Karen Cooks! by Karen, of course.  That would be silly if it were by Sandy or Roberta.  So yes, Karen is the cook.  And DOES she cook!  It seems there is no limit to what this talented lady can make &#8211; and make successfully.  I mean, hells bells, I can cook just about anything, too.  Doesn&#8217;t mean it always turns out exactly as I had hoped.  Especially in the baking department, more specifically if it involves yeast.   But Karen has ALL that mastered.  Everything on her blog said, &#8220;Try Me! Try Me&#8221;.  But when I saw THESE, I knew it was the one for me. Karen found this recipe by Mark Bittman.  They looked so good I just couldn&#8217;t pass them by.  There is always something that I want to make that I&#8217;ve never made before. And, well, I&#8217;m a cracker virgin. I love crackers!  There is something about the light, crunchy texture and the saltiness that is just my style.  Whether with a great cheese or soup, salad or spread, or whether they are a plain saltine or a big multigrain seeded disk, I love crackers! Did I mention that I love crackers? These crackers are crunchy, tender, flaky, and just melt in your mouth.  And soooo versatile you can make them anything you want with just a little imagination. Karen, my hat is off to you!  These will be a &#8220;go to&#8221; recipe for special occasions and every day munching!  I can&#8217;t wait to make more and figure out what other flavors I can make. <li class="instruction">Preheat oven to 400F degrees</li>
<li class="instruction">Put flour and sea salt in food processor.</li>
<li class="instruction">Add one tablespoon of butter at a time and pulse between adding each tablespoon until mixture appears &#8220;mealy&#8221;.</li>
<li class="instruction">Turn food processor to the &#8220;on&#8221; setting and slowly add cream until the dough sticks together well.</li>
<li class="instruction">Dough should not be sticky, so add a little flour if you need to. If it is not sticking together, add just a very small amount of cream.</li>
<li class="instruction">Remove dough from processor and make a round ball with it.</li>
<li class="instruction">Roll dough out on a lightly floured surface to 1/4&#8243;, or thinner.</li>
<li class="instruction">Cover a cookie sheet with parchment paper and transfer dough to cookie sheet. Rolling the dough around your rolling pin may make the transfer easier.</li>
<li class="instruction">Score into your favorite shape with a pizza cutter.</li>
<li class="instruction">Sprinkle with a little more sea salt or kosher salt.</li>
<li class="instruction">Bake for 12 minutes, or until light golden brown.</li>
<li class="instruction">Remove from oven and place the crackers and the parchment paper on a cooling rack for at least 15 minutes until the crackers are completely cool.</li>

Daniel and Meredith, have recipes with some of the best ingredients, flavorful spices, and just deliciously simple to make.  Not only that, but Daniel is one of the nicest guys you will ever meet, which makes me sure that Meredith is one of the nicest ladies you will ever meet, too. Not that I&#8217;ve met Daniel personally, but virtually, he is a GREAT guy.  Very helpful and courteous and full of, well, . . . . knowledge! <li class="instruction">Pour sauce over potatoes.</li>
<li class="instruction">Toss potatoes until covered with sauce.</li>
<li class="instruction">Bake in the oven for 15 minutes, then remove and toss a bit. Bake for another 15 minutes or until the skin is nice and brown.</li>
<li class="instruction">Remove from the oven and serve hot.</li>

<p><em>Tip:  By the way, if you love and use fresh garlic as much as I do and buy the big already peeled bucket of them at Sam&#8217;s or Costco, garlic will freeze very well.  So I just toss the garlic in a plastic zip bag and put it in the freezer.  When I need the garlic I take out as many cloves as I need, let them sit for about 5 minutes on the counter, then chop them up and use them in my dish.  I do the same thing with roasted garlic.  Squeeze out the roasted, stick goodness and put in a plastic container and freeze.  When you need some roasted garlic, take out of the freezer and let sit for 10 or 15 minutes, then scoop out what you need.  Yep, it&#8217;s that easy!</em></p>
<p>This was a fabulous dish for our week-long &#8220;camping&#8221; trip to San Antonio to the National Shooting Complex.  Very easy to make while on the road and the perfect side to accompany our grilled Lamb Chops and Fresh Sauteed Spinach.</p>

