It's been tough.  I should have never had the gluten &lt;i&gt;free for all&lt;/i&gt; that was December.  Getting back on track has been a little bit easier with a couple great recipes that I've found recently.&lt;br /&gt;

This is a new favorite!  &lt;br /&gt;
&lt;br /&gt;
I recommend using a &lt;a href="http://www.amazon.com/gp/product/B00046YFHE/ref=as_li_ss_tl?ie=UTF8&amp;amp;tag=theyouandther-20&amp;amp;linkCode=as2&amp;amp;camp=1789&amp;amp;creative=390957&amp;amp;creativeASIN=B00046YFHE"&gt; Programmable Probe Thermometer&lt;/a&gt;&lt;img alt="" border="0" height="1" src="http://www.assoc-amazon.com/e/ir?t=theyouandther-20&amp;amp;l=as2&amp;amp;o=1&amp;amp;a=B00046YFHE" style="border: none !important; margin: 0px !important;" width="1" /&gt;.&amp;nbsp; You can also find them at Target with the kitchen gadgets.&amp;nbsp; The original recipe said to leave in the turned off oven for 2 hours....but because I was using the thermometer, I knew my roast was ready after only 35 minutes.&lt;br /&gt;

&lt;span style="font-size: large;"&gt;&lt;b&gt;Eye of Round with Horseradish Cream&lt;/b&gt;&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-size: large;"&gt;&lt;b&gt;&lt;span style="font-size: x-small;"&gt;adapted from &lt;a href="http://www.myrecipes.com/recipe/eye-of-round-with-horseradish-cream-10000001732961/" target="_blank"&gt;My Recipes&lt;/a&gt;&lt;/span&gt; &lt;/b&gt;&lt;/span&gt;&lt;br /&gt;
&lt;br /&gt;
1 package of cream cheese, softened&lt;br /&gt;
2 tablespoons prepared horseradish&lt;br /&gt;
2 teaspoons Dijon mustard&lt;br /&gt;
1 cup dry red wine&lt;br /&gt;
1/2 cup butter, melted&lt;br /&gt;
1 (4 pound) eye of round roast&lt;br /&gt;
1 tablespoon salt&lt;br /&gt;
1 teaspoon pepper&lt;br /&gt;
1/2 teaspoon garlic powder&lt;br /&gt;
&lt;br /&gt;
Combine the cream cheese, horseradish and mustard.&amp;nbsp; Stir until smooth, cover and chill.&lt;br /&gt;
&lt;br /&gt;
Combine wine and butter in large bowl or a zip lock bag.&amp;nbsp; Add the roast.&amp;nbsp; Cover the bowl with a lid or saran wrap and chill for 24 hours, turning occasionally.&lt;br /&gt;
&lt;br /&gt;
Preheat oven to 500 degrees.&lt;br /&gt;
&lt;br /&gt;
Remove roast from the marinade and discard the marinade. Place the roast in a foil lined 13 X 9 pan.&amp;nbsp; Combine the salt, pepper and garlic powder in bowl, then rub on the roast.&lt;br /&gt;
&lt;br /&gt;
Bake uncovered at 500 degrees for 20-30 minutes.&amp;nbsp; Turn the oven off and do not open the door until your roast reaches 145 degrees (for medium rare) or 160 degrees (for medium).&amp;nbsp; This can take up to 2 hours but my roast only took 35 minutes.&lt;br /&gt;
&lt;br /&gt;

&lt;/div&gt;&lt;div style="text-align: center;"&gt;I did a little bit of research before going to &lt;span style="font-size: large;"&gt;Two Rivers Coffee&lt;/span&gt;.&amp;nbsp; I knew that they had high quality small batch coffee offerings.&amp;nbsp; This delighted me!&amp;nbsp; I love trying new coffee and know that it all tastes different depending on how it's grown and where it comes from.&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;br /&gt;

