&lt;i&gt; What I actually did after class?&lt;/i&gt; Cook delicious goodies from scratch :-)&lt;br /&gt;

I like to think of cooking as my art, and it does helps relieve stress and pressure. Yesterday I baked brownies from scratch before studying for the lab exam I had this morning. I like to think it helped...even though I was up until the wee hours of the night! :0&lt;br /&gt;
&lt;br /&gt;
Today's cooking venture includes homemade whole wheat tortillas, homemade falafels, and homemade tahini sauce!&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Stay toned&lt;/b&gt;..I will post recipes for all of these once I'm done with this exam :) oh, and I'm making vegan enchiladas tomorrow with my friend...can't wait :-) &lt;br /&gt;

I know I LOVE some nice warm pancakes.&lt;/p&gt;
&lt;p&gt;I don't have a set recipe but suggestions for making healthier pancakes.&lt;/p&gt;
&lt;p&gt;Replace eggs with:&lt;br&gt;
1 banana= 1 egg OR&lt;br&gt;
1 Tbsp ground flaxseed + 3 Tbsp warm water = 1 egg&lt;/p&gt;
&lt;p&gt;Use olive oil and almond milk.&lt;br&gt;
I like to buy whole wheat pancake mix from the bulk section and store in a airtight glass container.&lt;/p&gt;
&lt;p&gt;I like to add blueberries and sliced banana to the pancakes after I pour the mixture in the pan. &lt;/p&gt;
&lt;p&gt;Cook using coconut oil or vegan butter.&lt;/p&gt;
&lt;p&gt;Top with strawberries or agave necter instead of syrup.&lt;/p&gt;

The original recipe came out really dry, so I adjusted some things.&lt;br /&gt;
It's a great side for pasta, or for subs :)&lt;br /&gt;
&lt;br /&gt;
Vegan or vegetarian meatballs are suppper expensive. You could make this for a very cheap price :)&lt;br /&gt;
&lt;br /&gt;
Ingredients:&lt;br /&gt;
2 c uncooked lentils&lt;br /&gt;
1 c oats&lt;br /&gt;
1 c cornmeal&lt;br /&gt;
salt and pepper to taste&lt;br /&gt;
1 large white onion&lt;br /&gt;
6-8 garlic gloves&lt;br /&gt;
2 tbsp vegetable oil&lt;br /&gt;
&lt;br /&gt;
Directions.&lt;br /&gt;
1) Cook lentils according to directions. Puree in a food processor.&lt;br /&gt;
2) Preheat oven to 350 degrees F.&lt;br /&gt;
3) Grind and puree onion, garlic and oats in a food processor.&lt;br /&gt;
4) Mix all ingredients in a bowl and form into balls.&lt;br /&gt;
5) Oil baking pan or cookie sheet. Place meatballs on the pan and bake for 20-25 minutes or until lightly brown.&lt;br /&gt;
&lt;br /&gt;
The recipe states this makes 12 meatballs, but I made half a batch and it made over 16 meatballs.&lt;br /&gt;

&lt;/div&gt;&lt;div&gt;Ingredients:&lt;/div&gt;&lt;div&gt;1 package (8 ounce) uncooked elbow macaroni&lt;/div&gt;&lt;div&gt;1 TBSP vegetable oil&lt;/div&gt;&lt;div&gt;1 medium onion, chopped&lt;/div&gt;&lt;div&gt;1 cup cashews &lt;span style="color: magenta;"&gt;(I buy them from Ward's for about $9/lb, so 1 cup could come out to $3..about the same as a bag of cheese..so if you think about it, it isn't expensive ;) )&lt;/span&gt;&lt;/div&gt;&lt;div&gt;1/3 lemon juice &lt;span style="color: magenta;"&gt;(I personally use less, or 1 lime)&lt;/span&gt;&lt;/div&gt;&lt;div&gt;1.3 cups water&lt;/div&gt;&lt;div&gt;salt to taste&lt;/div&gt;&lt;div&gt;1/3 cup canola oil &lt;span style="color: magenta;"&gt;(I use grapeseed oil)&lt;/span&gt;&lt;/div&gt;&lt;div&gt;1/2 red bell pepper (we will roast it)*&lt;/div&gt;&lt;div&gt;3 TBSP nutritional yeast&lt;/div&gt;&lt;div&gt;1 tsp garlic powder &lt;span style="color: magenta;"&gt;(or a couple garlic cloves)**&lt;/span&gt;&lt;/div&gt;&lt;div&gt;1 tsp onion powder &lt;span style="color: magenta;"&gt;(or use one small onion)**&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span style="color: magenta;"&gt;&lt;br /&gt;

