Monster Trail Mix Recipe

My boys love trail mix, they always eat the goodies out first. I had a lot of the ingredients on hand, so I didn't really

follow a recipe for the mix.

{Not pictured in the top picture but in the mix are Almonds. }

Here is the recipe that I usually follow if you are looking for actual amounts to include. :)

4 cups unsalted peanuts
1 cup milk chocolate chips
1 cup raisins
1 cup dried cranberries
1 cup M&M's
1 cup Almonds

Mix all ingredients together and store in an air tight container.

Snow Day!!

Finally!! We moved to Minnesota expecting lots of snow and finally the LAST day of February we got out FIRST real snow!!

AND best of all, NO SCHOOL!!! :)

My boys had so much fun playing out in it today {I did too}.

We made a snowman, worked on a snow fort and took advantage of our hill on the side of our house where we

used the sleds and Snowboard.

I loved having my kids home today and being snowed in.

I just wish I could have talked the hubby into

skipping working and joinging us. :)

I have am just learning to use Excel and make spreadsheets, I am not very techy at all so this has been a challenge for me! But I am so inspired by all the cleaning schedules, blog schedules, etc that everyone shares out there in bloggyland.

One of my favorite places to go for inspiration is I Heart Organizing, I used her Blog Idea Printable for my inspiration and created one of my own.

I created a Weekly BLOG Planner and a Awesome BLOG Idea Spreadsheets, they didn't take me as long as I thought.

And, this has opened up a whole new world to me of

Lemon Bread

I don't think it's any secret that I love Lemon. It can be bread, pie, water, curd, chicken, or just about anything. So, when I came across this recipe over at Glorious Treats, I had to try it!

This bread is so moist and has great flavor and the glaze on top is ohhh, sooo yummy!!

The recipe actually made several mini loafs so I packaged a few up and shared them with some friends. The label that I used is a free printable that I found over at It's a Crafty Life.

Lemon Bread Recipe {Source}

~ For the Lemon Cake ~

1 1/2 cups cake flour

1 1/2 cups all purpose flour

2 teaspoons baking powder

1/4 teaspoon baking soda

1 teaspoon salt

2 1/4 cups sugar

8 large eggs, at room temperature

1/4 cup grated lemon zest (from about 4 lemons)

1/4 cup fresh lemon juice

2 cups (4 sticks) unsalted butter, melted and cooled

1/2 cup sour cream, at room temperature

2 teaspoons pure vanilla extract

~ For the Lemon Syrup ~

1/3 cup fresh lemon juice

1/3 cup sugar

~ For the Lemon Glaze ~

2 cups confectioners' sugar

4-6 Tablespoons fresh lemon juice

Making the Lemon Cakes (Recipe yields two 9"x5" loaves)

Preheat oven to 350*F. Spray sides and bottom of pans with non-stick cooking spray. Line bottom of pans with parchment paper and spray the paper as well.

Sift both flours, baking powder, baking soda and salt together in a medium bowl.

Blend the sugar, eggs, lemon zest and lemon juice in the bowl of an electric mixer and mix until combined. Slowly add the melted butter, while mixing. Add sour cream and vanilla and mix until just combined. Use a rubber spatula to fold in the flour mixture, one third at a time, until all the flour is combined. Do not overmix.

Divide the batter evenly between the prepared pans. Bake in the center of the oven for 20 minutes, rotate the pans, reduce the oven temperature to 325*F and bake another 30-35 minutes, or until toothpick inserted in the center of the loaf comes out clean. Let cool in the pans for 15 minutes.

Meanwhile, make the Lemon Syrup ~

In a small saucepan over medium heat, heat the lemon juice and sugar until the sugar is completely dissolved. Once dissolved, continue to cook for 3 more minutes. Remove from heat and set aside.

Line a half sheet pan with parchment paper and invert the baked and (mostly) cooled loaves onto the pan. Use a toothpick to poke holes in the tops and sides of the loaves.

Brush the tops and sides of the loaves with the lemon syrup. Let the syrup soak into the cake and brush again. Let the cakes cool completely, at least 30 minutes.

(The soaked, but unglazed loaves will keep well, wrapped in two layers of plastic wrap and frozen, for up to 6 weeks.)

Make the Lemon Glaze ~

In a small bowl, whisk together the confectioners' sugar and 4 tablespoons of lemon juice. The mixture should be thick but pourable. If the mixture is too stiff, add up to another 2 tablespoons lemon juice (a little at a time) and whisk again. Pour the glaze over the top of each loaf and let it drip down the sides. Let the lemon glaze harden, about 15 minutes, before serving.

