<p>How much do you think about processed food? We want to share some information from <a href="https://www.amazon.com/Ultra-Processed-People-Science-Behind-Food/dp/1324036729/" rel="noopener" target="_blank">Ultra-Processed People: The Science Behind Food That Isn’t Food</a>, by Chris van Tulleken.</p>
<p>The review, written by <a href="https://hls.harvard.edu/faculty/jacob-gersen/" rel="noopener" target="_blank">Jacob E. Gersen</a>, the Sidney Austin professor of law at Harvard Law School and director of the <a href="https://foodlawlab.org/" rel="noopener" target="_blank">Food Law Lab</a>.</p>
<p><strong>What is ultra-processed food?</strong></p>
<p>According to a relatively recent classification scheme called NOVA, created by researchers in Brazil (see image below):</p>
<li><strong>Food Group 1</strong> is defined as “unprocessed or minimally processed foods,” things like meat, fruit, flour, and pasta.</li>
<li><strong>Food Group 2</strong> is “processed culinary ingredients”—oils, butter, sugar, honey, and starches.</li>
<li><strong>Food Group 3</strong> is “processed food”: ready-to-eat mixtures of the first two, processed for preservation, meaning beans, bread, salted nuts, and smoked meat.</li>
<li><strong>Food Group 4</strong> is “ultra-processed foods,” defined as formulations of ingredients, “mostly of exclusive industrial use, made by a series of industrial processes, many requiring sophisticated equipment and technology.” This includes “junk food”: candy bars, energy drinks, packaged snacks, soda, sugary cereals, and surprisingly, infant formula.</li>

While they are now linked to the leading cause of early death globally (including obesity) and the number one cause of environmental destruction, almost all our staple foods are ultra-processed. </p>
<p>Ultra-processed food (UPF) products are specifically engineered to behave as addictive substances, driving excess consumption. </p>
<p>UPF is our food culture and for many people, it is the only available and affordable food [<a href="https://www.amazon.com/Ultra-Processed-People-Science-Behind-Food/dp/1324036729/" rel="noopener" target="_blank">source</a>].</p>
<p>Because ultra-processed food’s defining characteristic is a rapacious profit motive, relays Gersen, the book’s warnings about the bodily harm it causes, including obesity, often veer into attacks on corporate greed and late industrial capitalism.</p>

<p>We discovered a new product at this year’s big food show for the specialty food trade: DateFix Natural Energy Snack. </p>
<p>Although it was developed by a long-distance runner, it’s a real find for those of us who have never run a block in our lives.</p>
<p>DateFix is a healthy snack that’s made only with puréed dates and orange blossom water, plus optional flavorings (cinnamon, ginger, and turmeric).</p>
<p>The small squeeze pouch with 80 calories has turned out to be a great pick-me-up for us. It fits into the smallest pockets and is a delicious companion when we have a cup of coffee on the go. </p>
<p>The line has no added sugar, is non-GMO, OU kosher, shelf-stable, and vegan.<br />

<p>Dates, the fruit of the date palm tree (<em>Phoenix dactylifera</em>), have a chewy texture and candy-like sweetness. They have been called “nature’s candy.”</p>
<p>Dates are one of the oldest cultivated fruits*, first grown in the Fertile Crescent† as 4000 B.C.E. </p>
<p>The date palm tree is native to the deserts of North Africa and the Middle East. Fossil evidence indicates that dates grew wild at least 50 million years ago.</p>

