Well, my youngest step-daughter Gwen is absolutely obsessed with all things Japanese (including culture, language,  manga and anime), and with that love for Japanese culture comes an enormous love for sushi. It is her all time favorite food.  You wouldn&#8217;t believe how much of it she can stuff into her little body!</p>

<p style="margin-bottom: 0in;">So a few months back when I got some sushi rice from <a href="http://www.leftoverqueen.com/2009/02/24/from-the-farm-koda-farms-rice-and-leftover-chicken-soup" target="_blank">Koda Farms through FromTheFarm.com</a> I knew I had to save the sushi rice for this summer when Gwen and her sister Rachel would be here, so we could have a  make your own sushi party!</p>

<p style="margin-bottom: 0in;">We made an event of it by going first to the grocery store together to get some of the supplies. Then we headed to the local fish market to get some more goodies. We made the rice first, so that is would have time to cool off. Then while that was cooking, we prepared our fillings – tempura shrimp, fake crab (which is not fake food- as it is made from whitefish, so therefore, not crab&#8230;hence the name&#8230;), spicy fresh sea scallops, avocado, cucumber, carrots and scallions. We also made spicy mayo (<a href="http://www.leftoverqueen.com/2008/07/16/foodie-friends-rock" target="_blank">Thanks Dharm for the Sambal  Belacan!!!!</a>)  and both toasted and black sesame seeds.</p>

<p style="margin-bottom: 0in;">Back when I taught at the cooking school, during the summer we had a camp program for kids, and we  made a lot of sushi and it was a lot of fun! So since I already knew how to make the maki rolls, it was pretty easy, just a few quick pointers and everyone was off rolling! There are a lot of detailed, and step by step instructions online for how to roll maki, so I will not cover that here.</p>

There were 4 of us rolling, and I think it is safe to say we each made at least 4-5 rolls each&#8230;.and we ate every last piece too&#8230;Gwen is proud that she ate at least half of the tray! <img src='http://www.leftoverqueen.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> What can I say, she loves her sushi!</p>

<p>My blogging buddy, Siri from <a href="http://transplantedbaker.typepad.com/" target="_blank">Transplanted Baker</a> hosted an exchange program a few months back. The purpose was to share your regional farmers market finds with someone from a different part of the country, or the world!</p>
<p>As any reader of my blog knows, I am a HUGE fan and customer of my local farmer&#8217;s market on Anastasia Island, here in Saint Augustine, Florida. But I also love reading about other bloggers&#8217; farmers markets on blogs throughout the world! I think that farmers markets offer such a unique variety of products that you can&#8217;t even find in your local grocery store – made by local people, using local ingredients. You can learn a lot about a place from what is grown and produced there, and farmers markets are a great way to find out more about any area!</p>
<p>My exchange buddy was none other that Siri herself! This excited me greatly because I used to live in Norway and I always love getting goodies from Norway that remind me of my time there.</p>
<p>Sometime last week a lovely package with international stamps arrived at my doorstep (I now have a doorstep since moving from the condo!!). Inside was a cute purple box with green tissue paper – and inside were lots of lovely treats!</p>
<p>I got 2 different chocolate bars from Freia – the biggest chocolate company in Norway. Their slogan is &#8220;<em>Et lite stykke Norge</em>&#8220;, which translates to “A little bit of Norway”. The first variety, and most famous, in the cheery yellow wrapper, is <em>Melkesjokolade,</em> or milk chocolate, and the one in the blue wrapper is  <em>Firkløver</em>, a milk chocolate bar with chopped hazelnuts! I can&#8217;t wait to eat these!</p>
<p>The next two things in the box that I recognized were two packages – <em>Bergensk Fiskesuppe</em>, Bergen Fish Soup and <em>Raspeballer</em>, or <em>Potetball </em>which are Norwegian potato balls. The soup I have never had before, because Bergen is on the west coast of Norway and I lived in the central part of Norway. However, anyone who knows anything about Norwegian food, knows about fish stews and soups. Generally creamy concoctions with a variety of seafood. YUM. Siri suggests that I cook it with some shrimp or mussels. Local Florida shrimp, here I come!</p>
<p>The <em>Raspeballer</em> are sometimes served with a piece of smoked meat in the inside. But they are often served just as balls of potatoes, sometimes fried, sometimes simmered in broth – all ways delicious! Norwegian comfort food at its best!</p>
<p>Then there were a few products that I did not know about. These were made by local producers close to Siri&#8217;s hometown of <em>Førde</em>. The first is <em>Borgny&#8217;s Rose Gele</em>, which is rose jam. I am very much looking forward to trying this, as I have never had a chance to try it in the past&#8230;<strong>anyone have good suggestions for what to eat it on?</strong></p>
<p>Next was another product from the same herb farm that made the rose jam, and it is a mix of beautiful dried herbs -  Applemint, Bee Balm and a few others I wasn&#8217;t able to translate – Siri, can you help me out with <em>“Temyn</em>” and <em>Ryllik</em>?</p>
<p>Anyway, the mixture smelled so good when I opened the bag that I actually just ate some straight from the bag! But I am pretty sure it is meant to be brewed into tea!</p>
<p>Siri also sent me a few post cards – one of the town of  <em>Førde</em> where you can actually see her house! <img src='http://www.leftoverqueen.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> and also of a painting of birch trees (how did she know those were my favorite!) by a very well known painter from <em>Sunnfjord</em> named Nikolai Astrup (1880- 1928). The trees are from his small farm that overlooks a lake. He kept this farm as a way to create traditional and picturesque fodder for his paintings. The farm is now run by a historical society that uses it as a museum to display his work.</p>
<p>Anyway, I really want to thank Siri for all of these thoughtful gifts and would love to exchange again with you in the future! Thanks for putting this together! <img src='http://www.leftoverqueen.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>