The glazed loaves will keep for up to 3 days, wrapped well in plastic wrap, at room temperature.

Here is a fun little treat that you can give

your kid's teacher's for

St. Patrick's Day!!

We just picked up this little basket from the Dollar tree, they were in a package of four for a buck. Then added some green M&M's, Rollos and Hershey nuggets in the bucket.

Then we just tied it up with some ribbon and cellophane. Added a little tag that we had printed and laminated. Under that little green sticker it says "From, (son's name).

Sassy Water

Have you heard of this Sassy Water? I had run across it on Pinterest a couple times and then yesterday I found it on a blog, Our Delightful Home, Mrs. Delightful shared a picture of a bug pitcher full of this yummy looking water. I was hooked, you know why?? It has cucumbers!! I was so pumped about it trying it!

Here is the recipe

Ingredients:

8 ½ cups water
1 teaspoon grated ginger
1 medium cucumber, sliced thin
1 medium lemon, sliced thin
12 leaves spearmint

Mix all ingredients together and refrigerate overnight. Enjoy!

{I made half the recipe}

This recipe is actually from the Flat Belly Diet, The cucumber and lemon are natural diuretics and the mint and ginger relieve bloating. I'm not sure about the diet part of the drink, but it tastes awesome!!

P.S. I love this pitcher, I picked it up at The Container Store this week and I love how the lid screws on and keeps things sealed.

Fudge Brownies from Scratch

I wanted to share a fudge brownie recipe from scratch that I love. It is really easy and I promise that they taste better than the box brownies. One of my baker friends {Thanks, Tami!!} shared this with me a few years ago and I have made them dozens of

times for my boys.

Melt 1 cup of butter and mix together with

2 cups of sugar in a large bowl.

Beat in 4 eggs and then stir in 2 tsp Vanilla,

1/2 tsp Baking Powder and 1/2 tsp Salt. Mix in the 3/4 Cup of Cocoa Powder {I use Hershey's} and the 1 cup of Flour.

Then I mix in some Chocolate chips. Just a little Extra. :)

I like to put my brownies in a greased pie plate

{Just Because it looks cute.}

Bake at 350 for about 30 minutes.

When the brownies come out of the oven and they are still hot, I add lots of yummies on the top. This ones has Heath chips, chocolate chips, and some left over Valentine M&M's.

My boys love to have Brownies Sundae's with the homemade brownies. I know it looks like the fudge brownies may be a little light on the sugar, so we add ice cream,

fudge sauce, and whip cream.

They are delicious! Enjoy!!

Strawberry Donuts w/ Cream Cheese Frosting

I love to bake and my boys love Donuts, plus I love kitchen gadgets. So, when I saw this cute little Babycakes donut maker, I was sold. I had to find myself one and give it a try. I purchased mine at Bed Bath and Beyond, it was around $20 with a coupon that I came across. It is the easiest little cutie to use, and you don't have to fry the donuts. Bonus!!

I was reading over at Diary of Dave's Wife and came across her post where she made strawberry donuts and they were A-dorable!! So, strawberry was my first attempt, they are really cute and yummy!

You literally need a cake mix and the Babycakes donut maker. Plus your frosting. How easy is that?! Just follow the directions on the cake box for making the cake.

Place your cake mix into a zip loc bag to pipe it into the donut molds.

Only work with part of the mix at a time,

otherwise it is really hard to control.

Then just let them bake for about 3 minutes.

Just frost with a cream cheese frosting, a store bought will do just fine. I add a little vanilla or almond extract into the store bought frosting's if I use them.

Cold Care Packages

My family has been sick all week, it has been miserable except for all the extra snuggles that I have gotten during the time they would have been in school. I had a wonderful friend who showed up with lots of supplies for us on Monday. She brought us some yummy soup, Popsicles, 7-up and Ginger Ale, plus a Pepsi for me. It was so sweet!! I cannot begin to tell you how much I really appreciated it that day! It made me think that I could put together a Get Well Basket for a Friend, neighbor or family member the next time I have the opportunity to help out. Of course I found some really cute ideas that inspired me. Take a look at these baskets, wouldn't they make you feel just a little better if someone showed up at your house with one?? That is only if you actually opened the door and let them see you all sick and gross looking. Ha! Source Source Source SourceSource

Organizing Kitchen Counters

How do you set up your kitchen counters? Are they pretty or functional? Maybe both? I have been working on having a very simple and clean looking counter top, that works for me. I got rid of my canisters, I just don't use them. And my counters seem so much bigger! Here are a couple of the things I have done to get myself organized in the kitchen. Please excuse the pictures, it was a rather dreary day when I took them and it looks pretty dark.

