didn't pay attention to the fact that this recipe needed to bake for 1 1/2+ hours, which is not conducive to a weeknight recipe for me. So, we ended up eating soft tacos instead.
Friday, August 29th - Grilled Cheese Pizza - I was feeling lazy, and also realized that I didn't have any sliced cheese, so we ended up eating McDonalds. Horrible, I know.
Saturday, August 30th - Crockpot Beef Ziti - Ethan ended up spending the night with my parents, and I was out of ziti noodles, so we pulled some pulled pork out of the freezer and made baked potatoes with pork on top.
Sunday, August 31st - Taco Bake - We decided to go over to my parents house, and grilled out with some friends, my parents, and my grandparents. We had steaks, and my mom made scalloped potatoes to go with. S'mores for dessert by the fire. Yummy!

On Monday, I went down to Jerrod's aunt and uncle's farm to pick up some meat. We ended up buying some 20-21 lbs of ground beef, 3 lbs of rib eye steaks, 2 chuck roasts (3 lbs each, I think), and a 3 lb rump roast from one of the cows that they raised. We got all the meat (about 30-33 lbs) of meat for a grand total of $91! For a "home-grown" cow, and high quality meat, I think that is a great price!

Since we have so much ground beef in the freezer now, quite a few of my meals for September are going to be beef based. I'm hoping that will lower quite a bit of our grocery bill (and we can stock up on chicken if we see a great deal, since we won't have to buy beef too).

When I plan my menu, I don't plan for weekday breakfasts (typically cereal, oatmeal, or pop tarts for Ethan, and a coffee for me) or lunches (which are typically sandwiches for both Ethan and I). I also don't plan for breakfasts or lunches on the weekends, because we try to sleep in, and typically do a late breakfast and skip lunch, or an early lunch and skip breakfast. Sometimes we'll grab something while we're out running errands, but other times, we'll just do mac-n-cheese or sandwiches.

I also don't plan for leftovers, because I don't know what recipes will actually make leftovers. Sometimes, I'll use them by taking them to work for lunch, but other times we will just do leftovers instead of a planned meal. Leftovers are an easy fallback on nights that I don't feel like cooking, or have worked late, or don't feel well. I don't want to plan for them, because I'd rather have a plan in place, and modify it, than not have anything planned and not have any leftovers to eat.

Boston - Day Two

On our second day in Boston, we decided to walk to Fanueil Hall, also known as Quincy Market. The market is full of shops and restaurants, as well as street performers. We walked around there for a few hours, and then decided to do one of Boston's famous Duck Tours. This took us around a bit of Boston, and then drove into the Boston Harbor, and boated us around there as well!

We tried to keep this day a lower key day, due to how much walking we all did the day before, but I don't think it worked. By the end of the day, we were all exhausted!

Weekly Meal Plan Wrap-Up

It's time for another Weekly Meal Plan Wrap-Up!

Last Week:
Monday, August 18th: Honey Lime Chicken Enchiladas - We did have this, and they were very good. It was a little different to be able to taste the sweet honey, and an unexpected surprise with the enchiladas.
Tuesday, August 19th: Pancakes w/ bacon and eggs - I skipped the bacon and eggs, since I forgot to take the bacon out of the freezer, and I used the last of our eggs in the pancakes, but we had the pancakes
Wednesday, August 20th: Crockpot Lasagna - I prepped this on Tuesday night, and put in the fridge overnight. Since it only needed to cook for 4-5 hours, Jerrod came home over lunch and started it for me.
Thursday, August 21st: Chicken & Black Bean Enchilada Casserole - We ended up going over to my parents house and eating there. Jerrod cooked omelets (with their food).
Friday, August 22nd: Fish w/ asparagus & potatoes - Jerrod's parents had a Groupon to a local restaurant, and invited us out using that.
Saturday, August 23rd: One Pot Pasta - We had bought some slider buns at the grocery store last week, since we had a coupon, and we were afraid that they would go bad, so we had Slider Cheeseburgers instead of pasta.
Sunday, August 24th: Chicken Quesadillas w/ rice - I made a quick dinner in between a birthday party and going to watch our cousin play baseball, so I didn't do the rice, but I did do the chicken quesadillas.