<li class="instruction">Cook tortellini per package directions and add asparagus spears to the boiling water with the tortellini for 2-3 minutes. Remove asparagus and finish cooking the tortellini. When the tortellini is al dente, drain and pour into very large mixing bowl</li>
<li class="instruction">Cut the asparagus into 1&#8243; pieces and add to the tortellini along with the remaining ingredients. Stir gently but thoroughly, cover and allow to chill in the refrigerator at least 1 hour before serving. Overnight chilling will really be best to allow the flavors to meld.</li>

So, I&#8217;m fixing it and I&#8217;m moving on.  But not before telling you about this great recipe and my friend, Heather over at Hezzi-D&#8217;s Books and Cooks. I already know that Heather is kind and forgiving (read &#8211; I screwed up).  But she also has a LOT of fabulous recipes, loves to cook, bake and read.  She also has this great nickname that her husband and a friend of his, Mojo, came up with for her &#8220;rock &#8216;n roll&#8221; name several years ago &#8211; and it stuck, thus the name &#8220;Hezzi-D&#8221;.  I love to cook, read, and have a great nickname that one of my husband&#8217;s friends gave me about 28 years ago, &#8220;Vivisue&#8221; &#8211; a combination of my first and middle names.  But what we don&#8217;t have in common is a &#8220;love&#8221; for baking.  It&#8217;s not that I don&#8217;t like to bake, I just don&#8217;t think I&#8217;m very good at it.  I&#8217;ve really been in the mood for a bundt cake, and when I saw Heather&#8217;s recipe for Babovka, I knew I had found exactly what would calm the Craving Beast inside me! <li class="instruction">Preheat oven to 350F degrees</li>
<li class="instruction">Grease and flour your bundt pan.</li>
<li class="instruction">Separate the eggs. Put the yolks in a large mixing bowl and the whites in a small bowl.</li>
<li class="instruction">Beat the yolks with your mixer and add the sugar. Incorporate well.</li>
<li class="instruction">Slowly add the oil, apple butter, and hot water and vanilla. Mix well.</li>
<li class="instruction">The slowly mix in the flour and baking powder until smooth.</li>
<li class="instruction">With a hand mixer, beat the egg whites until they triple in size. Then fold them into the batter carefully, with a spatula until just blended.</li>
<li class="instruction">Sprinkle the chocolate chips into the bottom of the bundt pan.</li>
<li class="instruction">Then sprinkle the chopped walnuts on top of the chocolate chips.</li>
<li class="instruction">Pour half of the batter into the greased and floured bundt pan.</li>
<li class="instruction">Into the remaining batter, mix in the cocoa and stir well.</li>
<li class="instruction">Pour remaining batter on top of the vanilla batter.</li>
<li class="instruction">Tap the pan a couple of times on the counter to eliminate bubbles.</li>
<li class="instruction">Bake for 45 minutes, then let cool at least 15 minutes before turning on to a plate. Dust with powdered sugar.</li>

<p>This cake is BETTER than advertised!  The main difference you will see and taste between this Babovka and a regular pound cake is the light, fluffiness of the Babovka.  Extremely moist, just like you expect and has wonderful flavor.  We loved the nuts and choco chips on top, but they are certainly not necessary.</p>
<p>This would make a great dessert for a party, family gathering or picnic!  However, it is the Breakfast of Champions for me and Mountain Man this morning!</p>

