Unfortunately this is not one of those posts that is healthy and delicous. This recipe is just delicious. I haven't baked anything since I got pregnant and I was having baking with drawls. I found this recipe in a magazine and thought my husband and family would like it. I, of course, had to modify the recipe a little to my liking.

Ingredients

1 chocolate cake mix

1 package of chocolate pudding mix ( 3.9 oz)

2 cups milk

1 jar of Jett-Puffed Marshmallow creme (7 oz)

1 can of cool whip

a few marshmallows to top it off

a few graham crackers to crumble on top

Directions

Prepare cake mix as directed. Cool cupcakes then slice in half horizontally

Make pudding mix as directed

Place bottom half of each cupcake in any container you choose. I used clear glasses. Top with a spoonful of pudding, then a spoonful of marshmallow creme. Cover with the cupcake top. Add some cool whip and toppings as you like.

I would put cupcakes in the refrigerator until you are ready to eat. The cool whip tends to melt into the cupcake.

This is a really easy recipe but a little messy.
You will use the cornbread to make the Baked Tomato Dish.

GLUTEN FREE CORNBREAD

Preheat the oven to 400 degrees. Mix the dry ingredients (flour, cornmeal, sugar, baking powder, and salt) together in a bowl and set aside.

Gluten and Sugar Free

Let me start off by saying WOW. I was really surprised by the results of this recipe. When I first saw this recipe I had my doubts, but curiosity got the best of me and I had to try them. I am glad that I did. Not only is this recipe cheap, about 3 dollar to make a dozen and a half, but they are actually good! Its hard to find a dessert that is good and not terrible for you. On a scale of 1-10 I would give these an 8. They are best when warm. If you don't like chickpeas, don't worry, you can't taste them in the recipe.

Ingredients:

1 1/4 cups canned organic chickpeas (garbanzo beans), well-rinsed and laid out to dry

2 tsp vanilla extract

1/2 cup all natural peanut butter

1/4 cup honey

1 tsp baking powder

1/4 tsp salt

1/2 cup chocolate chips ( I used dark chocolate chips)

Directions:

Preheat your oven to 350°F. Combine all the ingredients, except for the chocolate chips, in a food processor and process until very smooth. Make sure to scrape the sides and then process some more. Put in the chocolate chips and pulse once or twice. The mixture will be very thick and sticky. With wet hands, form into 1 1/2" balls. Place onto parchment paper or a sprayed cookie sheet. If you want them to look more like normal cookies, press down slightly on the balls. They don't do much rising. Bake for about 10 minutes. Yields about a dozen and a half.

This Frittata has so much flavor. This is my first time making one and it was so easy and it turned out great! This would be a great meal for breakfast, lunch, or dinner. The roasted potatoes are so much better than plain french fries. Try adding sea salt to them. This is a 30 minute of less meal.

Roasted potatoes
Ingredients:

enough potatoes to feed the people that will be eating with you. about 2-6
olive oil to toss potatoes in
salt and pepper to taste

Directions:

Cube potatoes. Place potatoes and 1/4 cup of water in a microwave safe bowl. Cover with plastic wrap. Cut a few vent holes. Microwave till soft. About 6 minutes for 3 potatoes. Set oven to broil. Mine was set at 550 degrees. After microwaving potatoes toss them with olive oil, salt, and pepper. Place on a cookie sheet and broil for about 6 minutes.

Frittata
Ingredients:

1 tbsp olive oil
2-3 green onions sliced
1 orange pepper ( deseeded ) chopped
1 pt. grape tomatoes
1 can ( 14 oz. ) artichoke hearts, rinsed and chopped
4 lg. eggs plus 4 lg. egg whites

Directions:

In a nonstick skillet heat 1 tbsp oil on medium heat. Add green onions and orange pepper. Cook until golden. 3-4 minutes.
An Irish dish

If you are on a super cheap budget this is the meal for you. A whole pot comes out to about 6 to 8 dollars and is enough for like 3 meals! Even if you are not on a budget this is a great Irish meal. Super simple to make and only a few ingredients. Try it for yourself and see. By the way, I am not a cabbage fan but I do like this meal.

