Free Kindle Book – Betty Crocker 20 Best Summer Drink Recipes! is a post from: Thrifty NW Mom

I love to use cake mix, as a short- cut cookie recipe, for those times that I get tasked with bringing something to a school event, picnic, or any other celebration last minute. They are so easy to make, plus if you coupon you know you can get cake mix for under $1, so that makes them super frugal too! I recently was tasked with making 3 dozen cookies for an end of school event for my Kindergartner. I had just shopped the QFC sale, and so had a cupboard full of cake mixes that I had purchased for around $0.49 ea after sale prices. These recipes helped me get through the end of the  year madness with ease. I use the base recipe, and then adapt it to make all different type of cookies.

Now is the fun part. Deciding what kind of cookies to make! Here are some of our favorites:

The Rainbow Cookie

(pictured above)

These are fun for kids events. Divide your dough into three parts and add three different food colorings (one to each part of the dough). Cook up, and frost and add sprinkles for added fun. The kids love these ones! This will work with white, yellow or lemon cake mixes.

Snickerdoodles

For this recipe you will want to omit the oil (you want a denser dough). Use white cake mix. Once your dough is made, roll the dough into small balls. Dip the balls into a mixture of cinnamon and sugar and coat well. (Note – this is the easiest way I have ever made Snickerdoodles – but they do not taste quite as good as the real deal….but a great way to make them quickly).

Lemon drops

For this recipe use a lemon cake mix. Once your cookies have slightly cooled, sprinkle them with powder sugar.

Chocolate Chip Cookies

Start with a yellow cake mix. Add a package of chocolate chips to the dough and fold in.

Spice Cookies

Use a spice cake mix and once they are cooled frost with cream cheese frosting.

Almond Butter Cookies

Use a white cake mix for this recipe, and add a tsp. of Almond extract. You will want to use real butter for this recipe for the best result. Add almond extract to your frosting too for added flavor!

Chocolate Mint Cookies

Use a chocolate cake mix as your base for this recipe. Add a tsp. of mint extract and chocolate chips. Another variation of this recipe uses a yellow cake mix, 1 tsp of mint extract, green food coloring and chocolate chips.

Things to Know when Shopping at Walgreens:

• Print a copy of the current Walgreens coupon policy
• Sign up for the Walgreens Balance Rewards program (you can sign up online, in-store or call them at 855-225-9225). You need to sign up for this in order to get the sale prices at Walgreens. Basically you will be earning points based on your purchase with the Balance Reward program. You will be earning points based on buying specific items in the ad (which will be clearly marked). These Balance Rewards can then be spent online or in-store.
• Walgreens Register Rewards - These are manufacturer’s coupons that print out from the register after your transaction is complete & based on your purchases. These look similar to catalinas from the grocery store & you can use it as dollars off on a future transaction.  You will only get 1 Register Reward per transaction for that specific item/promotion. So if you want multiple Register Rewards for that same promotion, you will need to do separate transactions.
• Coupon to Item Ratio - Walgreens requires that “the number of manufacturer coupons, including Register Reward manufacturer coupons, may not exceed the number of items in a transaction. So, the number of manufacturer coupons needs to equal the number of items you have. This means that you may need a filler item if you have 1 item and 2 coupons – you will need a filler item for that 2nd coupon to apply to.
• Coupon Order at Walgreens - The best way to hand over your coupons at Walgreens to make sure they all apply is to give them the manufacturers coupon first, then the Walgreens store coupon and lastly the Register Reward coupon.

Coupons to Use when Shopping at Walgreens:

• Walgreens In-Ad Coupons - You will find coupons in the Walgreens ad which are typically Walgreens store coupons but may occasionally be manufacturer’s coupons (it will say that it’s a manufacturer’s coupon at the top)
• Instant Value Coupons (IVC) - These are basically store sales but you will need to clip the coupon or have them scan the coupon for the sale. These can be found at the front of the store in a monthly coupon booklet or sometimes in the Walgreens store ad.
