I used them this morning to make a sweet Tortilla Pizza for breakfast. &lt;br /&gt;&lt;br /&gt;It was a yummy start today but it would be a great dessert finish after an Italian dinner like my &lt;a href="http://theworldaccordingtoeggface.blogspot.com/2008/07/pastaless-chicken-carbonara.html"&gt;Pastaless Chicken Carbonara Casserole.&lt;/a&gt; &lt;br /&gt;&lt;br /&gt;Cut into wedges it also makes a nice party treat with antipasto type items. I love having little evening "&lt;a href="http://theworldaccordingtoeggface.blogspot.com/2008/05/caramel-apple-oat-bars-and-revelations.html"&gt;parties&lt;/a&gt;" with just 2 or 3 people. Cut up some cheeses, veggies, &lt;a href="http://theworldaccordingtoeggface.blogspot.com/2008/06/patio-party.html"&gt;make a dip&lt;/a&gt; out of &lt;a href="http://theworldaccordingtoeggface.blogspot.com/2007/09/my-big-fat-greek-yogurt.html"&gt;Fage Greek Yogurt&lt;/a&gt;, a few cold cuts, some nuts and a little sweet treat like this pizza. With 20 minutes or so prep you have an &lt;a href="http://theworldaccordingtoeggface.blogspot.com/2007/11/party-like-rock-star-post-wls-style.html"&gt;awesome spread&lt;/a&gt; that you can eat too! I toss it all on a tray and bring it outside. &lt;br /&gt;&lt;br /&gt;What could be better than cool night air, starry skies, some weight loss surgery friendly snacks and swapping stories with friends? &lt;br /&gt;&lt;br /&gt;Wait don't answer that. Swipe a cookie sheet with a drop of oil and place a Mission Carb Balance Whole Wheat Fajita Size Tortilla down. Spread ricotta mixture on on top and top with sliced fig and a drizzle of sugar free maple syrup or caramel. Toss with SF syrup, cinnamon and walnuts and spoon an equal amount in each of the &lt;a href="http://astore.amazon.com/theworlda074c-20/detail/B000A3N7Q6/103-9720294-2818203"&gt;4-4 oz. ramekins&lt;/a&gt;. Set aside. &lt;br /&gt;&lt;br /&gt;Whiz almonds in a &lt;a href="http://astore.amazon.com/theworlda074c-20/detail/B000I0DV6W/103-9720294-2818203"&gt;mini food processor&lt;/a&gt; till fine. Add the rest of the ingredients and whiz again till thoroughly mixed. Sprinkle clumps of the topping equally over each ramekin of fruit. I'm going to add cubed cooked chicken to it tonight for a complete meal. You could also add grilled beef, tuna (smoked or canned), crab, grilled shrimp.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;So what is everyone doing for the 4th? &lt;br /&gt;&lt;br /&gt;I'm a creature of habit I do pretty much the same thing each year well with the exception of one notable year... 2006. 4th of July 2006. I was two weeks post-op eating mashed carrots and smelling everyone's BBQ smoke in the neighborhood. I was smack dab in the "what the hell did I do to myself" phase. I sat and cried on my bed. Wondering... "Did it have to come to this?" So pre-ops and those in those first few hard months of this journey have no fear because good food is in your future. I promise.&lt;br /&gt;&lt;br /&gt;So what am I doing tomorrow? &lt;br /&gt;&lt;br /&gt;I'm going to take a nice long walk and then BBQ. I usually do steaks, BBQ'd corn on the cob and a homegrown tomato salad but this year I'm thinking about doing Kabobs. I need to decide this within the next few minutes. &lt;br /&gt;&lt;br /&gt;Luckily the two houses I have lived in in Southern California have had views of local firework displays from the backyard so for the past 22 years I have not had to battle crowds or troll for parking spots. This house's view is not as good as the last one but it's good enough. The last house you could smell the fireworks we were that close... hmmm come to think of it in Southern California where we are so crispy it's probably better to be farther away. &lt;br /&gt;&lt;br /&gt;We always end the day inside watching the Boston Pops "&lt;a href="http://www.july4th.org/concert.htm"&gt;Pops Goes the 4th&lt;/a&gt;" and eating dessert. &lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Highlights of the day:&lt;br /&gt;&lt;br /&gt;* Did