You see, last month Heather from over at Healthy With Heather was orphaned for SRC reveal day and so I volunteered to make a dish from her blog and made Southwestern Chicken Tortilla Stew.  Having NO idea at the time that she would be my assignment for March.  Then, when I saw her blog was mine for March, I was thrilled.  Heather is a health-conscious, pregnant, 20-something who has a love of all things &#8220;fitness&#8221;. Our similarities stop there.  Actually, they stopped back at the previous sentence. I have gotten much better over the years of watching what I eat.  Which means that my Mountain Man watches more of what he eats, too.  I also work out in the pool three times a week.  And yes, I really, really work it!  Didn&#8217;t know anyone could sweat while in water.  Just sayin&#8217;. . . Another thing that we really try and do daily is eat a good breakfast.  Although many times lately I find myself running out of ideas.  That&#8217;s why I loved this recipe.  I always have a ripe banana or two, or three laying around and I refuse to eat them &#8220;as is&#8221; when they have brown spots on the skin.  Bleck!  A Plain-Jane-Eatin&#8217; Banana must have yellow AND green on the outside for me to entertain the thought of eating it.  As for the brown ones, well, I love them smushed up in anything baked! Heather called these &#8220;protein&#8221; muffins.  I call then &#8220;power&#8221; muffins.  Mainly because I didn&#8217;t use protein powder, but also because breakfast is when we all need to &#8220;power up&#8221; for the day and because there is LOTS of powerful protein in Greek yogurt.  Really doesn&#8217;t matter what you call them, because the key word is GREAT! <li class="instruction">Preheat oven to 350 degrees.</li>
<li class="instruction">Line a 12 cup muffin tin with liners.</li>
<li class="instruction">In a large bowl mix together all the dry ingredients. In a smaller bowl mix together the wet ingredients. Stir the wet into the dry until just mixed. Do not over stir.</li>
<li class="instruction">Pour into muffin tins until they are filled completely. Top batter with the remaining walnuts. Bake for 25-28 minutes.</li>

NOTE:  Not in any particular order Reasons I&#8217;m Lucky &#8211; Top Ten List I have lived to be 56 years old.  Never thought I would make it this far and I look forward to my next birthday. I am one of the happiest people on earth.  Yep, it&#8217;s true. I continue to be amazed by all around me &#8211; mountains, oceans, plants, birds, animals, people &#8211; and never fail to appreciate their beauty and differences.  Thank you Mom and Dad. I couldn&#8217;t ask for more in a family &#8211; my heart swells with love and pride every time I think of any of them. My husband is my best friend.  I trust him and love him unconditionally. I had the best parents anyone could ever have.  I&#8217;m sure they were custom ordered for me. My friends are true.  I&#8217;ve got their back and they have mine. My troubles are manageable.  I don&#8217;t want anyone else&#8217;s. I live in the Land of the Free and the Home of the Brave.  I NEVER take this for granted. I have met many, many incredible people who I now consider great friends through blogging. My decision about which of Heather&#8217;s recipes to make was ridiculously difficult.  Everywhere I looked and every recipe that I reviewed sent my taste buds into orbit.  I&#8217;m sure NASA is wondering where all those taste buds came from. Then again, when I saw her receipe for Bacon and Bleu Cheese Dip, my decision became very easy. <p><strong>Bacon and Blue Cheese Dip</strong></p>
<p>5 slices of Bacon, cooked and chopped<br />
8oz Cream Cheese</p>
<p>8oz Mascarpone Cheese<br />
1/3 cup Fat Free Greek Yogurt</p>
<p>1 Tbsp roasted Garlic<br />
4 oz crumbled Bleu Cheese<br />
2 Tbsp dried Chives<br />
1 tsp fresh cracked Black Pepper<br />
1/2 tsp Pink Himalyan Salt, finely ground<br />
1/2 tsp Celery Seed<br />
1/2 tsp Sweet Paprika</p>
<p>1/4 tsp dry Mustard powder</p>
<p>1.  Preheat the oven to 350 degrees.</p>
<p>2.  Cook the bacon until browned.  Drain on paper towels and chop.</p>
<p>3.  Soften the cream cheese in the microwave for 30 seconds.  Combine the cream cheese, mascarpone cheese and yogurt in a large bowl.  Add in the bacon, garlic, blue cheese, chives, and seasonings.  Mix until well combined.</p>
<p>4.  Spoon into a baking dish and heat for 20 minutes until bubbly hot. Top with fresh chives.</p>
<p>This is FABULOUS!  And very versatile.  Use it for a vegetable dip or topping for a sirloin steak, grilled to perfection.  How about a topping for little baby toasts?  And guess what.  By adding a little buttermilk, a pinch more salt and using the mixture cold, you can turn this into a wonderful dressing for your wedge salad!</p>