<p>They continue to be an important crop for Iraq, Iran, Arabia, and North Africa. </p>
<p>Dried dates could keep for years, making them valuable food for travelers. But that’s not all!</p>
<p>They were turned into a honey-like sweetener; in fact, the phrase “the land of milk and honey” refers to honey made from dates, not bees.</p>
<p>Dates were also fermented into date wine. The tree itself was a source of fiber for ropes and baskets; the fronds provided shade.</p>
<p>Some date varieties were brought to California and Mexico by the Spaniards in 1765. </p>
<p>According to National Geographic, however, the Medjool date and Deglet Noor date were brought to California in the 1900s by the great American botanist and agricultural explorer <a href="https://en.wikipedia.org/wiki/Walter_Tennyson_Swingle" rel="noopener" target="_blank">Walter Swingle</a>. </p>
<p>Since the early 20th century, dates have also been cultivated in Arizona and Florida.</p>
<p>Dates’ popularity in the U.S. grew in the 1940s when they were eaten instead of the sweets that couldn’t be made because of sugar rationing during World War II.</p>
<p>In the U.S., most dates are grown in the Coachella Valley and the Bard Valley of California. <p>The Fourth of July is the biggest hot dog-eating day of the year. According to the National Hot Dog &#038; Sausage Council, an estimated 150 million hot dogs are consumed on Independence Day—enough hot dogs to stretch across the country and back. </p>
<p>From Memorial Day to Labor Day, “peak hot dog season,” Americans will gobble up 7 billion hot dogs—beef, chicken, pork, turkey, organic, vegan, and now&#8230;regeneratively sourced, exemplified by Applegate Naturals’ The Do Good Dog Uncured Beef Hot Dog (photos #1 and #2).</p>
<p>While <a href="https://www.applegate.com/" rel="noopener" target="_blank">Applegate</a> introduced the Do Good Dog in November 2021, the news just crossed our e-desk recently and introduced us to a new term: regeneratively sourced.</p>

<p>According to the Savory Institute, the cattle that graze this way are part of a system that has the potential to contribute to the regeneration of up to 260,000 acres of U.S. grasslands. <p>Versatile, mildly nutty tahini delivers 6g of plant protein and 5g of fiber per serving, with no added sugar, salt, oil, or preservatives. </p>
<p>You can make the recipe with regular tahini, but lemon adds a nice zing.</p>
<p>Tahini is one of the principal ingredients in hummus, along with chickpeas. But this dip recipe is not hummus; it’s chickpea-free. Greek yogurt replaces the chickpeas.</p>
<p>In addition to enjoying it as a dip, you can thin the recipe below for a:</p>
<li>Salad dressing.</li>

<strong><font color=#800517>THE HISTORY OF ENERGY BARS</font></strong></p>
<p>Energy bars and protein bars have become increasingly popular in recent years as a convenient and portable snack or meal replacement option for people on the go. </p>
<p>First, the difference between the two:</p>
<li>An energy bar is full of carbohydrates and sugars to give an instant boost of energy.</li>
<li>A protein bar has high protein content which works as a meal replacement bar, fulfilling one’s protein needs.</li>
<p>&nbsp;<br />
The history of energy bars and protein bars dates back decades.</p>
<li>In the late 1960s, a product called <a href="https://en.wikipedia.org/wiki/Space_Food_Sticks" rel="noopener" target="_blank">Space Food Sticks</a> was created by Pillsbury as a snack bar for NASA astronauts. These bars were high in calories and protein, and were designed to provide astronauts with a convenient source of nutrition during space missions. They were subsequently released as a consumer brand (they were discontinued in 2014).</li>
<li>In 1986, the <a href="https://en.wikipedia.org/wiki/PowerBar" rel="noopener" target="_blank">PowerBar</a> brand was founded by Canadian athlete Brian Maxwell and two colleagues, one a nutritionist. PowerBars were initially designed as a high-carbohydrate snack for endurance athletes, but soon became popular among a wider audience (the brand is now owned by Post Holdings).</li>
<li>In 1991, CLIF Bar debuted, founded by American cyclist Gary Erickson with Lisa Thomas. Erickson got the idea for his product in 1990 on a day-long, 175-mile bike ride. He developed the recipe in his mother’s kitchen and introduced them at a bike show in 1991.</li>
<p>&nbsp;<br />
Energy bars and protein bars began to trend in the 1990s. Balance Bar, MET-Rx, and ProBar Meal Bars debuted, marketed towards athletes, bodybuilders, and fitness enthusiasts.</p>
<p>But the natural foods movement and the increase in gym memberships engendered a wide variety of flavors and formulations and became popular snacks for busy people who wanted a convenient snack or meal replacement option for people who are busy or active and want something more nutritious than a Snickers bar.</p>
<p>They were soon joined by snack bars: not necessarily energy- or protein-focused, but better-for-you snacks. Brands proliferated, including Bobo’s Oat Bars, Lara Bars, Kind Bars, and Luna Bars, among numerous others.</p>
<p>Today there are bars to accommodate any food plan: gluten-free, keto, nut-free, vegan, etc. And thanks to Simple Bars, you can find a sugar-free snack bar, too!<br />