<p style="margin-bottom: 0in;">Well Roberto and I had some very special guests arrive last week that I was sure were going to really enjoy helping with these cupcakes, my step-daughters Rachel and Gwen! Saint Cupcake sent us a really good variety. I wanted to make sure to sample a good range. So for cupcake flavors they sent us  <strong>Vanilla Toffee, Vegan Chocolate and Vanilla</strong>. For icing flavors we got <strong>Cream Cheese, Vegan Chocolate and Pistachio Butter cream.</strong> For decorations we got <strong>Toasted Coconut, Pink Jimmies and Orange Sprinkles</strong>.</p>

<p style="margin-bottom: 0in;">We had a great time decorating them and then eating them. I made a vanilla cupcake with pistachio butter cream and orange sprinkles. Rachel made the vegan chocolate cupcakes with pink jimmies and Gwen couldn&#8217;t wait to make the vanilla toffee cupcake with cream cheese icing and toasted coconut!</p>

<p style="margin-bottom: 0in;">I cut each cupcake into 4th&#8217;s so we could all try each one. I think my favorite was the vanilla with pistachio butter cream. It is hard for me not to love anything with pistachio. Gwen&#8217;s favorite was the Vanilla Toffee with cream cheese icing and toasted coconut. Rachel loved both of the vanilla flavors. Roberto&#8217;s favorite was the Vegan Chocolate. He is a huge fan of all things chocolate, and that just proves how yummy and chocolatey these cupcakes were. I don&#8217;t generally like chocolate desserts, and I loved the vegan chocolate cupcakes as well!</p>
<p style="margin-bottom: 0in;">We even used the leftover cupcake decorations on some <strong>Homemade Marshmallows </strong>we made that day!</p>

It was too good not to share, so here it is!</p>

<p>We had fresh local scallops and lobster (the lobster was not local, but was on sale for Father&#8217;s Day) kabobs with pineapple. The seafood and pineapple were marinated in a mixture of lime juice and zest, cilantro, jalapeño, sugar, salt, oil and pepper. Separately the same marinade was mixed with a whole sliced avocado. This was then used as a topping on a green salad with corn. On the side I made a red quinoa pilaf. To drink - “Teatini” a sun tea cocktail. Then of course dessert was the cake with preserves and whipped cream!</p>

<p><em>For Kabobs - </em></p>
<p><strong>INGREDIENTS:</strong></p>
<p>2 tsp finely shredded lime peel<br />
¼ cup fresh lime juice<br />
¼ cup fresh cilantro, snipped<br />
1 small green or red  jalapeño, finely chopped<br />
2 tsp raw cane sugar<br />
pinch of ground coriander<br />
sea salt<br />
fresh ground pepper<br />
¼ cup grape seed or olive oil<br />
1 lb sea scallops<br />
2 lobster tails, cut into chunks<br />
about 2 cups of pineapple chunks<br />
1 avocado sliced into chunks or wedges</p>
<p><strong>METHOD:</strong></p>
<p>In a small bowl combine all the marinade ingredients and whisk together. Set aside. If using bamboo skewers, begin soaking them.<br />
In a large bowl combine scallops, lobster and pineapple chunks. Toss with 2 TBS of the marinade. Let stand for 15 minutes.<br />
Alternately thread the scallops, pineapple chunks and lobster onto 4 skewers. Grill uncovered for 8-10 minutes or until scallops are opaque – turn them after about 4 minutes. Serve with avocado chunks.</p>
<p><em>For “Teatini”</em></p>
<p>I used peach ginger tea and made a batch of iced sun tea (you could also make iced tea by boiling tea bags). I sweetened it with stevia.  The day before I also took a large peach and cut it into chunks and soaked the chunks in some vanilla vodka.</p>
<p>For each drink, I swirled the inside of the glass with honey, then added some of  the vodka soaked peaches, a small jigger of vanilla vodka and filled the rest of the glass with the sweetened tea and ice.</p>