Heather is young, she is energetic, she lives a healthy lifestyle, she is self-described &#8220;fitness and food enthusiast&#8221;, she is a fitness instructor and she is preggers with her first baby boy.  ALL of which I am not!  Although I&#8217;m trying more every day.  NOT the preggers part, but the healthy stuff so I can have more energy and keep myself young.  I&#8217;m already a food enthusiast, so there is one thing I won&#8217;t have to do.  At that, I&#8217;m really a perfectionist!  She and I do have a couple of other things in common besides the Secret Recipe Club and our love of food.  She has a black and white kitty &#8211; I have a black and white puppy. <li class="ingredient">3-4 cups Chicken Broth</li>
<li class="ingredient">2 Tbsp Extra Virgin Olive Oil</li>
<li class="ingredient">2 cups diced Sweet Onion</li>
<li class="ingredient">2 ribs of Celery, sliced</li>
<li class="ingredient">2 medium Carrots, sliced</li>
<li class="ingredient">2 Yukon Gold Potatoes, diced</li>
<li class="ingredient">4 oz chopped Hatch Green Chiles (or any canned green chile)</li>
<li class="ingredient">1 Tbsp roasted Garlic (or 2 fresh cloves, minced)</li>
<li class="ingredient">1/2 tsp Cumin powder</li>
<li class="ingredient">1/4 teaspoon fresh cracked Black Pepper</li>
<li class="ingredient">1 whole Bayleaf</li>
<li class="ingredient">14.5 oz diced No Salt Added Tomatoes</li>
<li class="ingredient">8 oz Rotel Zesty Tomato and Green Chile Sauce (or an 8 oz can of El Pato Sauce)</li>
<li class="ingredient">4-6 Corn Tortillas</li>
<li class="ingredient">1 cup Monterrey Jack Cheese, grated</li>

<li class="instruction">Boil chicken breast in chicken broth. I had some homemade stock, so I used that. When thoroughly cooked, remove chicken from pot and shred. Do not discard broth. Set chicken and broth aside.</li>
<li class="instruction">Saute onion, celery and carrots in oil until onions are translucent. If you are not using roasted garlic, add the fresh minced garlic to the saute pan for 2 minutes. Add these to your chicken broth.</li>
<li class="instruction">Add chicken, potatoes, chiles, roasted garlic, cumin, pepper, bay leaf, tomatoes, and Rotel or El Pato sauce to the soup pot. Salt to taste. Cook for 45 minutes.</li>
<li class="instruction">To make the Cheese Crisps, turn on the broiler in your oven. With a piece of parchment paper on a cookie sheet, lay the tortillas flat and broil until light brown. Turn the tortillas over, sprinkle with cheese, and broil until the cheese is melted and the tortillas are golden brown. Keep a close eye on the tortillas while broiling.</li>
<li class="instruction">Cut Cheese Crisps into quarters and serve with the Southwestern Chicken Tortilla Stew. Garnish the soup with a little more cheese, sour cream and avocados, if desired. We used 0% fat Greek Yogurt. Makes it wonderfully rich without adding many calories!</li>

<p>This recipe &#8211; including the cheese crisps &#8211; has only 230 calories per serving, 9 grams of fat, 200 mg of sodium (if you don&#8217;t add extra salt), 21 carbs with 5 grams of fiber, 18 grams of protein (that&#8217;s without yogurt added), and is very high in Vitamins A (almost as much as you need in a day!) and C (MORE than what you need in a day!). And a whopping 485mg of potassium, of which it seems I never get enough.   All of these are approximate, of course, but you get the idea. This soup packs a bunch of flavor and nutrition! Plus, it is wonderful comfort food on a cold winter evening. Comfort food doesn&#8217;t have to be heavy to be rich and satisfying.</p>

I soooooooooooooo love being in the Secret Recipe Club.  It gives me an opportunity to really explore other blogs, recipes and take a moment to get to know the blogger.  And it forces me out of my coma and into the real world.  Well, at least the real cyber world. This month my SRC assignment was The Pajama Chef Sarah.  She and her husband, Ben, are always whipping up something fabulous in the kitchen.  Newly weds of two years they have already reached a few compromises in their lives together.  Ben loves to lift weights and so he forces convinces her that lifting weights is something she should be doing, too.  Sarah loves to run and has forced convinced him to run with her.  I think they have got this marriage thing all figured out! The other thing I love is finding out how someone decided to name their blog.  Well, among her loves in life which include her husband and peanut butter, she also loves lounging in her pajamas.  In fact, Sarah says, &#8220;If it was socially acceptable, I would wear pajamas 24/7!&#8221; I feel the same way about my sweats, although in the Texas heat, 24/7 would only be practical about 3 days out of the year. <p>I was thrilled with the results!  Maybe not the two dishes that YOU would have paired, but for me they both really hit my spot.</p>