<p>Long before Taco Tuesday, there was Meatless Monday. While the latter may seem to be a 21st-century idea, it actually first appeared during World War I (when it was called Meatless Tuesday). <a href="https://blog.thenibble.com/2020/01/06/tip-of-the-day-meatless-monday/#description">Here’s the history of Meatless Monday.</a></p>
<p>Almost every health, nutrition, and sustainability expert advises: Eat a primarily plant-based diet. It’s better for you and the planet.</p>
<p>We at THE NIBBLE would like to observe that it’s not just about meat. Cheese and other dairy products, including animal milk and milk-based products, like yogurt, cheese, cottage cheese, and ice cream, contribute the same greenhouse gases that meat does. </p>
<p>Yes, you could eat fish; in fact, substituting more seafood for meat is another important resolution. </p>
<p>But if you really want to help Planet Earth, we propose changing Meatless Monday to Vegan Monday. </p>
<p>Regardless of your motivation, opting for meatless or vegan meals regularly provides plenty of benefits that extend from the health of you and your loved ones to your wallet and the environment. </p>
<p>Whether you’re a vegetarian, vegan, considering making some lifestyle changes or just want to give an on-trend meal prep strategy a try, going meatless can help reduce your intake of red and processed meats, decrease greenhouse gas emissions that cause climate change and save money on substitute ingredients like grains, vegetables, fruits and legumes that are often cheaper than meat.<br />

<li>1 cup shredded collard greens, packed (substitute kale)</li>
<li>1/4 cup frozen corn</li>
<li>1 cup canned black beans, drained and rinsed</li>
<li>2/3 cup canned pumpkin purée</li>
<li>1-1/2 tablespoons taco seasoning (store-bought or recipe in footnote)</li>
<li>8 flour tortillas (6 inches each)</li>
<li>1 cup Monterey Jack cheese, shredded (substitute Cheddar)</li>
<li>2 tablespoons olive oil</li>
<li>Sour cream, for dipping</li>
<li>Salsa, for dipping</li>
<li>Guacamole, for dipping</li>
<li>Fresh cilantro, for garnish</li>
<p>&nbsp;<br />
<strong><font color=#800517>Preparation</font></strong></p>
<p>1. PREPARE the rice according to package directions; add the collard greens and corn to the water during the last 5 minutes.</p>
<p>2. PREHEAT the oven to 450°F. Drain the rice and vegetables; transfer to a saucepan. Stir in the black beans, pumpkin purée, and taco seasoning.</p>
<p>3. SPOON 1/3 cup of the rice mixture into the center of one tortilla; sprinkle with 2 tablespoons of Monterey Jack cheese. </p>
<p>4. ROLL up tightly. Place the seam side down on a parchment paper-lined baking sheet. Repeat with the remaining tortillas, filling, and cheese. </p>
<p>5. BRUSH the taquitos with olive oil; sprinkle with the remaining cheese. Bake for 10-15 minutes, or until the tortillas are crisp and the cheese is melted.</p>
<p>6. GARNISH the taquitos with fresh cilantro. Serve with sour cream, salsa, and guacamole for dipping. </p>

<p>National Kimchi Day is November 22nd, and we’d like to share a delicious kimchi soup recipe from <a href="https://theveganatlas.com/v" rel="noopener" target="_blank">The Vegan Atlas</a>.</p>
<p>If you’re not familiar with kimchi (KIM-chee), it’s a staple Korean condiment* made from fermented vegetables (as are pickles and sauerkraut).</p>
<p>Think of kimchi as a spicier, chunkier, and more complex form of sauerkraut. It can be vegan, or have some fish ingredients, like fermented anchovies (did you know that there are fermented anchovies in <a href="https://blog.thenibble.com/2013/11/13/gift-umami-sauce/">Worcestershire sauce</a>?).</p>
<p>“Even with all the spices and bold flavors,” says Nava Atlas, author of The Vegan Atlas, “kimchi soup somehow qualifies as comfort food! It’s a classic in Korean cuisine, and this recipe is ready to eat quickly.” Prep time is 15 minutes, and cook time is 15 minutes.</p>
<p>As with so many recipes, no two are alike. The cook has a wide range to tailor the recipe. </p>
<p>But the star is always kimchi, the fermented condiment based most often on cabbage (it can include other vegetables).</p>