<p><strong><span style="font-weight: normal;">I have been really thinking about food, health, diet, and other related topics for some months now. Yeah, I know, you thought I always think about food, and that is true, but I am talking about on a more cerebral level. I go through these stages every so often and since I have been really concerned with fitness and making my body the best body it can be, I have had to really think a lot lately. </span></strong></p>
<p><strong><span style="font-weight: normal;">I  believe that you are what you eat, that different people have different dietary needs based on a variety of factors, and it is best for individuals to evaluate what works best for them. Once in a while you have to re-evaluate things, and make sure everything is still working to your standards.</span></strong></p>
<p><strong><span style="font-weight: normal;">I am always looking to improve myself, and I listen to my body, and take its advice on what may need to be tweaked and changed. </span></strong></p>
<p><strong><span style="font-weight: normal;">Lately I have been feeling like I need to take a bit of a break from wheat. I know this really flies in the face of my <a href="http://www.leftoverqueen.com/category/recipes/bread" target="_blank">bread making endeavors</a> , and the fact that Roberto could eat <a href="http://www.leftoverqueen.com/category/recipes/grains/pasta" target="_blank">pasta</a> and bread until the end of time. But for me, and looking over the back pages of my life and my relationship to wheat, things have been kind of shoddy between us on many levels. Therefore, I have decided to do a gluten free experiment&#8230;and when I say experiment, I mean, experiment. I get everyone in on it - like my mom (helping me make this cake). Oh and speaking of my mom, she is starting to help me with my other blog - <a href="http://www.travelcloseup.com/" target="_blank">Travel Closeup</a>. <p><strong><span style="font-weight: normal;">Anyway, back from family promotion and onto the food&#8230;I am not a person that tends to be into grains very much anyway, unless it is fresh baked breads or cakes and pastries. I don&#8217;t eat cakes and pastries very often, but I do eat bread. So it is time to see if gluten free is the way to go for me. So I have been experimenting with grains like quinoa, and buckwheat (which I already love) and eating more corn and rice based things – and trying to find non GMO versions of the corn based.</span></strong></p>
<p><strong><span style="font-weight: normal;">However, this weekend was the Summer Solstice, and <a href="http://www.leftoverqueen.com/2008/06/23/a-midsummer-nights-dream-dinner" target="_blank">as I mentioned last year</a>, it is an event that we like to celebrate. I always bake for special occasions, and so I decided to challenge myself by making a GF cake. I just did a google search on gluten free lemon cakes from blogs, and happened across <strong>Joy, The Baker</strong>&#8217;s Blog where she blogged this<a href="http://www.joythebaker.com/blog/2009/03/gluten-free-lemon-almond-and-polenta-cake/" target="_blank"> delicious, crumbly cake recipe</a> . She had made it in a bundt shape, but said it crumbled too easy. So I decided to bake mine in a bread baking dish.</span></strong></p>

<p><strong><span style="font-weight: normal;">This cake makes A LOT of batter, and so I made a bread loaf, a round cake and 6 cupcakes! None of them fell apart! The only change I made was doing 4 ½ cups of nuts and 1 ½ cup of rice flour (because I ran out of nuts!). </span></strong></p>

<p><strong><span style="font-weight: normal;">For the solstice I halved the bread loaf lengthwise and filled it with the delicious <a href="http://www.leftoverqueen.com/2009/06/22/recipe-summer-solstice-preserves " target="_blank">Summer Solstice Preserves</a> </span></strong>and topped it with whipped cream! It was a delicious cake – VERY buttery and dense, but also so good.</p>

<p>juice of 1 lemon</p>
<p>1 teaspoon vanilla extract</p>
<p>6 eggs</p>
<p>5 1/2 cups ground almonds</p>
<p>2 cups polenta</p>
<p>1/2 cup rice or corn flour</p>
<p>2 teaspoons baking powder</p>
<p>1/2 teaspoon salt</p>
<p>powdered sugar for dusting</p>
<p><strong>METHOD:</strong></p>
<p>Preheat the oven to 325 degrees F.</p>
<p>Butter eight mini bread tins and line the bottoms with parchment paper, or line 3 cupcake pans with foil cupcake liners.</p>

