Consider the major food groups as you introduce new foods to your child. Children need dairy, fruits and vegetables, meats and grains.

Fruits and Vegetables

Try sweet potatoes, which provide vitamins galore and are naturally sweet and filling. Green beans are a good choice for toddler finger food. Children like applesauce and can eat thinly sliced raw apple. Chicken, beef and fish are three good meats to feed small children. Cut the meat in small slices rather than chunks to prevent choking. A child shouldn't be fed hotdogs, marshmallows or cheese puffs. Nuts are hard to chew and are a food that small children are often allergic to.

Feeding Toddlers - Nutritional Tips
Summarized By Christine Steendahl

The toddler should eat most table foods that closely resemble the same types of food that the other family members enjoy. Introduce a variety of foods to encourage good eating habits. Give the toddler manageable pieces of food. Food plan for a toddler should be selected based on the USDA guidelines. The food pyramid focuses on the five major food groups.

1) The Grain group - Servings include 1 slice of bread, 1/2 cup of cooked rice or pasta, 1/2 cup of cooked cereal, and 1 ounce of ready to eat cereal.
*Your child should eat 6 servings from this group.
2) Vegetable group - Servings include 1/2 cup of chopped or raw vegetables, or 1 cup of raw leafy vegetables.
*Your child should eat 3 servings from this group.
3) Fruit group - Servings include 1 piece of fruit or melon wedge, 3/4 cup of 100% fruit juice, 1/2 cup of canned fruit, or 1/4 cup of dried fruit.
*Your child should eat 2 servings from this group.
4) Milk group - Servings include 1 cup of milk, yogurt or 2 ounces of cheese.
*Your child should eat 2 servings from this group.
5) Meat group servings include 2 to 3 ounces of cooked lean meat, poultry or fish, 1/2 cup of cooked dry beans. *Your child should eat 2 servings from this group.
As children grow older, their appetite may decrease.

They have their favorites and then there are the ones that they won’t touch at any cost. If your kid won’t venture to try anything green, learn ideas to get them to eat it and appreciate the taste. Today, we’ll be starting with broccoli.

The most convenient way to get your child to eat broccoli is to add it to a dish that they already like. If your child has never tried broccoli, this will make it easier still. The taste of the other foods will mask the taste of the broccoli. Broccoli doesn’t taste bad, but it does need some sprucing up to taste better.

Add broccoli to a bowl of macaroni and cheese. Most if not all kids love to eat macaroni and cheese. Steam a pan of broccoli until it is almost done, but still very green. Once the macaroni and cheese is ready stir the broccoli in. Before you mix it, cut off the stalks. The tops are easier to eat. Sometimes the stalks have hard parts that you could chew on for days and they still wouldn’t disappear. If you don’t want to chop all of those stems, buy bags of broccoli that just contain the florets.

Does your kid love casseroles? Stir in broccoli to your favorite casserole. Transform a cheesy chicken and rice hot dish into a cheesy chicken, broccoli, and rice hot dish. A beef and noodle casserole could get a touch of green with some broccoli florets. Your kids will be so happy that they don’t have to eat peas that they won’t even care about what’s in the hot dish.

My kids crave chicken potpie. Many potpies contain segments of potatoes, carrots, and green beans. If you are making it from scratch, add a few baby broccoli florets to the veggie mixture. Once the veggies soften and mix with the chicken, and the cream soup the taste mixes right in. You can add broccoli to a turkey or a beef potpie also.

Offer broccoli as a snack. Many times, kids will snack on veggies when they are raw and they taste better to them that way. Set out a plate of broccoli with the stalks and a bowl of ranch dressing. Ranch dressing on veggies is yummy and a quick snack to munch on while watching television or doing homework. It fills them up for the moment and there’s no sugar in it to ruin their dinner. If ranch dressing is not their thing, try cottage cheese, yogurt, or another type of dressing.

Broccoli works well as a side dish with a sauce. Most of the time you see broccoli with a sauce, it is cheese sauce. Watch the fat content though. Use a low-fat cheese to melt on top or try Velveeta® light cheese spread. Light salsa con queso (with cheese) is also an alternative for a sauce topping.

Broccoli is a good vegetable to eat. It can be combined to any pasta dish or casserole, or used as a side dish with seasonings for flavor. Getting your kids to consume broccoli is a task but it can be completed if you use their favorite foods as cover.

----------
For More "Simple Ways To...." Finding fun food for kids can be as simple as taking them to the grocer with you. Choosing fruits that are tasty and chock full of nutrients can be an exciting adventure.

Getting little ones to consume fruit can be easy when we make it fun and entertaining. Since fruit should be a staple in every family's menu, let the little ones choose what fruits they require to make a festive and interesting fruit pizza project.