I found a new blog that I got stuck on for hours, literally. A Bowl Full of Lemons, has some great organizing ideas, and I used her idea for the plate with coffee mugs on the counter. Super cute idea!!

I love this shelf, it has so many different uses. I have put snacks in it for my kids, bread, coffee supplies, pretties, etc. It has so many possibilities and I really like the way it looks.

My Dish soap and counter cleaner beside the sink, now this kind of seems like it should be hidden away where no one can see it. But, I use these things so much during the day, so I just recently decided to try leaving it out. It has really made things much easier in the kitchen. Funny, how one little change like that makes such a big difference.

This I am not so sure about. I found this little scale at an Occasional shop that has the absolute cutest things. I have used it on the Holidays for decoration, such as pumpkins, snowmen, things like that. Now I am kind of stumped, so I have my salt, pepper, tooth picks and when I'm not burning my candle it goes in there as well. Any ideas??

Our Monthly menu, I am so behind on this, we have been having these same meals for the last four weeks. Serious. Ha!

I really do love this kitchen and I love rearranging things every so often for new looks. I am really liking this open and clean feel though. I think it may last a while. :)

My Erin Condren Life Planner

Since the beginning of this year, I have been trying to get myself organizing, that includes my house and my schedule. I am sure that most of you can relate with the crazy schedules between school, sports, work, meetings, volunteering, playdates, etc., it is hard to keep track of it all!! So, I was on the look out for a good planner. I wanted one that was functional but cute. I kept coming across blogs with people recommending the Erin Condren Life Planner so I decided to check out the website. I loved the planners, seriously, they are A-dorable!! They are a little on the pricey side, but this is my thinking, or justification. If I buy an expensive planner, I will force myself to use it. Right?! Then, I will be more organized! I know, totally lame excuse to buy it, but I'm gonna roll with it. So, I ordered the Life Planner in the pattern and personlizing of my choice. I waited patiently for a week and a half and yesterday I got a perfect little package in the mail!!

Isn't she beautiful!! I think I am in love!!

Oreo Cupcakes

Today I am excited to share this recipe with you for some yummy Oreo Cupcakes, I had originally found this recipe on Pinterest when I was looking at all types of Oreo recipes and decided to give it a shot. They taste like cookies and cream, so yummy!! I shared this recipe as a guest post over at Between U & Me, stop over and check it out!

Preheat over to 350F. Line 24 cupcake tins with paper liners.

Twist apart 24 Oreos. Place the cookie with filling on it, filling side up, in the bottom of each cupcake pan. Cut 12 of the filling-less cookies in half for garnish, and crush the others in a plastic bag with a rolling pin to make fine crumbs.

Reserve these crumbs to mix into the frosting.

Cream the butter in the bowl of a stand mixer until light and fluffy. Beat in the milk and vanilla.

Roughly chop the remaining Oreos and toss with 2 tbsp flour.

Sift the rest of the flour, baking powder, and salt together into the butter mixture. Stir a few times, then mix in the sugar and beat with the mixer on low for about 30 seconds. Add the egg whites. Turn the speed up to medium and beat for two minutes. Fold in the roughly chopped cookies

Divide the batter evenly among the prepared pans and bake for about 18 minutes or until a toothpick inserted in the center of cupcakes comes out clean. Cool cupcakes in the pan for 10 minutes before transferring them to a wire rack to cool completely.

To make the frosting, beat the butter, powdered sugar, and vanilla in the bowl of a stand mixer and add milk 1/2 tsp at a time until it has a smooth, spreadable consistency.

Add the Oreo crumbs and mix well.

Ingredients

cupcakes
1 stick unsalted butter, at room temperature
1 cup milk
2 tsp vanilla extract
2 1/4 cups flour, plus 2 tbsp
1 tsp baking powder
1/2 tsp salt
1 2/3 cup sugar
3 large egg whites, at room temperature
1 package Oreo Cookies (about 45 cookies)

frosting
6 tbsp softened butter
3 cups powdered sugar
1 tsp vanilla
Oreo crumbs
2-4 tbsp milk

Valentine Bingo

I am helping with my little guy's school Valentine Party today. I saw some really cute Valentine Bingo game cards on Pinterest when I was looking and decided that would be an easy game for the kids.