<p>Measure out the sugar and lemon zest.  With the back of a spoon or a plastic bench knife, rub the lemon zest into the sugar, creating a lemony and fragrant sugar.  Beat the butter and sugar until very light and creamy.  Add the lemon juice and the vanilla extract.  Add the eggs, one by one, beating well after each addition.</p>
<p>Mix together the flour, ground almonds, polenta, rice or corn flour, baking powder and salt and fold into the butter mixture.</p>
<p>Spoon the mixture into the prepared tins and bake for 35-40 minutes (20-25 minutes for cupcakes) or until a knife inserted in the center of one of the cakes comes out clean.</p>
<p>Remove from the oven and cool the cakes in their tins before taking them out.</p>
<p>Sift some powdered sugar over the cooled cakes for decoration.</p>

I refer to any event in the kitchen when I try something for the first time, as a “kitchen date”, since I have to really pay attention to what is going on the entire time, spend quality time with new ingredients and equipment,  getting to know them – all the ins and outs, the quirks and the possible incompatibilities and then assess if this new item/process will become a part of my regular routine or not.</p>

<p style="margin-bottom: 0in;">There are two major themes going on here – one is food preservation, and the other is gluten free baking. I have been talking about wanting to learn to preserve food, and can for quite some time now. I got the <em>Ball&#8217;s Complete Book of Home Preserving</em> several months ago, and have really been waiting for the right time to dive in and make something. Inspiration hit when the lovely folks at <a href="http://www.fromthefarm.com/" target="_blank">FromTheFarm.com</a> sent me several pints of fresh blueberries. Obviously we ate quite a bit of them<em> au naturale</em>, but when I had quite a lot still after several days, I figured I needed to do something to preserve the rest&#8230;and then it hit me – <strong>MAKE PRESERVES</strong>.</p>

<p style="margin-bottom: 0in;">So I did. I opened the book to the index and chose a recipe that featured blueberries and other ingredients that I had already. Then I did something that could have been disastrous, I tweaked it – a lot! The whole time I was second guessing myself – here I was making preserves for the first time in my life, and not using pectin, and not using the same ingredients (or the same amounts) as the recipe stated! But with my typical luck, it turned out great! The color is amazing, and the taste, really really incredible – and it actually set. Plus instead of being too sugary sweet for my taste, like most jams and preserves, it has really retained its blueberry fruit flavor. I am so excited to now have 3 jars of spirited blueberry preserves to enjoy this year! One jar I have already used to make a delicious gluten free cake which I will post later this week.</p>

<p style="margin-bottom: 0in;"><strong>The Ball Summer Solstice Preserves Recipe</strong> (My changes in parenthesis)</p>

<p style="margin-bottom: 0in;"><strong>INGREDIENTS:</strong></p>
<p style="margin-bottom: 0in;">3 cups halved pitted red tart cherries (I just used 4 cups total of blueberries)</p>
<p style="margin-bottom: 0in;">1 cup blueberries</p>
<p style="margin-bottom: 0in;">4 ½ cups granulated sugar ( 1/3 cup agave nectar – no sugar)</p>
<p style="margin-bottom: 0in;">2 TBS lemon juice</p>
<p style="margin-bottom: 0in;">1 pouch (3 oz) liquid pectin (2 TBS agar powder cooked in 2 c. Morello cherry juice)</p>
<p style="margin-bottom: 0in;">2 TBS Kirsch or cherry brandy (I used vanilla vodka)</p>
<p style="margin-bottom: 0in;">
<p style="margin-bottom: 0in;"><strong>METHOD:</strong></p>

