HOT CHOCOLATE VS. HOT COCOA

Did you know that there’s actually a difference between hot chocolate and hot cocoa? Whaaat? It’s true, I kid you not. Even though the two terms are often used interchangeably they’re technically not the same thing. 

Hot cocoa is a powdered consistency that’s made of cocoa powder, sugar, and milk powder, and is usually sweeter, thinner, and lighter in chocolate flavor. Whereas actual hot chocolate is made by melting real chocolate that’s finely shaved or chopped, resulting in a thicker drink that’s stronger in chocolate flavor and usually less sweet.

Crazy, right? I was taught to call the cringe-worthy, pre-package, lumpy hot cocoa mix, of my childhood, “hot chocolate”, and I was not at all a fan of the taste so I had blinders on to anything “hot chocolate” related most of my life. But real hot chocolate is friggin’ delicious!! 

HOW YOU CAN MAKE HOT CHOCOLATE BOMBS

First, you need good quality chocolate. Ideally, you want to use couverture chocolate and temper it. Tempered chocolate is shiny, won’t melt on your fingers, and snaps when broken. Whereas untempered chocolate is dull, melts easily when touched, and has zero snap.

I used fancier chocolate for my final version because it’s dairy-free, but when I was testing I just used Aldi’s dark chocolate chips and they worked pretty well. Aldi’s chocolate chips are surprisingly phenomenal and pretty clean ingredient-wise if you can do dairy. 

A lot of people are intimidated by having to temper chocolate, I personally don’t find it that difficult. Low and slow over a double boiler and using the “seeding method“, if need be, is what works for me with the type of chocolate I’ve used.

If tempering chocolate isn’t your thing you can use melting wafers instead, however, I feel that they definitely do not taste as good as real chocolate does. 

Second, you’ll need a food-grade silicone mold to make the shells. While you can certainly choose different shapes for different holidays or occasions, I found that the sphere mold is the best option for beginners, as well as for my fellow neurodiverents that may lack patience like myself. 

For one sphere mold, I use a 1/2 cup of chocolate, which makes six shells and gives you three finished bombs. If you plan to use two silicone sphere molds at the same time, you would melt 1 cup of chocolate, which will give you twelve shells and six finished bombs. Melting the chocolate a 1/2 cup at a time will work better though if you live in colder climates, as the chocolate may start to set more quickly. 

Third, determine how you’ll spread the melted chocolate in the mold. Some people can do it with just a spoon or a spatula, which I’ve tried but it wasn’t very ADHD friendly. What works best for me is using a decorating brush, I feel that it gives better control than a spoon or spatula does. 

Fourth, you need the ingredients to make the filling. This is definitely customizable based on your preferences, but for the base filling, you will need: dark chocolate, semi-sweet chocolate, vanilla powder, espresso powder, salt, and marshmallows.

DON’T WANT TO MAKE YOUR OWN?

If you don’t have the time or just don’t want to make your own, no worries. There are MANY options available for buying bombs that are already made online, just search “hot chocolate bombs near me“. I would recommend getting a homemade bomb from a local baker or off of Etsy from a reputable seller.

However, if you want to pick them up locally or have them delivered quickly, here are a few options you could check out:

PACKAGING FOR BOMBS

Next, you’ll need to decide how you want to package the bombs.

Cupcakes liners work great for holding the bombs. I used zebra print ones, they’re definitely cheaper at Party City but Amazon wins for convince and free shipping. 

To keep things simple or if you’re planning to pass them out to different people on Valentine’s Day, I recommend placing the bomb in a tall, cellophane treat bag. You could also package them in cupcakes boxes too.

Treat bags usually come with twist ties to close the bags but I like to add ribbon as well. And, like I always say, glitter ribbon is messy but (almost) always worth it!

To finish it off, I designed a tag with directions that can be attached to your bombs. You can download it to use below!