&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;I started with the San Sebastian coffee from Colombia and what I think was a blackberry scone.&amp;nbsp; I arrived early so that I could down a pastry before my detoxing friend showed up.&amp;nbsp; I didn't want to eat it in front of her.&amp;nbsp; I'm so considerate! &lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;The coffee was full bodied and didn't need ANY cream.&amp;nbsp; I loved the cup it was served in....with a high backside so that I could breath in the vapors.&amp;nbsp; Each cup of coffee is brewed to order in a clover machine.&amp;nbsp; They weigh the coffee beans instead of measuring them.&amp;nbsp; It's very scientific and exact!&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;Denise arrived and went with a white tea so that she wouldn't cheat.&amp;nbsp; She is has amazing willpower!&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;She started talking to Eric (who we later found out owned the place) about different coffee pots because she wanted to get a gift for her coffee-obsessed husband.&amp;nbsp;&amp;nbsp; Eric showed us some of what he has in the store and he offered to show us how the Siphon Coffee brewing works.&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;I was really excited about this because two years ago, I went to a Siphon Bar in Salt Lake City &lt;i&gt;who shall remain nameless &lt;/i&gt;and had a fabulous cup of coffee there.&amp;nbsp; The reason that I won't tell you where I went...is because the guy was condescending and rude.&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;Eric was so excited to show us the Siphon and let us take pictures.&amp;nbsp; He explained each step...I felt like I was in coffee school!&amp;nbsp;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;&lt;br /&gt;

My family came from Sweden and Norway, they settled in Northern Minnesota in the early 1900s. There is very little about the Christmas of my childhood that resembles what they would have had in the old country.  Only lefse.  I love lefse!&lt;br /&gt;

*Makes about 10 hot chocolate balls&lt;br /&gt;
&amp;nbsp;&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;b&gt;12 ounces semisweet chocolate chips (about 2 cups)&lt;br /&gt;
1 cup heavy cream&lt;br /&gt;
1 tablespoon sugar &lt;br /&gt;
1/8 teaspoon salt&lt;/b&gt;&lt;br /&gt;
&amp;nbsp;&lt;/div&gt;&lt;div style="text-align: center;"&gt;In a plastic bowl, combine all of the ingredients. Microwave for one minute intervals, stirring often, until the mixture is combined and very smooth and silky. Be extra careful not to overheat as the chocolate can seize. The trick is to stir often since the mixture will blend together even when it looks like the chocolate chips haven't melted completely.&lt;br /&gt;
&amp;nbsp;&lt;/div&gt;&lt;div style="text-align: center;"&gt;Let the mixture cool for about 10 minutes at room temperature. Cover the bowl with plastic wrap and place in the refrigerator until the mixture is firm and scoopable, about 2-3 hours. Scoop out about 1/4-cup spoonfuls&amp;nbsp; (I used a cookie scoop) of the mixture and place them on a wax paper-lined baking sheet. My cookie scoop is about 1 1/2 tablespoons. Place the baking sheet in the refrigerator and let the mounds harden slightly, about 15-20 minutes. Roll the chilled mounds into balls and place on squares of plastic wrap.&amp;nbsp; Pull the sides of the plastic wrap over to cover the ball and place the balls in the freezer until ready to use.&lt;br /&gt;
&amp;nbsp;&lt;/div&gt;&lt;div style="text-align: center;"&gt;To make the hot chocolate: pour 1 cup milk into a microwave-safe mug. Carefully drop one unwrapped truffle hot chocolate ball in the milk. Microwave for about 2 minutes. I recently signed up for &lt;a href="http://www.greenmountaincoffee.com/" target="_blank"&gt;Green Mountains Cafe Express Coffee Club&lt;/a&gt; so that I never run out of K Cups again.&amp;nbsp; I found their prices to be comparable to the cups I buy at Target and I'm hoping this will save me money in the long run because I won't run to Target for a $12 box of coffee and then spend $100.&lt;br /&gt;

I was really excited to see what all of the buzz was about with this new line of K Cups called &lt;a href="http://www.baristaprima.com/" target="_blank"&gt;Barista Prima&lt;/a&gt;.&amp;nbsp; They are a little bit more expensive than my old standby but I don't mind for paying more for a really great cup of coffee.&amp;nbsp; This will be my weekend coffee.&amp;nbsp; Because I deserve it.&lt;br /&gt;