<p style="margin-bottom: 0in;">In a large deep stainless (or cast iron) saucepan combine fruit, sugar/agave and lemon juice. Stir to mix well. Let stand at room temperature for 20 minutes.</p>
<p style="margin-bottom: 0in;">
<p style="margin-bottom: 0in;">Meanwhile prepare the jars and lids for preserving (refer to the Ball book), If using agar, mix with liquid and cook for 5 minutes. Remove from heat.</p>
<p style="margin-bottom: 0in;">
<p style="margin-bottom: 0in;">Over high heat, stirring constantly, bring fruit mixture to a full rolling boil that cannot be stirred down. Stir in pectin (or agar mixture). Boil hard stirring constantly for 1 minute. Stir in booze if using. Remove from heat. By this point, the preserves are the consistency of syrup – do not expect it to be thick,like I did, fearing the worst.</p>
<p style="margin-bottom: 0in;">
<p style="margin-bottom: 0in;">Ladle hot preserves into hot jars, leaving ¼ inch head space. To remove bubbles, poke a non metallic instrument into the jars, and wipe the rim of the jars if necessary. Center lid in jar and screw band down until resistance is met and then increase to fingertip-tight.</p>
<p style="margin-bottom: 0in;">
<p style="margin-bottom: 0in;">Place jars into your canning pot, making sure they are completely covered with water. Bring to a boil and process for 10 minutes. Remove canner lid. And wait 5 minutes, then remove jars to cool. As they are cooling the seals will form, and you can actually hear them “pop”. Some may happen right away, others may take up to 10 minutes to form. It is all up to mother nature.</p>
<p style="margin-bottom: 0in;">
<p style="margin-bottom: 0in;">Ball suggests spreading this preserve on bread, or using in baking sweets or as a filling. I used it as a filling for a gluten free cake I made, and will be  featuring soon.</p>

<p>This is surely a week of leftover food recipes. This is a nice little dessert I made up with a can of leftover shredded coconut from making the <a href="http://www.leftoverqueen.com/2009/06/09/my-first-wedding-cake-project-carrot-cake-with-cream-cheese-frosting">Carrot Wedding Cake</a> .</p>

<p>Now onto the leftover coconut recipe. The only baking coconut that I can find anymore that does not have propylene glycol in it are the cans of Angel Flake (not the bags). I am going to be looking for organic dessicated coconut at my health food store the next time I go. But I bought the Angel Flake cans for the Cake.  I had a half a can of the coconut left. I always have coconut milk on hand, and so I decided to bring the two together to make a pudding. I added some instant tapioca (still have not been lucky in finding tapioca pearls around here) because I really love the texture. This pudding is slice-able once it has been refrigerated for about an hour or two. It has a very nice coconut flavor, and is not too heavy.</p>
<p>Again, for those of you watching your food intake, I have the nutritional information at the bottom of the recipe.</p>

<p><strong>INGREDIENTS:</strong></p>
<p>2 c coconut milk<br />
¾ cup nonfat organic milk<br />
¼ cup 100 % pure  maple syrup<br />
1 tsp vanilla extract<br />
3 TBS instant tapioca<br />
¾ cup Angle Flake (in a can) coconut, shredded<br />
4 TBS non-GMO cornstarch<br />
1 tsp cinnamon</p>
<p><strong>METHOD:</strong></p>
<p>Mix all the liquids in a bowl, and whisk together.  In a small bowl, mix together all the dry ingredients.<br />
Place dry ingredients in a saucepan, and over medium heat slowly pour liquids in a steady stream, while whisking. Cook until pudding begins to bubble. Stir until thick, and transfer to 6 small bowls. Serve hot or cold. Serves 6. Drizzle with chocolate sauce (we used Trader Joe&#8217;s Midnight Moo&#8217;s) for some added pizazz!</p>

<p style="margin-bottom: 0in;">I made this salad with leftover shredded carrots I had from making the <a href="http://www.leftoverqueen.com/2009/06/09/my-first-wedding-cake-project-carrot-cake-with-cream-cheese-frosting" target="_blank">Carrot Wedding Cake</a>. That is the beauty of cooking with leftovers – endless inspiration and ideas because you never have the same combination of ingredients – exactly. Which makes me think outside the box and just have fun experimenting!!!</p>
<p style="margin-bottom: 0in;">I don&#8217;t normally buy pre-shredded carrots, so this was a new ingredient for sure . In reality, I can&#8217;t take credit for this recipe though, as I found it on the shredded carrot package. I did tweak it a bit, but the inspiration came straight from the label. Sometimes those on the package recipes are actually great! I served this with grilled organic chicken cutlets that had a Jamaican Jerk spice blend rub. <p style="margin-bottom: 0in;">1 TBS brown sugar</p>
<p style="margin-bottom: 0in;">5 TBS apple cider vinegar</p>
<p style="margin-bottom: 0in;">3 TBS grape seed oil</p>
<p style="margin-bottom: 0in;">1/3 cup fresh cilantro</p>
<p style="margin-bottom: 0in;">½ tsp salt</p>
<p style="margin-bottom: 0in;">pinch of hot pepper</p>

<p style="margin-bottom: 0in;">Mix carrots and onions together in a large mixing bowl. In a smaller bowl whisk together all other ingredients. Pour over carrots, mix well to coat. Refrigerate at least 2 hours before serving. Serves 6.</p>