I used gold baker’s twine, from Target, to attach the tags, but I’m not super crazy about their baker’s twine because the gold starts to come unraveled the second it’s cut anywhere. The solution I found to this is to tie little knots at each end of a cut.

MAKE BOMB GIFTS

You could also place a packaged bomb into a glass mug as a super cute gift! Glass mugs are what I like to use when gifting bombs so that the experience of the bomb melting can be fully enjoyed by all who are present. I also recommend that glass mugs be double-walled so that they are less fragile.

If you want to take your gift a step further, I gotchu covered. All you need is a gift box, cute mugs, crinkle paper shreds or tissue paper, spoons, and optional mini bottles of booze. Again, double-walled glass mugs are what I like to use when gifting bombs.

I wanted to keep it neutral colors but feel free to bring color in with red or pink ribbon if you’re using them for Valentine’s Day. I also did two versions, one with the words “Get Bombed” slightly faded and one with them solid.

The Best Hot Chocolate Bomb

Hot Chocolate Bombs are delicious, easy to make, and perfect for gifting to your fav people! We’re skipping the cocoa powder filling though and using actual chocolate—so much better!

Chocolate Bomb Shell

• 1/2 cup dark chocolate*

Chocolate Bomb Filling

• 2 ounces dark chocolate* 
• 3 ounces semi-sweet or milk chocolate
• 1/2 teaspoon expresso powder (optional)
• 1/4 teaspoon vanilla powder
• 1/8 teaspoon salt

Chocolate Bomb Shell

1. Using the double boiler method, melt 1/2 cup of dark chocolate on low heat. To temper the chocolate properly, make sure to keep the temperature below 97 degrees.

2. Once the chocolate is melted, stir in the refined coconut oil. 

3. Add a half tablespoon of chocolate to each sphere and spread evenly.

4. Place in fridge for five to ten minutes or until chocolate is set.

5. Then repeat the process, adding only about a half tablespoon of chocolate to each sphere this time. Focus mainly on making sure the rim at the top is thicker than the rest of the sphere. 

Chocolate Bomb Filling

1. Add all the ingredients to a food processor and pulse until chocolate is finely chopped. 

Assembling the Bombs

1. On a gently warm plate or baking pan, twist each sphere until the edge is smooth.

2. Fill three of the spheres with 3-4 tablespoons of the filling mixture and as many marshmallows as you would like. 

3. Then press together the tops and bottoms of the spheres. 

4. Decorate the tops with additional melted chocolate and sprinkle with mini chocolate chips and or chopped chocolate or candy. 

5. Let sit until chocolate has set, then store in an air-tight container or package each bomb individually!

*Ideally you want to use a chocolate that is 60% cacao or more.

These cookies are like soft, pillowy little cakes with a slightly crisp bottom. Once they’re topped with the chocolate and vanilla glaze they are magic and will quickly become one of your new favorites.

I used almond flour to create a lower-carb version of these amazing, cake-like cookies, and vegan sour cream to add moisture and helps to achieve the soft, amazing cakeyness. Perfection. I also added a few red star sprinkles for this batch so that they had T-Swift “Feeling 2022” vibes. 

We had a low key NYE with a few friends and ended up making an impromptu “music video“. There was no plan, we just kind of went with it but we had a lot of fun with it, and I’m really happy with how it turned out. I was trying super hard to channel Taylor Swift’s cute, sexy vibes from her “22” video but I couldn’t hide my inner weirdness haha! Enjoy!

Black and White Cookies (grain-free, dairy-free)

These black and white cookies are gluten-free, grain-free, and dairy-free, yet taste like the real thing! They're perfect for holidays, any celebration, or even just because!