The website describes the Italian Roast as robust, heavy-bodies and very dark.&amp;nbsp;&amp;nbsp; The first thing that I noticed was that it is very smooth and even though I did add a little bit of half and half....it was really creamy.&amp;nbsp; It makes me want to sit in front of a fireplace with a book.&amp;nbsp;&amp;nbsp; I'm telling you....it instantly gave me a homey feeling.&lt;br /&gt;

&lt;/div&gt;&lt;div style="text-align: center;"&gt;Last week....I had a sick little boy at home and in between cuddling him and checking on him while he slept, I spent time on pinterest.&amp;nbsp; I must have pinned 500 things!&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div style="text-align: center;"&gt;I saw the pin for Homemade Chai Tea and I thought to myself....SELF, I could really go for some CHAI right now!&lt;/div&gt;&lt;div style="text-align: center;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div style="text-align: center;"&gt;I checked out the recipe and remembered that I'm a Martha Stewart Wannabe and realized that I had all of the ingredients.&amp;nbsp; Yes, I had cardamon pods and star anise.&amp;nbsp; I'm a foodie!&amp;nbsp; I save jelly jars and they were the perfect containers because then they are easy to share with friends.&lt;/div&gt;&lt;br /&gt;

&lt;b&gt;Homemade Chai Concentrate&lt;/b&gt; from &lt;a href="http://tasty-yummies.com/2011/11/07/homemade-chai-tea-concentrate/"&gt;Tasty Yummies&lt;/a&gt;&lt;br /&gt;
makes approximately 4 cups&lt;br /&gt;
&lt;br /&gt;
4 1/2 cups water&lt;br /&gt;
8 bags black tea – I used orange pekoe&lt;br /&gt;
2 cinnamon sticks&lt;br /&gt;
1 vanilla bean, split in half (or 1 tablespoon of vanilla extract added at the very end)&lt;br /&gt;
1/2 cup raw cane sugar (you can add more or less depending on how sweet you like your chai)&lt;br /&gt;
1 – 3-inch section of fresh ginger, cut into pieces&lt;br /&gt;
10 whole cloves&lt;br /&gt;
8 cardamom pods&lt;br /&gt;
1/2 teaspoon freshly ground nutmeg&lt;br /&gt;
2 whole star anise pods&lt;br /&gt;
1/2 teaspoon of whole black peppercorns&lt;br /&gt;
1 teaspoon orange zest&lt;br /&gt;
1 tablespoon raw honey &lt;br /&gt;
1 small square section of cheesecloth, approximately 6″ square (if you don’t want to mess with cheesecloth, make sure you have a good strainer you can use at the end)&lt;br /&gt;
kitchen twine&lt;br /&gt;
&lt;br /&gt;
Remove the tags from the teabags and tie them all together. Prepare the spices, vanilla bean and orange zest by laying them in your cheesecloth, Leave the cinnamon sticks out to make the little pouch of spices a bit more compact. Tie the cheesecloth pouch shut with a small piece of kitchen twine. If you leave the cinnamon sticks out, just tie them together with kitchen twine.&lt;br /&gt;
&lt;br /&gt;
Add the water and sugar to a medium sized saucepan and bring to a boil over a medium-high heat. Once boiling, reduce the heat to a simmer and put in the tea bags, cheesecloth pouch and cinnamon sticks. Simmer for 20 minutes.&lt;br /&gt;
&lt;br /&gt;
Remove the pan from the heat strain the concentrate through a sieve.&amp;nbsp; At this point if you want a bit more sweetness you can add a tablespoon of honey, stir to dissolve. I don’t always do this, but it is a really nice touch. Additionally, if you didn’t use a whole vanilla bean, add your vanilla extract now. Stir to combine.&lt;br /&gt;
&lt;br /&gt;
Allow the mixture to cool before pouring it into an airtight jar or container. This amount fits perfectly into a 1-quart mason jar. Store in the refrigerator for up to one week.&lt;br /&gt;
&lt;br /&gt;
** To serve, mix 1 part concentrate with 1 part milk of your choice. Heat for a warm beverage or serve over ice for a cold drink.&lt;br /&gt;

