One of the problems with fresh herbs is what to do with the leftovers. I don't know how many rotten bunches of basil, cilantro, parsley and dill I've thrown away over the years. Mainly this is because a recipe calls for a relatively small amount, and it is not likely that the rest will be used.

So the unused bunch gets consigned to no-man's land somewhere in the back of the crisper, to eventually turn into something resembling crude hydrocarbons.

We discovered the solution on the weekend. We were trying out a new potato salad recipe that called for fresh cilantro (coriander) in the dressing, and for some unexplainable reason, every supermarket near us was completely sold out of the fresh stuff.

A friendly clerk in the local Métro grocery pointed to a standalone freezer in the fruit section and said, "try this!", handing us a little red tray.

The light bulb went off. Fresh chopped cilantro, frozen in 5 ml (1 tsp) cubes, that pop out of a tray. Absolutely brilliant. The company is called Toppits in Canada. The same product is available under the Dorot brand name in the US, and available at most Trader Joe's outlets, as well as in Spain, Germany and the U.K.

They make several frozen and cubed herb products, including parsley, basil, dill, cilantro, as well as fresh ginger and garlic.

The results were pretty good. We dropped 2 cubes into the dressing, and taste, while a little bit more subdued than fresh, was excellent. Cost may seem a bit much at almost $4.00 per tray, but considering that the cost of some herbs (basil, dill and cilantro especially), the waste and the fuel and time spent making special trips makes this very cost effective.

The rest of their products are on their shopping list, and I am ditching the big jar prepared chopped garlic I have in my fridge.