You may be surprised by the fruits they choose at the farmer's market. Let the kids choose which fruits and vegetables they want for their at home project.

Select exciting or colorful fruits at the grocery store or farmers' market, then turn the kids loose creating creative faces on this yummy fruit pizza. Odds are, they'll snack as they create--and love what they taste.

Choose fruits in a wide range of palettes and sizes. Let the kids design the pizza with festive faces or construct other shapes on this colorful and festive pizza.

Ingredients.

Ready to bake piecrust

Filling

1/2 cup fat free or low fat cream cheese
1 tablespoon sugar
1/4 teaspoon vanilla extract
1.4 teaspoon lemon juice
1 tablespoon 1% milk

Toppings
Select strawberries for the nose, kiwi fruit or seedless grapes for the eyes, a banana for the mouth. The choices for making shapes are only restricted by their imaginations. The kids can choose pineapples, mandarin oranges, or any fruit they prefer.

Instructions:
1. Let the piecrust come to room temperature per the package instructions, then unfold it onto a large cookie sheet or pizza pan.

2. Roll up edges of the crust, crimping them ever so slightly so that they'll stay rolled up. Poke the crust gently with a fork in about 20 places (allowing air to escape).

3. Bake the crust in a preheated 450 degree oven for about 9 minutes or until it's slightly browned.

Remove from the crust from the oven

4. Whisk together cream cheese ,sugar, and vanilla extract, lemon juice adding just enough milk to make the mix able to spread onto the crust.

*Allow the crust to cool.
*Spread the cream-cheese mixture with a rubber spatula,
*Spread to the edge of the crust

Now its time for the kids to showcase their skills.

*Allow the kids to arrange the fruit onto the cream cheese mixture. Don't worry if it is not perfect. It is perfectly healthy and fun. Children may like to add sprinkles. Let their imaginations run wild.
*Refrigerate the pizza for at least 1 hour
*Slice with a sharp knife and serve

The kids will be impatient and want to consume the pizza immediately. The pizza cream cheese is almost already set. So when you're done cleaning up, allow the kids to assist you here. They will be eager to taste their creation.

----------
Kid Approved Meals - Recipes Kids Love - log onto www.kidapprovedmeals.com

The cheesier it is the more he likes it. I like it myself, but the cheesier it is, the more fattening it is, too. Here are some suggestions to make that family favorite a little healthier for the kids.

Add variety to the cheese. Macaroni and cheese is nothing unless it is dripping cheese from both ends of the noodle. But, the cheese your mother chose doesn’t have to be the same cheese that you choose. Opt for Velveeta® Light cheese spread. The light version has a third of the fat and melts much better than regular cheese. This cheese works well if you prepare your macaroni and cheese in a saucepan on the stovetop. If you are the kind of person that bakes your macaroni and cheese like a casserole, you can substitute fat-free sharp cheddar for the full fat version and add skim milk to make it creamy.

How about turning that side dish into the main meal? Macaroni and cheese can become the main course if you add some protein. Turn your side dish into a casserole dinner with lean ground beef. This transforms your dish into cheesy beef and macaroni. The beef will help to fill your kids up faster and will give them the protein that their body needs. Add a teaspoon of chili powder to give it a southwestern flavor. For a weekend lunch, add chunks of ham to their macaroni and cheese for a quick meal. The meat breaks up the monotony of just having the same dish all of the time. Chunks of boneless chicken breasts will also work as well as the ham if your child prefers chicken. Hotdogs also work with macaroni and cheese but because of the nitrites they contain, don’t use them as often as you use the ham and chicken.

Change your pasta. There are lots of healthy options to the generic macaroni pasta noodle. Now, grocers provide a whole wheat or multigrain pasta that is derived from wheat flour instead of white. The pasta is brown in color but when you mix in the cheese, no one should know the difference. If brown pasta doesn’t do it for you, Barilla® makes pasta called Barilla Plus® that has additional nutrients to make it more nutritious for the eater. The pasta remains the natural yellowish color. Dreamfields® has macaroni noodles that contain only five grams of digestible carbohydrates. That means nothing to your children, but to you it means that they won’t get fat from consuming that particular brand.

Add some color to their macaroni and cheese. Chop a tomato and mix it into the macaroni and cheese prior to serving it. The red makes a bold statement in the sea of yellow. Tomatoes provide antioxidants which are awesome for your body. If your children prefer spicy foods, mix in a few crushed red peppers or diced red and green peppers to their macaroni and cheese for a bolder flavor. If you don’t have any peppers or tomatoes on hand, add a cup of salsa in the macaroni and cheese in a pinch.

What about breakfast? Your kids would like to eat macaroni and cheese for breakfast. Add a few slices of turkey bacon or reduced fat bacon to the meal. Crumble the bacon on top of the macaroni and cheese and serve. If bacon is not appreciated by your child, add sausage crumbles. It’s unconventional, but it’ll taste great.

