<li>12 asparagus, trimmed of their woody bases</li>
<li>3 drops of rapeseed oil</li>
<li>2 pinches of salt</li>
</ul>

<p>For the rapeseed mayonnaise</p>

<li>2 egg yolks</li>
<li>2 tsp of Dijon mustard</li>
<li>500ml of rapeseed oil</li>
<li>1/2 lemon, juiced</li>
<li>Salt</li>
<li>Pepper</li>
</ul>

<h3>Method</h3>
<p>1. For the mayonnaise, place the mustard, egg yolks and lemon juice in a food processor and whizz on a high setting. Turn the processor down to a low setting and slowly add the rapeseed oil – being careful to ensure the mixture does not split.2. When all the rapeseed oil has been added, turn off the food processor and pour the mixture into a small bowl. Season to taste and transfer to the fridge until needed.</p>
<p>3. Put the asparagus in a large bowl. Add a few drops of rapeseed oil and 2 pinches of salt, mix so that the asparagus is fully coated.</p>
<p>4. As soon as the barbecue is ready, place the asparagus onto the grill until well coloured but not black – they should still have a crunch to them. Serve with the rapeseed mayonnaise.</p>
<p>Serves 6<br />

<ul>
<li>160 g feta cheese</li>
<li>200 g tomatoes</li>
<li>500 g fresh spinach</li>
<li>1 onion</li>
<li>4 tbsp rapeseed oil</li>
<li>550 ml soy milk</li>
<li>250 ml vegetable stock</li>
<li>½ tsp chilli oil</li>
<li>4-5 tsp cornflour</li>
<li>8 tbsp cold water</li>
<li>200 g fresh green lasagne sheets</li>
</ul>

<h3>Method</h3>
<p>1. Grate the feta cheese roughly on a cheese grater. Cut the tomatoes into 0.5 cm slices.</p>
<p>2. Wash the spinach and remove the stalks. Peel the onion and chop finely.</p>
<p>3. Heat a frying pan, add the oil and sweat the onion until transparent. Add the spinach and cook for 2-3 minutes. Season with salt and pepper.</p>
<p>4. Bring soy milk, vegetable stock and chilli oil to the boil. Mix the cornflour with the cold water, add to the liquid and cook for about 1 minute until it thickens.</p>
<p>5. Assemble the lasagne in a 15 x 22 cm gratin dish: 200 g sauce; a layer of pasta; half of the spinach and half of the feta cheese; a layer of pasta; 300 g sauce, the remaining spinach and the tomato slices; a layer of pasta, followed by the remaining sauce and feta cheese.</p>
<p>6. Prick the lasagne a few times with a sharp knife (this prevents the lasagne from inflating while cooking). Bake in a preheated oven at 180 ºC for 25-30 minutes.</p>

In addition to themed party-ware, napkins and cups, plastic platters and dishes are great for repeated use and <a href="http://www.partypieces.co.uk/summer-party/summer-party-themes/eco-dining.html">bamboo tableware</a> is an eco-friendly choice as well as hardy enough to hold generous portions.</p>

The oven is a great back-up, being useful for starting off the cooking of meats such as chicken, to ensure they are cooked through, as well as keeping cooked foods warm. Have plenty of salads and sides which you can prepare in advance, and keep guests cool with jugs of Pimm’s, cans of soft drink and bottles of beer from a cooler bin. For dessert, a pile of meringues topped with raspberries, strawberries and cream can’t be beaten and is easy to assemble.</p>