&lt;/div&gt;&lt;div&gt;Directions:&lt;/div&gt;&lt;div&gt;1) Turn your toaster oven to broil on 400 degrees F. Place red bell pepper in oven and roast until the skin turns black. Then, take out and wrap in foil for a few minutes. Then peel the skin off.&amp;nbsp;&lt;/div&gt;&lt;div&gt;&lt;span style="color: #45818e;"&gt;while the pepper roasts cont. to the other steps&lt;/span&gt;&lt;/div&gt;&lt;div&gt;2) Cook pasta according to the box instructions.&lt;/div&gt;&lt;div&gt;3) Chop up medium onion, and saute with the vegetable oil.&lt;/div&gt;&lt;div&gt;4) In the blender mix cashews, lemon juice, water and salt. Once this has mixed well blend in oil,&lt;u&gt; roasted red pepper&lt;/u&gt;, nutritionl yeast, garlic powder (or fresh garlic) and onion powder (or fresh onion). Blend until smooth.&lt;/div&gt;&lt;div&gt;5) Preheat oven to 350 degrees F.&lt;/div&gt;&lt;div&gt;6) In a baking pan mix cooked pasta, cheese sauce and sauted onion. &lt;span style="color: blue;"&gt;The mixture will be wateryish, don't worry, it will dry up in the oven.&lt;/span&gt;&lt;/div&gt;&lt;div&gt;7) Bake for 45 minutes. This is my favorite sandwich bread recipe. I only made a small adjustment to the&amp;nbsp;original&amp;nbsp;&lt;a href="http://recipe./"&gt;recipe.&lt;/a&gt;&lt;br /&gt;
100% whole wheat bread can come out vveeeerrryyy dense, the first batches of bread I ever made would break when I tried bending them. &lt;b&gt;Not with my recipe!&lt;/b&gt; :) The only solution to this problem is to add vital wheat gluten, which helps to increase the gluten content, which makes the bread nice and soft. As you can see from the picture, this bread is soft and doesn't break when it folds over.&lt;br /&gt;
&lt;br /&gt;
Another problem some novice bread makers might have is that their bread never rises. I remember the first bread I ever tried making ended up like a brick, it was more of a weapon than another else. The reason this happens is because yeast cannot be mixed with water over 115 degrees, or it will die :/&lt;br /&gt;
The yeast is what makes the bread rise, and if it's dead..then you won't have an edible product. I bought a food thermometer from Publix for $3, but after some experience I don't even use it anymore.&lt;br /&gt;
&lt;br /&gt;
Well, enough chit chat...let's get started :)&lt;br /&gt;

I've read this verse several times, but I always overlooked what the verse really meant by the word "discretion". I always thought it just meant to be a loose woman (or man) in all respects.&amp;nbsp;&lt;/span&gt;&lt;/div&gt;&lt;div class="MsoNormal"&gt;&lt;span style="color: #134f5c; font-family: Rockwell;"&gt;So I decided to look up the original text in Hebrew, in search of the literal meaning. This is what I found, discretion and prudence are practically interchangeable. But let's face the facts, fried food is &lt;b&gt;no bueno&lt;/b&gt;! Not only for your health, but oil can splatter in the kitchen and give the whole house a not so awesome smell.&lt;br /&gt;

1 yam/sweet potato&lt;br /&gt;
1/2 tsp cinnamon&lt;br /&gt;
1/4 tsp cumin&lt;br /&gt;
1 tbsp oil (olive or grape&amp;nbsp;seed)&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
Directions:&lt;br /&gt;
1) Preheat oven to 350. I use my handy dandy toaster oven, which will accommodate for 2&amp;nbsp;sweet potatoes.&lt;br /&gt;
2) Peel yams and cut into wedges.&lt;br /&gt;
3) Mix cinnamon, cumin and oil. Brush on yam pieces.&lt;br /&gt;