----------
For Quick Ways To Make A Grilled Cheese Sandwich Healthier For Kids check out: http://www.kidapprovedmeals.com/article-grilled-cheese.htm and For Quick Ways To Turn A Potato Into A Meal Kids Will Love check out: http://www.kidapprovedmeals.com/article-potato-recipes.htm

One of the most popular holidays is Easter and part of the reason why this holiday is so much fun is the food associated with it. If you are planning an Easter dinner with your friends or family this year, here are some awesome hints for some yummy Easter recipes.

Maple Syrup Ham and Sweet Potatoes with Marshmallows
One of the most desired types of food to eat at Easter is ham and you can sweeten up the flavor of ham by adding some tasty maple syrup. While your store purchased maple syrup should work, try to purchase maple syrup that is 100% pure and not made with corn syrup. Adding pure maple syrup will add a sweet, delicious taste that your friends and family will love.

You can simply complement your maple syrup ham with some yummy sweet potatoes smothered in minature marshmallows. Sweet potatoes should be your maple syrup ham’s best friend. For an extra treat, add minature marshmallows and you will definetly get some smiles from children and adults alike.

Easter Bunny Cookies
While chocolate bunnies are pivotal to Easter, cookies can also be a desired treat. Just like Christmas cookies are fun to make and tasty to eat, so can Easter bunny cookies. Most grocers, discount stores and craft retailers sell Easter Bunny cookie cutters to make your favorite chocolate chip or sugar cookie into some fun Easter bunny shapes.

Easter Egg Cup Cakes
Easter Egg Cup Cakes are a fun way to add excitement to the holiday’s for your little ones. Easter Egg Cupcakes are an easy and fun way to bring color to any Easter dinner dessert. Instead of using cup cake holders, try to use small waffle cones instead to hold your cup cake mixture. Once baked, add coloring, sprinkles, candy, etc. to your creation.

Easter Bunny Carrot Cake
Easter bunny carrot cake is a great way to add color and fun for the whole family. What goes better with bunny rabbits than carrots and a yummy carrot cake goes with an Easter meal. You can easily purchase a carrot cake and decorate the top by hand. Many people create their own icing adding food coloring to color the carrot cake to look like an Easter egg.

Easter Cocktails
For those adults that prefer to top off their dinner with a delicious alcoholic beverage, there are many flavorful cocktails that compliment the atmosphere of an Easter meal. For example, certain liquors come in several colors such as grenadine for crimson, blue Curacao for blue and mixing clear liquor with various fruit juices for multi colored Easter drinks. For those that crave a cocktail without the alcohol, it’s simple to add color to your dinner with a variety of fresh fruit smoothies, just by adding fresh fruit with cream or milk. Some people even add some yogurt to the mix.

If you are looking for a great way to enjoy your Easter this year, follow the previously mentioned Easter recipes.

----------
How Would You Like To Give Nutritious Goodies In Your Easter Baskets This Year? You do! You can have time if you serve an easy to cook kids' meal.

Of course it's a no-brainer to throw a hotdog in the microwave or set a tortilla in a pan on top of the stove, add some cheese and 90 seconds later have a simple quesadilla, but what's the excitement in that? Instead experiment with Casseroles or one-pot meals which in most cases go over well with the kids; and are simple to whip together.

Try this quick kids meal:

1 – lb. ground beef
1 - 16 oz jar spaghetti sauce
1 - cup water
1 1/2 cups uncooked elbow macaroni
1 - cup shredded mozzarella cheese

Crumble beef in a three-qrt glass baking dish and microwave for 4-5 minutes, or until beef is no longer pink. Mix & rotate part way through cooking time. Drain Beef. Stir in sauce, water and macaroni. Microwave another 12 minutes, stirring part way through. Sprinkle cheese on top and allow to stand covered approximately 5 minutes before serving. Serves a couple hungry kids.

There are many meals you can cook with hamburger. Any recipe that asks for hamburger will work just fine replaced with ground turkey, chicken or venison instead. The simple recipe below uses ground meat. It takes nearly an hour to bake but merely a blink to prepare.

Combine together:

2 pounds ground meat
1 can condensed cheddar cheese soup
1 can condensed cream of mushroom soup
Crinkle Cut French Fries

Brown ground beef and drain the grease. Add both soups to strained ground beef and spoon into a 9x13 greased baking dish. Top off with cut French fries and bake at 350 degrees for 50-55 minutes or until French fries are light brown.