You all really know me as &lt;a href="http://www.youngandrelentless.com/"&gt;Connie from The Young and The Relentless&lt;/a&gt; but today....I'm going to show another side of myself.  My Martha Stewart inspired self.  Except that &lt;strike&gt;bitch&lt;/strike&gt; sometimes steers me a stray.  &lt;br /&gt;

Several years ago, I tried her recipe for Marshmallows and it was a huge flop! I rarely have disasters in the kitchen but that was a huge one and it banged up my ego.&lt;br /&gt;
&lt;br /&gt;
Two years ago, I was supposed to drive to the wilds of Utah to learn to make Marshmallows.  I was so excited because I was going to be able to right a wrong.&lt;br /&gt;
&lt;br /&gt;
Then if snowed.  A LOT! &lt;br /&gt;
&lt;br /&gt;
I was unable to attend Marshmallow Making 101 with &lt;a href="http://prairiemama.com/2009/12/marshmallow-making/"&gt;Prairie Mama&lt;/a&gt; (also known as Kim).  &lt;br /&gt;
&lt;br /&gt;
So last week, I find myself in a meeting to plan my son's Kindergarten Winter Party and all of a sudden, my mouth is telling them that I will make homemade Marshmallows.  My hand tried to cover my mouth but it was too late.&lt;br /&gt;
&lt;br /&gt;
I raced home from this meeting and started searching for Kim's recipe and decided to make a test batch on Sunday to make sure that I could make them and not a fool of myself.&lt;br /&gt;

I think they turned out pretty great!&lt;br /&gt;

Homemade EASY Marshmallows&lt;br /&gt;
adapted from &lt;a href="http://www.browniepointsblog.com/2006/04/15/basic-vanilla-marshmallows/"&gt;Brownie Points&lt;/a&gt; Blog &lt;br /&gt;
&lt;br /&gt;
4 envelopes of gelatin&lt;br /&gt;
3/4 cup water&lt;br /&gt;
1 tablespoon Vanilla&lt;br /&gt;
3 cups sugar&lt;br /&gt;
3/4 cup water&lt;br /&gt;
1 1/4 corn syrup&lt;br /&gt;
1/2 tsp salt&lt;br /&gt;
Confectioners Sugar&lt;br /&gt;
&lt;br /&gt;
Line a 9X13 pan with parchment paper (or wax paper).&amp;nbsp; Spray the paper with non-stick spray.&lt;br /&gt;
&lt;br /&gt;
For the recipe you MUST have a stand mixer and a whisk attachment.&amp;nbsp; In the mixing bowl, combine the water (3/4 cup) with the vanilla&amp;nbsp; and then sprinkle the gelatin over...do not dump the gelatin in.&lt;br /&gt;
&lt;br /&gt;
Heat a saucepan over medium high heat and add the sugar, salt, corn syrup and other 3/4 cup of water.&amp;nbsp; Bring to a boil with the lid on and without stirring it.&amp;nbsp; When the mixture is boiling, remove the lid and stick your candy thermometer on the pan and cook until it reaches the soft ball stage, 234-240 F.&lt;br /&gt;
&lt;br /&gt;
With the mixer at medium speed, pour all of the syrup slowly into the mixing bowl.&amp;nbsp; The syrup is very hot so be careful!&amp;nbsp; When all of the syrup has been added....increase the speed to HIGH!&amp;nbsp; Warning: Your mixer will sound like it's about to take off and you might think it's a bout to break.&amp;nbsp; &lt;br /&gt;
&lt;br /&gt;
Whip this mixture until it is very fluffy and stiff.&amp;nbsp; This will take 8-10 minutes and will go by quickly because you're worried that your mixer is about to launch itself out the window. Pour the marshmallow into the waiting pan and smooth with an oiled up offset spatula.&amp;nbsp; This mixture now has to sit, uncovered at room temperture, taunting your family for 10-12 hours.&lt;br /&gt;
&lt;br /&gt;
When you are ready to cut your marshmallows, sprinkle a generous amount of confectioners sugar (also known as powdered sugar) over the marshmallows.&amp;nbsp; Turn the slab out onto a cutting board, peel off the paper and sprinkly more sugar. Slice with a pizza cutter or a meat cleaver.&amp;nbsp; The meat cleaver worked great for me!&amp;nbsp; You can also use cookie cutters to make fun shapes. After cutting, dip the pieces in sugar and then tap off the excess.&lt;br /&gt;
&lt;br /&gt;
This make a TON of marshmallows and will keep&amp;nbsp; for several weeks in an airtight container.&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Tips before making Marshmallows:&lt;/b&gt;&lt;br /&gt;
&lt;br /&gt;
&lt;blockquote class="tr_bq"&gt;Make sure that your children are either entertained, or duct taped to the couch before starting this. You will not be able to leave the kitchen and if they start streaking around your home...you can't stop them.&lt;br /&gt;
&lt;br /&gt;
Make sure you have used the restroom before starting this recipe because of the same reason above.&lt;br /&gt;
&lt;br /&gt;
Realize that you will have powdered sugar everywhere.&lt;br /&gt;
&lt;br /&gt;