1 package of Rooibos tea (this is optional, but it adds loads of antioxidants)&lt;br /&gt;

1 banana&lt;br /&gt;
couple of strawberries&lt;br /&gt;
overflowing 1/4 cup of oatmeal&lt;br /&gt;
1 large date or 2 small dates (these add sweetness)&lt;br /&gt;
almond milk---amount depends on how thick you want the smoothie&lt;br /&gt;
a few ice cubes&lt;br /&gt;

I used to chop and saute the onions, pepper, garlic etc. , every time I would make beans or anything else. I personally love using fresh ingredients, but this is so much more convenient. It saves me soooooo much time. I make a whole bunch and keep it in the freezer, so it's still free of preservatives and additives....so it's almost like having it fresh. :)&lt;br /&gt;
&lt;br /&gt;
This is a great base for beans, soup or sauce.&lt;br /&gt;

1 medium sized sweet potato&lt;br /&gt;
1 medium potato&lt;br /&gt;
1 celery stick (or two for more flavor)&lt;br /&gt;
1 small onion&lt;br /&gt;
1 small carrot or 1/2 large carrot&lt;br /&gt;
1/2 spinach&lt;br /&gt;
1/4 cilantro&lt;br /&gt;
1 tsp cilantro&lt;br /&gt;
1/2 rosemary&lt;br /&gt;
1/4 cumin&lt;br /&gt;
1/2 tsp Parsley flakes&lt;br /&gt;
1/4 ginger root&lt;br /&gt;

When I was a child, my aunt had Jewish neighbors, and I remember their teenage daughter would make Challah bread and I always thought it was the most AMAZING thing ever! After I embarked on the Vegan journey, I started baking my own bread and really wanted to make some of that delicious challah. But you see, challah is an egg bread, so I searched the web for vegan recipes, and lucky found some that I liked. In this recipe, the overripe bananas are the substitute for the eggs.&lt;br /&gt;