Taco salads are very quick and easy to prepare. Begin with lettuce. Add tomato, onion and cheese (if your kids will approve of it.) Fry up some meat and toss in an envelope of taco seasoning – or just incorporate some taco sauce to the meat. Next add crushed tortilla chips or Fritos. Finish off with salsa or Ranch salad dressing. Remember the sour cream and guacamole too! Kids love this meal!

For a fast, on the go, healthy, cold meal try:

A head of lettuce (not bagged lettuce)
Ham or Roast Beef slices
Cheese slices
Condiments

Step 1: Peel off a medium lettuce leaf.
Step 2: Assemble meat, cheese, and condiments.
Step 3: Roll up and stick a toothpick in the middle.
Step 4: Gobble Up.
Step 5: Wipe your face, there is a trace of mayo. on your cheek.

How about an interesting twist to the normal macaroni and cheese kids recipe?

1 (16 ounce) box macaroni (elbow, seashell, bowtie – doesn't matter, just not spaghetti)
1 c. cottage cheese
1/4 c. sugar
1/2 t. cinnamon

1. Cook macaroni according to package instructions.
2. Stir in cottage cheese, sugar, and cinnamon with drained macaroni.
3. Taste and add sugar or cinnamon, if required.
4. Serve right away. Delicious!

Incorporate a bit of creativity to incorporate a twist on a tried and true recipe and even with the chaotic after school activities you will find time to cook a nourishing meal for your kids evening meal.

----------
Desire More Quick & Easy Kid Approved Meals? What's alarming is that she's not alone. Today over 60 percent of children ages two to nine don't consume the recommended five servings of fruits and vegetables per day.

Children require proper nourishment to be healthy -- including eating vegetables. Unfortunately, faux food (fast food and junk food) have replaced whole food. Public health officials warn that unless there is a change in the way our children eat, health problems are sure to plague them. Increasing at alarming rates are heart disease, cancer, and Type 2 diabetes. In addition, childhood obesity has more than tippled over the last forty years.

Even the most resistant child can learn to love healthy foods. Kids discover that whole foods (including veggies) are yummy when you engage all their senses. By making a few simple changes, you can teach your child to love veggies!

1. Stock Healthful Foods It'll be difficult to convince your picky eater to eat nutritious foods, if sugar, white flour, and trans fat are common ingredients found in your kitchen. To effectively encourage children to eat whole foods, whole foods must be readily available. Read labels! When you purchase crackers, chips, and cookies, look for items made from whole grains and without hydrogenated oils (trans fat). Even better is to replace processed snack items with nuts, fruit and veggies slices. Obviously, you must control your kid's snacking. A child who has eaten less than two hours before a meal will not eagerly eat a food predetermined to be "yucky!"

2. Involve All Senses A common misconception is that a veggie is rejected because of its taste. But according to current research, dislike of various foods most often results from the texture, smell, or even the color of what is to be eaten. Eating vegetables doesn't usually come naturally: it's a learning process. Learning involves all the senses. Discuss the attributes of various foods with your child. Pick up and feel its texture. What is the aroma? How does it feel in the mouth? What color is it?

3. Make It Fun Involve your child with grocery shopping and meal preparation. Have your toddler hold an item from the produce department while you're in the store. Discuss the value of the foods you're purchasing with your child. Give your youngster a job to do such as reading the nutrition facts on labels (i.e.: look for the sugar content) and placing items in your cart. Encourage your kid to pick one item from the produce department, which he has never tasted. Then prepare and eat it together.

4. Make Mealtime a Happy Family Time The table should be a stress-free zone. It's vital that both dad and mom keep the conversation around the table happy. A good way to transition from a hectic day is to begin the meal by thanking God for what he has done. Always discuss how wonderful the food smells and tastes. Take every opportunity during the meal to educate your child about healthful foods.

5. Be Positive All family members (including older siblings or even Daddy) may make only affirmative comments about the food at the table. Negative remarks cement the idea that some food tastes bad. Phrases such as "I don't like that" "It's disgusting" and "It's yucky" are forbidden. In addition, praise for eating whole foods and vegetables is vital for success.

6. Employ Stealth Health Stealth health is changing from an inferior brand of bread to a nutritionally packed one. It's adding spinach to casseroles and soups. It's making pancakes with whole-wheat flour and topping with applesauce or peanut butter. Use brown rice in casseroles and slip flax seed oil and barely green into a breakfast fruit smoothie. Other times, it's making a healthful puréed vegetable soup for the vegetable-challenged child.

7. Don't Give Up Be patient. Food, which your child has previously refused, most likely will be sampled between ten and twenty times before acceptance. Don't rush the process. Explore all the food's attributes with your child. Give your youngster time to learn how the food feels and smells. Tiny bites of formerly rejected foods are steps in the right direction.

Nonna Joann Bruso is a speaker and author of "Baby Bites™: Transforming a Picky Eater into a Healthy Eater."