Cookie Ingredients:

• 1 1/4 cup almond flour, (well-packed)
• 3/4 cup cassava flour
• 1 teaspoon baking powder
• 1 teaspoon sea salt, (fine)
• 1/4 teaspoon baking soda
• 1/3 cup vegan sour cream
• 2 teaspoons vanilla extract
• 1 teaspoon lemon zest, (finely grated)
• 1/4 teaspoon almond extract
• 1/4 cup vegan butter, (room temp)
• 3/4 cup maple sugar or coconut sugar
• 1 large egg + 1 egg yoke, (room temp)

Vanilla Glaze Ingredients

• 1 cup powdered sugar
• 2 Tablespoons water
• 1/4 teaspoon almond extract

Chocolate Glaze Ingredients

• 1 cup powdered sugar
• 2 Tablespoons cocoa powder
• 2 Tablespoons water
• 1/2 teaspoon vanilla extract

Cookie Instructions

1. Preheat oven to 375 degrees.

2. In a medium bowl, whisk together almond flour, cassava flour baking powder, baking soda, and sea salt. Set aside.

3. In another medium bowl, mix together sour cream, milk, vanilla, lemon zest, and almond extract until well combined and set aside.

4. Using a stand mixer with the paddle attachment, on speed 2, beat together butter and sugar until light and fluffy, for about 5 minutes. Then beat in eggs, one at a time, until combined. Scrape the sides of the bowl as needed.

5. Reduce to low speed and beat in 1/2 of the flour mixture, then 1/2 of the sour cream mixture. Repeat until both mixtures are incorporated, scraping sides of the bowl as necessary. 

6. Scoop about 3 tablespoons of batter onto prepared baking sheets, spacing them about 2 inches apart. Bake for 6 minutes, then rotate the baking sheets and continue baking another 6 to 9 minutes, until the cookies have firm firmed up and spring up slightly when pressed in the middle. You want the bottoms to be a light golden brown. 

7. Let cookies cool for at least 15 minutes before moving them to a wire rack. 

8. While the cookies cool, make the vanilla and chocolate glazes.

Vanilla Glaze Instructions

1. Add powder sugar to a medium bowl and slowly stir together while slowly adding water a little at a time until smooth. Then stir in almond extract. You want the glaze to be thick yet spreadable, if it's too thin it will be more transparent and will also run off the cookie. 

2. Flip each cookie over and spread the glaze over half of the bottom of the cookie, spreading to edges. Place on a wire rack to set while working on the chocolate glaze.

Chocolate Glaze Instructions

1. In a medium bowl, whisk together powder sugar and cocoa powder. Slowly stir together while adding water a little at a time until smooth. Then stir in vanilla extract. You want to the glaze to be thick yet spreadable, if it's too thin it will run off the cookie. 

2. Glaze bare half of each cookie, spreading to edges. Place on a wire rack and let set before serving.

Storing Cookies

1. Store glazed cookies in the fridge for 3-5 days.

2. You can also store any leftovers in the freezer for up to 3 months. Let set out for at least 15 minutes before eating.

I’m loooving this idea because one, it’s, literally, perfect since Taylor’s new version of Red just came out last month, and two, because I feel like we need other options for NYE other than the basic black, gold, silver, and white options. PACKAGING I USED:

I’m always super picky with every detail when it comes to packaging, but I’m super happy with how everything came together. I used white treat boxes, that I had leftover from Booze Berrying people in October, and also white and gold striped boxes, that I found at Michael’s, for the best cranberry bliss bars ever.

I found the cute glass cookie jar in the seasonal section at Target and used it for snowball cookies. The festive, little Christmas tree tins were also from Target and I used those for candied pecans.

The white boxes I tied with a wide, red satin ribbon and a thinner gold, glittery ribbon. Glitter ribbon is super messy, in case you didn’t know, but always worth it in my opinion! On the gold and white striped boxes, I used a thin, black satin ribbon, and I used a sheer damask ribbon for the cookie jars. And I wrapped gold and white bakers twine around the Christmas tree tins.

It was always my favorite around the holidays & the combination of cranberry, orange, & white chocolate is magical. And a clean version really takes them to the next level. The base is a brown sugar blondie, paired with a tangy cream cheese frosting with hints of orange, and topped with dried cranberries & white chocolate. So much amazing flavor!!