you see this morning's Today Show? Go Kylie! &lt;br /&gt;&lt;br /&gt;&lt;iframe height="339" width="425" src="http://www.msnbc.msn.com/id/22425001/vp/25510923#25510923" frameborder="0" scrolling="no"&gt;&lt;/iframe&gt;&lt;br /&gt;&lt;br /&gt;I so wish I wouldn't have spent the best years of my life trapped. I applaud Kylie and other teens and 20 somethings for taking back control at such a young age. &lt;br /&gt;&lt;br /&gt;* Made another couple of yummy flavors of Protein Ice Cream. One of which will be part of tomorrow's dessert. Have you done this yet? Word of warning it is addictive and you will find yourself dreaming up different flavor combos.&lt;br /&gt;&lt;br /&gt;* Went for a great morning walk. It's been so hot and kind of humid (not usual for us) that I wanted to get some exercise in before it warmed up. My sister woke me up bright and early (an annoying family tradition LOL) and sang to me. Then my Mum and I took off and spent the day at the County Fair. The fairgrounds are near the beach out here so after the Fair I ended the day at my favorite place in the world. Perfect.&lt;br /&gt;&lt;br /&gt;At the fair they have a different cooking contest each day so I turned in an entry. In the past I've taken First Place in &lt;a href="http://theworldaccordingtoeggface.blogspot.com/2007/06/i-won.html"&gt;Canola Oil&lt;/a&gt;, &lt;a href="http://theworldaccordingtoeggface.blogspot.com/2007/06/county-fair-post-op.html"&gt;Hidden Valley Ranch&lt;/a&gt;, &lt;a href="http://www.sargentocheese.com/recipes/1313/shellys-bruschetta/"&gt;Sargento Cheese&lt;/a&gt;'s contests. Local pals: when you go to the fair support the Food and Crafts Division by buying this year's cookbook. I'm on page 43. &lt;br /&gt;&lt;br /&gt;No, I didn't win this year. Apparently there are hundreds of lover's of this product... I am not one of them but it was a blast anyway. I entered the Great American SPAM contest. The theme was appetizers. Saute diced Spam till golden. The contest required using 12 oz. I'd do less personally. Add drained pineapple and saute for 1 minute more. Set aside to cool. Saute onions till golden in butter. Add garlic. Cook 1 minute more. Set aside to cool. Beat eggs. Mix all ingredients together. Be sure Spam mixture and veggies have cooled slightly before adding to egg mixture. Spoon into lightly greased &lt;a href="http://astore.amazon.com/theworlda074c-20/detail/B0000VMI2W/105-1429036-2146005"&gt;mini muffin tins&lt;/a&gt;. Bake for 30 minutes at 350. Makes 24.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Tropical Dipping Sauce&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;Equal parts Orange Marmalade Simply Fruit and Crushed Pineapple with juice. Microwave marmalade for 25 seconds till warm and add pineapple. Mix.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;The winner this year was a layered SPAM Pate Cheesecake. Very elaborate. I was shocked, amazed and frankly weirded out by how many SPAM creations there were. We had a beautiful day at the fair despite me not winning this year. &lt;br /&gt;&lt;br /&gt;My favorite parts of the fair are the collections, the award winning roses and the animals. Yeah my answer pre-op would have been very different... it would have been the FOOD. I actually didn't eat anything much while I was there. I brought some nuts and a protein bar and had those in the morning. Later I ate a Roasted Corn and I bought some SF Maple Nut Fudge. Yum! I was horrified at some of the new fair food choices... Deep Fried Reese's Whips Bars, Deep Fried White Castles. Scary! and yes I saw many, many, people eating them. I did get a little sad at the Fair I saw so many SMO and MO people indulging in fair goodies and I thought how I would have been right there with them consuming 3000+ calories in a meal a few short years ago. Hopefully they will find there way out of that hell too. &lt;br /&gt;&lt;br /&gt;After the fair we got coffee and went to the beach for a bit. Ahhh my zen zone. We are going out