&lt;b&gt;1 pound, boneless chicken breasts, sliced into cutlets&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;1.5 tablespoons olive oil, separated&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;1/2 teaspoon salt&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;1 tablespoon chili powder (more to taste)&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;1 large onion, diced&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;1 green bell pepper, diced&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;1 red bell pepper, diced&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;2 cloves of garlic, sliced thin&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;32 oz chicken broth&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;2 cups of water&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;2 (10oz) cans of Rotel with Green Chilies&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;3 cans black beans, drained&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;1/2 teaspoon cumin&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;1/2 teaspoon cayenne pepper&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;Salt to taste&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;Corn Tortilla strips&lt;/b&gt;&lt;br /&gt;
&lt;br /&gt;
&lt;i&gt;Garnish: &lt;/i&gt;&lt;br /&gt;
&lt;b&gt;1 lime, cut into wedges&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;Avocado, diced&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;Colby Jack Cheese, shredded&lt;/b&gt;&lt;br /&gt;
&lt;br /&gt;
Heat 1 1/2 teaspoons of oil in a soup pot over medium-high heat.&amp;nbsp; Season chicken with salt and chili powder.&amp;nbsp; Add chicken to the pot and cook, turning only once, until brown on both sides and cooked through.&amp;nbsp; Transfer to a cutting board.&amp;nbsp; When cool enough to handle, cut into chunks or shred.&lt;br /&gt;
&lt;br /&gt;
Heat a tablespoon of oil in the now empty pot and add onion, green and red peppers and garlic. Saute for 5 minutes or until soft and fragrant. Add chicken broth, water, tomatoes,&amp;nbsp; black beans and chicken.&amp;nbsp; Bring to a boil then reduce the heat to medium low. Add cumin and cayenne, salt to taste. Simmer for at least 20 minutes to meld the flavors.&amp;nbsp; I like to simmer for a couple of hours.&lt;br /&gt;
&lt;br /&gt;

&lt;br /&gt;
We tried on this on julienned zucchini and spaghetti squash and we decided that we love the zucchini which works great because it doesn't need to be cooked!&lt;br /&gt;
&lt;br /&gt;