I made Ethan's lunch for school Monday - Thursday, and then on Friday, he gets to buy a school lunch. I don't plan for those lunches because it's typically just a sandwich and fruit or chips, or something along those lines. I have been trying to take my lunch to work as well, which I did Monday and Friday. On Tuesday, Wednesday, and Thursday, Jerrod invited me to lunch, so I ate with him.

Next Week:

Monday, August 25th - Cheeseburgers w/ chips
Tuesday, August 26th - Cheese Potato & Smoked Sausage Casserole
Wednesday, August 27th - Taco Salad
Thursday, August 28th - Loaded Baked Potato Chicken Casserole

I'm guessing that we'll probably do leftovers for dinner on Monday, instead of cheeseburgers. But, cheeseburgers were on my original menu, so that's what I put on here. I'll probably also fit in the enchiladas that we skipped last week, maybe in place of one of the taco days.

Weekly Meal Plan Wrap Up

As I've stated earlier, I have started meal planning so that we can get our eating out under control. How did it go this past week?? Here is what we had planned versus what we did (what we did is in maroon):

Last Week (and a half - since I made the original meal plan):
Thursday, August 7th: Three Cheese Chicken Penne Pasta Bake - We did eat this that night. I modified the recipe based on what we had in the house, so ours wasn't "three cheese", but it was good. I also did the salad and garlic toast (from the 10th) on this night, since I was afraid that it would go bad.
Friday, August 8th: Stuffed Baked Potatoes - Jerrod and Ethan ate this, but I went out with my parents, and a good family friend (my mom, Chrissie, and I were getting mani's and pedi's when we were invited to go to Red Lobster. I invited Jerrod and Ethan, but Jerrod had already cooked dinner, so I went by myself)
Saturday, August 9th: Dinner Out - We went to Sams Club earlier in the day, and Jerrod didn't want to eat out. We picked up a package of Sausage and Cheese Tortellini that I cooked 1/2 of that night before we went the the ball games.
Sunday, August 10th: Pasta & Meatballs w/ Salad & Garlic Toast - Since we had pasta the night before, this didn't sound good to Jerrod. I switched and made the Hash that was planned for Monday night tonight.
Monday, August 11th: Egg & Potato Hash w/ Sausage - We had Meet The Teacher night, and I came home and fixed leftovers. I had leftover Coconut Shrimp from Red Lobster, and Jerrod and Ethan had the Chicken Penne Pasta Bake.
Tuesday, August 12th: Crock Pot Sesame Chicken w/ rice - I forgot that this was a crock pot meal, and didn't prep it Monday night. I ended up making Pancakes for dinner.
Wednesday, August 13th: Taco Pasta - Ethan ended up eating dinner with his Uncle Melvin & Aunt Merry, since they watched him while Jerrod and I worked. After we picked him up, we had to run by Target (for last second school supplies), and Great Clips (school haircut for Ethan and haircut for Jerrod). Since it was late, we stopped by Chipotle on our way home.
Thursday, August 14th: Crispy Cheddar Chicken w/ asparagus - I totally did NOT feel like cooking (more so than usual), but I knew that I couldn't justify eating out. Jerrod wasn't feeling well, so he didn't cook like he normally would have when I didn't want to. I ended up making cereal for the three of us.
Friday, August 15th: Pork Chops w/ Mashed Potatoes & Green Beans - After Jerrod and I got home, we went outside and started working. By the time that we came inside and got all cleaned up, I did not feel like cooking dinner. We went and grabbed Dog N Shake
Saturday, August 16th: Meatloaf w/ fried potatoes - I finally made the Taco Pasta from Wednesday night.
Sunday, August 17th: Dinner Out - We spent most of the day in Council Grove, watching Ethan's 16 year old cousin play on the Kansas All Star Baseball Team. I didn't plan anything for dinner, since I wasn't sure when we would get home. We got home around 7pm, and just ended up eating sandwiches and chips for dinner.

All in all, I think we had a pretty decent week. We only ate out two nights that weren't planned, and on both of our two planned nights to eat out, we didn't. I did eat out one additional night, but it was my parents' treat, so I'm not counting that. I'd say that it evened out, all-in-all.

Sunday, August 24th: Chicken Quesadillas w/ rice
