<p>In the laboratory, glycation&#8217;s effect on living tissues was found to be identical to the process by which meat is browned when cooked at high temperatures.  Healthy proteins also turn brown in the presence of <strong>excess gulcose</strong> and become functionally impaired.</p>
<p>Scientists have confirmed that this destructive process may also occur in healthy individuals when blood glucose levels are sustained above 85mg/dL, a commonplace occurrence after a heavy meal is consumed.</p>
<p>The damage inflicted by glycation is <strong>irreversible</strong>.</p>

On a national healthy-eating index that measured compliance with U.S. dietary guidelines from 2005, the average overall diet score was only about 60 points out of 100 &#8212; &#8220;indicating Americans&#8217; diets need improvement,&#8221; writes lead author R. Bethene Ervin, who looked at data on 4,448 adults ages 20 and older who were enrolled in the National Health and Nutrition Examination Survey (NHANES) 2003-2004. Assessing for compliance with the Healthy Eating Index, or HEI-2005, which assesses specific intake of various nutritional categories, she found American adults were well below the maximum standard for whole fruits, dark green and orange vegetables, whole grains, milk, and healthy oils and fats. Scores for sodium and calories from sugars and alcohol reflected excessive intakes.</p>

Do that, and unless you have a major metabolic disorder and are extremely inactive, you will arrive at a weight that is appropriate for your age and body type.</p>
<p>But if a diet, and I am speaking of a way of eating, not specifically a weight-loss diet, is impossible to maintain because it is lacking in flavor and leaves you hungry and with cravings for certain foods, it is only a matter of time before it becomes a former diet. In the decades since the American government has advocated a low-fat diet, the obesity epidemic has exploded.</p>
<p><strong>Low Fat Is High Carb</strong></p>
<p>A low-fat diet, by definition, is inherently a high carbohydrate diet. That&#8217;s because when you restrict fat, you are restricting protein as well, since meat, poultry, fish, cheese, and most other forms of protein contain good amounts of fat.</p>
<p>What you are left with, then, is carbohydrates, which encompasses an array of foods. (Most foods contain some combination of fat, protein and carbohydrates.) Low-glycemic (&#8220;good&#8221;) carbohydrates are typically whole foods like leafy green vegetables, brown rice, lentils, raspberries, and hundreds of other vegetables, fruits and whole grains.</p>
<p>Then there is the endless array of high-glycemic (&#8220;bad&#8221;) carbohydrates that beckon from the supermarket shelves, including the processed, refined offerings such as cookies, chips, syrupy drinks, white bread and so on.</p>
<p>By definition, high glycemic foods have a dramatic impact on blood sugar levels within a couple of hours after consumption. In contrast, low glycemic foods raise blood sugar levels more slowly and moderately. In addition, dairy products contain carbohydrates along with fat and protein.</p>
<p><strong>Most Fats Are Fine</strong></p>
<p>When you control carbohydrates, you don&#8217;t have to keep track of how much fat — other than trans fats, known as hydrogenated or partially hydrogenated oils, which are to be avoided at all costs — you are eating.</p>
<p>That means that you can enjoy a lamb chop, salmon, olive oil on your vegetables and in your salad dressing and whipped cream on fresh raspberries, without feeling guilty. In fact, all these fats carry flavor, which makes food more satisfying.</p>
<p>When you eliminate most fat from your diet, you yearn for flavor, which can often lead to overeating. <p>Joshua D. Lambert and his associates utilized a breed of mice susceptible to the development of diet-induced obesity, type 2 diabetes and atherosclerosis.  The mice were allowed to eat as much as they wanted of a high-fat diet, and half were supplemented with EGCG.  After six weeks, mice that received EGCG-enhanced diets were found to have gained weight 44% less rapidly than those tht did not receive the compound. The group that received EGCG also had a 29.4% increase in fecal lipids, indicating a reduction in fat absorption.  In an in vitro experiment, epigallocatechin-3-gallate (EGCG) was shown to inhibit the pancreas&#8217; production of lipase, an enzyme that breaks down fat.</p>

Due to increased press coverage, the public is becoming more aware of the dangers of BPA in common plastic items such as water bottles, however, most people are not aware that BPA is also commonly used in food can linings.  A new study from researchers at Harvard Medical School shows that canned soup delivers high levels of BPA.</p>
<p>Karin B. Michels, from Harvard School of Public Health (Massachusetts, USA), and colleagues assessed the urinary bisphenol A (BPA) levels of 75 healthy men and women, ages 18 years and older, who consumed homemade soup for five consecutive days, and then ate canned soup for another five days in a row. Urinary levels of BPA averaged 1.1 mcg/L during the homemade soup segment, but reached 20.8 mcg/L during the canned soup segment.</p>
<p>&#8220;The absolute urinary BPA concentrations observed following canned soup consumption are among the most extreme reported in a nonoccupational setting,&#8221; the researchers wrote in a research letter published in the Nov. 23/30 issue of the Journal of the American Medical Association.</p>
<p>Observing that: “The effect of such intermittent elevations in urinary BPA concentrations is unknown,” the team urges that: “Even if not sustained, [it] may be important, especially in light of available or proposed alternatives to [BPA-containing] epoxy resin linings for most canned goods.&#8221;</p>

2 quart chicken stock<br />
1 pound white beans, soaked overnight<br />
1 bouquet garni<br />
12 ounces small diced cooked chicken<br />
1/4 teaspoon cayenne pepper<br />

<p>Directions<br />
In a stock pot, render the bacon until crispy, remove the bacon. Saute the onions, celery, shallots, and garlic in the bacon fat for 2 to 3 minutes. Add the stock, beans and bouquet. Bring up to a boil and reduce to a simmer. Allow to cook for about 2 hours or until the beans are tender. Add the diced chicken meat. Season with cayenne, salt and black pepper. Garnish with Pecorino</p>
<p><strong>Butternut Squash Soup</strong><br />

<p>Ingredients<br />
1 (2 to 3 pound) butternut squash, peeled and seeded<br />
2 tablespoons unsalted butter<br />
1 medium onion, chopped<br />
6 cups chicken stock<br />
Nutmeg<br />
Salt and freshly ground black pepper</p>
<p>Directions<br />
Cut squash into 1-inch chunks. In large pot melt butter. Add onion and cook until translucent, about 8 minutes. Add squash and stock. Bring to a simmer and cook until squash is tender, about 15 to 20 minutes. Remove squash chunks with slotted spoon and place in a blender and puree. Return blended squash to pot. Stir and season with nutmeg, salt, and pepper. Serve.</p>

It is interesting to note that the incidence of neurodegenerative diseases among people living in the Asian subcontinent is much lower than in North America, thus some researchers posit the influence of lifestyle factors; for example, the those residing in the Asian subcontinent regularly consume spices. Bharat Bhushan Aggarwal, from the University of Texas MD Anderson Cancer Center (Texas, USA), and colleagues submit that extensive research over the last 10 years indicates that nutraceuticals derived from such spices as turmeric, red pepper, black pepper, licorice, clove, ginger, garlic, coriander, and cinnamon target inflammatory pathways, and thereby may prevent neurodegenerative diseases.</p>