&lt;b&gt;&lt;span style="font-size: large;"&gt;Connie's Meat Sauce&lt;/span&gt;&lt;/b&gt;&lt;br /&gt;
&lt;br /&gt;
1/2 pound lean ground beef&lt;br /&gt;
1/2 pound pork sausage&lt;br /&gt;
1 tablespoon minced garlic&lt;br /&gt;
1 onion, chopped&lt;br /&gt;
1 cans diced tomatoes&lt;br /&gt;
1 (6 ounce) cans tomato paste&lt;br /&gt;
3 bay leaves&lt;br /&gt;
1 tablespoon dried thyme&lt;br /&gt;
1 1/2 tablespoons dried oregano&lt;br /&gt;
1 1/2 teaspoons dried basil&lt;br /&gt;
1 teaspoon ground black pepper&lt;br /&gt;
1 tablespoon white sugar&lt;br /&gt;
2 cups of water &lt;br /&gt;
&lt;br /&gt;
In a large stockpot cook the ground beef, sausage, garlic, onion. Cook until beef is no longer pink. Drain into a large colander to drain grease.&lt;br /&gt;
&lt;br /&gt;
To the large sauce pot add tomatoes, tomato paste, bay leaves, oregano, basil, black pepper, sugar and stir well. Pour the meat mixture into the pot. Bring to a boil, adding water as needed. Reduce heat and cover. Simmer for 2 hours. I bought this &lt;a href="http://www.surlatable.com/product/PRO-6938/Joseph-Joseph-3-in-1-Peelers"&gt;3 in 1 Peeler&lt;/a&gt; at Sur La Table a couple weeks ago and it's become my new favorite gadget in my Paleo kitchen.&lt;br /&gt;
&lt;br /&gt;
My husband is a big fan of ribbons of Zucchini but he said he might like them more if they were julienned.&amp;nbsp; I knew there had to be a tool for that.&lt;br /&gt;

What am I saying....I love tacos!  I decided to make one of my favorite dishes....but paleo it up.  Yes. Paleo is a verb.&lt;br /&gt;

If I wasn't trying to be strict....I would go ahead and eat the corn tortilla but instead my serving will have a bed of chopped lettuce under it.  &lt;br /&gt;
&lt;br /&gt;

&lt;i&gt;Shrimp&lt;/i&gt;&lt;br /&gt;
&lt;br /&gt;
2 lb bag frozen shrimp&lt;br /&gt;
1/2 can Salsa Verde&lt;br /&gt;
1 tbsp cayenne&lt;br /&gt;
1 tsp cumin&lt;br /&gt;
1/2 tsp salt &lt;br /&gt;
&lt;br /&gt;
Thaw the shrimp, remove shells and tail and throw into a bowl.&amp;nbsp; Stir in&amp;nbsp; Salsa Verde and let sit for 30 minutes.&amp;nbsp; Add spices and stir.&amp;nbsp; Heat a deep skillet to medium heat and add 1 tbsp coconut oil.&amp;nbsp; Add Shrimp and cook, stirring around until the shrimp is pink and done.&lt;br /&gt;
&lt;br /&gt;
&lt;i&gt;Mango Salsa&lt;/i&gt;&lt;br /&gt;
&lt;br /&gt;
1 ripe mange, peeled, chopped into small pieces.&lt;br /&gt;
1 orange bell pepper, chopped&lt;br /&gt;
1 jalapeno, diced (keep seeds if you like it hot)&lt;br /&gt;
1 small red onion, diced&lt;br /&gt;
The juice of one lime&lt;br /&gt;
3 tbsp cilantro, chopped&lt;br /&gt;
Salt to taste&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
Peel and chopped the mango, chop the orange bell pepper, dice the jalapeno and red onion. Place all of the ingredients into a bowl with a lid.&amp;nbsp; Cut your lime in half and squeeze the juice in. &lt;i&gt;Try to resist having a shot of tequila.&lt;/i&gt;&amp;nbsp; Add salt and cilantro.&amp;nbsp; Stir.&amp;nbsp; Cover and refrigerate for at least an hour.&lt;br /&gt;
&lt;br /&gt;
Assemble your shrimp on a corn tortilla or a bed of chopped lettuce (if you're paleo) and add Mango Salsa and slices of avocado.&amp;nbsp;&lt;br /&gt;
&lt;br /&gt;
This dish is very delicious and satisfying! &lt;br /&gt;

I have mixed these items together several times with great success.  My husband really liked this and I can see it being a regular part of our meal plan.&amp;nbsp; Make a lot.&amp;nbsp; It makes great leftovers.&lt;br /&gt;