<strong><font color=#800517>RECIPE: KIMCHI SOUP</font></strong></p>
<p>The ingredient list might look a bit long, but there’s surprisingly little prep. The ingredients cook up quickly. </p>
<p>Brimming with Korean seasonings and briny kimchi, the broth becomes flavorful in no time. Optional ingredients include rice, rice noodles, or sweet potato, which all act as foils to the other vigorous and spicy flavors.</p>
<p>While you may hesitate to buy gochugaru, you can use the rest of it as you would another red chile spice. <a href="https://www.nonguiltypleasures.com/gochugaru-substitute/" rel="noopener" target="_blank">Here’s more about it.</a> You can substitute Aleppo pepper or Kashmiri (Indian) chile powder.</p>

<strong><font color=#800517>Ingredients</font></strong></p>
<li>14-ounce tub extra-firm tofu (see Note)</li>
<li>1 tablespoon toasted sesame oil or neutral vegetable oil</li>
<li>1 medium onion, finely chopped</li>
<li>3 to 4 cloves garlic, minced</li>
<li>4 cups green cabbage, preferably napa, sliced</li>
<li>6 to 8 ounces mushrooms, any variety, stemmed and sliced</li>
<li>2 teaspoons grated fresh or squeeze-bottle ginger (add more to taste)</li>
<li>1 teaspoon gochugaru (add more to taste)</li>
<li>6 cups water, plus more as needed</li>
<li>2 vegetable bouillon cubes</li>
<li>2 tablespoons soy sauce</li>
<li>14.5-ounce can diced tomatoes (fire-roasted, if available)</li>
<li>4 stalks bok choy or 1 medium baby bok choy, sliced</li>
<li>1 tablespoon <a href="https://blog.thenibble.com/2016/03/05/tip-of-the-day-gochujang-sauce-the-next-sriracha/">gochujang paste</a>, more or less to taste</li>
<li>1 cup kimchi, mild or medium, or more if desired</li>
<li>2 scallions, thinly sliced plus more (green parts) for topping</li>
<li>1/3 cup fresh cilantro leaves, plus more for topping</li>
<p>&nbsp;<br />
<strong><font color=#800517>Optional Additions</font></strong></p>
<li>Cooked rice (about 1-1/2 cups)</li>
<li>Bean-thread noodles, a.k.a. cellophane or glass noodles (about 4 ounces), cooked and cut into shorter lengths</li>
<li>1 medium sweet potato, peeled, diced, and cooked</li>
<p>&nbsp;<br />
<strong><font color=#800517>Preparation</font></strong></p>
<p>1. CUT the tofu into 6 slabs crosswise and blot well between layers of a clean tea towel or paper towel (or, if you have a tofu press, use it ahead of time). Cut the slabs into dice.</p>
<p>2. HEAT the oil in a soup pot. Add the onion and sauté over medium heat until translucent. Add the garlic and continue to sauté until the onion is golden.</p>
<p>3. ADD the cabbage, mushrooms, ginger, gochugaru, water, bouillon cubes, soy sauce, and tomatoes. Bring to a slow boil, then turn down the heat and simmer gently until the cabbage and mushrooms are wilted, about 5 minutes. </p>
<p>4. ADD the reserved tofu, bok choy, gochujang paste, kimchi, and scallions. The broth will likely be a bit crowded, so add 1 to 2 cups of water or more as needed. Continue to cook over low heat for 5 minutes, or just until everything is piping hot. Don’t overcook!</p>
<p>5. REMOVE from the heat. Season with salt and stir in the cilantro. Serve at once, garnishing each serving with some extra scallion and cilantro.</p>
<p><strong>For the optional ingredients: </strong></p>
<li>If using rice, place a little in each bowl before ladling in the soup.</li>
<li>If using bean-thread noodles or sweet potato, arrange them in small mounds on top of the soup after ladling them into each bowl, before adding the garnishes. Or, you can simply stir them into the soup.</li>
<li>If you do any of it in a different order, it doesn’t matter; it will all taste good no matter how you arrange it!</li>