<p><strong>Citrus Asian Chicken</strong></p>
<p>Serves 4</p>
<p>4 Boneless Chicken Breasts</p>
<p>2 Tbsp Extra Virgin Olive Oil</p>
<p><em>Marinade:</em></p>
<p>1/4 cup Extra Virgin Olive Oil</p>
<p>1/4 cup fresh-squeezed Orange Juice</p>
<p>1/4 cup fresh-squeezed Lime Juice</p>
<p>1/4 cup Soy Sauce</p>
<p>1 Tbsp Light Brown Sugar</p>
<p>1 clove Garlic, minced</p>
<p>1 tsp grated fresh Ginger</p>
<p>1 tsp Sesame Oil</p>
<p>1/4 tsp Red Pepper Flakes</p>
<p>1/8 tsp Cumin</p>
<p>1/8 tsp fresh-cracked Black Pepper</p>
<p>Two thinly sliced green onions</p>
<p><em>Directions:</em></p>
<p>Combine all ingredients of the marinade in a large bowl and add chicken breast, turning in the marinade until well coated.  Let sit about 10 minutes, turning a couple more times while marinating.  Don&#8217;t marinate very long because the acid (citrus, soy sauce) will &#8220;cook&#8221; the chicken and it will not only cook more quickly but also may turn out dry.  Just sayin&#8217;.</p>
<p>Heat 2 Tbsp of EV Olive Oil in a large skillet.</p>
<p>Remove chicken breasts from marinade.  Reserve all of the marinade and set aside.</p>
<p>Place each breast into skillet to sear until nice and brown.  Turn and sear the other side, making sure not to let the marinade burn.  It can do this quickly because of the sugar content of the marinade.</p>
<p>Reduce heat under skillet to medium and add the remainder of the marinade and continue to cook until chicken is just done.  Turn the chicken breast a couple of times while cooking.  This should take about 10-15 minutes, depending on the thickness of your chicken breasts.</p>
<p>Serve each breast, sprinkling the green onions over the top and the spooning some of the marinade over the top of the chicken.  And, you know, a little peanut butter in this sauce might be just awesome.  Oh, Sarah . . . . . . . I must try it with PB next time!  And there WILL be a next time.</p>

<p><strong>Mai&#8217;s Southwestern Creamed Corn</strong></p>
<p>Serves 4</p>
<p><em>Ingredients:</em></p>
<p>1 Tbsp Butter</p>
<p>1/2 medium Sweet Onion, diced</p>
<p>1 clove Garlic, minced</p>
<p>3 skinned and de-seeded Roasted Hatch Green Chiles (or one small can of green chile)</p>
<p>1/4 cup Chicken Stock</p>
<p>1/4 cup Heavy Cream</p>
<p>1 16oz package frozen Sweet Corn</p>
<p>2 oz. Cream Cheese</p>
<p>1/8 tsp Cumin</p>
<p>Salt and Pepper to taste</p>
<p><em>Directions:</em></p>
<p>Melt butter in medium sauce pan.  Add onion and saute until translucent.  Add garlic and green chile. Stir for another minute.  Add cream and stir until cream is just hot, then add cream cheese and stir until smooth.</p>
<p>Add corn and stir.  Cover with a lid and let cook until corn is hot, stirring occasionally.  This dish can also be put in a casserole pan, sprinkled with bread crumbs, maybe even a little cheddar cheese and baked in the oven for 20 minutes or so at about 375F.  YUM!  And, by the way, I LOVED my meal.  Again, <a title="East Meets West Slaw" href="http://thruthebugsonmywindshield.wordpress.com/2010/09/26/on-the-road-colorado/" target="_blank">East Meets West</a>.  You see, I&#8217;ve enjoyed the two together before.</p>