&lt;b&gt;Beef Curry&lt;br /&gt;
&lt;br /&gt;
1.5 pounds of ground beef (grass-fed if you're so inclined)&lt;br /&gt;
2 tablespoons Curry Powder&lt;br /&gt;
1/2 teaspoon Cayenne Pepper&lt;br /&gt;
1/2 cup coconut milk&lt;/b&gt;&lt;br /&gt;
&lt;br /&gt;
Brown your hamburger and drain off the grease if these is any.  Add the spices, coconut milk and simmer for 15 minutes.  Serve with a vegetable.  I like sliced zucchini or microwaved sweet potato.&lt;br /&gt;

&lt;b&gt;2 Portobello Mushroom Caps&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;2 Hamburger Patties&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;2 eggs&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;Salt and Pepper to taste &lt;/b&gt;&lt;br /&gt;

Brush coconut oil on the mushroom caps and broil in the oven for 7 minutes on each side.  Prepare hamburger patties.  Grill them, fry them or throw them in the oven too.  Fry the eggs...just the way you like them.  I like mine with a little bit of runny yolk.  Stack them up and serve them with a cup of sliced zucchini. &lt;br /&gt;
2 tablespoons cider vinegar&lt;br /&gt;
1 tablespoon canola oil&lt;br /&gt;
2 teaspoons finely chopped canned chipotle chile in adobo sauce&lt;br /&gt;
1/4 teaspoon salt&lt;br /&gt;
2 cups shredded red cabbage&lt;br /&gt;
1/4 cup chopped fresh cilantro&lt;br /&gt;
1 15-ounce can white beans, rinsed&lt;br /&gt;
1 ripe avocado&lt;br /&gt;
1/2 cup shredded sharp Cheddar or Monterrey Jack cheese&lt;br /&gt;
2 tablespoons minced red onion&lt;br /&gt;
4 8- to 10-inch whole-wheat wraps, or tortillas&lt;br /&gt;
&lt;br /&gt;
Whisk vinegar, oil, chipotle chile and salt in a medium bowl. Add cabbage, carrot and cilantro; toss to combine.&lt;br /&gt;
&lt;br /&gt;
Mash the beans and avocado in another medium bowl with a potato masher or fork. Stir in the cheese and onion.&lt;br /&gt;
&lt;br /&gt;
To assemble the wraps, spread about 1/2 cup of the bean-avocado mixture onto a wrap (or tortilla) and top with about 2/3 cup of the cabbage-carrot slaw. Roll up. Repeat with remaining ingredients. Cut the wraps in half to serve, if desired.&lt;br /&gt;

&lt;br /&gt;
I really enjoyed this one and I served it with half of a wrap made with turkey and Swiss cheese.  &lt;br /&gt;
&lt;br /&gt;
My husband didn't like the soup....his comment was that he felt like he was eating salsa. *Connie rolls her eyes* &lt;br /&gt;
&lt;br /&gt;
He would prefer not to see this on our table again.  Luckily, he's not in charge and I will be making it again.  Soon.&lt;br /&gt;

&lt;br /&gt;
8 cups&amp;nbsp; finely diced seedless watermelon&lt;br /&gt;
1 &amp;nbsp; medium cucumber, peeled, seeded and finely diced&lt;br /&gt;
1/2 &amp;nbsp; red bell pepper, finely diced&lt;br /&gt;
1/4 cup&amp;nbsp; chopped fresh basil&lt;br /&gt;
1/4 cup&amp;nbsp; chopped flat-leaf parsley&lt;br /&gt;
3 tablespoons&amp;nbsp; red-wine vinegar&lt;br /&gt;
2 tablespoons&amp;nbsp; minced shallot&lt;br /&gt;
2 tablespoons&amp;nbsp; extra-virgin olive oil&lt;br /&gt;
3/4 teaspoon&amp;nbsp; salt&lt;br /&gt;
&lt;br /&gt;
Mix watermelon, cucumber, bell pepper, basil, parsley, vinegar, shallot, oil and salt in a large bowl. Puree 3 cups of the mixture at a time in a food processor to the desired smoothness; transfer to another large bowl. Puree another 3 cups and add to the bowl. Puree the remaining diced mixture.