<strong><font color=#800517>THE HISTORY OF KIMCHI</font></strong> </p>
<p>Kimchi has been made for three thousand years in Korea. It was, and is, made by fermenting vegetables. It began as a way to ferment and store vegetables during the cold winter when many Koreans died of starvation. </p>
<p>It quickly became a staple food for year-round consumption, a ubiquitous side dish on every table every day  [<a href="https://www.bbc.com/travel/article/20201217-how-kimchi-rekindled-a-decades-long-feud" rel="noopener" target="_blank">source</a>].</p>
<p>The dish is an integral part of every meal—so much so that when South Korea launched its first astronaut to space in 2008, it sent kimchi with her [<a href="https://www.bbc.com/travel/article/20201217-how-kimchi-rekindled-a-decades-long-feud" rel="noopener" target="_blank">source</a>].</p>
<p>Today, kimchi is pungent and fiery, seasoned with red chile flakes or whole chiles. But historical versions were not spicy. </p>
<p>Early records of kimchi do not mention garlic or chile peppers. In fact, hot chiles, now a standard ingredient in kimchi, are a New World crop. They were unknown in Korea until the early 17th century when they were introduced to East Asia by Portuguese traders.</p>
<p>The first mention of chiles in Korea is found in an encyclopedia published in 1614 [source] and kimchi with chili peppers was described in a book on farm management.</p>
<p>However, it was not until the 19th century that the use of chile peppers in kimchi was widespread. The recipes from the early 19th century closely resemble today’s hot and spicy kimchi [<a href="https://en.wikipedia.org/wiki/Kimchi" rel="noopener" target="_blank">source</a>].</p>
<p>A 1766 book describes kimchi varieties made with different ingredients, including chonggak-kimchi (made with chonggak radish), oi-sobagi (made with cucumber), seokbak-ji (made with jogi-jeot, salted seafood), and dongchimi (Korean radish, napa cabbage, scallions, pickled green chile, ginger, Korean pear and watery brine).</p>
<p>Napa cabbage, the key ingredient in most popular modern kimchi, was introduced to Korea from China only at the end of the 19th century [<a href="https://en.wikipedia.org/wiki/Kimchi" rel="noopener" target="_blank">source</a>].</p>
<p>The basic modern recipe came together: a powerful punch of napa cabbage, scallion (green onion), fish sauce, red pepper flakes, rice flour, salt, ginger, radish, carrot, and garlic, fermented kimchi in onggi (a clay pot) is loved by many around the world [<a href="https://mashable.com/article/google-doogle-kimchi" rel="noopener" target="_blank">source</a>].<br />

<strong><font color=#800517>Modern Kimchi</font></strong> </p>
<p>Considered the national dish of Korea, kimchi is eaten as a side dish as well as incorporated into recipes. </p>
<p>Given regional preferences and ingredients, there are more than 200 types of kimchi in Korea [<a href="https://www.sciencedirect.com/science/article/pii/S2352618115000451" rel="noopener" target="_blank">source</a>].</p>
<p>“Kimchi season” spans November and December, the time when kimjang (kimchi curing) takes place in preparation for winter. </p>
<p>During this time, family members and neighbors gather in each other’s kitchens to cook together, trade recipes, and share stories. Kimjang is meant to create moments of joy and encourage living in harmony with nature.</p>
<li>During kimjang, cabbage is pickled by cutting it into smaller pieces, soaking it in brine overnight, and adding salt.</li>
<li>Next, yangnyum (radish coated in chili powder) is mixed with ingredients such as scallions (green onions), <a href="https://en.wikipedia.org/wiki/Filipendula_vulgaris" rel="noopener" target="_blank">dropwort</a>, mustard leaves, ginger, garlic, and fermented shrimp or anchovies.</li>
<li>Finally, the pickled cabbage is stuffed or mixed with the yang yum and stored away to ferment until eating [<a href="https://www.google.com/doodles/celebrating-kimchi" rel="noopener" target="_blank">source</a>].</li>
<p>&nbsp;<br />
The tradition of making and sharing kimchi is listed as an Intangible Cultural Heritage by Unesco that “reaffirms Korean identity” [<a href="https://www.bbc.com/travel/article/20201217-how-kimchi-rekindled-a-decades-long-feud" rel="noopener" target="_blank">source</a>].”</p>
<p>Kimchi is stored in large clay pots or jars. Storing them in the family refrigerator meant there was little space for anything else. </p>
<p>Hence, many Korean households even have a separate kimchi refrigerator [<a href="https://www.google.com/doodles/celebrating-kimchi" rel="noopener" target="_blank">source</a>].</p>
<p>Beyond Korea, kimchi is a terrific fusion food, pairing well with everything from eggs to sandwiches to meat to tacos. </p>