I ended up purchasing this Bingo Card download on Etsy, and then printing the cards out at home and laminating them. I purchased my first laminator for this project and I love it!! (Thanks Jenn) I can see a whole new world opening up for me with laminating projects!

We are using M&M's for the markers on the game cards, and I got cute little Valentine Cupcake papers to put them in.

Instead of using a Bingo call sheet for the numbers, I punched out little hearts and put the numbers on them, they are in the white bag and can be randomly drawn out for calling.

I punched a whole in the corner of all the cards and put them on a ring, I plan to leave them with the teacher for future use.

Teacher's Valentine Gifts

When I saw this idea over at Clean & Scentsible for a Valentine Teacher Fun Box, I thought it would be a great little gift for my boys teachers this year.

This is one of those bead organzing boxes, they are about a buck at Michaels, in the jewelry section. I added some scrapbook paper and some letter stickers with the teachers names.

Here are the goodies I included inside:

A Crochet flower bookmark

My older son has a guy teacher, so I wasn't sure if this would be ok or not, but my son wanted to give one as a gift. So, we made a little smaller version and tried to use colors other than pink and white.

I was able to buy most of the supplies for these in a bulk package from Staples for $3.99, so it was a pretty inexpensive gift but I think it turned out really cute!

Last Minute Valentine Fun

The Last of the Valentine's and the Valentine Box

I think we are officially ready for Valentine's Day! All of the Valentine's are put together and signed, some have even gone to school already. My oldest guy is taking his in tomorrow. He decided on these super cute "You Make My Heart Bounce" Valentine's. We found this idea and the FREE Printable over at The Crafting Chicks. It was really easy to put together, it's not candy and I think it is pretty darn cute!! All we needed was the Printable some small bags and the bouncy balls.

There is a spot on the back of this printable to write who the Valentine is from.

I am not sure how I forgot, it seems to be happening alot lately though, we needed a Valentine Box! Thank goodness we have Pinterest these days!! It is so easy to hop on there and find a cute idea that is easy to make. We made the Valentine Monster. I found this idea over at Last Minute Mel, and it really only took us about a half hour to put together. My son loves it!

My special Valentine!

I am pretty new to blogging and when I came across a fun little party over at Homemaker in Heels, I decided it would be a good chance to meet another blogger. So, I signed up with Crystal and waited to see who I received to exchange gifts with for Valentine's Day. I met a really sweet new friend, Lilly over at Feel LOVD Everyday. She has some awesome talents and send me a really special gift box. Take a look! Toffee is my favorite!!! And, seriously I ate three pieces right away!! LOL!!

Meltaway Cookies

I am guest posting over at Not So Homemade today, check out Courtney's blog for some great recipes and crafts!

Today I am excited to share this recipe with you for some yummy Meltaway cookies, I had originally found this recipe on Pinterest and decided to give it a shot. They are amazing and true to their name, they just melt in your mouth. Also, they have very few ingredients that I am almost positive you will have on hand! Use pink for the icing and they are just perfect for Valentine's Day!

In a medium bowl, cream butter until fluffy. Add cornstarch & sugar and blend well. Beat in flour until thoroughly mixed.

Drop by small teaspoons onto baking sheet

Flatten out with the bottom of a class. (Dip glass in powdered sugar to prevent sticking).

Bake at 350 degrees for 10-12 minutes. Cool on wire rack & frost with Cream Cheese Frosting.

1 C. butter

¾ C. cornstarch

¾ C. powdered sugar

1 C. flour

1 recipe Cream Cheese Frosting

School Birthday treats

My little guy has an August birthday, which means he doesn't get to celebrate it at school on or near his actual birthday. So, it is common for summer birthday kids to celebrate their 1/2 birthday, which is great because they don't feel left out. If you asked my son, he would tell you that 1/2 birthdays are just as important as the real day and that there should be gifts and cake. Well, that's not happening in this house, but we did do a cute little treat for all his classmates at school. I was able to create my first little Publisher creation, with a little positive reinforcement from a friend (Thanks, Jenn). It's not fancy or the prettiest thing ever, but it did make me see that I can use that program and with some work and practice, maybe use it again. Haha! So, we just added these little guys to a Hershey's bar and then just tied on different colors of Bakers Twine.

What a cute little stinker, but would it kill him to give me a "real" smile when I ask him too?

My Little Guy's Valentine's

This idea that my son and I came across over at The Fry Family is so stinking cute!! When we saw it, he definitely wanted to take these as his Valentine for the year. He helped me with almost all of it, He put the shovels in the bags and cut the cute little circles and added his friends names on them. I think he did pretty darn good for a Kindergartner.