&lt;span class="Apple-style-span" style="font-family: Arial, sans-serif; font-size: 14px; line-height: 19px;"&gt;Directions&lt;/span&gt;&lt;span class="Apple-style-span" style="font-family: Arial, sans-serif; font-size: 14px; line-height: 19px;"&gt;&lt;br /&gt;
&lt;/span&gt;&lt;span class="Apple-style-span" style="font-family: Arial, sans-serif; font-size: 14px; line-height: 19px;"&gt;1. In one small bowl, dissolve yeast in the warm water, put to the side to stand for 5-10 minutes.&lt;/span&gt;&lt;br /&gt;
&lt;span class="Apple-style-span" style="font-family: Arial, sans-serif; font-size: 14px; line-height: 19px;"&gt;&lt;span class="Apple-style-span" style="color: #cc0000;"&gt;(when mixing yeast with water, the water must never be over 115 degrees. High temperatures will kill the yeast and the bread will not rise)&lt;/span&gt;&lt;/span&gt;&lt;span class="Apple-style-span" style="font-family: Arial, sans-serif; font-size: 14px; line-height: 19px;"&gt;2. Mash bananas in other small bowl.&lt;/span&gt;&lt;span class="Apple-style-span" style="font-family: Arial, sans-serif; font-size: 14px; line-height: 19px;"&gt;&lt;br /&gt;
&lt;/span&gt;&lt;span class="Apple-style-span" style="font-family: Arial, sans-serif; font-size: 14px; line-height: 19px;"&gt;3. In large bowl mix: oil, sugar, salt, and boiling water, stirring so it's all mostly dissolved.&amp;nbsp;&lt;/span&gt;&lt;span class="Apple-style-span" style="font-family: Arial, sans-serif; font-size: 14px; line-height: 19px;"&gt;&amp;nbsp;(&lt;span class="Apple-style-span" style="color: #0b5394;"&gt;to dirty less bowls, I normally set the yeast to stand while I gather the rest ingredients and then mix everything, adding the boiling water last in the same bowl, after the cold water)&lt;/span&gt;&lt;/span&gt;&lt;span class="Apple-style-span" style="font-family: Arial, sans-serif; font-size: 14px; line-height: 19px;"&gt;&lt;strike&gt;4. Add the cold water to the large bowl (the mix should be warmish now but not hot). Stir in yeast mix.&lt;/strike&gt;&lt;/span&gt;&lt;span class="Apple-style-span" style="font-family: Arial, sans-serif; font-size: 14px; line-height: 19px;"&gt;&lt;br /&gt;
&lt;/span&gt;&lt;span class="Apple-style-span" style="font-family: Arial, sans-serif; font-size: 14px; line-height: 19px;"&gt;5. Add bananas.&lt;/span&gt;&lt;span class="Apple-style-span" style="font-family: Arial, sans-serif; font-size: 14px; line-height: 19px;"&gt;&lt;br /&gt;
&lt;/span&gt;&lt;span class="Apple-style-span" style="font-family: Arial, sans-serif; font-size: 14px; line-height: 19px;"&gt;6. Add flour, one cup at a time.&lt;/span&gt;&lt;span class="Apple-style-span" style="font-family: Arial, sans-serif; font-size: 14px; line-height: 19px;"&gt;&lt;br /&gt;
&lt;/span&gt;&lt;span class="Apple-style-span" style="font-family: Arial, sans-serif; font-size: 14px; line-height: 19px;"&gt;7. Turn out onto lightly floured surface. Knead for 5-10 min, dough should be smooth, not too stiff or too runny. For a great video in how to knead the bread click&lt;a href="http://www.youtube.com/watch?v=dWj8oHMPFm0"&gt; here&lt;/a&gt;. *Note: The dough for this recipe will be stiffer then the one in the video.&lt;/span&gt;&lt;span class="Apple-style-span" style="font-family: Arial, sans-serif; font-size: 14px; line-height: 19px;"&gt;&lt;br /&gt;
&lt;/span&gt;&lt;span class="Apple-style-span" style="font-family: Arial, sans-serif; font-size: 14px; line-height: 19px;"&gt;8. Lightly coat the large mixing bowl in oil, turn the dough in it to just coat it with oil, place a towel over the dough in the bowl and let it rise for about 1 hr, till double in volume. &lt;span class="Apple-style-span" style="color: #134f5c;"&gt;(I normally place the covered bowl inside the oven to avoid drift from the AC)&lt;/span&gt;&lt;/span&gt;&lt;span class="Apple-style-span" style="font-family: Arial, sans-serif; font-size: 14px; line-height: 19px;"&gt;&lt;br /&gt;
&lt;/span&gt;&lt;span class="Apple-style-span" style="font-family: Arial, sans-serif; font-size: 14px; line-height: 19px;"&gt;9. Punch dough down, turn out and knead again 2-3 min. Divide dough into 2 balls, divide each ball into 3 sections, roll each section into long ropes and make 2 braids. &lt;/span&gt;&lt;span class="Apple-style-span" style="font-family: Arial, sans-serif; font-size: 14px; line-height: 19px;"&gt;10. Let the braids rise 45 min.&amp;nbsp;&lt;/span&gt;&lt;br /&gt;
&lt;span class="Apple-style-span" style="font-family: Arial, sans-serif; font-size: 14px; line-height: 19px;"&gt;11. Preheat oven to 350.&lt;/span&gt;&lt;br /&gt;
&lt;span class="Apple-style-span" style="font-family: Arial, sans-serif; font-size: 14px; line-height: 19px;"&gt;12. Boil a little more water and add some honey (some vegans don't eat honey, so omit this step if desired). Just before putting braids in the oven, brush them with boiling water, then sprinkle with sesame seeds, and sea salt.&lt;/span&gt;&lt;span class="Apple-style-span" style="font-family: Arial, sans-serif; font-size: 14px; line-height: 19px;"&gt;&lt;br /&gt;

&lt;/div&gt;&lt;div&gt;Where do I begin?!?!&lt;/div&gt;&lt;div&gt;First of all, I &lt;b&gt;love&lt;/b&gt; God and I can't wait to share his awesomeness with you! Not just in what I find in the Bible, but in the wonders of the food he so lovingly created for us. &lt;/div&gt;&lt;div&gt;I graduated from the University of Central Florida in the summer of '11 with a B.S. in Interdisciplinary Studies, and a minor in Health Science.