to dinner next week (my Mum's birthday) so I came home and BBQ'd. I put 1 drop literally of olive oil on the cookie sheet and spread it around. Place tortilla on cookie sheet. Spread the sauce on the tortilla (pesto, marinara, alfredo, bruschetta sauce, whatever.) Put a slice of cheese on top of that (I like provolone) and then any combination of toppings or leftovers I can find bumping around the fridge. Sprinkle with parmesan. Pop in oven. 10 minutes exactly. Have the oven hot before you do the toppings **Do not let them sit. That is pretty messy though so if you can get one of these Donvier's (ebay an old model or a &lt;a href="http://astore.amazon.com/theworlda074c-20/detail/B00006484E/102-7611802-9789742"&gt;new quart model&lt;/a&gt;) I highly recommend it. Set aside to cool and crisp up. &lt;br /&gt;&lt;br /&gt;In a large bowl combine turkey (I go to the deli and ask for a 1/2 lb hunk of smoked turkey and then dice it into cubes), slaw mixes, onion, cheese, raisins and almonds. Mix mayo, yogurt, BBQ sauce, and vinegar together. Pour the dressing over the slaw mixture, season with salt &amp; pepper and toss to coat. I wanted to finish up all my errands and running around before it got too hot. We've been in a hideous heat wave in Southern California. Yesterday was 107 and today is 105. I hit my regular stands and scored some yummy things to play with this week... eggplants, zucchini, onions (red, yellow, and green), peppers (red &amp; yellow), garlic, corn, spinach, strawberries, white and yellow peaches, and the most unbelievably sweet nectarines I've ever eaten. &lt;br /&gt;&lt;br /&gt;After &lt;a href="http://theworldaccordingtoeggface.blogspot.com/2007/08/wls-post-op-starbucks-survival-guide.html"&gt;coffee&lt;/a&gt; and errands I came home and turned the oven on (oh joy) to roast some of the fresh veggies I just bought. Toss eggplant, onion and peppers with olive oil, salt and pepper and roast in oven for 50 minutes, turning once or twice halfway through cooking time. Set aside.&lt;br /&gt;&lt;br /&gt;Toast pine nuts in a dry pan for 1 minute or so. Careful not to burn. Don't walk away from these. They brown quickly. Ingredients listed are for one packet multiply it for how many packets you are making. Cream Cheese&lt;br /&gt;1 Banana, mashed&lt;br /&gt;2 Tablespoons Sugar Free Caramel Sauce (I used Smucker's)&lt;br /&gt;&lt;br /&gt;Preheat oven to 350. Mash banana and mix into cream cheese set aside. In a &lt;a href="http://astore.amazon.com/theworlda074c-20/detail/B000I0DV6W/105-0410777-3538038"&gt;mini food processor&lt;/a&gt; whiz almonds, 1/4 cup of the oats, soy flour, 1 scoop of the protein powder, cinnamon, baking soda, and salt till fine. Add Torani syrup and whiz again. In a separate dish beat egg, vanilla and almond butter together. Combine both. Add additional scoop of protein, the other 1/4 cup of oats and nuts. Spread the oatmeal batter into a &lt;a href="http://astore.amazon.com/theworlda074c-20/detail/B000E7A6BM/102-0144143-3128137"&gt;parchment paper lined&lt;/a&gt; Pyrex dish (8x7). To my friends I was the happy, funny, chubby girl. I faked happy really well. &lt;br /&gt;&lt;br /&gt;I remember one day in my early twenties I was having lunch with a bunch of friends of mine (all skinny chicks) We were looking at bridal magazines and discussing the upcoming wedding of one of the group. She was talking about her beautiful dress which prompted everyone to share what their dream dress would look like. It came around to me. Sure a dream dress in a size 28. That's not a dream that was my nightmare. I announced to the group, "I've never thought about the dress. Now the menu I can tell you every course. Fat chicks have their priorities." Of course this got a laugh from the group. I had to deflect. I was playing defense. It was my protection device. To say what they were thinking before they thought it and through the use of humor. &lt;br /&gt;&lt;br /&gt;I thought, "If only I wasn't fat I'd be happy."