The Best Ever Cranberry Bliss Bars

A paleo, copycat version of Starbucks’ CRANBERRY BLISS BARS that’s lower carb, less sugar, grain & dairy-free, yet still taste like the real deal—if not better!!

COOKIE BAR INGREDIENTS:

• 1 cup vegan butter, palm shortening, or grass-fed butter
• 1 cup organic brown sugar, (packed)
• 2 eggs + 1 yoke, (room temperature )
• 2 teaspoon vanilla extract
• 1 teaspoon orange zest
• 1 1/2 cups almond flour
• 1/2 cup cassava flour
• 1 teaspoon baking powder
• 1/2 teaspoon ground ginger
• 1/2 teaspoon teaspoon salt
• 1 cup white chocolate chips
• 3/4 cup dried cranberries

FROSTING INGREDIENTS:

• 8 ounces vegan cream cheese, (softened)
• 1/2 cups powdered sugar
• 1/2 teaspoon orange zest
• 1/2 teaspoon vanilla extract
• 1/2 teaspoon lemon juice

GARNISH INGREDIENTS:

• 1/3 cup dried cranberries, (roughly chopped)
• 1-2 ounces white chocolate, (melted)

COOKIE BAR INSTRUCTIONS: 

1.  Preheat oven to 350. Line a 9×13 pan with parchment paper and set it aside. 

2. Mix together dry ingredients: almond flour, cassava flour, ground ginger, baking powder, and salt; then set aside.

3. In a separate bowl, cream together brown sugar and butter for 2 minutes, then add eggs and mix until combined. Mix in vanilla and orange zest.

4. Add the dry ingredients to the wet ingredients and mix until well combined. Fold in white chocolate chips and dried cranberries.

5. Spread batter in pan and bake for 20 to 25 minutes.

FROSTING INSTRUCTIONS:

1. Slowly mix together cream cheese and powdered sugar together for about 30 seconds, then add the rest of the frosting ingredients to a bowl and beat for 2-3 minutes. 

ASSEMBLY INSTRUCTIONS:

1. Let bars cool completely, this will take several hours. I usually let them sit overnight before assembling.

2. Then spread the frosting over top and cut into bars.

3. Sprinkle with dried cranberries and then drizzle with melted white chocolate.

OXO BAKER’S DUSTING WAND:
This is another great tool for perfectionist or neat-freak bakers, I love mine! It gives better control for sprinkling sugar, spices, or flour. It’s also much less messy than using a sifter, in my opinion.

EXTRA-LARGE FROSTING TIP SET:
These are my three favorite frosting tips and are pretty much the only ones I use. It never hurts to have extras on hand if you are working with multiple flavors of frosting because stopping to clean and switch frosting tips and bags is super not fun.

BAKING DISHES WITH BAMBOO LIDS:
This set of three stoneware baking dishes with bamboo lids is beyond perfect for any baker! The lids can be used to keep hot dishes warm or to protect foods in the fridge, and they can also double as trivets!

WILTON CERAMIC CANDY MELTING BOWLS:
I live in cold as sh*t Michigan and these are great for retaining the heat of melted chocolate longer, which makes them perfect if you live in cold climates or for dipping strawberries or other fruit that may cool melted chocolate more quickly.

6 ripe kiwis (about 1 lb)
1/3 cup dark chocolate chips
1/2 tsp coconut oil (refined)
Flake salt for garnishing (optional)

INSTRUCTIONS:

1⃣ MELT the chocolate on low heat using the double boiler method OR in 15-second intervals in the microwave.

2⃣ SLICE kiwis into & DIP or DRIZZLE with melted chocolate. I store leftovers in the freezer.

PRINTING TIPS:

TO USE AS TAGS: Print them on heavy card stock or matte photo paper. I prefer matte photo paper because the colors are more vibrant, however, it is a little more expensive.

TO USES AS LABELS: Print on full sheet matte sticker paper (8.5″x11″).