Ingredients
One head of cabbage diced
1/2 an onion diced
Ultimately we decided on the Breville Juice Fountain because it is super easy to use, it juices quickly, and it is really quick and easy to clean. It doesn't get as much juice out of the kale as our other juicer but overall it juices everything else very well. Having a juicer that only takes about 5-10 minutes to use will be extra motivation to use it daily!
I am hoping with the warmer weather that March will bring that it will motivate me to continue to eat healthy. I am hoping to add a few new recipes also. So far this year I have not been sick; I give the praise to the Lord for this blessing and for the opportunity to eat healthier than I have before . I also have had plenty of energy for all the activity I do.

Sunday 2-25-12
So I haven't added any posts in a while. I have been having a little bit of trouble out of my allergies for the past 2 weeks. Basically what I have been doing for the last 2 weeks is juicing for two meals and eating one solid meal. Lots of soups and fruit. I tried local honey with mint tea and that seems to help also. So far right now I feel great. I am hoping that it is over for the year! I really think doing all the vegetable juicing helped a ton; oh, and I prayed A LOT! That probably helped the most.
I had the privilege of helping throw a baby shower for a very good friend of mine this weekend. I was put in charge of decorations and I am so glad that I was. It is supper easy and can be stored for weeks.

I soaked about 1 cup of flax seeds in about 2 cups of water for at least 2 hours. The longer the better I think. Right before spreading the mixture onto the dehydrator sheets I added 1 cup of chia seeds. I also added a Tbsp of turmeric and some salt and red pepper. You can add whatever spices you like best. Salt and pepper is pretty good too. After mixing everything well I spread it out onto the dehydrator sheets. Set your temperature to about 110 degrees and leave overnight, or until very dry.
Right after you spread the mixture you can score it so that it is easier to break after it is dried.

This recipe makes a whole pitcher. Usually enough for me and my husband for two days.

1 bush of kale
1 bush of collar greens
2-3 lbs of carrots
1 beet
1 cucumber
6-8 apples (when pears are in season I use them; only about half as many too)
2 stalks celery
1/2 lemon (optional)

After I juice all of these ingredients I like to strain it to get the pulp out. You don't have to if it doesn't bother you. I use a cloth strainer bag.

1 bush = one bunch of a item, how they sell it at the grocery store. I am not sure of the exact term.
I think I am going to start keeping a blog record of the foods that I am eating on a day to day basis. I will try to post as often as I can and let you know how I am doing and how it is making me feel. My number one goal is to not get sick. So far so good! I also want to keep my energy levels high. When I gave up eating wheat, processed sugar, and most animal products I have had so much more energy and I haven't gotten sick in a while!

Peel your butternut squash

cut in into small cubes

place in blender with chicken broth( use enough liquid to get the blender to blend squash)

If you have a vita-mix you can let the blender cook the soup. If you don't want to do that just pour soup in a pot and heat for about 20 minutes to cook squash.

you can add a handful of almonds when blending to make it a little more creamy.

Add salt, pepper, and cayenne pepper to taste.

Simple and easy soup.
I received a lot of organic pears from my mother-in-law and learned from her that dehydrating them is a great way to use them. They make a perfect snack.

You don't even need to peel them if you don't want to. Just slice them and place on dehydrator. They will shrink by about 50%.

Store them in the refrigerator to make them last longer. I jar works best to keep them in. If you keep your temperature below about 112 degrees they will store RAW.
So.......... I am having to come up with new recipe and creative ideas that don't incorporate any wheat. You don't realize how many pre-made foods and recipes have wheat in them until you can't eat it.

This recipe is the same as my chocolatey chocolate chip Banana muffins but I replaced the flour with gluten free flour.

I actually tried this recipe a couple of times and it is better if you sift the dry ingredients a few times and beat the egg whites before adding them. This helps the muffins stay fluffy instead if dense. I also found that making them in mini size helps them bake quicker. I also tried this recipe with ground flax seed instead of the flour and the mini size works best.
You will love the delicious smell of your house while they bake.

There isn't a specific recipe actually for this but I will just kind of tell you what I did.

Core your apples.
Cut out about half of the inside of the apples. Chop up what you took out of the middle and put in a bowl.
Chop dates, figs and raisins and add to the bowl.
Add some cinnamon, nutmeg, and salt.
Add about 1/2 tbsp butter per apple and about 1/2 tbsp of flour and sugar per apple.
Mix everything together really well and stuff back inside of your apples.
I baked mine in my toaster over on 300 degrees for about 1 hour.

These are really filling.