&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Post Gastric Bypass version&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;H is for Happiness -&lt;/strong&gt; I blamed a lot of my life issues on being fat. I recall saying many times "Well if I wasn't fat" or "If I just lost weight" to explain away why my life wasn't the way I wanted it to be. To my disappointment it wasn't all about the fat. The stars didn't all align after I lost -148 pounds. Ummm hello?! I read the fairy tales it's time for the "happily ever after" part, right? At first I found something to blame... well it's getting rid of the loose skin and plastic surgery that needs to happen and then I'm sure I'll be happy. So I started my plastic surgery journey. Now I'm free of the skin issues (well for the most part ;) just don't look at my inner thighs). I'm starting to realize what I've been doing. Happiness isn't eluding me I am eluding happiness. &lt;br /&gt;&lt;br /&gt;So last night I sat on the swing outback and watched the sunset and the almost full moon appear. I wished on the first star that appeared (and the second just in case the first was a planet or a plane) I was happy. I wasn't sitting with the love of my life. I wasn't sitting behind my dream house. Life wasn't perfect but... I'm trying to learn to take pleasure in simple everyday things. A beautiful sunset, a laugh with my Mum, crashing waves, a killer song, the season's first tomato from my garden (which was the best tomato I have ever eaten in my life by the way) all these things can bring happiness. I still have wishes, goals, dreams, even a "&lt;a href="http://theworldaccordingtoeggface.blogspot.com/2008/05/list.html"&gt;dream man&lt;/a&gt;", but life is too short to put happiness on hold. Then we are frustrated that the kids aren't old enough and we'll be more content when they are. After that, we're frustrated that we have teenagers to deal with. We will certainly be happy when they are out of that stage. &lt;br /&gt;&lt;br /&gt;We tell ourselves that our life will be complete when our spouse gets his or her act together, when we get a nicer car, when we are able to go on a nice vacation, or when we retire. The truth is there's no better time to be happy than right now. &lt;br /&gt;&lt;br /&gt;If not now, when? Your life will always be filled with challenges. It's best to admit this to yourself and decide to be happy anyway. Happiness is the way. So, treasure every moment that you have and remember that time waits for no one. &lt;br /&gt;&lt;br /&gt;So, stop waiting... &lt;br /&gt;&lt;br /&gt;Until your car or home is paid off &lt;br /&gt;Until you get a new car or home &lt;br /&gt;Until your kids leave the house &lt;br /&gt;Until you go back to school &lt;br /&gt;Until you finish school &lt;br /&gt;Until you lose 10 lbs. &lt;br /&gt;Until you gain 10 lbs. &lt;br /&gt;Until you get married &lt;br /&gt;Until you get a divorce &lt;br /&gt;Until you have kids &lt;br /&gt;Until you retire &lt;br /&gt;Until summer &lt;br /&gt;Until spring &lt;br /&gt;Until winter &lt;br /&gt;Until fall &lt;br /&gt;Until you die &lt;br /&gt;&lt;br /&gt;There is no better time than right now to be happy. I ditched the typical "holder" corn tortilla and batter opting to grill/steam the fish in foil packets. &lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Shelly's Tacoless Fish Tacos&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;1 pound of a mild white fish (cod, flounder, orange roughy, tilapia, something like that)&lt;br /&gt;1/4 cup of Italian Dressing&lt;br /&gt;Shredded Cabbage (I use coleslaw mix)&lt;br /&gt;Sour Cream (or Fage Greek Yogurt)&lt;br /&gt;Shredded Mexican Cheese&lt;br /&gt;Lime&lt;br /&gt;Hot Sauce (I use &lt;a href="http://astore.amazon.com/theworlda074c-20/detail/B000QFRJSA/105-6180107-8339628"&gt;Cholula&lt;/a&gt;)&lt;br /&gt;Aluminum Foil &lt;br /&gt;&lt;br /&gt;Marinate the fish (a hour or so in the fridge) in Italian Dressing. Wrap it in foil. The fish is done when it separates easily with a fork.
